To make this Soup you’ll need; Onion, Apples, Pumpkin Pie Spice, Fat Free Reduced Sodium Chicken Broth, Winter Squash, Evaporated Milk, Fat Free Sour Cream, and Seasonings. The Soup is only 84 calories and 15 net carbs per serving! Easy-As-Pie Holiday Soup
This dish is like pumpkin pie in soup form. Warm, thick, and a big hug on a cold day. You get 5 grams of protein, only 84 calories, and the squash and pumpkin flavors that you crave during the holidays.

Ingredients
1 teaspoon canola oil
1/2 cup diced onion (1/2 medium onion)
1 cup peeled, diced apple (1 medium apple)
3/4 to 1 teaspoon pumpkin pie spice
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup fat-free, reduced-sodium chicken broth
1 box (12 ounces) frozen, cooked winter squash, thawed (see Tips)
1 cup fat-free evaporated milk
4 tablespoons fat-free sour cream (optional)
Pumpkin pie spice (optional)

Directions
1 – Heat oil in large saucepan over medium-low heat. Add onion. Cook and stir 3 minutes or until onion is translucent. Do not brown. Add apple, spice, salt, and pepper. Cook and stir 1 minute to coat apples. Add broth. Simmer, uncovered, 8 to 10 minutes or until apples are tender and most stock has evaporated.

2 – Add thawed squash and milk to apple mixture. Simmer, uncovered, 6 to 8 minutes or until flavors are blended and soup is hot. Ladle into bowls. Garnish with sour cream and pumpkin pie spice, if desired.

Tips: To easily thaw frozen box of squash, place in microwavable container. Cover. Microwave on high 3 minutes. Stir. Microwave 1 minute more if needed to thaw completely.

Cook’s note: For added flavor, cook 1 clove garlic, minced, and 1 tablespoon minced, peeled, fresh ginger with the onion. Or add 1/4 to 1/2 teaspoon mild curry powder with the pumpkin pie spice.

Yield: 6 servings.

Serving size: 1/2 cup.

Made using Boneless Pork Chops, Apples, and Lite Maple Syrup. Some Wild Rice or Baked Potato would go great with this recipe as sides! Maple and Apple Pork Chops
Preparation time: 3 minutes. Cooking time: 15 minutes.
Ingredients
Nonstick cooking spray
4 boneless pork chops (about 1 pound)
2 small apples (2–2 1/2 inches in diameter)
1/8 cup lite, maple-flavored syrup
1/8 cup water

Directions
Spray large skillet with nonstick cooking spray. Heat over medium heat, then add pork chops to pan so that they are not touching each other. Brown pork chops on both sides, approximately 2 minutes on each side. Core apples (leaving skin on), then dice to yield approximately 1 1/2 cups. Sprinkle apples into hot skillet. In a small bowl, combine maple-flavored syrup and water and stir until well combined. Pour liquid into skillet, and cover. Cook approximately 5–7 minutes on medium heat until pork chops are cooked through and internal temperature is 160˚F.

Yield: 4 servings.

Serving size: 3 1/2 ounces meat.

September 26-29, 2019 56th Annual Barnesville Pumpkin Festival
Barnesville, Ohio
The Barnesville Pumpkin Festival has become a tradition for families and friends who come each year to enjoy one of Ohio’s oldest and most popular festivals. Always held during the last full weekend in September, the Festival includes four days of fun-filled contests, entertainment, tastes, sights and sounds. The festival started in 1963 in the basement of the Catholic Church and has has evolved from a small street fair to a premier event with visitors attending from all over the United States. Both adults and children will enjoy harvest-inspired arts and crafts, home-style foods, entertainment on two stages, a giant weigh-in of champion pumpkins, lots of fun contests and the Giant Pumpkin Festival Parade on Saturday. No more stale cake………….

If you need to store cake more than a day or two, put half an apple in the container. The apple will provide just enough moisture to keep the cake from drying out too soon.
