Almond Turkey Cups
Almonds, veggies and lean turkey…oh my! Chock full of delectable Asian flavors, these crispy cups of joy make a great brunch at under 300 calories per serving. Done in under 30 minutes!

INGREDIENTS
1 tablespoon vegetable oil
½ cup chopped red bell pepper
½ cup chopped green onion
2 cups cubed JENNIE-O® Oven Roasted Turkey Breast
½ cup sweet-and-sour sauce
½ cup chopped almonds
2 tablespoons soy sauce
12 wonton wrappers

DIRECTIONS
Heat oven to 400°F.
1) In small skillet, heat oil over medium heat until hot. Add bell pepper and onion. Cook and stir 3 minutes or until crisply-tender.
2) In medium bowl, combine vegetables, turkey, sweet-and-sour sauce, almonds and soy sauce; mix well.
3) Place wonton wrappers in muffin cups. Fill each with about ¼ cup turkey mixture. Bake 15 to 18 minutes or until wonton edges are crisp and filling is hot.

Moroccan Peppers with Turkey Sausage
Tired of eating peppers that AREN’T stuffed full of savory Moroccan flavor? We know the feeling. Take your dinner on a Middle Eastern excursion with lean turkey sausage, mint, fresh zucchini and garlic.

INGREDIENTS
8 bell peppers, any color combination
1 tablespoon olive oil
1 (19.5-ounce) package JENNIE-O® Lean Turkey Bratwurst
½ cup diced red onion
2 small or 1 large zucchini, cut into ¼-inch dice
1½ teaspoons minced garlic
1½ cups chicken broth
¼ teaspoon powdered saffron or turmeric
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ teaspoon salt
⅛ teaspoon ground cinnamon
1 cup uncooked couscous
2 tablespoons chopped fresh mint or basil
½ cup currants or raisins
½ cup toasted almonds

DIRECTIONS
1) Heat oven to 375ºF. Cut peppers lengthwise through stems keeping stem halves intact to hold stuffing. Discard seeds and veins. Place in 9 x 13-inch baking dish. In large deep skillet over medium heat add oil and turkey; Add onions and saute until turkey is well-done, 165°F as measured by a meat thermometer.
2) Add zucchini and garlic; continue cooking 2 minutes. Add broth, saffron, cumin, cayenne pepper, salt and cinnamon; bring to a boil. Stir in couscous. Cover; turn off heat under skillet. Let stand covered 5 minutes or until liquid is absorbed. Stir in mint, currants and almonds; spoon into bell peppers. Cover with aluminum foil; bake 20 minutes or until peppers are tender and filling is hot.
* Always cook to an internal temperature of 165°F.

This week’s Diabetic Dish of the Week is – PARMESAN HERB ENCRUSTED FISH. You’ll need; Talapia, along with Almonds, Bread Crumbs, Parmesan Cheese, and Seasonings. PARMESAN HERB ENCRUSTED FISH

Ingredients

1/3 cup sliced almonds, finely chopped
1/4 cup plain dry bread crumbs
3 tablespoons grated Parmesan cheese
1/2 teaspoon McCormick Garlic Powder
1/2 teaspoon McCormick Paprika
1/2 teaspoon McCormick Parsley Flakes
1/4 teaspoon McCormick Black Pepper, Ground
1 pound tilapia fillets
Olive oil

Directions

Preheat oven to 450F. Mix almonds, bread crumbs, Parmesan cheese and seasonings in shallow dish.
Brush fish lightly with oil. Coat evenly with almond mixture. Place fish on greased foil-lined shallow baking pan.
Bake 10 to 12 minutes or until fish flakes easily with a fork.
NOTES:
Adding an herb crust to tilapia is a great way to complement its mild flavor. Combine spices like garlic, paprika and black pepper with chopped almonds, bread crumbs and Parmesan cheese for an easy dinner. You can substitute red snapper, striped bass, flounder or sole for the tilapia..

Blueberry Chia Jam Bars Recipe
For a nourishing treat that is perfect for breakfast or dessert, I made these delicious blueberry chia jam bars. I love making no-bake desserts because they take less time to prepare, and there’s no heating involved, so you won’t compromise the nutritional value of the ingredients. My chia jam bars are loaded with fiber, antioxidants, iron, calcium and healthy fats. They contain less sugar than other dessert bar recipes out there, and are suitable for both gluten-free and vegan diets……….

Blueberry Chia Jam Bars Recipe {Gluten-Free, Vegan}
Total Time: 30 minutes

Yield: 16 mini bars

Blueberry Chia Jam Bars Recipe {Gluten-Free, Vegan}
Ingredients

Base
1 1/2 cups raw almonds
1 1/2 cups gluten-free rolled oats
1 tbsp chia seeds
1/4 cup maple syrup
1/4 cup water
1 tsp vanilla or almond extract
Blueberry layer
12 oz fresh or frozen blueberries
1/3 cup + 1 tbsp chia seeds
2 tbsp maple syrup
Topping
1/3 cup cacao powder
1/3 cup coconut oil
1/3 cup maple syrup
Instructions

1 – Line a 9’’ x 5’’ loaf pan with unbleached parchment paper and set aside. Place the base ingredients in your food processor and pulse until combined. Using a spatula, press the mixture evenly into the bottom of the prepared loaf pan.
2 – In a food processor or blender, puree the blueberries. Add the chia seeds and mix until combined. Let the mixture sit for 20 minutes, or until it thickens. Once the mixture is thick, spread it evenly over the base layer.
3 – In a small bowl, mix the topping ingredients and pour the mixture over the blueberry chia jam layer, making sure to spread it out evenly.
4 – Freeze the bars until firm. To serve, let the bars thaw at room temperature for 15-20 minutes and cut as desired.
5 – Store bars in the refrigerator for up to one week.
