Today’s Menu: 4 oz. Buffalo Cheese Burger w/ Baked Fries

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 78 degrees and sunny out today! Finally a beautiful Spring Day out and on Earth Day! After my Tea I went to Meijer, still amazed at Food Prices! It’s hard seeing how big families are making it. Speaking of rising prices Gas went up 14 cents overnight. Where is it going to end? Back home it was yard work all afternoon, and loved it. Such a beautiful day. That was about it for the day. For Dinner tonight I prepared a 4 oz. Buffalo Cheese Burger w/ Baked Fries. I prepared Mom a Turkey Burger and Fries.

 

For my Burger I used the Wild Idea Buffalo Premium 4 oz. Burger. Same great taste and quality as the bigger Wild Idea Buffalo Burgers but these are 4 oz. Just love all the Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small Cast Iron Skillet that I sprayed with Pam Cooking Spray and 1/2 tablespoon of Extra Light Olive Oil, seasoned my Burger with the Wild Idea Omnivore Salt. I then pan fried it about 3 minutes per side, and done. After I flipped the Burger I added a slice of Kraft Deli Style Sharp Cheddar Cheese. I’m serving it on a Aunt Millie’s Live Carb Smart Bun.

 

 

I also baked some Ore Ida Crinkle Cut Fries, served with a side of Hunt’s Ketchup for dipping. For Dessert later a Jello Sugar Free Dark Cherry Jello Cup.

Today’s Menu: Sharp Cheddar and Bacon Turkey Burger w/ Baked Fries

 

 

For Breakfast I had my morning I toasted a Thomas Light English Muffin that I topped with I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. Not a thing to do outside, rain all day. They say we have bad storms moving in early evening. Possible tornadoes and high winds. Hopefully it will by-pass us! So for Dinner tonight it’s a Sharp Cheddar and Chicken Bacon Turkey Burger w/ Baked Fries.

 

I first fried the Bacon. I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using Kroger Private Selection Double Smoked Bacon. It fries up perfect with an excellent taste. I need 2 slices but fried 5 slices. Always remember when frying Bacon use the Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fry as you’re preparing it!

 

I had bought a package of the Jennie – O Lean 93% Lean Turkey Burger Patties at Meijer and had them in the freezer. I grabbed a couple of them last night and let it thaw in the fridge overnight. To prepare the Burger I grabbed a skillet, sprayed it with Pam and added 2 teaspoons of Extra Light Olive Oil, heated it on medium heat. When ready I added the Turkey Burger and cooked it for 12 minutes flipping it 3 times. With a minute of cooking time left I added a slice of Kraft Deli Deluxe Sharp Cheddar Cheese. And done!

 

Added the Bacon, Lettuce, some Hellman’s Spicy Chipotle Mayonnaise (my favorite Mayo) and served it on a Aunt Millie’s Live Carb Smart Hamburger Bun. Just love these Burgers, juicy and delicious, and with the Sharp Cheddar and Bacon it makes it that much better! I love this Mayo. The Hellman’s Spicy Chipotle Mayonnaise is nice and creamy with excellent flavor, with a little kick to it!

 

 

I also baked some Ore Ida Crinkle Cut Fries. I baked them for 20 minutes and done. Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

Just a cup of Bigelow Decaf Green Tea for Breakfast. 33 degrees and cloudy, the winds gave us a chill factor of 20 degrees. Had to have Mom over for her Radiation Treatment, 12 to go! The Doctor checked her today and said everything was good! Back home I cleaned the house today, dusted and vacuumed. That was about it for the day. For Dinner tonight I prepared a 4 oz. Buffalo Cheese Burger w/ Baked Fries.

 

For my Burger I used the Wild Idea Buffalo Premium 4 oz. Burger. Same great taste and quality as the bigger Wild Idea Buffalo Burgers but these are 4 oz. Today’s Menu: Bacon and Cheese Buffalo Burger w/ Baked Fries

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 40 degrees, Sunny and Windy outside today. It was another day of clearing the driveway. It’s been tough, especially in the Hoveround Power Chair, clearing the driveway. I’m down to the end of it but there’s a lot of ice. I did get Mom’s car out and a neighbor went with me and I filled Mom’s car up with gas. Back home it was back to work on the driveway. I’ll sure be glad for Spring and Summer, but that’s a while off! For Dinner tonight I had a Bacon and Cheese Buffalo Burger w/ Baked Fries.

 

I just love these Buffalo Burgers! I used Boar’s Head Bacon for my Burger topping. Heated up a medium size skillet on medium heat and fried the Bacon until it was heated through. Removed it from the skillet to a Paper Towel lined plate, and set aside. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

For the Buffalo Burger I used my favorite, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Their meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Non Stick Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Peppercorn Medley. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side. After flipping the Burger I added a slice of Kraft Deluxe Sharp Cheddar Cheese, with about 1 minute of cooking time left. Topped it with the Bacon and served it on a Aunt Millie’s Live Carb Smart Hamburger Bun. I love a good Buffalo Burger!

 

To go with my Burger I baked some Ore Ida Golden Fries with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a bowl of Skinny Pop – Popcorn and a Diet Dr. Pepper to drink.

Today’s Menu: Sharp Cheddar and Bacon Turkey Burger w/ Baked Fries

 

For Breakfast I had my morning cup of Bigelow Decaf Green Tea. After my Tea I went to Meijer for a few things. Stopped by Wendy’s on the way home and picked up Breakfast for Mom. Back home I went over to friend’s house ,a few streets over, and helped him work on his golf cart. So for Dinner tonight it’s a Sharp Cheddar and Chicken Bacon Turkey Burger w/ Baked Fries.

 

I first fried the Bacon. I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need 2 slices but fried 5 slices. Always remember when frying Bacon use the Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fry as you’re preparing it!

Today’s Menu: Grouper Fish Sandwich w/ Baked Golden Fries

 

Just a cup of Bigelow Decaf Green Tea to start the day. 42 degrees and mostly cloudy out today. But it was a tad warmer and less windy. Went to Meijer after my Tea, needed a few items and Mom needed some new Paperback Books to read. I stopped and picked up Breakfast for her at McDonald’s. Back home I had to unclog our Kitchen Sink, nothing major. I had it unclogged in no time. For Dinner tonight I prepared a Grouper Fish Sandwich w/ Baked Golden Fries.

 

I love Fish and Seafood, especially Grouper! Just can’t get enough of Fish and Seafood! I had some Grouper Fillets in the freezer so I grabbed a couple of the Fillets and let them thaw overnight in the fridge. To prepare them I rinsed the fillets off in cold water and patted them dry with paper towel. I’ll be using Zatarain’s Seafood Breading Mix Seasoning to Bread them with.

 

To prepare the fillets I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until it was well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a 1/2 tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillet, frying about 3 minutes per side until golden brown. The fillet came out Golden Brown and Delicious! I served it on a Aunt Millie’s Live Carb Smart Hamburger Bun. Mom had Tarter Sauce on hers.

 

For a side I baked some Ore Ida Golden Fries. Served with some Hunt’s Ketchup for dipping. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Prime Rib Sandwich w/ Mashed Potatoes

Today’s Menu: Prime Rib Sandwich w/ Mashed Potatoes

 

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. Another cloudy and gloomy day out. But a lot cooler. We had a high of 32 degrees but the wind chill made it feel like the low twenties! Did a load of laundry after Breakfast. Then cleaned the house, dusted and ran the vacuum. That was it for me today! It’s Leftovers tonight. For Dinner tonight I reheated the Prime Rib and made Sandwiches with it. Also heated up some Bob Evan’s Mashed Potatoes.

 

I wrapped the Prime Rib in foil and reheated it at 250 degrees. After heating it I let it sit for 10 minutes before slicing. I served it on Aunt Millie’s Live Carb Smart Hamburger Buns. The Prime Rib came out Delicious! Tender and flavorful.

 

For a side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. For Dessert later a Jello Sugar Free Dark Cherry Jello. For the Prime Rib, I purchased it at GFS (Gordon Food Service). It’s a 6 1/4 lb. Prime Rib. It’s already cooked so all I do is reheat it. I had it in the freezer and sat it in the fridge overnight to thaw. Then to prepare it I heated the oven to 425 degrees. Took it out of the package and heated it in a baking pan for 3 1/2 hours at 250 degrees. Removed it from the oven when done and let it rest for 15 minutes.

 

The Prime Rib turned out perfect! So very tender and moist with excellent flavor. Came out a nice Medium Rare. We’ll purchase one from GFS again next time we have one! I sliced off an extra slice. I prepared a plate for a elderly woman who lives up the street. I usually make her a plate of our Holiday Meals and take them to her.

Today’s Menu: Sharp Cheddar and Bacon Turkey Burger w/ Baked Fries

 

 

For Breakfast I had my morning cup of Bigelow Decaf Green Tea. 52 degrees and sunny out today. After my Tea I did a load of laundry. Then after Lunch I got the cart and rake out of the shed and raked the side and back yards. I love getting outside and doing yard work. I worked for a couple of different yard services during the Summertime. I really enjoyed the work, and still do! For Dinner tonight it’s a Sharp Cheddar and Chicken Bacon Turkey Burger w/ Baked Fries.

 

I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need 2 slices but fried 5 slices. Always remember when frying Bacon use the Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fry as you’re preparing it!

 

I had bought a package of the Jennie – O Lean 93% Lean Turkey Burger Patties at Meijer and had them in the freezer. I grabbed a couple of them last night and let it thaw in the fridge overnight. To prepare the Burger I grabbed a skillet, sprayed it with Pam and added 2 teaspoons of Extra Light Olive Oil, heated it on medium heat. When ready I added the Turkey Burger and cooked it for 12 minutes flipping it 3 times. With a minute of cooking time left I added a slice of Kraft Deli Deluxe Sharp Cheddar Cheese. And done!

 

Added the Bacon, Lettuce, some Hellman’s Spicy Chipotle Mayonnaise (my favorite Mayo) and served it on a Aunt Millie’s Live Carb Smart Hamburger Bun. Just love these Burgers, juicy and delicious, and with the Sharp Cheddar and Bacon it makes it that much better! I love this Mayo. The Hellman’s Spicy Chipotle Mayonnaise is nice and creamy with excellent flavor, with a little kick to it!

 

 

 

I also baked some Ore Ida Crinkle Cut Fries. I baked them for 20 minutes and done. Served them with a side of Hunt’s Ketchup. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Fish Sandwich Fillet Sandwich w/ Baked Tater Tots

 

Just a cup of Bigelow Decaf Green Tea to start my morning. Windy, 62 degrees, and rainy out today. After my Tea Mom sent me to Kroger to finish off her list of stuff for Thanksgiving. Hopefully she’s done! As usual it took 3 different electric carts to get everything! This Kroger doesn’t have 1 cart that stays charged. I think it’s a disgrace and disrespectful that a store as big as Kroger is can not provide carts for those of us that handicaps. I’ve called corporate as has the Manager of the Kroger to complain but I guess it falls on deaf ears. I wish there was more options! All we can do is make the best of it! For Dinner tonight I prepared a Fish Sandwich Fillet Sandwich w/ Baked Tater Tots.

 

I haven’t had a Fish Sandwich and Tater Tots in a while and it sounded good for tonight’s Dinner! I used Gorton’s Fish Sandwich Fillets, our favorite! Very easy to prepare. Removed the Fish from the bag. Heated the oven at 425 degrees. Placed the Frozen Fish Fillets in a single layer evenly on a baking sheet. Place the pan on the oven rack. Bake uncovered 15 minutes. I turned the Fish Fillets over halfway through the baking process.

 

These turned out perfect! Golden Brown and nice Flavor to them. I topped the Fish with a slice of Kraft Deli Style Sharp Cheddar Cheese and served it on a Aunt Millie’s Live Carb Smart Hamburger Bun (2 carbs).

 

 

 

 

 

I also baked some Ore Ida Tater Tots as I was baking the Fish. Just baked at 425 degrees for about 20 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Mango/Tea to drink.
