Today’s Menu: Grilled Cheese and Baked Fries

 

 

I just had a cup of Bigelow Decaf Green Tea for Breakfast this morning. I had to have Mom at the Eye Doctor at 9:00. They had to check Mom’s right eye that had the cataract removed, everything looked great! She has the left one done next week. 82 degrees, humid, and thunderstorms outside today. Cleaned the house today, ran the vacuum and dusted. I bought a couple of Sweet Pepper plants and both are loaded with small Peppers coming in. Also have Sweet Basil, Chives, and Rosemary growing. For Dinner Tonight I’m having a Grilled Cheese and Baked Fries.

 

 


Not feeling real good this afternoon. I had a Dinner in mind but I’m keeping it simple tonight, I prepared a Grilled Cheese and Baked Fries. To make my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Aunt Millie’s Light Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Oh, nothing like a good and toasty Grilled Cheese sometimes!

 


To go with the Grilled Cheese I baked up some Alexia Organic Yukon Select Fries. Seasoned them with Morton’s Lite salt and Ground Black Pepper. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right.! Plus they are only 120 calories and 15 net carbs. Served with a side of my favorite Ketchup, Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

For Breakfast this morning I prepared 2 Eggs Scrambled, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, heated up some Johnsonville Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. I sprinkled some Sargento Reduced Fat Colby-Jack Shredded Cheese and Ortega Chipotle Taco Sauce on my Scrambled Eggs. I buttered the Toast with I Can’t Believe It’s Not Butter. Great Breakfast to start the day off with! Outside its Hot and Humid! A high of 98 degrees and the Heat Index had it over 100 degrees! They say we 4-5 days of this with each day getting hotter before cooling down a bit. But after last Winter I’m not complaining! Did some housework and cleaned up a bit outside. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

 

For my Sandwich I’ll be using the Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Dean’s Ranch Dressing Dip. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Bison Steak, Eggs, Hash Browns, and Toast Breakfast

 

 

To start my Sunday off I just had a cup of Bigelow Decaf Green Tea. After my Tea I went and picked up Breakfast for Mom at McDonald’s. Finished up some light cleaning around the house. Then after Lunch went and got gas and went to the ATM. On the way home I stopped by a friend of mine I hadn’t seen in a while, good catching up! Lot of rain on and off throughout the day. Felt like having a Big Breakfast for Dinner tonight. I prepared a Bison Fillet, an Egg Sunny Side Up, Hash Browns, and Toast!

 

 

For my Steak I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. I it came out a perfect medium rare! It was so tender and juicy.

 

 

 

Next I used the same skillet and I prepared a Sunny Side Up Egg. Fried it on medium low, seasoned with Morton’s Lite Salt and Ground Black Pepper.

 

 

 

 

 

Simply Potatoes Hash Browns

As the the Steak and Egg were cooking, in another skillet I prepared some Simply Potatoes Shredded Hash Browns. I love these, I could have them every day! Again I used a small skillet, sprayed it with Pam Cooking Spray, added 1 tablespoon of Extra Light Olive Oil, and heated it on medium heat. I fried these for 14 minutes. When done I sprinkled some Sargento Reduced Fat Shredded Sharp Cheddar Cheese.

 

 

 

 


Finally I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. Topped them with some I Can’t Believe It’s Not Butter. Had a glass of 2% White Milk to drink. I had one hearty Comfort Food Dinner tonight! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Roast Beef and Vermont Cheddar on Whole Grain w/ Tossed Salad

 

 

It was a very long evening and morning for me. As I battled Phantom Pains throughout that time. I didn’t get much sleep if any overnight as the pains were very intense. Why can’t they come up with something to control them. But for now all I can do is grit my teeth and hope they pass. When they finally slowed and stopped I didn’t do a whole lot of anything today but try to catch up on some sleep and relaxation. For Dinner I wanted something that didn’t take a lot of effort to prepare so I went with a Roast Beef and Vermont Cheddar on Whole Grain with a Tossed Salad.

 

 

On our visit to Jungle Jim’s International Market I picked up a few Boar’s Head items from the Deli, Boar’s Head, Deluxe Roast Beef, Honey Smoked Turkey, Sweet Sliced Ham, and Vermont Cheddar Cheese (Yellow). I’m using the Roast Beef and Vermont Cheddar. I served it on Aunt Millie’s Light Whole Grain Bread, topped it with some French’s Yellow Mustard. I also had a small side of Ruffle’s Reduced Fat Potato Chips.

 

 

 

I also had a Tossed Salad. I had a bag of Dole Greener Selection Salad. For the Salad Dressing I used Kraft Fat Free Classic Catalina Dressing along with a sprinkle of Oscar Mayer Real Bacon Pieces. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

For Breakfast this Morning I had a cup of Bigelow Decaf Green Tea. At 10:30 this morning we had to be over at the office of where Dad is staying. We are applying for Medicade for Dad. They seem to want everything you have but your first-born children. Hope we get it worked out, very stressful! Rain showers this morning and very windy. There’s a lot of flooding all over the area, even had a Tornado watch last night. Very windy and a of 40 today, but the wind chill made it about 30. For Dinner tonight I wanted some Breakfast! So Breakfast it is, I prepared Ham, Eggs, Hash Browns, and Toast.

 

 

Breakfast for Dinner sounded perfect for Dinner tonight! I sliced up the rest of our Ham off the bone, I had prepared the Ham the day before. The Ham is so moist and delicious! We used Cook’s Bone In Ham. To prepare it I used a small skillet, sprayed it with Pam Cooking Spray, and heated it on medium heat. I then took a few slices of it and reheated it i tin the skillet for about 5 minutes. I love this Ham! It has such good flavor, perfect for Breakfast or Dinner.

 

 

 

Next I used the same skillet and I prepared a Sunny Side Up Egg. Fried it on medium low, seasoned with Morton’s Lite Salt and Ground Black Pepper.

 

 

 

As the the Ham and Egg were cooking, in another skillet I prepared some Simply Potatoes Shredded Hash Browns. I love these, I could have them every day! Again I used a small skillet, sprayed it with Pam Cooking Spray, added 1 tablespoon of Extra Light Olive Oil, and heated it on medium heat. I fried these for 14 minutes. When done I sprinkled some Sargento Reduced Fat Shredded Sharp Cheddar Cheese.

Today’s Menu: Egg Sandwich and Hash Browns

 

 


For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with some Smucker’s Sugar Free Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and 45 degrees for a high outside today. After Breakfast I went to Meijer for a few items. On the way back I stopped by the ATM and stopped and got gas. Back home I was all caught up on everything. Did some work on the computer for a while. For Dinner tonight it’s an Egg Sandwich and Hash Browns.

 

 


I love Egg Sandwiches! hadn’t made these in years until a while back and enjoyed it so much I’m going to have it more often. To make it all I’ll need is 2 Eggs, Salt and Pepper, a slice of Kraft Sharp Cheddar, a bit of Blue Bonnet Light Butter, and 2 slices of Aunt Millie’s Light Whole Grain Bread. Just get a mixing cup or coffee cup and crack open both Eggs into it. Season it with the Salt and Pepper and whisk it all together.

 

 

 


I heated a small skillet on medium heat, I sprayed it with Pam Cooking Spray. I added the Butter, and when heated added the Egg Mixture. Fry it till the bottom browns and flip it. I then added my slice of Kraft Deluxe Sharp Cheddar Cheese on top of it. Cook until done, and it’s ready! You can toast the Bread if you like, I didn’t toast mine.

 

 

 

 

Simply Potatoes Hash Browns

To go with my Egg Sandwich I prepared some Simply Potatoes Shredded Hash Browns, which I love having any meal. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Today’s Menu: Grilled Ham, Bacon, and Muenster Cheese Sandwich w/ Baked Fries

 

 

For Breakfast this morning I broke out a can of Turkey Spam. First time I used Turkey Spam in quite a while. It’s another one of those items I love but never seem to use often. I sliced off a couple of pieces to fry. I lightly sprayed a small skillet with Pam Non Stick Spray and heated the skillet on medium heat. Since they’re already fully cooked while still in the can, so you only need to brown them slightly. About two minutes on each side. As the Spam cooked I toasted a Healthy Life Whole Grain English Muffin. I then used the same skillet I fried the Spam and fried 1 Egg Sunnyside Up. Put it all together and I had one delicious Turkey Spam and Fried Egg Breakfast Sandwich! I’ve been dealing with a Sinus Headache the last couple of days so being caught up on all the house work I rested and caught up on some shows I recorded. For Dinner tonight I prepared a Grilled Ham, Bacon, and Muenster Cheese Sandwich w/ Baked Fries.

 

When I went to Kroger the other day I picked up some Boar’s Head Sweet Sliced Ham and Boar’s Head Muenster Cheese. Which means it’s time again for Grilled Sandwiches! So for tonight Grilled Sandwich I’m making a Grilled Ham, Bacon, and Muenster Cheese Sandwich! I’ll be using Boar’s Head Sweet Slice Ham, Simple Truth Hickory Smoked Bacon, Boar’s Head Muenster Cheese, French’s Spicy Brown Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Aunt Millie’s light Whole Grain Bread. I’ll be preparing the Sandwich on my flat top griddle so I’ll also need some Blue Bonnet Light for the griddle to grill my Sandwich. That’s the ingredients for another delicious Grilled Sandwich! I also turned the oven on at 425 degrees, for the Fries.

 

I first prepared my Bacon. Again, I used Simple Truth Hickory Smoked Bacon. It fries up great and love the flavor. But AS always when preparing Bacon you have to use Bacon Math to figure out how much Bacon to fry. I needed 3 slices so by my Bacon Math that totals out 6 slices! When making Bacon always multiply the amount by 2. Because you know you’ll always eat as much as you making! Laid the Bacon on a Paper Towel lined plate until needed.

 

 

 

 

While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Aunt Millie’s Bread and topped it with some of the Kraft Mayo. Then layered the Boar’s Head Ham, the Boar’s Head Muenster Cheese, the Bacon, French’s Brown Spicy Mustard, and added the top slice of the Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! What a Sandwich, Boar’s Head Gone Wild! The Ham ,as always, was delicious and the Muenster Cheese with it’s melted creaminess made the sandwich. And of course Bacon on anything makes it better! The Simple Truth Hickory Smoked Bacon has slowly become my favorite Bacon. Last week I used Boar’s Head Gouda Cheese and I switched it up using the Boar’s Head Muenster Cheese. Both melt beautifully on Sandwiches and have that rich creamy taste. I love either one!

It is thought to be an imitation of the Alsatian washed-rind Munster cheese, introduced by German immigrants. It is distinct from the processed dairy food Sweet Muenster Cheese. Its name is unrelated to the German city of Münster or the Irish province of Munster but to the French city of Munster in Alsace.

In contrast, “Munster”, or “Munster Gerome”, is made from unpasteurized cow’s milk in the Alsatian Vosges region and the Franche-Comté regions in France. The name Munster-Géromé is a protected A.O.C. and is strictly regulated in its production technique and source geography. The American “muenster” name distinguishes these cheeses.

Its taste varies from bland, like a white American cheese, to sharp, like a Monterey Jack cheese.

Muenster is pale in color and smooth in texture with an orange rind. The cheese is made from cow’s milk. The rind’s orange color is from annatto, a sweet and nutty seasoning used to add flavor and color to cheeses such as Cheddar, Colby, Red Leicester, and Mimolette. Muenster usually has a very mild flavor and smooth, soft texture. In some cases, when properly aged, it can develop a strong flavor with a pungent aroma. This cheese is commonly served as an appetizer. Because it melts well, it is also often used in dishes such as grilled cheese sandwiches, tuna melts, quesadillas, cheeseburgers, macaroni and cheese, and pizza.

Today’s Menu: Grilled Ham, Bacon, and Gouda Cheese Sandwich w/ Baked Fries

 

 

For Breakfast this morning I prepared Scrambled Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. It started raining yesterday and still raining this morning. We started out at 40 degrees this morning and kept dropping through the day. By the afternoon the rain turned to freezing rain, then sleet, and finally snow. Now the question is how much we end up with. Stay tuned! After Breakfast I had to go and pick up a couple prescriptions for Dad and picked up Breakfast for Mom and Dad at McDonald’s. Had everything done so I caught up on some shows I recorded. For Dinner tonight I prepared a Grilled Ham, Bacon, and Gouda Cheese Sandwich w/ Baked Fries.

 

On my last visit to Kroger they had Boar’s Head Sweet Sliced Ham and Boar’s Head Gouda Cheese. I love Grilled Sandwiches! With different Cheese, Ham, Bacon, Salami, Turkey, I love Grilled Sandwiches! So tonight Grilled Sandwich I’m making a Grilled Ham, Bacon, and Gouda Cheese Sandwich! I’ll be using Boar’s Head Sweet Slice Ham, Simple Truth Hickory Smoked Bacon, Boar’s Head Gouda Cheese, French’s Spicy Brown Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Aunt Millie’s light Whole Grain Bread. I’ll be preparing the Sandwich on my flat top griddle so I’ll also need some Blue Bonnet Light for the griddle to grill my Sandwich. That’s the ingredients for one delicious Grilled Sandwich! I also turned the oven on at 425 degrees, for the Fries.

 

I first prepared my Bacon. Again, I used Simple Truth Hickory Smoked Bacon. It fries up great and love the flavor. But AS always when preparing Bacon you have to use Bacon Math to figure out how much Bacon to fry. I needed 3 slices so by my Bacon Math that totals out 6 slices! When making Bacon always multiply the amount by 2. Because you know you’ll always eat as much as you making! Laid the Bacon on a Paper Towel lined plate until needed.

 

 

 

While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Aunt Millie’s Bread and topped it with some of the Kraft Mayo. Then layered the Boar’s Head Ham, the Boar’s Head Gouda Cheese, the Bacon, French’s Brown Spicy Mustard, and added the top slice of the Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! What a Sandwich, Boar’s Head Gone Wild! The Ham ,as always, was delicious and the Gouda Cheese with it’s melted creaminess made the sandwich. And of course Bacon on anything makes it better! The Simple Truth Hickory Smoked Bacon has slowly became my favorite Bacon.

 

 

 

As my Grill was heating I baked my Fries. I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right. Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Egg Sandwich and Hash Browns

 

 

For Breakfast this morning I had a bowl of Honey Nut Cheerios. Also had my morning cup of Bigelow Decaf Green Tea. Had a sleepless night dealing with those Phantom Pains! These are so aggravating. They hurt so bad and not a thing you can do! Outside we got a little over an inch of new snow and 16 degrees. We had a high of 30 degrees and more snow this afternoon. Can’t do anything outside so I tried catching up on some sleep after the Phantom Pains stopped around noon. For Dinner tonight it’s an Egg Sandwich and Hash Browns.

 

I love Egg Sandwiches! hadn’t made these in years until a while back and enjoyed it so much I’m going to have it more often. To make it all I’ll need is 2 Eggs, Salt and Pepper, a slice of Kraft Sharp Cheddar, a bit of Blue Bonnet Light Butter, and 2 slices of Aunt Millie’s Light Whole Grain Bread. Just get a mixing cup or coffee cup and crack open both Eggs into it. Season it with the Salt and Pepper and whisk it all together.

 

 

 

 

Heat a small skillet on medium heat, I sprayed it with Pam Cooking Spray. I added the Butter, and when heated added the Egg Mixture. Fry it till the bottom browns and flip it. I then added my slice of Cheese on top of it. Cook until dome, and it’s ready! You can toast the Bread if you like, I didn’t toast mine.

 

 

 

 

To go with my Egg Sandwich I prepared some Simply Potatoes Shredded Hash Browns, which I love having anytime. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and Diet Peach Snapple to drink.

Today’s Menu: Ham, Eggs, Hash Browns, and Toast

 

 

For Breakfast this Morning I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had that morning cup of Bigelow Decaf Green Tea. This morning it was cloudy and 28 degrees. As the day went on we seen some sunshine and a high of 51 degrees. Did a few things around the house and then starting at Noon I watched College Football for the rest of the afternoon. For Dinner tonight some Breakfast! I prepared Ham, Eggs, Hash Browns, and Toast.

 

 

Breakfast for Dinner sounded perfect for Dinner tonight! I sliced up the rest of our Thanksgiving Ham off the bone. The Ham, as it is most years, was moist and delicious! We used Cook’s Bone In Ham. To prepare it I used a small skillet, sprayed it with Pam Cooking Spray, and heated it on medium heat. I then took a few slices of it and reheated it i tin the skillet for about 5 minutes. I love this Ham! It has such good flavor, perfect for Breakfast or Dinner.

 

 

 

Next I used the same skillet and I prepared a Sunny Side Up Egg. Fried it on medium low, seasoned with Morton’s Lite Salt and Ground Black Pepper.

 

 

 

Simply Potatoes Hash Browns

As the the Ham and Egg were cooking, in another skillet I prepared some Simply Potatoes Shredded Hash Browns. I love these, I could have them every day! Again I used a small skillet, sprayed it with Pam Cooking Spray, added 1 tablespoon of Extra Light Olive Oil, and heated it on medium heat. i fried these for 14 minutes. When done I sprinkled some Sargento Reduced Fat Shredded Sharp Cheddar Cheese.

 

 

 

 

Finally I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. Topped them with some I Can’t Believe It’s Not Butter. Had a glass of 2% White Milk to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.
