Today’s Menu: Smoked Turkey Sausage Dogs w/ Baked Shoestring Fries

 

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off! One delicious Breakfast!

 

 

After Lunch I went over to see Dad for a while. I had to get back and get some outdoor cleaning done. Got the leaf blower out and cleaned off the deck and driveway areas. Then got the cart out so I could pull some weeds and spray some weed killer along our back property line. Beautiful outside today, 82 degrees and sunny! So for Dinner tonight its a Smoked Turkey Sausage Dog w/ Baked Shoestring Fries.

 

 

 

 

I used the Butterball Hardwood Smoked Turkey Sausage. I cut the Sausage Links into Bun length pieces. I absolutely love the Butterball Hardwood Smoked Turkey Sausage. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a 1/2 tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out just bursting with flavor and flat-out delicious! I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Bun and topped with French’s Spicy Brown Mustard.

 

To go with the Sausage Dog I baked up some Alexia Organic Yukon Select Fries. Seasoned them with Morton’s Lite salt and Ground Black Pepper. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right.! Plus they are only 120 calories and 15 net carbs. Served with a side of my favorite Ketchup, Hunt’s Ketchup. I had a Diet Dr. Pepper to drink. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar, love these things!

Today’s Menu: Fried Oyster Mini Po’ Boy w/ Baked Fries

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. A bit hotter out there today, 88 degrees and humid. I guess our mild August days have ended, at least for now. After Breakfast i took my car up to get it washed and vacuumed on the inside. Laid back day, all caught up on cleaning. I did do a load of laundry and after Lunch I straightened up the Pantry. For Dinner tonight its a Fried Oyster Mini Po’ Boy w/ Baked Fries.

 

 

I love Fried Oysters, just can’t have them enough! To prepare them I’ll need; 1 container of Hilton’s Fresh Farm Raised Pacific Willapoint Oysters, 1 tablespoon Flour, 1/4 cup Egg Beaters, 1 cup Shake and Bake Seasoned Panko Bread Crumbs, Sea Salt and Pepper (to taste), 2 to 3 tablespoons Extra Light Olive Oil. Louisiana Remoulade Sauce, Louisiana Tarter Sauce, Lettuce, and Aunt Millie’s Reduced Fat Hot Dog Buns. I’m making my Oysters the same way i usually do except I’m making a Mini Po’ Boy Sandwich out of them.

 

 

I used Hilton’s Fresh Farm Raised Pacific Willapoint Oysters. To prepare them; Place shucked oysters in a colander rinse in cold water and drain. Dredge drained oysters in the Flour, then Egg Beater’s, and then in Panko Crumbs seasoned with Sea Salt and Pepper (coating each Oyster thoroughly). Set aside to dry at least 1/2 hour. An easy way to coat the Oysters with the Panko Crumbs is to place the Crumbs in a resealable plastic bag, add Egg-dipped Oysters, seal bag, and then shake.

 

 

 

Next, heat Oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite hot. Fry Oysters until golden brown on one side, then turn over each oysters carefully to brown the other side, approximately 1 to 2 minutes on each side. Fry Oysters until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and make your Po’Boy!

 

 

 

I took an Aunt Millie’s Reduced Fat Hot Dog Bun and split it open, length wise. On the bottom bun I spread a small amount of the Tarter Sauce on it. Next I layered my Fried Oysters, followed by the Shredded Lettuce, and then on the bottom of the top bun I spread the Remoulade Sauce. Just another way to serve these mouth-watering delicious Fried Oysters! The Oysters cam out delicious as always and the 2 Louisiana Sauces combined perfectly to kick this Po’ Boy up another notch! Excellent Sandwich.

Mostly sunny and 54 degrees out but the humidity was up a bit. Started the laundry after Breakfast. Outside got the leaf blower out and cleaned of the deck area and the driveway. After Lunch went over to see Dad for the afternoon. He’s doing good one day and not so good the next day. Hope he starts improving soon! So for Dinner tonight its a Smoked Turkey Sausage Dog w/ Baked Shoestring Fries.

Today’s Menu: Cheddar Chili Dogs

 

 

For Breakfast this morning I fried 2 Jennie – O Turkey Breakfast Sausage Patties, prepared a Scrambled Egg, toasted 2 slices of Aunt Millie’s Whole Bread, and my morning cup of Bigelow Decaf Green Tea. Another sunny and beautiful day out there again! A bit warmer and more humid, but still nice out. After Breakfast I started a load of laundry and then headed out to Meijer and then by Kroger to pick up a few things for Mom. After Lunch headed up to the rehab center to see Dad. Back home finished up laundry and done for the day. Got the cart out for a spin around the neighborhood. For Dinner tonight its CHEDDAR CHILI DOGS.

 

 

I tried these for the first time around a month ago and really liked them so I’m having so I’m having them again. They’re a nice alternative to my Cincinnati Style Cheese Coneys. To make the Dogs I’ll need; 1 can (16 oz) BUSH’S® Chili Beans – Red Beans in a Medium Chili Sauce (drained), 1 tsp chili powder, 4 Ball Park Smoked Turkey Franks, 4 Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Buns, French’s Yellow Mustard, 3 slices Simple Truth Hickory Smoked Bacon (crisped and coarsely chopped), and 1/4 cup Sargento Reduced Fat Shredded Sharp Cheddar Cheese.

 

 

To prepare them; Heat the Beans in a medium saucepan until just heated through; stir in chili powder. Next I cooked Hot Dogs. I used a medium size sauce pan, filled 3/4 full of water and heated to a boil. When water was boiling I added the Franks, boiled for 5 minutes. Removed the pan from the heat, drained the water, and prepared the Cheddar Chili Dogs. Spread each Bun with Mustard. Place a Hot Dog in each Bun and top with Beans. Sprinkle each with Bacon, Onion (optional), Tomato (optional), and Cheese. These turned out fantastic, love the Beans and Cheddar toppings.

 

 

Served it with some Ruffles Reduced Fat Potato Chips and some Lay’s Ranch Dip. Also had a Caffeine Free Diet Coke. For Dessert later a Breyer’s 100 Calorie Vanilla Cup.

Chili Beans with a touch of chili powder add some heat to these Cheddar chili dogs with bacon, onion and tomato.

RECIPE DETAILS
Prep Time: 15 minutes
Cook Time: 15 minutes

INGREDIENTS
1 can (16 oz) BUSH’S® Chili Beans, drained
1 tsp chili powder (optional)
4 all-beef hot dogs
4 soft hot dog buns
2 Tbsp mustard
3 slices bacon, crisped and coarsely chopped
2 Tbsp white onion, chopped
1 small tomato, cored and chopped
1/4 cup shredded mild Cheddar cheese

DIRECTIONS
1 – Heat beans in a medium saucepan until just heated through; stir in chili powder, if desired.
2 – Cook hot dogs according to package directions.
3 – Spread each bun with mustard. Place a hot dog in each bun and top with beans. Sprinkle each with bacon, onion, tomato and cheese. Serve hot.

Today’s Menu: Bluegrass Lean Bratwurst w/ Bourbon and Brown Sugar Grillin’ Beans

 

 

For Breakfast this morning I made Breakfast for everyone. Mom and Dad usually have McDonald’s but this morning I’m making Breakfast. I prepared a package of Jennie – O Turkey Breakfast Sausages, made Scrambled Eggs for everyone, made some packages of Instant Grits, toasted 2 types of Bread – Raisin Bread and Aunt Millie’s light Whole Grain Bread. Mom and Dad wanted the Raisin Bread, not a big fan of it myself. I also made Coffee for the Folks and a cup of Bigelow Decaf Green Tea for myself. Outside it’s in the 90’s, very humid, and rain on and off. So between the rain and humidity there wasn’t a lot going on outside. So I did some cleaning inside, vacuum and dusted. Then took the brushes out of the vacuum and cleaned them and washed out the vacuum filter. Moved on to the Pantry and straightened it up. Full day today. For Dinner tonight its Bluegrass Lean Bratwurst w/ Bourbon and Brown Sugar Grillin’ Beans.

 

I used Blue Grass Lean Bratwurst which are 100 calories and 4 carbs per Brat, not bad at all for Brats. To prepare them; Just add the Brats to a large skillet and add water, until the Brats are half way covered. Bring them to a brisk boil but then immediately turn down the heat to a very low boil, more of a simmer than an active boil. Simmer for about 15 to 20 minutes, then finish off in a pan with just the Brats and a little Extra Virgin Olive Oil to get a nice crispy finish. Love this method, if you can’t grill them. Delicious, plump, and they cook up great! Served it on a Kroger Whole Grain Hot Dog Bun topped with French’s Spicy Brown Mustard. I also had some Ruffle’s Reduced Fat Potato Chips. Then for dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar. Love these, only 80 calories and 12 net carbs per bar!

 

Then for a side I prepared some Bush’s Grillin’ Beans Bourbon and Brown Sugar. Not sure if I’ve had these before or not, but they sure are good! As all Bush Beans are. I just emptied the can into a small sauce pan and heated them until they started to simmer. For Dessert/Snack later I’m having a 100 Calorie Mini Bag Jolly Time Pop Corn. I hadn’t been able to find this anywhere until I found some at Jungle Jim’s International Market yesterday.

Today’s Menu: Cheddar Chili Dogs

 

 

Wow, It’s the last day of June already. This month flew by! For Breakfast this morning I fried 2 Jennie – O Turkey Breakfast Sausage Links, prepared an Egg Sunnyside Up, toasted 2 slices of Aunt Millie’s Whole Bread, and my every morning cup of Bigelow Decaf Green Tea. The Summer like weather has kicked in! 86 degrees and HUMID. After Breakfast I headed to Meijer for a few items and had to stop by the bank. Back home I cleaned the Kitchen, swept, mopped, cleaned the fridge, and cleaned the stove. Then kicked back for a bit and watched some shows I had recorded. For Dinner tonight I prepared CHEDDAR CHILI DOGS.

 

I have Chili and Cheese Dogs quite often but this recipe is a bit of a twist of what I normally have. I found this recipe in a recipe email from Bush’s Beans, BUSH’S® CHEDDAR CHILI DOGS. I made some changes from the original recipe, I left the original recipe and web link at the end of the post. To make the Dogs I’ll need; 1 can (16 oz) BUSH’S® Chili Beans – Red Beans in a Medium Chili Sauce (drained), 1 tsp chili powder, 4 Ball Park Smoked Turkey Franks, 4 Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Buns, French’s Yellow Mustard, 3 slices Simple Truth Hickory Smoked Bacon (crisped and coarsely chopped), and 1/4 cup Sargento Reduced Fat Shredded Sharp Cheddar Cheese.

Today’s Menu: Bluegrass Deliciously Lean Mettwursts

 

 

To start the 28th day of June off I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. We had to have dad at the Doctor’s office at 10:00 this morning for a checkup. The Doc said he was doing okay nothing new. But he did tell us that lungs are getting weaker every visit though. Not much anyone can do. Outside it’s a bit more humid, windier, and 83 degrees. I went to Kroger for Mom to pick up a prescription for Dad and stopped by the bank for her. A pretty simple Dinner tonight, I prepared a couple of Bluegrass Deliciously Lean Mettwursts.

 

 

I had purchased a couple of packages of the Bluegrass Lean Mettwurst while at Jungle Jim’s Market. I had kept one package out that I had been having for Lunch and froze the remaining package. Which I had laid in the fridge overnight to thaw.

 

 

 

 

To prepare them I used a medium size skillet that I sprayed with Pam Cooking Spray and added the Metts. I then added water to the pan, just enough water to cover about a 1/4 of Mett. Turned the heat on medium and covered the pan. I turned the Metts frequently to get a nice even cook on them. When the water had boiled down I cooked them an extra 3 minutes to brown them. They turned out fantastic, nice and meaty! I served them on Aunt Millie’s Whole Grain Hot Dog Buns topped with French’s Spicy Brown Mustard. A couple of Metts was plenty for Dinner tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn.

Today’s Menu: Turkey Frank Cincinnati Style Cheese Coneys

 

 

For Breakfast this morning I prepared a Egg Beater’s Egg White Cheese Omelet, I used Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Then I also toasted 2 slices of Healthy Life Whole Grain Bread lightly buttered with I Can’t Believe It’s Not Butter. I also had the morning cup of Bigelow Decaf Green Tea. Had a passing Thunderstorm this morning them mostly cloudy and showers and 84 degrees. Right after Breakfast I had to take my car to be worked on, had a small leak in the radiator hose. Not a lot going on today, caught up on a few things around the house. For Dinner tonight I prepared Turkey Frank Cincinnati Style Cheese Coneys.

 

 

I love my Cheese Coneys! Living here all my life here in the Cincinnati area you are raised on Cheese Coneys, Chili Spaghetti, and such. From all the classic Chili Parlors; Skyline Chili, Gold Star Chili, Camp Washington Chili, just to name a few. But having Diabetes 2 I have to watch my carbs and calories so I make mine a little healthier but keeping the incredible flavors.

 
I used Ball Park Smoked White Meat Turkey Franks, an excellent Turkey Frank! I boiled them, it took about 5 minutes and they were ready, plump, and delicious. I heated the can of Skyline Chili for my topping. I served everything on a Aunt Millie’s Reduced Calorie Hot Dog Buns. Put the Frank in the Bun then topped it with French’s Yellow Mustard, the Chili, and Sargento Reduced Fat Sharp Cheddar Shredded Cheese. Put it altogether and you have a prime example of the World Famous Cincinnati Style Cheese Coney! Had a small side of some Skyline Oyster Crackers with a few drops of Frank’s Hot Sauce on them, which is a common way to have them here in the Cincinnati area. We love our Chili, Chili Dogs, Chili Spaghetti, and Hot Sauce here in the Cincinnati area. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Smoked Turkey Sausage Dogs w/ Baked Shoestring Fries

 
To start the morning I toasted a Thomas Bagel Thin. These toast up great and make very good Breakfast Sandwich. Then I Scrambled some Egg Beater’s Egg Whites and took one slice of Sargeto Ultra Thin Sharp Cheddar Cheese to top the Egg Whites. And I have my Breakfast Sandwich! I was at Kroger yesterday and they had the Thomas Bagel thins on sale, buy 1 get one free. These are 110 calories and 21 net carbs. I froze one package so we’ll see how they hold up. We had about 1 1/2 inches of rain overnight, lot of local flooding down in Cincinnati. After Breakfast I took Mom’s car in to have the oil changed at a local Car Repair we go to. Then after Lunch I went over to spend some time with Dad. Back home did a load of laundry for Mom. So for Dinner tonight its a Smoked Turkey Sausage Dogs w/ Baked Shoestring Fries.

 

 

I used the Butterball Hardwood Smoked Turkey Sausage. I cut the Sausage Links into Bun length pieces. I absolutely love the Butterball Hardwood Smoked Turkey Sausage. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a 1/2 tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out just bursting with flavor and flat-out delicious! I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Bun and topped with French’s Spicy Brown Mustard.

 

 

To go with the Sausage Dog I baked up some Alexia Organic Yukon Select Fries. Seasoned them with Morton’s Lite salt and Ground Black Pepper. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right.! Plus they are only 120 calories and 15 net carbs. Served with a side of my favorite Ketchup, Hunt’s Ketchup. I had a Diet Dr. Pepper to drink. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar, love these things!

For Breakfast this morning it was Gravy and Toast, I love Gravy! I prepared a package of the Pioneer Peppered White Gravy. I toasted up a couple of slices of Healthy Life Whole Grain Bread, crumbled the Toast up and topped it with Gravy. I also had the morning cup of Bigelow Decaf Green Tea. I stayed home today to get some things done around the house and go to grocery store. I’ll go over to see Dad tomorrow. His therapy seems to be working, but he still needs a lot of work before returning home. Dinner tonight its Turkey Frank Cincinnati Style Cheese Coneys.
