Today’s Menu: Loaded Potato Hearty Soup and a Grilled Cheese

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 97 degrees and humid outside. Not much going on outside due to the humidity and a high Pollen Count. From what they say we are in for a run mid 90’s or higher weather for at least a week. I took Mom to the Bank and Post Office, stopped and got gas before heading home. Too hot and humid to do much of anything outside! Did a load of laundry and cleaned the fridge later on. For Dinner tonight I prepared Loaded Potato Hearty Soup and a Grilled Cheese.

I wanted something light for Dinner so Soup and Grilled Cheese seemed perfect! I’m trying the Idahoan Loaded Potato Hearty Soup. It comes in a packet and easy to prepare. I’ll be preparing the Soup on the stovetop. Start by heating 4 cups of water to a boil in a 2 quart pot. Whisk in the contents of one pouch of soup all at once. Reduce heat and simmer uncovered for 5 min, stirring occasionally. Remove the pot from heat and let stand 5 min to cool slightly before serving.

Really a very good Potato Soup! I topped it off with Sargento Off the Block 4 State Cheddar Cheese. Plenty of Potatoes and the Soup had excellent Seasoning. I’ll be adding this to the Pantry!

To go with the Potato Soup I prepared a Grilled Cheese, I love Grilled Cheese! I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Aunt Millie’s Light Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 64 degrees and thunderstorms on and off all day. Not real active today, my sinuses are going crazy today! This weather has been rough on them. I had a headache most of the day so I just took it easy. For Dinner tonight its a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

 

 

 

 

 

I wanted something easy to prepare, and what can be easier than making a Sandwich and Chips! I had purchased some of the Boar’s Head London Broil Cap-Off Top Round Oven Roast Beef from Kroger. It was a beautiful cooked medium rare and too good too sit in the fridge for long! So for my Sandwich I’ll be using the Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Meijer Reduced Fat Potato Chips with some Lay’s Ranch Dip. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Stick Pretzels along with a Coke Zero to drink.

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

 

For Breakfast this morning I had a Poached Egg served on a toasted Thomas Light English Muffin. Also had my morning cup of Bigelow Decaf Green Tea. 75 degrees and mostly sunny out today, but very windy! Wow what a night last night! Severe Storms move in about 10:30 last night. We had winds of 70-80 mph come through and rain so heavy you couldn’t see the house next door! We were very lucky we didn’t lose power or have any damages like a lot of areas here. They had about 75,000 people without power. My Cousin who lives in nearby Fairfield won’t have power until around 5:00 in the morning on Friday. Some places were hit hard by straight line winds and Tornados. As I said we were hit hard but lucky, it could have been a lot worse. For Dinner tonight its a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

Today’s Menu: Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese

 

 

For Breakfast I had a toasted Thomas Light English Muffin topped with Smucker’s sugar Free Blackberry Jam and a cup of Bigelow Decaf Green Tea. Partly cloudy and a high of 81 degrees. I had to be at Kroger to pick up groceries I had ordered on line at 9:00 this morning. They bring it to the car and load it up. Not much else to do today so I hooked up the portable vacuum and vacuumed my car then Mom’s car. Then grabbed the Windex, paper towel, and squeegee and cleaned the inside windows of both cars. Still in isolation here in Ohio! For Dinner tonight its all Comfort Food! I prepared Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese.

 

I wanted something a lighter for Dinner and Potato Soup with a Grilled Cheese sounded pretty good! I’ve always loved Soup and the Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is one om favorites! Another easy to prepare item; just empty the contents of the can into a sauce pan and heat. Heated it on medium low heat, stirring often. I love a thick and hearty Soup and this one is perfect. Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is one of the best there is, at least to me.

 

 

Then for my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Today’s Menu: Bison Fillet Steak, Eggs, Hash Browns, and Toast

 

 

 

To start this Morning off I made a Breakfast Sandwich. To make I heated up 4 slices of of Oscar Maye Sliced Bologna, topped it with a slice of Kraft Deli Style Sharp Cheddar Cheese (melted on top of the Bologna), 1 Fried Egg (Medium Size) Over Easy, and served on a couple of Aunt Millie’s Light Whole Grain Bread. The Sandwich was so good, that melted Cheese and the Runny Egg was fantastic! I also had a cup of Biglow Decaf Green Tea. 72 degrees and partly cloudy out today. Well at least we have warmer weather where we can at least get outside. There’s not much else to do during our stay at home orders until May 1st. We’ll just make the best of it! For Dinner tonight it’s Breakfast, Bison Fillet Steak, Eggs, Hash Browns, and Toast.

For my Steak I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. I it came out a perfect medium rare! It was so tender and juicy.

 

 

Next I used the same skillet and I prepared a Sunny Side Up Egg. Fried it on medium low, seasoned with Morton’s Lite Salt and Ground Black Pepper.

 

 

As the the Steak and Egg were cooking, in another skillet I prepared some Simply Potatoes Shredded Hash Browns. I love these, I could have them every day! Again I used a small skillet, sprayed it with Pam Cooking Spray, added 1 tablespoon of Extra Light Olive Oil, and heated it on medium heat. I fried these for 14 minutes. When done I sprinkled some Sargento Off the Block Sharp Cheddar Cheese.

 

Finally I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. Topped them with some I Can’t Believe It’s Not Butter. I had one hearty Comfort Food Dinner tonight! For Dessert later a Jello – Sugar Free Dark Cherry Jello.

Today’s Menu: Breakfast for Dinner w/ Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast

 

 

To start my day off I prepared a Jimmy Dean Scramble Cup – Crumbled Turkey Sausage, Shredded Cheddar Cheese, Egg Whites. Also had my morning cup of Bigelow Decaf Green Tea to get this morning started. A bit warmer out, 45 degrees and cloudy. After Breakfast I went to McDonald’s and picked up Breakfast for Mom and then by Dunkin Donuts and got a couple of Donuts for her. Back home I got the cart out of the shed and took a ride around the yard, just making sure everything okay. Then I pulled it in the shed and got the tarp cover for it out and stored it for the Winter. For dinner tonight its a Breakfast Menu! I prepared Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast.

Nothing like a hearty, healthy, and delicious Breakfast for Dinner too! I’ll need one Egg, Simply Potatoes Shredded Hash Browns, a couple of Jennie – O Turkey Breakfast Sausage Links, and 2 slices of Aunt Millie’s Light Whole Grain Bread.

 

 

 

 

So I got out a couple of small skillets and got the toaster ready. Heated up both skillets, sprayed with Pam Cooking Spray in both and added Extra Light Olive Oil to one of them. In the skillet with no Oil I started to fry the Jennie – O Turkey Sausage Links. The skillet with Oil, I prepared the Simply Potatoes Hash Browns. When both were cooked I put each one into separate bowls and set aside.

 

 

 

Then I started toasting the Bread. Next in the skillet that had the Hash Browns, I fried my Sunny Side Up Egg. Seasoning the Egg with Morton’s Lite Salt and Ground Black Pepper. When the Toast was done I buttered both slices with I Can’t Believe It’s Not Butter. As the Egg was ready I grabbed a plate and plated everything! And what a Breakfast Dinner! Eggs, Hash Browns, Turkey Sausage, and Toast. For Dessert later a bowl of Breyer’s Car Smart Chocolate Ice Cream.

Today’s Menu: Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese

 

 

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. Started off a cold morning at 13 degrees. 31 degrees and sunny out for the day, not quite as windy. Mom had an eye appointment that I took her too. Then afterward she wanted to go to Kroger. That was about my day! For Dinner tonight its all Comfort Food! I prepared Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese.

 

 

I wanted something a lighter for Dinner and Potato Soup with a Grilled Cheese sounded good! I’ve always loved Soup and the Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is one om favorites! Another easy to prepare item; just empty the contents of the can into a sauce pan and heat. Heated it on medium low heat, stirring often. I love a thick and hearty Soup and this one is perfect. Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is the best there is, at least to me.

 

 

Then for my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

 

 

 

 

 

Campbell’s Chunky Soup – Baked Potato with Cheddar and Bacon Bits

Ingredients

Water, Chicken Stock, Potatoes, Baked Potatoes, Cream, Vegetable Oil, Modified Food Starch, Cheddar Cheese, Pasteurized Process Cheddar Cheese.

Directions

Do not add water. Stove: Pour soup into medium saucepan. Heat slowly until hot, stirring occasionally. Microwave: Pour soup into medium microwave-safe bowl or 2 individual microwave-safe bowls. Cover; microwave on high for 3 1/2 minutes or until hot, stirring once during heating. Careful, keep covered 1 minute. Stir before serving. Promptly refrigerate any unused portion in separate container. Recommend use by date on can end. Store unopened can at room temperature.

Today’s Menu: Fried Haddock w/ Roasted Petite Potatoes and Roasted Asparagus

 

 

For Breakfast this morning I had my morning cup of Bigelow Decaf Green Tea. 36 degrees and partly cloudy outside today. After I had the Tea I headed to Meijer for a few items. Stopped by the Bank ATM and then by McDonald’s to pick up Breakfast for Mom. Back home did laundry and cleaned and straightened the Pantry. For Dinner tonight I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 

 

I was at Kroger the other morning and they had some great looking Haddock Fillets so I bought a couple. To prepare it I rinsed the fillets off in cold water and cut the fillet into 4 pieces. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until the pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love this Haddock it cooks up so nice and easy and I love the flavor and how meaty it is.

 

For one side I prepared Roasted Petite Potatoes. Another item I came across at Kroger, a Baking Tin with Tri Colored Potatoes. 12 Petite Tri- Colored Potatoes that come in a ready to bake tin baking container. The Potatoes come with Butter, Salt, Pepper, and Parsley Flakes. So all I had to do was remove the lid and bake them at 400 degrees for 20 minutes. Easy and delicious Potato side dish. I’ll buy more of these!

 

 

 

Then I also had Roasted Asparagus. I already had the oven heated for Potatoes at 400 degrees. As the Potatoes were finishing I added my Asparagus. To prepare the Asparagus I just needed Extra Light Olive Oil, McCormick Garlic Salt, McCormick Grinders of Sea Salt and Peppercorn Medley. Rinse cleaned the Asparagus and cut the tough ends off of the Asparagus before Seasoning. Laid the Asparagus Spears out in a single layer on a foil lined baking sheet. First put some Extra Light Olive Oil across the Asparagus and then my Seasonings. Placed the pan in oven and cook for approximately 8 minutes. Topped it with a sprinkle of Kraft Reduced Fat Parmesan Cheese before serving. I also had a Buttered slice of Aunt Millie’s Light Whole Grain Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Egg Sandwich and Hash Brown

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Windy, 43 degrees and cloudy out today, a bit cooler out. After I had my Tea I followed my neighbor and he dropped his car off to be worked on. Later on I took him back to pick his car up. Back home just did a few things around the house. So for Dinner tonight it’s an Egg Sandwich and Hash Browns.

 

 

 

I love Egg Sandwiches! hadn’t made for quite a while. To make it all I’ll need is 2 Eggs, Salt and Pepper, a slice of Kraft Sharp Cheddar, a bit of Blue Bonnet Light Butter, and 2 slices of Aunt Millie’s Light Whole Grain Bread. Just get a mixing cup or coffee cup and crack open both Eggs into it. Season it with the Salt and Pepper and whisk it all together.

 

 

 

 

Heat a small skillet on medium heat, I sprayed it with Pam Cooking Spray. I added the Butter, and when heated added the Egg Mixture. Fry it till the bottom browns and flip it. I then added my slice of Kraft Deli Deluxe Sharp Cheddar Cheese on top of it. Cook until done, and it’s ready! You can toast the Bread if you like, I didn’t toast mine.

 

 

 

 

To go with my Egg Sandwich I prepared some Simply Potatoes Shredded Hash Browns, which I love having anytime. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.
