REUBEN BITES PARTY APPETIZER
A short stack of corned beef is topped with Swiss cheese, sauerkraut and Thousand Island dressing. All the big tastes of a classic Reuben sandwich in an appetizer-sized portion. You can also use left-over corned beef from St. Patrick’s Day or even kick it up a notch by using pastrami. Perfect for a party – a real crowd pleaser.

Recipe Yield: 32

Ingredients

12 ounces thinly sliced deli Corned Beef
1/2 cup Thousand Island dressing, divided
8 slices rye, swirl rye or pumpernickel bread
4 slices Swiss cheese (about 3/4 ounce each)
1 cup drained sauerkraut

Directions

1 – Preheat oven to 425F.
2 – Spread 2 teaspoons dressing on each bread slice; cut slices into quarters.
3 – Place bread pieces in a single layer on 2 baking sheets.
4 – Bake 9 to 11 minutes or until bread is lightly toasted, rotating baking sheets half way through baking.
5 – Meanwhile, cut cheese slices into quarters; cut each quarter diagonally in half to form 32 triangles.
6 – Top bread pieces evenly with Corned Beef, cheese slices and sauerkraut.
7 – Heat appetizers in 425F oven 3 to 5 minutes or until cheese is melted.
8 – Top evenly with remaining Thousand Island dressing.

Firecracker Deviled Eggs
Gage the fiery heat of these Southwestern-style deviled eggs to your personal preference by choosing to use mild, medium or hot salsa.

Recipe Ingredients:
6 large hard-boiled eggs*
1/3 cup mild, medium or hot salsa
3 tablespoons low-fat sour cream
3 tablespoons green onions, minced
1 tablespoon black olives, chopped
1 teaspoon lemon juice

Optional Garnishes: Chopped or sliced green onions, red pepper strips, sliced ripe olives, and/or chopped fresh cilantro or parsley

Cooking Directions:
1 – Cut eggs in half lengthwise. Remove yolks and set whites aside.
2 – In small bowl, mash yolks with fork. Stir in remaining ingredients until well blended. Refill whites, using 1 heaping tablespoon yolk mixture for each egg half.
3 – Chill to blend flavors.
4 – Garnish as desired.
Makes 12 deviled egg halves.

*Place eggs in single layer in sauce pan. Add water to cover eggs at least 1-inch. Cover and bring to boiling. Turn off heat. Let eggs stand, covered, 15 minutes for large eggs. Immediately drain and run cold water over eggs until completely cooled.

CRANBERRY SHRIMP CEVICHE APPETIZER
Serve something different this holiday season that pairs cranberries with shrimp. You can make it look dazzling by using martini glasses (or some other stemmed glassware), but you really can use any type of cup or plate. Great for Thanksgiving, Christmas and New Years parties.

Recipe Yield: 16

Ingredients

1-1/2 teaspoons iodized salt, divided
16 ounces medium raw shrimp, thawed
1 cup dried cranberries
1/2 red onion, roughly chopped
1/2 cup fresh parsley
1/2 jalapeno, roughly chopped
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
1/4 teaspoon crushed red pepper or ground black pepper
1 teaspoon oregano
16 ounces tortilla chips
2 limes cut into wedges

Directions

1 – Bring medium pot of water to a boil. Season with 1 teaspoon salt.
2 – Add shrimp and cook for 3 minutes. Immediately plunge cooked shrimp into ice water bath. Peel shrimp and place in flat dish.
3 – In food processor, combine cranberries, red onion, parsley and jalapeno. Pulse until finely chopped.
4 – Add cranberry mixture to shrimp.
5 – Add lemon juice, lime juice, remaining salt, crushed red pepper and oregano. Stir to combine ingredients thoroughly.
6 – Refrigerate for 1 hour.
7 -To assemble, spoon ceviche, about 4 to 5 shrimp each, into small clear cups or glasses.
8 – Garnish with tortilla chips and lime wedges.

Pimento cheese on crackers

In the cuisine of the Southern United States, pimento cheese is a spread or relish made with cheese, mayonnaise and pimentos. Elsewhere, different ingredients may be used. It is served on bread, crackers and vegetables, or in sandwiches.

Pimento cheese has been referred to as the “pâté of the south”, “Carolina caviar” and “the caviar of the South.”

The basic recipe has few ingredients: sharp cheddar cheese or processed cheese (such as Velveeta or American cheese), mayonnaise or salad dressing, and pimentos, blended to either a smooth or chunky paste. Regional ingredients include horseradish, cream cheese, salt and pepper, Louisiana-style hot sauce, Worcestershire sauce, cayenne pepper, paprika, jalapeños, onions, garlic, and dill pickles.

Pimento cheese can be served as a spread on crackers or celery, scooped onto corn chips or tortilla chips, mixed in with mashed yolks for deviled eggs, added to grits, or slathered over hamburgers or hotdogs.

A pimento cheese sandwich can be a quick and inexpensive lunch, or it can be served as a cocktail finger food (with crusts trimmed, garnished with watercress, and cut into triangles) or rolled up and cut into pinwheels. It is also a common snack in the Philippines, where it is referred to as cheese pimiento.

Pimento cheese sandwiches are a popular item at the Masters Tournament. Minor controversy ensued in 2013 when the Augusta National Golf Club switched food suppliers for the Masters and the new supplier was unable to duplicate the recipe used by the previous supplier, resulting in a sandwich with a markedly different taste.

GRILLED SALSA STEAK APPETIZER
Ingredients

2 beef shoulder top blade (flat iron) steaks (about 8 ounces each)
1 cup prepared thick-and-chunky salsa, divided
1 to 2 tablespoons chopped fresh cilantro
24 large corn tortilla chips
1/2 cup prepared guacamole
24 fresh cilantro leaves (optional)

Directions

1 – Place beef steaks and 1/2 cup salsa in food-safe plastic bag; turn steaks to coat. Close bag securely and marinate in refrigerator 15 minutes to 2 hours. Combine remaining 1/2 cup salsa and chopped cilantro, as desired; cover and refrigerate until ready to use.
2 – Remove steaks from marinade; discard marinade. Place steaks on grid over medium, ash-covered coals. Grill, covered, 10 to 14 minutes (over medium heat on preheated gas grill, covered, 12 to 16 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally.
3 – Carve steaks into thin slices; cut slices into bite-size pieces. Arrange chips on platter. Top each chip evenly with reserved salsa mixture, beef and guacamole. Garnish with cilantro leaf, if desired. Serve immediately.
4 – One pound beef top loin steaks or top sirloin, cut 3/4 inch thick may be substituted for flat iron steaks. Grill top loin steaks 10 to 12 minutes (over medium heat on preheated gas grill, covered, 7 to 10 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Grill top sirloin steak 13 to 16 minutes (over medium heat on preheated gas grill, covered, 8 to 13 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally.

Recipe Yield: Makes 24 appetizers.

Savory Pumpkin Hummus
Looking for a different spin on pumpkin season? You’ll love this simple, low-carb hummus recipe. With only 38 calories and 4 grams of carbohydrate per serving, it’s a perfect complement to veggie sticks.

Ingredients
1 can (15 ounces) solid-pack pumpkin
3 tablespoons chopped fresh parsley, plus additional for garnish
3 tablespoons tahini
3 tablespoons fresh lemon juice
3 cloves garlic
1 teaspoon ground cumin
1/2 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon ground red pepper, plus additional for garnish
Assorted vegetable sticks

Directions
Yield: 1 1/2 cups (about 12 servings)

Chicken Nuggets with Barbecue Dipping Sauce
This recipe is sure to score a touchdown with your game-day crew. The key to these yummy chicken nuggets is the breading, which contains reduced-fat baked cheese crackers. Whip up this simple recipe during pregame to whet everyone’s appetite. The dipping sauce uses an unexpected ingredient to deliver its lip-smacking flavor.

Ingredients
1 pound boneless skinless chicken breasts
1/4 cup all-purpose flour
1/4 teaspoon salt
Dash black pepper
2 cups crushed reduced-fat baked cheese crackers
1 teaspoon dried oregano
1 egg white
1 tablespoon water
3 tablespoons barbecue sauce
2 tablespoons no-sugar-added peach or apricot fruit spread

Directions
Yield: 8 servings
Serving size: 5 nuggets with about 2 teaspoons sauce

1 – Preheat oven to 400°F. Cut chicken into 40 (1-inch) pieces.

2 – Place flour, salt, and pepper in large resealable food storage bag. Combine cracker crumbs and oregano in shallow bowl. Whisk together egg white and water in small bowl.

3 – Place 6 to 8 chicken pieces in bag with flour mixture; seal bag. Shake until chicken is well coated. Remove chicken from bag; shake off excess flour. Coat all sides of chicken pieces with egg white mixture. Roll in crumb mixture. Place in shallow baking pan. Repeat with remaining chicken pieces. Bake 10 to 13 minutes or until golden brown.

4 – Meanwhile, combine barbecue sauce and jam in small saucepan; cook and stir over low heat until heated through. Serve chicken nuggets with dipping sauce.

Note: To freeze chicken nuggets, cool 5 minutes on baking sheet. Wrap chicken in plastic wrap, making packages of 5 nuggets each. Place packages in freezer container or plastic freezer bag. Freeze.

Note: To reheat nuggets, preheat oven to 325°F. Bake nuggets on ungreased baking sheet 13 to 15 minutes or until heated through or microwave 4 to 5 nuggets on microwavable plate at DEFROST (30%) 2 1/2 to 3 1/2 minutes or until heated through, turning once.

Note: For each serving, stir together about 1 1/2 teaspoons barbecue sauce and 1/2 teaspoon jam in small microwavable dish. Microwave on HIGH 10 to 15 seconds or until hot.

Spicy Shrimp Appetizers
Requiring just 12 minutes of preparation time, this tasty and elegant shrimp appetizers are perfect for your next garden party!
Ingredients
Preparation time: 2 minutes
Cooking time: 10 minutes.

2 quarts water
1 pound shelled and cooked medium frozen shrimp (21–24 count)
1/4 cup no-added-salt tomato paste
1/2 teaspoon minced garlic
1/2 teaspoon crushed red pepper
1 teaspoon olive oil
1 teaspoon basil
1/4 teaspoon black pepper
2–3 drops hot pepper sauce
24 toothpicks
3 leaf lettuce leaves for presentation

Directions
Yield: 8 servings
Serving size: about 3 shrimp

1 – Bring 2 quarts of water to a boil in a large saucepan over medium heat. Add frozen shrimp and cook approximately 3 minutes until shrimp are heated through. Drain.

2 – In a small bowl, whisk together tomato paste, garlic, crushed red pepper, olive oil, basil, black pepper, and hot sauce. Pour mixture into a large skillet and heat at a low heat, stirring constantly. Add hot, cooked shrimp and stir to coat with sauce. Place 1 toothpick in each shrimp. Serve immediately on a large plate covered with 3 lettuce leaves.

VIETNAMESE BEEF and VEGETABLE SPRING ROLLS

Ingredients
16 thin slices deli roast beef (about 12 ounces)
1 cup shredded carrots
1/2 cup chopped jicama
3/4 cup torn fresh cilantro
1/2 cup torn fresh basil
1/4 cup torn fresh mint
8 rice paper wrappers (8-1/2-inch diameter)
8 green leaf lettuce leaves, ribs removed

Dipping Sauce:
1/4 cup seasoned rice vinegar
2 tablespoons red jalapeno pepper jelly
1 teaspoon soy sauce

Directions

1 – Whisk dipping sauce ingredients in small microwave-safe bowl until blended. Microwave on HIGH 20 to 40 seconds or until warm; do not boil. Set aside to cool.
2 – Toss carrots and jicama with 2 tablespoons of the dipping sauce in small bowl. Set aside. Toss cilantro, basil and mint in small bowl to combine. Set aside.
3 – Fill large bowl with warm water. Dip 1 rice paper wrapper into water for a few seconds or just until moistened. Rice paper will still be firm but will continue to soften during assembly. Place on work surface.
4 – Place 1 lettuce leaf at bottom of wrapper, leaving 1-inch border on right and left sides. Top with 2 slices roast beef, 2 tablespoons carrot mixture and 1/8 of herb mixture (about 1/4 cup). Fold right and left sides of wrapper over filling. Fold bottom edge up over filling and roll up tightly. Place seam-side down on serving platter. Repeat with remaining wrappers and filling ingredients. Cover rolls with damp paper towel during assembly to prevent from drying out. Cut each spring roll diagonally in half. Serve with dipping sauce.

I have another Appetizer Recipe to pass along for everyone, BAKED BEEF EMPANADAS. These are made using Laura’s 92% Lean Ground Beef, Onion, Cajun Seasoning, Kosher Salt, Ground Black Pepper, canned Low salt Yellow Corn, Salsa, Tomato Paste, Wonton Wrappers, Cooking Spray, Salsa, and Reduced Light Sour Cream. BAKED BEEF EMPANADAS

Ingredients
1/2 pound Laura’s 92% Lean Ground Beef or 96% Lean Ground Round
1/4 cup finely chopped onion
1/4 teaspoon Cajun seasoning
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/4 cup canned low-salt yellow corn, drained
1/3 cup salsa
1 tablespoon tomato paste
20 wonton wrappers
Cooking spray
Salsa, low-fat sour cream (optional)

Directions
1 -Preheat oven to 400F.
2 – Cook ground beef, onion and next 3 ingredients in a large nonstick skillet 5 minutes or until beef is browned; drain. Add corn and next 2 ingredients and cook until heated through. Remove and let cool.
3 – Working with one wonton wrapper at a time, spoon 1 tablespoon beef mixture into center of each wrapper. Bring 2 opposite corners together and pinch the points to seal, forming a triangle. Place wrappers on a wire rack and repeat procedure with remaining wrappers and beef mixture.
4 – Place empanadas on lightly greased baking sheets and coat lightly with cooking spray. Bake 4 to 6 minutes on each side, turning once or until golden. Serve with salsa and sour cream, if desired.

Recipe Yield: Yield: Makes 20 servings.
