Today’s Menu: Jennie – O OVEN READY™ Boneless Turkey Breast w/ Mashed Potatoes, Shellie Beans, and Dinner Rolls

 

For Breakfast I prepared a bag of Simply Potatoes Seasoned Diced Potatoes, we love these! I also fried a package of Private Selection Double Smoked Bacon along with a cup of Bigelow Decaf Green Tea. A delicious start of the day! I covered all my Tomato and Pepper Plants in case it went to freezing, and it did. I haven’t planted them yet. They are still in the Plant Cups and I have them on a wooden cart. I’ll have to move the cart into the shed as temperatures are going below freezing for the next 2 mornings. In fact it’s going to be snowing overnight and Saturday Morning! Come on Springtime! Hopeful Tuesday I can plant them with the temperatures moving to the 60’s and 70’s. We had another of the Thanksgiving style Dinner tonight! I prepared a Jennie – O OVEN READY™ Boneless Turkey Breast w/ Mashed Potatoes, Shellie Beans, and Dinner Rolls.

 

For the Turkey I used the Jennie – O Oven Ready Skinless Boneless Turkey Breast. Such an easy way to have a moist and fantastic tasting Turkey, along with little to clean-up! Comes in a Jennie O Turkey Breast Oven Ready Bag, that you bake at 375 degrees for about 2 to 3 hour until it reads 165 degrees. The Turkey comes out moist, juicy and delicious, with an excellent flavor! So cooking usually for just myself and Mom, it’s just the right size (2-3 lbs.). Enough leftovers for Dinner tomorrow. I also prepared a Blackberry Glaze, which works great on Turkey or Pork! To make the Blackberry Glaze I’ll need Smucker’s Sugarless Blackberry Jam, Red Wine Vinegar, Splenda Sugar, and Ground Cinnamon. I left the recipe for this at the end of the post.

 

For a side I prepared a package of Bob Evan’s Mashed Potatoes. Just microwave for 6 total minutes and serve, just as good as homemade, if not better. I could make a meal out of just Mashed Potatoes.

 

For a 2nd side I prepared a can of Libby’s Shellie Beans. I had picked up a couple of cans at Meijer. I opened 1 can and added them to a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. I brought the beans to a rolling boil and reduced the heat to low until heated through. These are so good, it’s been a while since I’ve had any. Shellie Beans are Green Beans with added Pinto Beans. I also heated up some of Aunt Millie’s Live Carb Smart Dinner Rolls. These are great for those of us with Diabetes 2, or for anyone who loves good rolls. The Rolls are only 35 calories and 1 carb per roll! That’s right 1 net Carb per roll! So a big thank you to Aunt Millie’s for these! For Dessert later a Jello Sugar Free Dark Cherry Jello.

COOKING INSTRUCTIONS

SLOW COOKER:

Place cooking bag with frozen turkey in the bottom of the slow cooker. Add one cup water to the crock pot. Cut three 1/2 inch slits in top of fool-proof cooking bag. Cook for approximately 3-1/2 hours with the slow cooker in high setting or 5 on low setting.
CONSUMER OVEN:

Preheat oven to 375°F. Remove frozen turkey from white outer package. Do not remove turkey from cooking bag. Place in a roasting pan with at least 2″ high sides.
NOTE:

Do not increase oven temperature. Cooking bag may melt at higher temperatures. Cut three 1/2 inch slits in top of cooking bag. Place pan in oven, allowing room for bag to expand without touching the oven racks or walls. Roast the turkey until a meat thermometer reaches 165°F.
NOTE:

Meat temperature increases rapidly during last hour of cooking. Let turkey rest 10 minutes, cut open top of oven bag. Be cautious of hot steam and juices. Heat gravy as directed on pouch.

INGREDIENTS Nutrition
1⁄2 cup Smucker’s Sugarfree Blackberry Jam
2 tablespoons Red Wine Vinegar
1 tablespoon Splenda sugar substitute
1⁄4 teaspoon Ground Cinnamon

DIRECTIONS
Whisk Blackberry Jam, Red Wine Vinegar, Splenda, and Cinnamon in a small bowl. Then let it chill in fridge until time to serve.

Today’s Menu: Cumin Spiced Pork Chop w/ Loaded Baked Potato Casserole, Shellie Beans and Dinner Rolls

 

For Breakfast I baked a small can of Pillsbury Flaky Biscuits and heated up some Johnsonville Turkey Breakfast Sausage Patties, for a delicious Breakfast Sandwich. I also had a cup of Bigelow Decaf Green Tea. 67 degrees and cloudy out today. Rain moving in late in the day. It’s been a laid back day, not a lot to do today. I caught up on some little jobs in and around the house. For Dinner tonight I prepared Cumin Spiced Pork Chop w/ Loaded Baked Potato Casserole, Shellie Beans and Dinner Rolls.

 

I picked the Center Cut Pork Chops up at Meijer. To to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it, preheat the oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 160°, turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible tasty Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!

 

 

For a side dish I prepared a box of Idahoan Loaded Potato Homestyle Casserole. I love all the Idahoan Potato Products. A very quick and easy way to prepare some delicious piping hot Potato Dishes. A very quick and easy way to prepare some delicious piping hot Potato Dishes.

Today’s Menu: Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob

For Breakfast this morning I prepared 2 Wild Idea Ground Breakfast Sausage Patties, some Simply Potatoes Shredded Hash Browns, i Egg Sunny Side Up, and a cup of Bigelow Decaf Green Tea. Delicious way to start a very cold morning! Overnight we got 1 1/2 inches of snow. But we are lucky that the roads were warm enough to where the snow didn’t stick. Then the high winds dried the streets before the temperature dropped, so no ice or snow on any of the roads. We had a high of 21 but the wind chill kept it to around 11 degrees! After Breakfast I had to go pick up a prescription of mine. Back home, I did a load of laundry. Then cleaned the Microwave and Kitchen. For Dinner tonight it’s a Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob.

 

I bought another of the AdapTable Pork Products at my last visit to Meijer. The Chophouse Seasoned Boneless Pork Ribeye, Seasoned with the Chophouse – Garlic, Onion and Bell Pepper. I’m so happy that Meijer started carrying the AdapTable Products!

 

I’ll be preparing them on the stove in a Cast Iron Skillet. To prepare them I heated one tablespoon of oil in a skillet on medium-high. Cooked the Chops in a covered skillet for 8-9 minutes per side until the product reaches 145°F on a meat thermometer. Remove them from heat, and let them rest for 3 minutes. And serve!

 

 

 

I prepared a Quart Jar of the Canned Green Beans. I cooked them with a piece of Salt Pork in a kettle. Love these Canned Green Beans, they are so fresh tasting! I could have Green Beans every day, love them!

 

 

I also boiled a few Ears of Green Giant Mini Sweet Corn. To prepare them I boiled the Ears until done. Then when ready to eat I sliced the Kernels of Corn off and served it like that. I also had a couple Aunt Millie’s Live Carb Smart Dinner Rolls. We love this Dinner and Sides! For Dessert/Snack later a bowl of Skinny Pop – Popcorn with a Coke Zero to drink.

Today’s Menu: Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. We had a high of 38 degrees and sunny outside today but they say we have another heavy Winter Storm on the way Wednesday Night and Thursday. After my Tea I went to Wendy’s and picked up Breakfast for Mom. Back home I did a load of laundry. Then I took my car up and had it washed and filled it with gas. i stopped by the local Kroger and picked up a couple of bags of Salt for the driveway. For Dinner tonight it’s a Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob.

 

I had a package of 2 AdapTable Chophouse Seasoned Boneless Pork Ribeye, Seasoned with the Chophouse – Garlic, Onion and Bell Pepper in the freezer . I’m so happy that Meijer started carrying the AdapTable Products! Anyway I sat the package in the fridge overnight to thaw.

After Lunch I grabbed my leaf blower out of the shed and went up to a neighbor’s house. I cleaned around her driveway and walkway, she had a lot of leaves. She’s elderly and she’s in the rehab right now. She took a hard fall on her kitchen floor and really got banged up. So I’ve been keeping an eye out on her home for her. CONSUMER OVEN:

Preheat oven to 375°F. Remove frozen turkey from white outer package. Do not remove turkey from cooking bag. Place in a roasting pan with at least 2″ high sides.
NOTE:

Do not increase oven temperature. Cooking bag may melt at higher temperatures. Cut three 1/2 inch slits in top of cooking bag. Place pan in oven, allowing room for bag to expand without touching the oven racks or walls. Roast the turkey until a meat thermometer reaches 165°F.
NOTE:

Meat temperature increases rapidly during last hour of cooking. Let turkey rest 10 minutes, cut open top of oven bag. Be cautious of hot steam and juices. Heat gravy as directed on pouch.

BLACKBERRY GLAZE
INGREDIENTS Nutrition
1⁄2 cup Smucker’s Sugarfree Blackberry Jam
2 tablespoons Red Wine Vinegar
1 tablespoon Splenda sugar substitute
1⁄4 teaspoon Ground Cinnamon

DIRECTIONS
Whisk Blackberry Jam, Red Wine Vinegar, Splenda, and Cinnamon in a small bowl. Then let it chill in fridge until time to serve.

Today’s Menu: Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob

 

For Breakfast this morning I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam and had a cup of Bigelow Decaf Green Tea. Rained out all day. We had a high of 45 degrees. I did a load of laundry after Breakfast and after that nothing! I was caught up on everything so it was relaxing all day. Caught up on some shows I had recorded. For Dinner tonight it’s a Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob.

 

I had a package of 2 AdapTable Chophouse Seasoned Boneless Pork Ribeye, Seasoned with the Chophouse – Garlic, Onion and Bell Pepper in the freezer . I’m so happy that Meijer started carrying the AdapTable Products! Anyway I sat the package in the fridge overnight to thaw.

 

I’ll be preparing them on the stove in a Cast Iron Skillet. To prepare them I heated one tablespoon of oil in a skillet on medium-high. Cooked the Chops in a covered skillet for 8-9 minutes per side until the product reaches 145°F on a meat thermometer. Remove them from heat, and let them rest for 3 minutes. And serve!

 

 

 

 

I prepared a Quart Jar of the Canned Green Beans. I cooked them with a piece of Salt Pork in a kettle. Love these Canned Green Beans, they are so fresh tasting! I could have Green Beans every day, love them!

 

 

 

 

 

I also boiled a few Ears of Green Giant Mini Sweet Corn. To prepare them I boiled the Ears until done. Then when ready to eat I sliced the Kernels of Corn off and served it like that. I also had a couple Aunt Millie’s Live Carb Smart Dinner Rolls. For Dessert/Snack later a bowl of Skinny Pop – Popcorn with a Diet Peach Snapple to drink.

Today’s Menu: Boneless Pork Loin Chops w/ Cut Green Beans, Whole Kernel Sweet White Corn and Baked Dinner Rolls

 

For Breakfast I had some Simply Potatoes Southwestern Style Shredded Hash Browns, 2 Links of Johnsonville Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. Rainy and gloomy out all day, we had a high of 72 degrees. I was going to run to the store for Mom but I didn’t want to go out in the weather so I made a delivery order from Meijer for her. With the Virus picking back up I try to limit my visits to the grocery stores. Just did a few chores on the inside today. For Dinner tonight I prepared Boneless Pork Loin Chops w/ Cut Green Beans, Whole Kernel Sweet White Corn and Baked Dinner Rolls.

 

While at Meijer I had picked up a package of AdapTable Meals – Roasted Garlic and Herb Pork Loin Chops, Seasoned With: Garlic, Onion, Tomato and Olive Oil. These are easy to prepare and so Delicious! I’ll be preparing them by Skillet.

 

To prepare them I heat one tablespoon of Cooking Olive Oil in a skillet on medium-high. I cooked the chops in a covered skillet for 2 1/2 minutes per side until it reaches 145°F on my meat thermometer. Removed from the heat, let them rest for 3 minutes. These came out Delicious! Very well seasoned, tender and moist as always.

 

These came out just as Delicious as the other ones we tried! Seasoned just right and the Chops came out moist and juicy! You have to give the AdapTable Products a try!

 

 

 

 

 

 

For a side I heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I just love Green Beans, all Beans!

 

Then for a second side it was a can of Green Giant Whole Kernel Sweet Corn. Just emptied the Corn into a small saucepan and heated to a boil, and served! Very good Sweet Corn. I also heated up some Aunt Millie’s Live Carb Smart Dinner Rolls. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Boneless Pork Ribeye Chop w/ Red Beans and Mashed Potatoes

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. Sunny and 82 degrees outside today. We are being spoiled with all this perfect weather of late! After my Tea I went to Lowe’s to look for a few things, nothing found though. Back home I got the cart out and rode around the neighborhood, enjoying the beautiful day. For Dinner tonight I prepared a Boneless Pork Ribeye Chop w/ Red Beans and Mashed Potatoes.

 

I had a package of the AdapTable Chophouse Seasoned Boneless Pork Ribeye Chops in the freezer, sat it in the fridge overnight to thaw. The Chops comes Seasoned with Garlic, Onion and Bell Pepper. I’m so happy that Meijer started carrying these AdapTable Pork Products!

For one side I prepared a can of Bush’s Chili Beans – Red Beans in Medium Chili Sauce. Easy to prepare; Just open the can and empty it into a small sauce pan. Heat to low boil then reduce the heat and simmer until heated through. And done!

 

For another side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Being a Potato Lover I think Potatoes are meant for every meal! I also had a Aunt Millie’s Live Carb Smart Dinner Roll, love these fresh and 1 carb! For Dessert/Snack later a bowl of Smart Pop – Popcorn with a Diet Dr. Pepper to drink.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 91 degrees and humid outside today. We need rain bad here, everything drying up again! Not a lot going on today. I took an elderly neighbor to Kroger, he no longer has a drivers license. Back home took care of small jobs around the house. For Dinner tonight it’s a Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob.

 

I purchased a 2 Chop package of the AdapTable Pork Products on my last visit to Meijer. The Chophouse Seasoned Boneless Pork Ribeye, Seasoned with the Chophouse – Garlic, Onion and Bell Pepper. I’m so happy that Meijer started carrying the AdapTable Products!

 

I’ll be preparing them on the stove in a Cast Ron Skillet. To prepare them I heated one tablespoon of oil in a skillet on medium-high.
