Today’s Menu: Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup
For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. You can serve this topped with a fried Egg, diced Onions, or Shredded Cheese. I topped mine this morning with Sargento Reduced Fat Shredded Colby – Jack Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Had my morning cup of Bigelow Decaf Green Tea.
Cleaned the kitchen after Breakfast, did the morning work out, and then took Mom’s car up to the Car Wash and had it cleaned for her. Back home tidied up around the house. Had lunch and I headed out for a while. It’s a beautiful day out, sunny and around 50 degrees! Got out in the car and went for a drive out to my old neighborhood, Ross Ohio. It had been a while since I had been out there so I took advantage of this beautiful day and went out to the old homestead. Ross isn’t a very big place but as all small towns it’s gradually getting bigger. Back in the day when I was growing up there it was farming community. We had a Dairy Queen, an Ival’s Pizza, The Castle Bar/Diner, an IGA Market, and a small Deli Carry-Out. And that was it now there’s quite a few more places to eat and more on the way as more housing are being built and less farm land. Anyway back home and tonight I prepared a Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup.
To make the Sub I’ll need; Boar’s Head Maple Glazed Honey Coat Ham, Sargento Ultra Thin Swiss Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, and Aunt Millie’s Deli Style Whole Grain Mini Sub Buns.
I used Boar’s Head Maple Glazed Honey Coat Ham. I had purchased the Boar’s Head Maple Glazed Honey Coat Ham at Kroger, on sale the other day. I love all the Boar’s Head Meats and Cheese. Always fresh and lower in calories and sodium, the Ham is 60 calories per serving. I also used Sargento Ultra Thin Swiss Cheese which is only 40 calories per slice. Topped it with Kraft Reduced Fat Mayo w/ Olive Oil. To help the bun brown a bit I brushed the top with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Ham and Swiss Subs!
Then I also heated up some Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using this a few years now. Creamy with a fantastic flavor and it’s 110 calories and 19 carbs. I also had a Diet Dr. Pepper to drink. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Today’s Menu: Baked Cold Cut Trio Mini Sub w/ Creamy Tomato Soup
They hit our forecast on the nose! It started snowing a light snow about 11:00 last night and picked up in the early morning hours. It wasn’t one of those “Cabin Fever Snows” but we ended up with about 4″ or more. It was a wet snow and clung to every limb out there. Some really cold weather to follow the snow. So for dinner tonight I prepared a Baked Cold Cut Trio Mini Sub w/ Creamy Tomato Soup.
I had this a while back and really enjoyed it, so I prepared it again. I used a Trio of Cold Cuts for my Baked Mini Sub; Kahn’s Deluxe Bologna, Kroger Private Selection Off – the Bone Smokehouse Ham, and Private Selection Roasted Turkey. You can use whatever your favorite cold cuts are to make this. For toppings Boar’s Head Sliced Muenster Cheese and Kraft Reduced fat Mayo w/ Olive Oil. For the Bun I used Perfection Deli Mini Wheat Sub Buns, I buy these at Meijer. To prepare it I spread the Mayo on the bottom bun and layered my Cold Cuts on top of that. Topped that with Cheese and spread more Mayo on the bottom of the top bun. To help the bun brown a bit I brushed the top with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. I love using Muenster Cheese for when I melt Cheese on Sandwiches, it melts perfect for that. The Sub tasted great, all the Cold Cuts worked great together, then the with the Muenster Cheese and Mayo give it a perfect taste! I really enjoy these Subs!
Then I also heated up some Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using this a couple of years now. Creamy with a fantastic flavor and it’s 110 calories and 19 carbs. I also had a Diet Dr. Pepper to drink. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Today’s Menu: Italian Turkey Sausage Skillet
Woke up to a beautiful Fall-Like Morning, sunny and around 42 degrees. As I went out and got the morning papers there was 2 flocks of Geese heading South, is that a sign? Had to go to Walmart and pick up a few items for my dinner tonight and back home for the day. Plus today is NFL Football, when the Cincinnati Bengals play I stay (home). I ran across a site called Platter Talk, and it’s packed full of great ideas and recipes (http://www.plattertalk.com/)! And that’s where tonight’s recipe comes from. I prepared Italian Turkey Sausage Skillet, makes your mouth water just saying it!
I saw this recipe and I had to try it ASAP! To prepare it I’ll need the following; Egg Noodles (I used Ronzoni Healthy Harvest Whole Grain Extra Wide Noodles), Jennie – O Italian Turkey Sausage, Extra Virgin Olive Oil, White Onion (diced), 1 Garlic Clove, 2% White Milk, 2 cans Creamy Tomato Soup, 1 tablespoon McCormick Italian Seasoning, 1 teaspoon fresh Parsley chopped, ¼ cup grated Kraft Reduced Fat Parmesan Cheese, and Sea Salt and Pepper to taste. And all this is going to combine into nothing but good!
To prepare it start by Preheating the oven to 350 degrees F. I then cut Sausage links into 1 inch pieces. Heat the Olive Oil in 10 inch cast iron skillet over medium high heat and brown the sausage, without fully cooking it. Yes Cast Iron Skillet, my favorite Skillet! Add the Onion and Garlic (I minced my Garlic), stir and saute with sausage until soft. Stir in the Italian Seasoning, Salt, Pepper, and Parsley, set aside. I prepared egg noodles in boiling water, as directed, and drained. And now the good part! Combine the Sausage Mixture and Noodles in a mixing bowl, add the Tomato Soup (I used Amy’s Organic Low Fat Creamy tomato Soup) and stir well. Reserve the skillet for baking. Stirred in the Parm Cheese and 2% Milk and transferred back to skillet. Into the preheated oven and bake for 25-30 minutes, you can add additional Milk to prevent from drying out, if necessary. Allow to stand for 5 minutes after removing from oven. Garnish with additional Parmesan Cheese and Parsley if desired. And when this is ready to serve be prepared for one delicious dish! It’s just one huge flavor explosion! The Italian Turkey Sausage combined with all the other ingredients is so good, and if you like Pasta like I do you’ll love this. Platter Talk
ITALIAN TURKEY SAUSAGE SKILLET
INGREDIENTS
6 oz egg noodles
1 lb. Italian Turkey Sausage
2 tablespoons olive oil
1 small white onion, diced
1 garlic clove, thinly sliced
½ cup milk
2 cans cream of tomato soup
1 tablespoon Italian seasoning
1 teaspoon fresh parsley chopped, plus more for garnish
¼ cup grated Parmesan cheese, plus more for garnish
salt and pepper to taste
INSTRUCTIONS
Preheat oven to 350 degrees F.
Cut sausage links into 1 inch pieces.
Heat olive oil in 10 inch cast iron skillet over medium high heat and brown sausage, without fully cooking.
Add onion and garlic, stir and saute with sausage until soft and translucent.
Stir in Italian seasoning, salt, pepper, and parsley, set aside.
Prepare egg noodles in boiling water, as directed, and drain.
Combine sausage mixture and noodles in mixing bowl, add tomato soup and stir well. Reserve skillet for baking.
Stir in cheese and milk then transfer back to skillet.
Bake for 25-30 minutes, add additional milk to prevent from drying out, if necessary.
Allow to stand for 5 minutes after removing from oven. Garnish with additional Parmesan cheese and parsley if desired.

It’s been a long day! Dealing with my Sinuses all day, as has everyone in the area I hear. Mom had some errands and the went to see Dad at the rehab center and I stayed home and caught up on all the house work and laundry. It’s a real pain trying to put sheets on the bed with one leg, Ugh! But I managed to get everything done. For dinner tonight I prepared a Baked Cold Cut Trio Mini Sub w/ Creamy Tomato Soup.
I used a Trio of Cold Cuts for my Baked Mini Sub; Kroger Private Selection Old World Hard Salami, Kroger Private Selection Off – the Bone Smokehouse Ham, and Kroger Private Selection Old World Pepperoni. Creamy with a fantastic flavor and it’s 110 calories and 19 carbs. I also had a Diet Dr. Pepper to drink. For dessert/snack later some slices of fresh Mozzarella Cheese and Ritz Whole Grain Crackers.

I had to go back to my Family Doctor Today. My allergies or sinus was driving me crazy, wrote me a prescription. Later had the car washed and the inside swept out. Another hot and humid day out again, not much of an appetite in this weather. For dinner I prepared a Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup.
I used Kroger Brand Private Selection Off- the Bone Smoked Ham. One of my favorite packaged sliced Hams. It has a really great taste to it and only 70 calories per serving. I also used Sargento Ultra Thin Swiss Cheese which is only 40 calories per slice. Topped it with Kraft Reduced Fat Mayo w/ Olive Oil. To help the bun brown a bit I brushed the top with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Subs!

Today’s Menu: Ham and Turkey Breast Baked Mini Sub w/ Creamy Tomato Soup
A beautiful and sunny day out but, A cold breeze and a high of 18 degrees. Tomorrow it’s supposed to hit 40 degrees, another one day heat wave! Then again they’re saying more snow Friday morning and then again Saturday night and Sunday morning, be glad when this pattern of snow and cold stops. Then there are signs of Spring is on its way, some of the Major League Pitchers and Catchers have reported to Spring Training! Ran an errand for my Mom and that was about it. For dinner tonight, Ham and Turkey Breast Baked Mini Sub w/ Creamy Tomato Soup.
I used Kroger Private Selection Smoked Off the Bone Sliced Ham and Boar’s Head Honey Smoked Turkey Breast for my Baked Mini Sub. I had picked the Turkey up while at Jungle Jim’s Market yesterday with this Sandwich in mind. Then I used a Meijer Wheat Mini Sub Bun. Layered the Meats on the Bun and topped it with some Kraft Reduced Fat Mayo w/ Olive Oil and a thin slice of Murray’s Muenster Cheese. I brushed some Extra Virgin Olive Oil on the top bun, which makes it brown up better. I baked it in a shallow baking pan at 400 degrees until the Cheese started to melt and the Meats were heated. I love using these Meijer Wheat Mini Sub Buns, their just the right size and they toast up fantastic! I heated a can of Amy’s Low Fat Cream of Tomato Soup. Amy’s Organic Soups used to be hard to find, at least in this area, and now Kroger, Meijer, and Walmart all sell it. A Baked Sub with Tomato Soup for a cold Winter’s Day! For dessert later a Healthy Choice Vanilla Swirl Frozen Yogurt.
Boar’s Head HONEY SMOKED TURKEY BREAST
An all white turkey breast, lightly smoked and dipped in golden honey for a smoky, sweet flavor that is sure to be a favorite. Wonderful on Sourdough bread with lettuce, tomato, and our Vermont Cheddar Cheese for a lunchtime treat.

Oven Roasted Rosemary Ham Sandwich w/ Creamy Tomato Soup

Today’s Menu: Oven Roasted Rosemary Ham Sandwich w/ Creamy Tomato Soup
Busy afternoon as I went for my 6 month check-up at my Oncologist. I’m very lucky to have found not only one the finest Oncologist but one of the friendliest and with a super staff! I’ve been seeing him since November of 1998. He’s helped through some really difficult times with not only Melanoma Cancer but a variety of aches and illnesses, proud to call him a friend. Anyway he read my scan reports and everything was negative on the Cancer front! This month almost to the very day marks my Anniversary of being Cancer Free also, 9 years! It’s been a struggle but I’m still here! For dinner, a very light dinner. I prepared a Oven Roasted Rosemary Ham Sandwich w/ Creamy Tomato Soup.
I used Kroger Brand Sliced Oven Roasted Rosemary Ham. I had never tried this Ham until last week, sorry it took me so long to try it! It’s sliced really thin and the Ham just melts in your mouth. Nice flavor and it’s only 70 calories 0 carbs per serving. I served it on a Healthy Life Whole Grain Hamburger Bun and topped it with a slice of Sargento Ultra Thin Swiss Cheese, which is only 40 calories and 0 carbs. So the Sandwich is a total of only 190 calories and 16 carbs.
I also heated up a can of my favorite Tomato Soup, Amy’s Organic Creamy Tomato Soup. I’ve been using this a couple of years now. Creamy with a fantastic flavor and it’s 110 calories and 19 carbs. I added a half serving of Skyline Oyster Crackers, what’s Tomato Soup without Crackers! A light, low calorie, low carb, delicious dinner. For dessert a bowl of Del Monte No Sugar Added Peach Chunks.
