Today’s Menu: Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese

 

 

 

For Breakfast I had a toasted Thomas Light English Muffin topped with Smucker’s Sugar Free Blackberry Jam and a cup of Bigelow Decaf Green Tea. 28 degrees, windy, cloudy and snow flurries out today. It snowed about a 1inch overnight again, with more on the way. Did some things around the house. For Dinner tonight it’s the perfect Winter’s Day Comfort Food! I prepared Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese.

 

 

The wind was really blowing out there today so what better for Dinner than Potato Soup with a Grilled Cheese! I’ve always loved Soup and the Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is one of my favorites! Easy to prepare item; just empty the contents of the can into a sauce pan and heat. Heated it on medium low heat, stirring often. I love a thick and hearty Soup and this one is perfect. Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is one of the best there is, at least to me.

 

 

Then for my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Cover; microwave on high for 3 1/2 minutes or until hot, stirring once during heating. Careful, keep covered 1 minute. Stir before serving. Promptly refrigerate any unused portion in separate container. Recommend use by date on can end. Store unopened can at room temperature.

For Breakfast I had a cup of Bigelow Decaf Green Tea. 77 degrees and sunny out today. I went to Meijer after I had my Tea. Just needed a few items and then stopped at McDonald’s and picked up Breakfast for Mom. Did a few things around the house and then got the cart out of the shed and enjoyed this beautiful day! For Dinner tonight it’s all Comfort Food! I prepared Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese.

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 78 degrees and cloudy out today. After Tea I took Mom out to Ross, Ohio to pick up fresh Corn, Green Beans, and Tomatoes. On the way home she wanted to stop by Jungle Jim’s Market also. Back home I took my car up and had it washed and then I vacuumed the inside out. Back home just did a few small chores around the house. For Dinner tonight its a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

 

 

Mom or myself just wasn’t that hungry today. So I wanted something easy to prepare, and what can be easier than making a Sandwich and having some Potato Chips! I had purchased some of the Boar’s Head London Broil Cap-Off Top Round Oven Roast Beef from Kroger. It was a beautiful cooked medium rare and too good too sit in the fridge for long! So for my Sandwich I’ll be using the Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Mike Sell’s Reduced Fat Potato Chips with some Lay’s Ranch Dip. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Stick Pretzels along with a Diet Dr. Pepper to drink.

Today’s Menu: Bison Steak, Eggs, Hash Browns, and Toast Breakfast

 

 

 

To start my Morning off I had a cup of Bigelow Decaf Green Tea. 98 degrees and sunny out today. After Breakfast I went and picked up Breakfast for Mom at McDonald’s. Back home did a couple of loads of laundry and did some light cleaning around the house. It just felt like a Breakfast for Dinner night tonight! I prepared a Bison Steak, Eggs, Hash Browns, and Toast for Dinner tonight.

 

For my Steak I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. I it came out a perfect medium rare! It was so tender and juicy.

 

 

Next I used the same skillet and I prepared a Sunny Side Up Egg. Fried it on medium low, seasoned with Morton’s Lite Salt and Ground Black Pepper.

 

 

As the the Steak and Egg were cooking, in another skillet I prepared some Simply Potatoes Shredded Hash Browns. I love these, I could have them every day! Again I used a small skillet, sprayed it with Pam Cooking Spray, added 1 tablespoon of Extra Light Olive Oil, and heated it on medium heat. I fried these for 14 minutes. When done I sprinkled some Sargento Off the Block 4 State Sharp Cheddar Cheese.

 

Finally I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. Topped them with some I Can’t Believe It’s Not Butter. I had one hearty Comfort Food Dinner tonight! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels along with a Diet Peach Snapple to drink.

Today’s Menu: Buffalo Burger Patty Melt w/ Baked Fries

 

 

 

For Breakfast this morning I toasted a Thomas Light English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. 91 degrees, and mostly sunny, very humid out. After Breakfast I went to Walmart and then Menards. Back home finished up some yard work in the backyard. For Dinner tonight I prepared a Buffalo Burger Patty Melt w/ Baked Fries.

 

To make my Burger I’ll be needing a Wild Idea 1/3 pound Buffalo Burger Patty, Wild Idea Buffalo Omnivore Salt, Boar’s Head Fully Cooked Bacon, Pam Non Stick Cooking Spray, Blue Bonnet Butter, and Aunt Millie’s Light Whole Grain Bread. When it’s any type of Buffalo Burger it’s always the Wild Idea Buffalo 1/3-Lb Burgers. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated the Cast Iron Flat-Top Griddle that I sprayed with Pam Cooking Spray and heated on medium heat. As it was heating I seasoned my Burger with the Wild Idea Buffalo Omnivore Salt.

 

With the Griddle heated I added my Burger. As the Burger was cooking I added a few slices of Boar’s Head Fully Cooked Bacon, just heated it up on the Griddle for 1 minute. I fried my Burger about 3 1/2 minutes per side. After I flipped the Burger I added a slice of Kraft Sharp Cheddar Cheese on top. As the Burger was cooking I had added some Butter on the other half of the Griddle. I took 2 slices of the Bread and grilled both slices, flipping it once.

 

As the Burger finished I took the Burger and added to a slice of the Bread, added the Bacon on top and added the other slice of Bread.Continued cooking it 1 minute and done! This made one delicious Buffalo Burger Patty Melt. The Cheese and Bacon just added to the juicy Burger flavor! Excellent Burger.

 

I also baked some Ore Ida Crinkle Cut Fries, served these with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

Today’s Menu: Loaded Potato Hearty Soup and a Grilled Cheese

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 97 degrees and humid outside. Not much going on outside due to the humidity and a high Pollen Count. From what they say we are in for a run mid 90’s or higher weather for at least a week. I took Mom to the Bank and Post Office, stopped and got gas before heading home. Too hot and humid to do much of anything outside! Did a load of laundry and cleaned the fridge later on. For Dinner tonight I prepared Loaded Potato Hearty Soup and a Grilled Cheese.

I wanted something light for Dinner so Soup and Grilled Cheese seemed perfect! I’m trying the Idahoan Loaded Potato Hearty Soup. It comes in a packet and easy to prepare. I’ll be preparing the Soup on the stovetop. Start by heating 4 cups of water to a boil in a 2 quart pot. Whisk in the contents of one pouch of soup all at once. Reduce heat and simmer uncovered for 5 min, stirring occasionally. Remove the pot from heat and let stand 5 min to cool slightly before serving.

Really a very good Potato Soup! I topped it off with Sargento Off the Block 4 State Cheddar Cheese. Plenty of Potatoes and the Soup had excellent Seasoning. I’ll be adding this to the Pantry!

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 64 degrees and thunderstorms on and off all day. Not real active today, my sinuses are going crazy today! This weather has been rough on them. I had a headache most of the day so I just took it easy. For Dinner tonight its a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

 

 

 

 

 

I wanted something easy to prepare, and what can be easier than making a Sandwich and Chips! I had purchased some of the Boar’s Head London Broil Cap-Off Top Round Oven Roast Beef from Kroger. It was a beautiful cooked medium rare and too good too sit in the fridge for long! So for my Sandwich I’ll be using the Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Meijer Reduced Fat Potato Chips with some Lay’s Ranch Dip. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Stick Pretzels along with a Coke Zero to drink.

For Breakfast this morning I had a Poached Egg served on a toasted Thomas Light English Muffin. Also had my morning cup of Bigelow Decaf Green Tea. 75 degrees and mostly sunny out today, but very windy! Wow what a night last night! Severe Storms move in about 10:30 last night. We had winds of 70-80 mph come through and rain so heavy you couldn’t see the house next door! We were very lucky we didn’t lose power or have any damages like a lot of areas here. They had about 75,000 people without power. My Cousin who lives in nearby Fairfield won’t have power until around 5:00 in the morning on Friday. Some places were hit hard by straight line winds and Tornados. As I said we were hit hard but lucky, it could have been a lot worse. Today’s Menu: Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese

 

 

For Breakfast I had a toasted Thomas Light English Muffin topped with Smucker’s sugar Free Blackberry Jam and a cup of Bigelow Decaf Green Tea. Partly cloudy and a high of 81 degrees. I had to be at Kroger to pick up groceries I had ordered on line at 9:00 this morning. They bring it to the car and load it up. Not much else to do today so I hooked up the portable vacuum and vacuumed my car then Mom’s car. Then grabbed the Windex, paper towel, and squeegee and cleaned the inside windows of both cars. Still in isolation here in Ohio! For Dinner tonight its all Comfort Food! I prepared Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese.

 

I wanted something a lighter for Dinner and Potato Soup with a Grilled Cheese sounded pretty good! I’ve always loved Soup and the Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is one om favorites! Another easy to prepare item; just empty the contents of the can into a sauce pan and heat. Heated it on medium low heat, stirring often. I love a thick and hearty Soup and this one is perfect. Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is one of the best there is, at least to me.

 

 

Then for my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Do not add water. Stove: Pour soup into medium saucepan. Heat slowly until hot, stirring occasionally. Microwave: Pour soup into medium microwave-safe bowl or 2 individual microwave-safe bowls. Cover; microwave on high for 3 1/2 minutes or until hot, stirring once during heating. Careful, keep covered 1 minute. Stir before serving. Promptly refrigerate any unused portion in separate container. Recommend use by date on can end. Store unopened can at room temperature.
