I’ve got a Dessert to go with that Chicken Dinner on Sunday, No-Bake Cherry Cake. You’ll need a Prepared Angel Food Cake along with Fat Free Skim Milk, Reduced Fat Sour Cream, Vanilla Sugar Free Instant Pudding Mix, and Light Cherry Pie Filling. It’s only 156 calories per serving. No-Bake Cherry Cake

Ingredients

1 (10-inch) prepared angel food cake
1 1/2 cups fat-free (skim) milk
1 cup reduced-fat sour cream
1 package (4-serving size) vanilla sugar-free fat-free instant pudding and pie filling mix
1 can (21 ounces) light cherry pie filling

Directions
1 – Cut cake into bite-sized pieces; press into 11×7-inch baking dish.

2 – Beat milk, sour cream, and pudding mix in medium bowl with wire whisk or electric mixer at medium speed 2 minutes or until thickened. Spread over cake in baking dish.

3 – Spoon cherry pie filling evenly over cake. Cover and refrigerate at least 1 hour or until chilled.

Yield: 12 servings.

Serving size: 1 piece cake (1/12 total recipe).

Hint #1 – Never bake an angel food cake on the top or middle rack of the oven. It will retain moisture better if baked in the lower third of the oven, and always at the temperature specified in the recipe.

 

 

Hint #2 – An angel food cake can be left in the pan and covered tightly with foil for up to 24 hours or until you are ready to frost it.

Today’s Menu: Turkey Meatloaf w/ Green Beans and Whole Grain Bread


Made some more of the Turkey Meatloaf. I really like this recipe. Easy to fix, delicious, and lower in carbs and calories than most Meatloafs. This one turned out just as good as the last one. I listed the recipe at the end of the post. Another good thing there was a lot of Meatloaf left over and that means, Meatloaf Sandwiches! As sides I had Green Beans and Healthy Life Whole Grain Bread. For dessert later Walmart Bakery Sugar free Angel Food Cake topped with some fresh Black Raspberrys and Fat Free Redi-Whip.

Turkey Meatloaf

* Instead of the 1 cup of Chopped Onions I used 1/4 Cup of Chopped Chives and 1 Teaspoon of Onion Powder *
*  I also used 2 Mini Loaf Foil Pans instead of the 1 8×4 pan *

Ingredients

2 Tablespoons Butter  or I Can’t Believe It’s Not Butter
1 Cup Onions, Chopped
3 Cloves Garlic, Minced
1 1/4 lbs Ground Turkey
1/2 Cup Italian Breadcrumbs
1/4 Cup Egg Substitute  (Egg Beaters)
1 Cup Catsup
2 Teaspoons Worcestershire Sauce
1 Teaspoon Cumin
1 Teaspoon Ground Thyme
3/4 Teaspoon Sea Salt
1/2 Teaspoon Black Pepper

Directions

1. Melt butter in a skillet.
2. Cook onion and garlic in melted butter for 5 minutes, stirring occasionally.
3. Place mixture in a large bowl to cool for 5 minutes.
4. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, Worcestershire sauce, salt, and pepper with onion mixture.
5. Press meatloaf into an 8×4-inch loaf pan.
6. Spread remaining catsup on top.
7. Bake in a 350 degree oven for 50-55 minutes.
8. (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

Today’s Menu: Fish Sandwich w/ Baked Potato

Lazy day and I whipped up an easy meal. I used Gorton’s Skillet Crisp Tilapia. Baked at 425 degrees for 23 minutes and done! Served the fillet onan Healthy Life Sandwich Bun with a little Heinez Tarter Sauce. Also had a Baked Potato seasoned with Sea Salt and McCormick Grinder Black Peppercorn with a dab of of I Can’t Believe It’s Not Butter and Breakstone Reduced Fat Sour Cream. Dessert later Walmart Bakery Sugar free Angel Food Cake topped with Del Monte Sugarless Sliced Peaches.
