Today’s Menu: Breakfast for Dinner w/ Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast

 

 

 

To start my day off I prepared a Jimmy Dean Scramble Cup – Crumbled Turkey Sausage, Shredded Cheddar Cheese, Egg Whites. Also had my morning cup of Bigelow Decaf Green Tea to get this morning started. Rain and thunderstorms passing by most of the day, high of 77 degrees. Got the leaf blower and cleaned off the driveway and then swept the shed out. After Lunch I had to trim the vines along the driveway, these grow way too fast! For dinner tonight its a Breakfast Menu! I prepared Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast.

 

 

 

 

 

Nothing like a hearty, healthy, and delicious Breakfast for Dinner too! I’ll need one Egg, Simply Potatoes Shredded Hash Browns, a couple of Jennie – O Turkey Breakfast Sausage Links, and 2 slices of Aunt Millie’s Light Whole Grain Bread.

 

 

 

 

 

 

So I got out a couple of small skillets and got the toaster ready. Heated up both skillets, sprayed with Pam Cooking Spray in both and added Extra Light Olive Oil to one of them. In the skillet with no Oil I started to fry the Jennie – O Turkey Sausage Links. The skillet with Oil, I prepared the Simply Potatoes Hash Browns. When both were cooked I put each one into separate bowls and set aside.

 

 

 

 

 

Then I started toasting the Bread. Next in the skillet that had the Hashbrowns, I fried my Sunnyside Up Egg. Seasoning the Egg with Morton’s Lite Salt and Ground Black Pepper. When the Toast was done I buttered both slices with I Can’t Believe It’s Not Butter. As the Egg was ready I grabbed a plate and plated everything! And what a Breakfast Dinner! Eggs, Hash Browns, Turkey Sausage, and Toast. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Hardwood Smoked Turkey Franks w/ Fettuccini

 

 

For Breakfast this morning I made a couple of slices of French Toast. Made using aunt Millie’s Light Whole Grain Bread, Egg Beater’s, 2% White Milk, Ground Nutmeg, and Ground Cinnamon. For the toppings I used Log Cabin Sugar Free Maple Sugar and I Can’t Believe It’s Not Butter. I also fried up a couple Johnsonville Turkey Breakfast Sausage Links and had a cup of Bigelow Decaf Green Tea. outside another day of passing showers and thunderstorms and a high around 82 degrees. Not much going on today. After Lunch went to the ATM and stopped and got gas. Gas is at $2.90 a gallon around here! Between Gas and the ever rising prices of food, you just can’t get ahead. For Dinner tonight its Hardwood Smoked Turkey Franks w/ Fettuccini.

 

 

 

 

For the Turkey Franks I used the Butterball Hardwood Smoked Turkey Sausage. I cut the Sausage Links into 1/4 the 2 links. I’ll use the leftovers for Breakfast or Lunch. I absolutely love the Butterball Hardwood Smoked Turkey Sausage and I had been wanting some for a while. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a 1/2 tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out just bursting with flavor and flat-out delicious! It will go perfect with the Fettuccini!

 

 

 

 

Tried a a new Fettuccini, Knorr Pasta Sides – Chicken Flavor Fettuccini. The Fettuccini comes in a packet already seasoned with the Chicken Flavor Sauce. I added Water and I Can’t Believe It’s Not Butter.

 

 

 

 

 

 

To prepare it; I grabbed a medium saucepan and sprayed it with Pam Non Stick Cooking Spray. Added 2 cups water and 1 Tbsp. of I Can’t Believe It’s Not Butter and brought it to a boil. Stirred in contents of the package. Continued boiling for 7 minutes or until the Pasta was tender, stirring occasionally. Let stand at least 2 minutes. Stir and serve. Added a shake of Morton’s Lite Salt to it. Fantastic pasta and the Sauce was very flavorful. Good item to have in the pantry. Would go perfect with Pork or Chicken. Also had a Buttered slice of Aunt Millie’s Light Whole Grain Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Fried Bologna Sandwich /w Hash Browns topped with Cheddar Cheese

 

 

 

To start the day off I Scrambled a couple of Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and 68 degrees out today. After Breakfast I headed out to Meijer for a few items. Then I stopped by McDonald’s and picked up Breakfast for Mom. Got a good night’s sleep last night, NO Phantom Pains! Back home I got the cart out of the shed and did some yard work. Then grabbed the leaf blower and cleaned off the deck and driveway areas. For Dinner tonight some good old Baloney! I prepared a Fried Bologna Sandwich /w Hash Browns topped with Cheddar Cheese.

 

 

 

 

I seen some pictures from a website about Bologna and a Fried Bologna Sandwich. It looked so good my mouth was watering. So I was determined to have that for my Dinner tonight! To make I’ll need some Kahn’s Deluxe Bologna, Kraft Deli Deluxe Sharp Cheddar Sliced Cheese, Kraft Reduced Fat Olive Oil Mayo, and Aunt Millie’s Light Whole Grain Bread. A note on the Kraft Cheese – I finally found a place that sells the Kraft Deli Style Sharp Cheddar Cheese, Jungle Jim’s International Market! I though I was going to have to find a new Cheese since Meijer stopped selling it but I have found it at Jungle Jim’s!

 

 

 

 

 

To prepare it I grabbed a small skillet and lightly sprayed it with Pam Non Stick Cooking Spray then heated the skillet on medium heat. as the skillet heated I got the Bologna and Cheese ready. Also as the skillet heated I toasted my Bread, Aunt Millie’s Light Whole Grain Bread. When I buy Lunch Meat, like the Kahn’s Bologna, I always have them slice it as then as the can. Reason being I have Diabetes 2 and having it sliced so thin I can pile it up and not have as many calories as a regular slice of meat. It also looks like your getting more than what you really are. Moving on, I got 5 slices of the Bologna and placed it in the heated skillet. Cooked it for about 4 minutes and flipped it over to cook another 4 minutes. With about a minute left I added the Kraft Sharp Cheese.

 

 

 

 

To make the Sandwich I got my toasted Bread and on the bottom slice I added the Kraft Mayo, I used a good amount of it. Then added the Bologna and Cheese and topped with the other toasted slice of Bread. And done! Oh I’ve been wanting a Fried Bologna Sandwich for a while and this looks so good!

 

 

 

 

 

 

As my Bologna was cooking I had started to make my Hash Browns. I used Simply Potatoes Shredded Hash Browns. To prepare these just use a small skillet and give it a light spray of the Pam Non Stick Cooking Spray, add a tablespoon of Extra Light Olive Oil, and heat the skillet on medium. When heated add the amount of Hash Browns you want, season with Salt and Ground Black Pepper to taste. Fried for 5 minutes and flipped them over. Seasoned again the salt and Pepper. Remove from the heat and plate them and add your Cheese. I used Sargento Reduced Fat Shredded Sharp Cheddar Cheese. These Has Browns with Fried Bologna Sandwich has hit spot! I couldn’t eat fast enough! Really enjoyed the Dinner. For Dessert/Snack later a small bag of Snyder’s 100 Calorie Stick Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

 

For Breakfast this morning I prepared a Breakfast sandwich. I heated up a al fresco Chicken Sausage Patty. As that was heating I toasted a Thomas Light 100% Multi Grain English Muffin. I took the Patty put it between the Muffin halves and topped the Patty with a 1/2 slice of Kraft Deli Style Sharp Cheddar Cheese. These are so good! After Breakfast I went to Kroger for Mom, she wanted some Lunch Meat. I stopped by McDonald’s to pick up her usual Breakfast of a Sausage, Egg, and Cheese on Bagel along with a medium Decaf Coffee. Got the cart out of the shed after Lunch along with a rake and the leaf blower. I went around the house and cleaned the flower beds and around the house. Not bad out today, mostly sunny and 50 degrees. For Dinner tonight its a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

 

 

 

 

I had fully intended to prepare a Pork Roast for Dinner tonight, until I went to Kroger. I had went to the Deli to purchase some Kahn’s Bologna and Boar’s Head Sweet Slice Ham, which I did. But I seen them slicing some Boar’s Head London Broil Cap-Off Top Round Oven Roast Beef and it looked way to good to pass up! It was a beautiful Rare and it was on sale. So the menu changed tonight to a Roast Beef and Vermont Cheddar Sandwich! So for my Sandwich I’ll be using the Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Helluva French Onion Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Mango Snapple to drink.

I had a Jimmy Dean Simple Scrambler Cup – Turkey Sausage Crumbles, Egg Whites, and Cheddar Cheese for Breakfast. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

 

 

 

 

 

 

I wanted something light for Dinner so a Sandwich seemed right, a Roast Beef and Vermont Cheddar Sandwich! I had picked up some Boar’s Head Rare London Broil at Jungle Jim’s yesterday. For my Sandwich I’ll be using the always delicious Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Helluva French Onion Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

Today’s Menu: Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese

 

 

 

 

For Breakfast I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Outside the weather isn’t quite as bad, but it was still about minus 1 this morning. It became sunny and a high of 21 degrees. I was able to get out a bit today. Cleared off both of snow and started both and let them run for a few minutes. Threw some salt out on part of the driveway that had ice on it. Later on caught up on a couple of movies that I recorded. For Dinner tonight its all Comfort Food! I prepared Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese.

 

 

 

 

With the Weather still bad it just seemed like a perfect day for Soup and Grilled Cheese! For my Soup I heated up a can of Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits. Another easy to prepare item; just empty the contents of the can into a sauce pan and heat. Heated it on medium low heat, stirring often. I love a thick and hearty Soup and this one is perfect. Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is the best there is, at least to me.

 

 

 

 

 

Then for my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Directions

Today’s Menu: Breakfast for Dinner w/ Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast

 

 

I made a Breakfast sandwich to start my Sunday Morning off. I toasted a Thomas Light 100% Multi Grain English Muffin. Then I lightly fried 4 slices of (thin sliced) Boar’s Head Sweet Slice Ham. As the Ham was cooking I scrambled some Egg Beater’s Egg Whites and topped the Egg Whites with Sargento Off the Block Shredded Mozzarella. Piled all that on to the toasted English Muffin and I had one delicious Breakfast Sandwich! Outside today it was partly sunny and 28 degrees. After I ate I went to McDonald’s and picked up Breakfast for Mom. After ward she went to Church. I did a few things around the house and then I laid back down for the afternoon. I had a very bad Sinus Headache. So not much going on. For dinner tonight its a Breakfast Menu! I prepared Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast.

 

 

 

 

Nothing like a hearty, healthy, and delicious Breakfast for Dinner too! I’ll need one Egg, Simply Potatoes Shredded Hash Browns, a couple of Jennie – O Turkey Breakfast Sausage Links, and 2 slices of Aunt Millie’s Light Whole Grain Bread. First time I had found the Jennie – O Turkey Breakfast Sausage Links at Meijer in a while.

 

 

 

 

 

So I got out a couple of small skillets and got the toaster fired up. Heated up both skillets, sprayed with Pam Cooking Spray in both and added Extra Light Olive Oil to one of them. In the skillet with no oil I started to fry the Jennie – O Turkey Sausage Links. The skillet with Oil, I prepared the Simply Potatoes Hash Browns. When both were cooked I put each one into separate bowls and set aside.

 

 

 

 

 

 

Then I started toasting the Bread. Next in the skillet that had the Hashbrowns I fried my Egg. Seasoning the Egg with Morton’s Lite Salt and Ground Black Pepper. When the Toast was done I buttered both slices with I Can’t Believe It’s Not Butter. As the Egg was ready I grabbed a plate and plated everything! And what a Breakfast Dinner! Eggs, Hash Browns, Turkey Sausage, and Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Today’s Menu: Egg Sandwich and Hash Brown

 

 

To start my morning off I had a cup of Bigelow Decaf Green Tea, just hungry this morning. Had just a trace of frost this morning. I wish we would get a freeze so it would kill off some of ragweed, it would be a lot better for my allergies! Sunny and 53 degrees out today. After Breakfast I went up the road to the nearby Kroger for a few items and my regular stop at McDonald’s to pick up Breakfast for Mom. Spent most of the day in the Kitchen. Baked some Pillsbury Halloween Cookies for all my cousins little ones. I also got their Halloween Bags ready for them. Then both Mom and me had been wanting some Pig in the Blankets so I picked up the ingredients for them. They are great to snack on!. I used Turkey Sausages and a can of Pillsbury Reduced Calorie Crescent Rolls to make them. So for Dinner tonight it’s an Egg Sandwich and Hash Browns.

 

I love Egg Sandwiches! hadn’t made for quite a while. And made a couple a while back and been having them more often. To make it all I’ll need is 2 Eggs, Salt and Pepper, a slice of Kraft Sharp Cheddar, a bit of Blue Bonnet Light Butter, and 2 slices of Aunt Millie’s Light Whole Grain Bread. Just get a mixing cup or coffee cup and crack open both Eggs into it. Season it with the Salt and Pepper and whisk it all together.

 

 

 

 


Heat a small skillet on medium heat, I sprayed it with Pam Cooking Spray. I added the Butter, and when heated added the Egg Mixture. Fry it till the bottom browns and flip it. I then added my slice of Cheese on top of it. Cook until dome, and it’s ready! You can toast the Bread if you like, I didn’t toast mine.

 

 

 

 


To go with my Egg Sandwich I prepared some Simply Potatoes Shredded Hash Browns, which I love having anytime. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and Diet Peach Snapple to drink.

Today’s Menu: Smoked Turkey, Sweet Slice Ham, and Swiss Cheese Grilled Sandwich w/ Baked Fries

 

 

To start my Sunday morning off I prepared Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. Mom had Breakfast here and then on to Church. Partly cloudy and 73 degrees outside today. I went Walmart Lawn and Garden Center. I was looking for some medium size plant pots. I also picked up a couple of hanging Mum Baskets. After Lunch, spent the day watching NFL Football. For Dinner tonight I prepared a Smoked Turkey, Sweet Slice Ham, and Swiss Cheese Grilled Sandwich w/ Baked Fries.

 

 

A Grilled Sandwich for Dinner tonight sounded perfect for Dinner tonight. I used Boar’s Head Meat and Cheese along with Baked fries! To make my Sandwich I’ll need; Aunt Millie’s Light Whole Grain Bread, Boar’s Head Hickory Smoked Black Forest Turkey, Boar’s Head Sweet Slice Boneless Smoked Ham, Boar’s Head Swiss Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, and French’s Spicy Brown Mustard.

 

 

 


I used a flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries.

 

 

 

 

While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Aunt Millie’s Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, Boar’s Head Smoked Turkey slices, the Boar’s Head Swiss Cheese, French’s Spicy Mustard, and added the top slice of the Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! I love Grilled Sandwiches!

 

 


I had already preheated the oven, so as the Sandwich was finishing cooking I baked my Fries, I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Smoked Turkey, Sweet Slice Ham, and Smoked Gouda Grilled Sandwich w/ Baked Fries

 

 

I had a good night’s sleep last night, no Phantom Pains! For Breakfast this morning I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin, lightly fried an al fresco Country Style Chicken Sausage Breakfast Patty, and had a cup of Bigelow Decaf Green Tea. Outside more much needed Rain. A lot cooler than normal this time of year, 77 degrees and still humid though. After Breakfast I started a couple of loads of laundry up. Mom went on to Church. Then I started house cleaning, dusted and vacuumed. Had everything done and caught up on some shows I had recorded. For Dinner Tonight I prepared a Smoked Turkey, Sweet Slice Ham, and Smoked Gouda Grilled Sandwich w/ Baked Fries.

 

I wanted a Grilled Sandwich for Dinner tonight so what better than a Grilled Sandwich using Boar’s Head Meat and Cheese along with Baked fries! To make my Sandwich I’ll need; Aunt Millie’s Light Whole Grain Bread, Boar’s Head Hickory Smoked Black Forest Turkey, Boar’s Head Sweet Slice Boneless Smoked Ham, Boar’s Head Smoked Gouda, Pasteurized Process Gouda and Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, and French’s Spicy Brown Mustard.
