Today’s Menu: Cumin Spiced Pork Chop w/ Baked Potato and Glazed Apples

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. Another windy day but sunny and 62 degrees out. Did a load of laundry after Breakfast. Later made a Pick Up order from Kroger. They were out of a lot of items, picked the order up at 2:00. Did some yard work also. For Dinner tonight it’s a Cumin Spiced Pork Chop w/ Baked Potato and Glazed Apples.

 

While at Meijer I picked up a couple of huge Bone – In Pork Loin Chops To prepare my Chops I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it, preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add pork to the pan; cook for 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!

 

For a side I baked a Russet Potato for a side with Steak. Seasoned with McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter and Daisy Light Sour Cream.

 

I also heated up some Bob Evan’s Glazed Apples, it comes in a microwavable container and is a quick and delicious way to have Glazed Apples. And Apples are perfect for any Pork dish! Quite a dinner tonight! Also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

You’ll get 137 calories and 4 grams of fat from a 3-ounce pork chop. Pork is similar to chicken, with 3 ounces of chicken breast containing 140 calories and 3 grams of fat. When buying Salmon…………

Look for salmon that appears moist rather than dried out, since moisture content is a great indicator of freshness and how carefully the fish was handled. Avoid salmon with any browned spots on the belly, around the edges of the fillet, or instances where the skin has started browning and curling up.

Today’s Menu: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

 

 

For Breakfast I prepared I Scrambled a couple of Eggs along with a toasted Thomas Light English Muffin. Also had my morning cup of Bigelow Decaf Green Tea. 60 degrees and cloudy out today. Not too active today, down with my sinuses again! For Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

 

I’m using the Wild Idea Buffalo Pulled Chuck Roast. I had the package in the freezer so I sat it in the fridge to thaw overnight. The Pulled Chuck Roast is so tender and incredibly flavorful. It comes already cooked and seasoned, so just heat and serve! It’s Seasoned with, Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. And that’s why it’s so flavorful! Delicious Pulled Buffalo that you just heat and serve.

 

I used a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. Added the Buffalo and heated it on medium low until heated through. I served it on a Healthy Life Wheat Hamburger Bun and topped it with some Jack Daniel’s Honey Smokehouse BBQ Sauce. What a sandwich, just incredible flavor! The Wild Idea Buffalo Pulled Buffalo Chuck Roast is so flavorful and tender. It just has such a deep and rich flavor to it. One of my favorites!

 

For my Fries I’m using Ore Ida Crinkle Cut Fries. Seasoned them with Salt and Pepper. Baked them at 425 degrees for 16 minutes. They are only 90 calories and 10 net carbs. Served them with a side of Hunt’s Ketchup for dipping. For Dessert a Jello Sugar Free Dark Cherry Jello.

BEEF AND ZUCCHINI APPETIZER MEATBALLS
Here’s an interesting combination for a meatball. This simple recipe is surprisingly great – and a real crowd-pleaser at parties and holiday get-togethers. It is also keto diet friendly.

NOTES:
Cooking times are for fresh or thoroughly thawed Ground Beef. Ground Beef should be cooked to an internal temperature of 160F. Color is not a reliable indicator of Ground Beef doneness.

Recipe Yield: 4 servings.

Ingredients

1 lb Ground Beef (93% or leaner)
1 cup grated zucchini
1/4 teaspoon salt
1/4 teaspoon pepper

Directions

1 – Preheat oven to 400F.
2 – Combine all ingredients in medium bowl, mixing lightly, but thoroughly.
3 – Shape into 24 meatballs.
4 – Place meatballs, 1-inch apart, on rack in aluminum foil lined broiler pan.
5 – Bake in 400F oven 22 to 25 minutes or until instant-read thermometer inserted into center of meatball registers 160F.

Today’s Menu: Baked Salmon w/ Whole Grain Brown and Wild Rice and Baked Garlic Oval Bread

 

For Breakfast this morning I Poached an Egg and served it on a toasted Thomas Light English Muffin. I also had a cup of Bigelow Decaf Green Tea. 56 degrees, windy and partly cloudy out today. I had to be at Meijer at 12:20 this afternoon for my 2nd Covid Shot. I’m glad I’m getting the Pfizer Shot instead of the Johnson and Johnson, considering the trouble they are having with J and J shot. For Dinner tonight it’s a Baked Salmon w/ Whole Grain Brown and Wild Rice.

 

I just love the combo of Salmon and Rice! Been a while since I’ve had Salmon. I had purchased a  North Atlantic Salmon Fillet from Meijer and had it in the freezer. I sat the fillet in the fridge overnight to thaw. To make it I’ll need the Salmon, McCormick Grinder Sea Salt and Peppercorn Medley, Dried Parsley, Dried Chive, and Extra Light Olive Oil.

 

 

To prepare it; I preheated the oven to 400 degrees. I then got a small baking pan and sprayed it with Pam Cooking Spray. I washed the Fillet off in cold water and patted dry with a paper towel. Next I put a light coat of the Extra Light Olive Oil on the Fillet and then seasoned. Laid the Fillet in the pan and baked. I baked it for 10 minutes, and done. Excellent Salmon!

 

For my Rice I’m using Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice. It comes in a microwavable package. I microwaved it for 90 seconds and done! I guess one of my favorites from Uncle Ben’s Ready Rice, although I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with the Salmon. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels and a Diet Raspberry Snapple to drink.

Keto Macaroons
A twist on the classic Italian dessert, these keto coconut macaroons are a cinch to prepare. Make with or without the optional chocolate chips — either way, they’re sure to put a smile on your face!

Ingredients
3/4 cup powdered erythritol, or equivalent of stevia
2 1/2 cups unsweetened shredded coconut
1/2 cup unsweetened chocolate chips, such as Lily’s brand (optional)
Pinch of salt
1 1/2 teaspoons pure vanilla extract
2 large egg whites

Directions
Yield: 12 servings
Serving size: 1 macaroon

1. Preheat oven to 350°F. Line a baking sheet with parchment paper. In a large bowl, combine all ingredients well by mixing with your hands.

2. Wet your hands and then place 1 1/2 tablespoons of macaroon mixture on the baking sheet. Repeat this step with the remaining mixture, spacing macaroons about an inch apart.

3. Bake macaroons until golden brown, 18 to 20 minutes. Allow to cool.
