Lemon Broccoli Pasta
This pasta tastes so rich and creamy, you’ll never believe it has just 1 gram of fat per serving!

Ingredients
3 tablespoons sliced green onions
1 clove garlic, minced
2 cups reduced-sodium vegetable broth
1 1/2 teaspoons grated lemon peel
1/8 teaspoon black pepper
2 cups fresh or frozen broccoli florets
3 ounces uncooked angel hair pasta
1/3 cup plain nonfat Greek yogurt
2 tablespoons grated reduced-fat Parmesan cheese

Directions
Yield: 6 servings
Serving size: 1 cup

1 – Spray large saucepan with nonstick cooking spray; heat over medium heat. Add green onions and garlic; cook and stir 3 minutes or until green onions are tender.

2 – Stir broth, lemon peel, and pepper into saucepan; bring to a boil over high heat. Stir in broccoli and pasta; return to a boil. Reduce heat to low. Simmer, uncovered, 6 to 7 minutes or until pasta is tender, stirring frequently.

3 – Remove from heat. Stir in yogurt until well blended. Let stand 5 minutes. Top with cheese before serving. Garnish as desired.

Turkey Vegetable Soup with Angel Hair Pasta
A delicious, quick-to-make soup using leftover turkey, dried mushrooms, vegetables and pasta.

Recipe Ingredients:
8 cups turkey or chicken broth
1 cup peeled, finely chopped carrots
1 cup thinly sliced celery
2 tablespoons thinly sliced shallots
1/2 ounce dried mushroom pieces, rehydrated*
2 ounces uncooked angel hair pasta
1 cup finely chopped cooked Butterball® Turkey
3 tablespoons chopped fresh parsley

Cooking Directions:
1 – Bring broth in Dutch oven or large saucepan to boil on high heat.
2 – Add carrots, celery, shallots and mushrooms. Return to boil. Reduce heat. Simmer, uncovered, 15 to 20 minutes or until vegetables are tender.
3 – Add pasta. Continue cooking 4 to 5 minutes or until pasta is al dente.
4 – Stir in turkey and parsley. Cook 1 minute or until heated through.
Makes 4 to 5 servings.

*Note: To rehydrate dried mushrooms, cover with warm water and let stand 15 minutes. Rinse under additional water if necessary.

Heavenly Layered Veggie Bake

Recipe Ingredients:
8 ounces angel hair pasta
4 large egg whites
1 cup freshly grated Parmesan cheese
1/2 cup low fat Ricotta cheese
1 tablespoon dried basil
1 tablespoon olive oil
2 cups sliced zucchini
1 cup coarsely chopped onion
2 cups coarsely chopped tomatoes
1 1/2 tablespoons Italian seasoning
4 slices reduced-fat provolone or mozzarella cheese

Cooking Directions:
1 – Prepare angel hair pasta according to package instructions.
2 – In a large bowl, combine egg whites, Parmesan cheese, Ricotta cheese and basil; stir to mix; set aside.
3 – When pasta is completely cooked; drain, but do not rinse; toss in egg white mixture.
4 – In a large skillet over medium-high heat, heat olive oil; add zucchini and onion; sauté until crisp tender; about 5 to 7 minutes, stirring regularly. Add tomatoes and Italian seasoning; continue cooking for another 3 minutes, stirring regularly.
5 – Pour half of pasta in an 8-inch square baking pan. top with half of vegetable mixture ; half of both cheese. Repeat layers of pasta, vegetables and cheese.
6 – Bake in a preheated 350°F (175°C) oven for 30 to 35 minutes.
7 – Cut baked dish into 4 squares and serve immediately.
Makes 4 servings.

Today’s Menu: Leftover – Shrimp w/ Pasta Roni – Parmesan Cheese

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin. I topped 1/2 the Muffin with Smucker’s Sugar Free Blackberry Jam and the other 1/2 with Nutella. If your not sure what Nutella is, Nutella is a brand of sweetened hazelnut cocoa spread. I’ll buy a small jar of this from time to time. I also had my morning cup of Bigelow Decaf Green Tea. Outside more rain! There’s heavy flooding in a lot of places, especially in Cincinnati along the Ohio River. A lot of roads and businesses are under water. Plus heavy rain up until Sunday so it will get worse. Not feeling real good again today. So I took it easy still fighting with my Sinuses. For Dinner tonight its Leftover – Shrimp w/ Pasta Roni – Parmesan Cheese. And thank goodness for Leftovers, sure didn’t feel like cooking today. I left the post from yesterday below for the Dish description and directions.

 

For the Shrimp part of the dish I used Kroger Brand Jumbo Shrimp. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat I cooked the Shrimp. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

 

 

I love having Shrimp with the Pasta Roni – Parmesan Cheese. It comes with the Pasta Parm Sauce and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one delicious Shrimp and Pasta Dish! Love these Semi-Homemade Meals! I’ll be having the leftovers for my Dinner tomorrow night! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

 

 

 

Pasta Roni – Parmesan Cheese

Today’s Menu: Shrimp w/ Pasta Roni – Parmesan Cheese

 

 

Almost done….

For Breakfast this morning I got the Waffle Grill out but instead of normal Waffles I made Hash Brown Waffles. I seen these made in Cooking Magazines and on TV but never tried them until this morning. Just spray the Griddle with Cooking Spray, add your Simply Potatoes Shredded Hashbrowns, season with Salt and Pepper, shut the lid of the Waffle Griddle, and cook. Quite easy to make and something different for Breakfast! I love Hash Browns, I could have them twice a day, and preparing them this was turned out great! I topped the Hash Brown Waffles with an Egg I fried Sunnyside Up and I toasted a slice of Aunt Millie’s Light Whole Grain Bread. Also, as always, I had a cup of Bigelow Decaf Green Tea.

 

 

Yesterday a record high of 80 degrees and Sunny. Today our high was 62 degrees at Midnight and fell through the day to about 42 degrees and Rain! Welcome to Ohio Weather! It’s like Forest Gump’s box of Chocolate, you never know what you’ll get! Not a lot going today so I took it easy still fighting with my Sinuses. For Dinner tonight its Shrimp w/ Pasta Roni – Parmesan Cheese.

 

 

 

 

For the Shrimp part of the dish I used Kroger Brand Jumbo Shrimp. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat I cooked the Shrimp. Today’s Menu: Leftover – Shrimp w/ Pasta Roni – Parmesan Cheese

 

 

 

For Breakfast I made a Turkey, Diced Potato, and Scrambled Egg Breakfast Skillet. I used leftover Pulled Jennie – O Turkey Breast meat, Simply Potatoes Steakhouse Diced Potatoes, Scrambled 2 Eggs, and to heat it all up I added some Mild Jalapeno Slices and Ortega Chipotle Taco Sauce. This came out so delicious! I’m always up way earlier than Mom and Dad, so I reheated the leftovers for Mom and Dad for their Breakfast. I’ll have to have this dish for Dinner sometime! Also had my morning cup of Bigelow Decaf Green Tea. Mostly cloudy and 45 degrees for a high. It was a day of TV for me today! For Dinner tonight its the Leftover – Shrimp w/ Pasta Roni – Parmesan Cheese from the day before.

Today’s Menu: Shrimp w/ Pasta Roni – Parmesan Cheese

 

For my Breakfast this morning I had purchased a package of Thin Cut Pork Cops from Meijer yesterday and having them this morning. I just prepared the whole package for myself and Mom and dad. Their cut real thin so they aren’t very big at all. To go with the Chops Scrambled a couple of Eggs, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and had my morning cup of Bigelow Decaf Green Tea. Started out a cold morning, in the 20’s. The afternoon was mostly sunny and a high of 40 degrees. Finished up some cleaning around the house and did a load of laundry. Outside I got the leaf blower out and cleaned off the deck and driveway areas, not a lot of leaves left! After Lunch I gave Mom a hand in the kitchen. She was baking a couple of Pies for Thanksgiving Dinner tomorrow, made a Pumpkin and an Apple Pie! For Dinner tonight its Shrimp w/ Pasta Roni – Parmesan Cheese.

Made a Breakfast Sandwich this morning. I toasted a Healthy Life Whole Grain English Muffin, fried several slices of Boar’s Head Sweet Slice Ham, and a 1/2 slice of Boar’s Head Colby Longhorn Cheese. Build your Sandwich and Eat! Also had my morning cup of Bigelow Decaf Green Tea. Mostly cloudy and a light shower, about 78 degrees for a high. After Lunch went over to see Dad for the rest of the afternoon. For Dinner tonight its Leftover – Shrimp w/ Pasta Roni – Parmesan Cheese.

Today’s Menu: Shrimp w/ Pasta Roni – Parmesan Cheese

 

 

 

Woke up hungry this morning! I Scrambled a couple of Eggs, fried up 2 Jennie – O Turkey Breakfast Sausage Links, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and had my morning cup of Bigelow Decaf Green Tea. Outside it’s another day rain. Nothing like the rains down South but we got plenty here the last 2 days. I was going to try to go see Dad today but the rains were coming down pretty good. So I stayed inside for the day. Cleaned the house and a few things around the house. For Dinner tonight its Shrimp w/ Pasta Roni – Parmesan Cheese.

 

For the Shrimp part of the dish I used Kroger Brand Jumbo Shrimp. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat I cooked the Shrimp. I seasoned them with Old Bay Seasoning. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

 

 

I love having Shrimp with the Pasta Roni – Parmesan Cheese. It comes with the Pasta Parm Sauce and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one delicious Shrimp and Pasta Dish! Love these Semi-Homemade Meals! I’ll be having the leftovers for my Dinner tomorrow night! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Leftover – Shrimp w/ Pasta Roni – Parmesan Cheese

 

 

For Breakfast this morning I made a Breakfast Sandwich. I toasted a Healthy Life Whole Grain E English Muffin, fried several slices of Boar’s Head Sweet Slice Ham, and a 1/2 slice of Boar’s Head Colby Longhorn Cheese. Build your Sandwich and Eat! Also had my morning cup of Bigelow Decaf Green Tea. When I went out to grab the morning paper we had a light rain and about 58 degrees. The light rain turned into some heavy showers and a high in the mid 70’s. After Breakfast I started doing the laundry for Mom. After Lunch I was going to go see Dad but the rains kept me in. Tough getting out when it rains hard, I get drenched by the time I get my wheelchair out of the trunk. So did some cleaning around the house. For Dinner tonight its Leftover – Shrimp w/ Pasta Roni – Parmesan Cheese and Italian Round Loaf Bread.

 

As usual when I make the Shrimp w/ Pasta Roni – Parmesan Cheese dish I have the leftovers the next day. So for Dinner tonight its Leftovers! Below is the original post of Shrimp w/ Pasta Roni – Parmesan Cheese and La Brea Multi Grain Bread, which contains ingredients and directions.
