Turkey Burgers with Mango Salsa

 
Ingredients:
1/2 cup Progresso Italian Style Bread Crumbs
1/3 cup Laughing Cow Light Garlic-Herb Spreadable Cheese
2 Green Onions, chopped
2-1/2 teaspoons Lemon Juice
1-1/2 teaspoons grated Lemon peel
1/4 teaspoon dried Thyme
1/2 teaspoon Sea Salt
1/2 teaspoon Ground Pepper
1-1/2 pounds Jennie – O Extra Lean Ground Turkey
6 Aunt Millie’s Light Whole Grain Hamburger Buns
3/4 cup Mango Salsa

 
Directions:
In a large bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. Shape into six patties.
Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes on each side or until a thermometer reads 165° and juices run clear.
Grill buns, uncovered, for 1-2 minutes or until toasted. Place burgers on bun bottoms. Top with salsa. Replace bun tops. Yield: 6 servings.

A rainy morning turned into a beautiful and sunny day, with a beautiful weekend in store! Went to Walmart for milk, bread, and some chicken thighs to grill for tonight but choose to have some leftovers I had in the fridge. I still had some of the Wild Idea Buffalo Chuck roast left so for dinner I prepared a Shredded Buffalo Chuck Roast BBQ Sandwich w/ Baked Potato.

 
I hated to waste any food especially the Buffalo Chuck Roast! It’s so tender and with such an incredible flavor. I warmed it up and then shredded what was left. Served it on a Aunt Millie’s Reduced Calorie Whole Grain Bun and topped it with JB’s Fat Boy Chipotle BBQ Sauce. What a great trio; Wild Idea Buffalo, JB’s Fat Boy Sauce, and Aunt Millie’s. I also had a Baked Potato topped with Sea Salt, Ground Black Pepper, and I can’t Believe It’s Not Butter. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

I had  plenty of leftover Buffalo Chuck Roast so for lunch I made a Shredded Buffalo BBQ Sandwich. I used the Wild Idea Buffalo Chuck Buffalo BBQ 002Roast, Aunt Millie’s Light Whole Grain Bun, and JB’s Fat Boy Chipotle BBQ Sauce. It made a great dinner last night and a delicious lunch for today!

Today’s Menu: Baked Ham & Swiss Sliders w/ Baked Crinkle Fries

 

 

We got some hot and humid weather coming, around 89 to 90 degrees. I can take the heat but the humidity is what makes me uncomfortable. For dinner one my favorite recipes, Baked Ham & Swiss Sliders w/ Baked Crinkle Fries. A while back I made some Aunt Millie’s Baked Ham & Swiss Rolls, using Aunt Millie’s Hawaiian Rolls. This time I made them using Kroger Whole Wheat Slider Buns. These are only 70 calories and 13 carbs. I also used Kroger Hickory Smoker Ham and it’s 70 calories and 1 carb per serving along with Sargento Ultra Thin Swiss Cheese which is 40 calories and 1 carb per slice, but I’ll only be adding a half a slice per sandwich.

 

This is makes one tasty sandwich! This is another one of those keeper recipes. To prepare it preheat your oven to 350 degrees. Then I Baked Whole Wheat Ham SLIDERS 003used the package of Slider Buns, 1 – 12 oz. Package of Kroger Private Selection Hickory Smokehouse Ham, and 1 package of Sargento Ultra Thin Swiss Cheese. I placed the bottom half of the bun in the bottom in a deep baking pan large enough to hold 12 sandwiches, about 11″ x 14″ pan. Then I topped the rolls in the pan with Ham slices, and top with the Swiss Cheese slices. and placed the top of the rolls on the sandwiches.

 

I then poured a topping mixture evenly over the sandwiches. To make the mixture I combined the following ingredients: 4 Tbsp. butter (1/2 stick) melted, 2 tsp. dried onion, 1 1/2 tsp. Worchestershire sauce, 1 1/2 tsp. Poppyseed dressing, and 1/2 tsp. yellow mustard. Mix well with a whisk or fork till its well combined. Pour mixture evenly over the sandwiches. Cover with foil and bake at 350 degrees for 15 minutes then remove foil and bake an additional 15 minutes to allow the rolls to crisp. Remove from oven to cool and serve. And as I said earlier they are delicious. The topping mixture is what gives it it’s fantastic flavor. I can’t wait to try this on some Grilled Cheese or Grilled Ham and Cheese Sandwiches! The recipe is for 12 sandwiches, I only made 6 Sandwiches so I cut back on the amount of Butter I used. I used Blue Bonnet Light Stick Butter, another calorie and carb saver! Just by doing the little things like going to an Ultra Thin cut of Meat or Cheese or by going with low fat, reduced fat, low carb you can end up reducing the fat, calorie and carb count on any recipe. It all adds up. Once again the Sandwiches came out absolutely delicious! It’s just the whole combination of everything that just bursts these Sandwiches with flavor. I love these sandwiches!! To accompany my Baked Ham and Swiss Sandwiches I prepared some Baked Ore Ida Crinkle Fries. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

 

 

 
Aunt Millie’s Baked Ham & Swiss RollsBaked Whole Wheat Ham SLIDERS 001
Fresh from the oven!

Ingredients:
1 package Aunt Millie’s Hawaiian dinner rolls. 12 ct.
1 – 12 oz. Package of ham slices
1 – 8 oz. package of swiss cheese, slices
8 Tbsp. butter (one stick) melted
2 tsp. dried onion
1 1/2 tsp. Worchestershire sauce
1 1/2 tsp. Poppyseed dressing
1/2 tsp. yellow mustard
Yield: 12 servings

 

Directions:
Cut rolls in half.
Place the bottom in a deep baking pan large enough to hold 12 sandwiches, about 11″ x 14″ pan.
Top the rolls in the pan with ham slices, and top with the swiss cheese slices.
Place the top of the rolls on the sandwiches.
Mix together butter, onion, Worchestershire, dressing, and mustard.
Pour mixture evenly over the sandwiches.
Cover with foil and bake at 350 degrees for 15 minutes.
Remove foil and bake an additional 15 minutes to allow the rolls to crisp.
Remove from oven to cool and serve.

Today’s Menu: Grilled Steak Hoagies on Whole Grain Sub Buns w/ Baked Crinkle Fries

 

 

It was back to the family Doctor this morning. He wanted to go over a few things from the blood work. He took a bit more blood to JTM Hoagie 005check my Iron count and a few other things, still hoping it’s nothing serious. It really upsets me and troubles me when something comes back from testing out of whack. With everything I’ve been through I just get real jittery. Got to stay positive though! For dinner another one of the J.T.M. Hoagies along with some baked Ore Ida Crinkle Fries.

 

I used the J.T.M. Beef Steak Hoagies I had used the other day. They come pre-cooked and frozen so all you have to do is warm them back up. You bake them pan fry them or grill them, I pan fried them this time. It took about 3– 4 minutes per side and they were ready. J.T.M. is one of the better tasting prepared Hoagies and they have a whole line of Hoagies, Hamburgers, and such. I served them on Aunt Millie’s Deli Style Whole Grain Mini Sub Buns. For toppings I Sauteed some Baby Bella Mushrooms, Ragu Original Pizza Sauce, and Sargento Ultra Thin Provolone Cheese. For a side to go with my Hoagie I baked some Ore Ida Crinkle Cut Fries. For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

We are already getting some humid weather, not bad just enough to make it a little uncomfortable. On top of that I’m battling my Spring sinus problems. Happens every Spring and Winter like clockwork! Passes in about a week after the sinuses adjust. Because of that I really didn’t feel like putting a lot of effort into dinner so I made simple preparing a couple of Chili Dogs.

I used Ball Park White Smoked Turkey Franks that boiled. Just boiled in hot water for about 5 minutes and their done. Served them on Aunt Millie’s Light Whole Grain Buns. I topped them with Hormel Turkey With Beans. Comes in a can just heat it up in a small sauce pan and it’s ready. I also topped them with a bit of French’s Yellow Mustard and Kraft 2% Shredded Sharp Cheddar Cheese. For dessert later a Jello sugar Free Double Chocolate Pudding topped with Cool Whip Free Topping.

Calmer day today, no bad news at least! It’s Friday and usually Mom and Dad go out to eat at Richard’s Pizza and have either Pizza or JTM Steak Hoagie 001Steak Hoagies. Well tonight I’m making their Hoagies! For dinner I prepared  Grilled Steak Hoagies on Whole Grain Sub Buns w/ Baked Ore Ida Grillers Potatoes.

I used J.T.M. Beef Steak Hoagies. They come pre-cooked and frozen so all you have to do is warm them back up. You bake them pan fry them or grill them, I grilled them. For toppings I sliced up a couple of Onions and sautéed them, Sauteed Baby Bella Mushrooms, Ragu Original Pizza Sauce, sliced Pickles, and Kraft 2% Shredded Mozzarella Cheese. They had all the toppings on theirs but for myself just Mushrooms and the Ragu Sauce. For a side to go with our Hoagies I baked some Ore Ida Grillers Seasoned Thick Cut Potatoes. A real good product from Ore Ida, nice and thick cut of Potatoes that’s seasoned just right. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Well my Dad’s getting much stronger, he’s able to walk without a walker now. Spent the afternoon at the rehab center with him. After GRILLING 001getting home I fired up the grill and gathered everything left in the fridge from the other days grill out; Grilled Brats, Italian Turkey Sausages, Hot Dogs and Pork Sandwich Patties. i thought I would grill everything left and I would have my lunch for the next few days also.

 

 

I used Queen City Brats, Honeysuckle White Italian Turkey Sausages, Ball Park White Turkey Franks, and Bob Evans Pork Sausage Patties. For my dinner I had an Italian Turkey Sausage and a Pork Sausage Pattie. I served them on Aunt Millie’s Light Whole Grain Buns. Topped the Italian Turkey Sausage with French’s Spicy Brown Mustard and the Pork Pattie with a slice of Sargento Ultra Thin Cheddar/Jack Cheese and an Ice Cold Peach Diet Snapple to drink. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Another beautiful Spring Day out again. I think everyone is thankful that it’s finally arrived! Spent part of the day riding around on the 4 wheel mobility cart and down around the lake, its beautiful out. For dinner I wanted something light so I prepared a Blackened Turkey and Salami Mini Sub Hogie w/ Baked Fries.

 

I used an Aunt Millie’s Whole Grain Mini Sub Bun. Then for my toppings I used Boar’s Head Blackened Turkey, one of my new favorite Boar’s Head Meat Selections. It has a fantastic flavor with some nice heat. Along with the Turkey I also had Kroger Brand Private Selection Hard Salami and a slice of Sargento Ultra Thin Swiss Cheese. For a side I Baked some Ore Ida Crinkle Fries topped with a little Hunt’s Ketchup. For dessert later a bowl of Del Monte No Sugar Added Sliced Peaches.
