CRANBERRY-ALMOND TARTS
Cranberries and almond nestled in a flaky pastry make a sweet ending for a holiday party.
Ingredients
1/2 (15 ounce) container refrigerated pie crusts
3/4 cup Splenda No Calorie Sweetener, Granulated
1/3 cup water
1 (12 ounce) bag fresh or frozen cranberries, thawed
1/4 cup chopped almonds, toasted
1/2 teaspoon almond extract
1 (8 ounce) carton non-dairy whipped topping
1/4 cup toasted almond slices
Directions
1 – Preheat oven to 375 degrees F.
Unroll pastry and roll to 1/8-inch thickness on a lightly floured surface; using a 2- inch square cookie cutter, cut out 24 squares, re-rolling pastry, if necessary. Place squares in ungreased miniature muffin pans. Place in freezer.
2 – Combine Splenda Granulated Sweetener and water in a saucepan, stirring until blended. Stir in cranberries. Bring mixture to a boil over medium-high heat. Cook, stirring constantly 2 minutes or until berries pop. Pour through a wire-mesh sieve, set over a bowl. Return liquid to saucepan; reserving berries. Bring liquid to a boil; reduce heat and simmer 5 minutes or until liquid is reduced to about 3 tablespoons. Pour sauce over cranberries, tossing to coat. Stir in almonds and almond extract. Spoon mixture into pastry shells.
3 – Bake 15 to 20 minutes or until pastry is golden and filling is set. Carefully remove tarts from muffin tins; cool on a wire rack.

ALMOND BERRY MUFFINS
Fresh berries, nutty whole grains, and chewy flaxseeds combine for a delicious, lightly-sweetened muffin with a delightful texture.
Ingredients
2-1/4 cups whole grain or wheat pastry flour
4 teaspoons baking powder
1/4 cup ground flaxseed
1/2 teaspoon salt
2/3 cup fresh blueberries
2/3 cup fresh raspberries
1 cup 2% milk
2 eggs
1/3 cup Splenda Sugar Blend
1/3 cup canola oil
1 teaspoon almond extract
Directions
1 – Preheat oven to 400 degrees F. Line a 12-cup muffin pan with paper liners.
2 -In a large bowl, combine flour, baking powder, flaxseed, and salt. Whisk to mix. Add berries and stir to coat.
3 – In another bowl, combine milk, eggs, Splenda Sugar Blend, oil, and almond extract. With a fork, beat until smooth.
4 – Pour egg mixture into berry mixture and gently mix with a fork to moisten the dry ingredients. Don’t overmix (a few lumps in the batter are normal). Dollop 1/3 cup of batter into each of the prepared muffin cups.
5 – Bake for 20 to 24 minutes, or until a wooden pick inserted into the center of a muffin comes out clean. Let stand for 5 minutes on a rack before serving.
NOTES:

Country Peach Tart
Easier than a pie, but just as flavorful with rustic appeal, you’ll like this quick to fix dessert filled with cinnamon and almond-flavored peaches.
Recipe Ingredients:
Pastry for single-crust 9-inch pie
4 cups peeled, pitted, sliced fresh peaches or frozen unsweetened peaches, thawed
1/2 cup Equal® Spoonful*
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon almond extract
Cooking Directions:
1 – Roll pastry on floured surface to 12-inch circle. Transfer to an ungreased baking sheet.
2 – Combine peaches, Equal®, flour, cinnamon and almond extract. Toss gently to coat. Arrange peach mixture on pastry, leaving 2-inch border around edge of pastry. Bring pastry edge toward center, overlapping as necessary.
3 – Bake tart in preheated 425°F (220°C) oven 25 to 30 minutes or until crust is golden and peaches are tender. Serve warm or at room temperature.
Makes 8 servings.
*May substitute 12 packets Equal sweetener

Almond Berry Parfaits
Make the most of the berry harvest with this high-fiber and delicious dessert!
Ingredients
1 container (8 ounces) plain low-fat yogurt
1 cup sliced strawberries
1/2 cup raspberries
1/2 cup blueberries
1/8 teaspoon almond extract
1 tablespoon plus 2 teaspoons pourable sugar substitute,* divided
2 tablespoons slivered or sliced almonds, toasted
Directions
Yield: 2 servings
Serving size: 1/2 cup yogurt, 1 cup berries
1 – Line strainer with coffee filter or 2 sheets paper towel; place over bowl. Place yogurt in strainer; refrigerate at least 2 hours or up to 24 hours to drain.
2 – In medium bowl, combine strawberries, raspberries, and blueberries. Add extract and 2 teaspoons sugar substitute; toss lightly. Chill at least 30 minutes or up to 2 hours.
3 – Transfer drained yogurt to small bowl, stir in remaining 1 tablespoon sugar substitute. Spoon 1/3 cup berry mixture into each of 2 wine or parfait glasses. Spoon half of yogurt mixture over berries. Repeat layering with half of remaining berries, remaining yogurt, and remaining berries. Top with almonds.
*Note: This recipe was tested using sucralose-based sugar substitute.

Strawberry Mousse
This perfectly portioned mousse is the ideal way to close out a lazy summer evening. It’s light on carbs, with only 8 grams per serving, but jam-packed with strawberry flavor!
Ingredients
1 package (4-serving size) strawberry sugar-free gelatin
1/2 cup boiling water
2 cups fresh sliced strawberries, divided
1/2 cup reduced-fat cream cheese
1/2 cup cold water
1/4 teaspoon almond extract
1 cup reduced-fat whipped topping, plus additional for garnish (optional)
Directions
Yield: 6 servings
Serving size: 1/2 cup
1. Place gelatin in small bowl. Pour boiling water over gelatin and stir until completely dissolved. Pour gelatin mixture into blender; add 1 cup sliced strawberries, cream cheese, cold water and almond extract. Blend 1 minute or until completely smooth.
2. Pour mixture into medium bowl. Thoroughly whisk whipped topping into mixture (make sure gelatin mix does not settle to bottom).
3. Pour mousse into 6 serving cups. Refrigerate at least 2 hours, or until mousse sets. Top mousse with remaining sliced strawberries and dollop of whipped topping, if desired.

Cherry Bowl Cheesecakes
Nothing says warm weather like the sweet taste of cherries. If you agree, you’ll love our individually portioned, no-bake cherry cheesecakes — these delightful desserts are the perfect indulgence for a special occasion!
Ingredients
1 package (8 ounces) fat-free cream cheese, softened
1 package (8 ounces) reduced-fat cream cheese, softened
2 tablespoons fat-free (skim) milk
4 packets sugar substitute or equivalent of 8 teaspoons sugar
1/4 teaspoon almond extract
40 reduced-fat vanilla wafers
1 can (16 ounces) light cherry pie filling
Directions
Yield: 8 servings
Serving size: 1 cheesecake
1 – Beat cream cheese, milk, sugar substitute, and almond extract in medium bowl with electric mixer at high speed until well blended.
2 – Place one vanilla wafer on bottom of 4-ounce ramekin.* Arrange four additional vanilla wafers around side of ramekin. Repeat with remaining wafers. Fill each ramekin with 1/4 cup cream cheese mixture; top each with 1/4 cup cherry pie filling. Cover with plastic wrap; refrigerate 8 hours or overnight.
*Note: If ramekins are not available, you may substitute with custard dishes or line 8 muffin cups with foil liners and fill according to above directions.
1 – Cheesecake Parfaits: Crush 32 wafers. Prepare cream cheese mixture as directed above. Layer half of crushed wafers, half of cream cheese mixture, and half of pie filling in 8 small dessert glasses. Repeat layers. Garnish with remaining wafers and fat-free whipped topping, if desired.

Pecan-Cranberry Upside-Down Cake
This moist and delicious upside-down cake is the perfect complement for your holiday table!
Ingredients
Preparation time: 5 minutes
Cooking time: 30 minutes.
2 tablespoons light margarine
1/2 cup fresh or frozen cranberries
1/2 cup Brown Sugar Blend Splenda, No Calorie Sweetener, granular
1/4 cup chopped pecans
1 cup Splenda, No Calorie Sweetener, granular
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup liquid egg substitute
1 cup skim milk
1/2 teaspoon almond extract
1/4 cup Enova or canola oil
Fat-free nondairy whipped topping (optional)
Directions
Yield: 10 servings
Serving size: 1/10th of cake
* Heat oven to 350°F. Melt light margarine in microwave or over low heat in small skillet on stove. Pour melted margarine into a 9-inch nonstick round cake pan, and use a pastry brush to evenly spread the margarine across the bottom of the pan. In a small bowl, combine cranberries, Brown Sugar Blend Splenda, and pecans. Pour mixture over melted margarine in an even layer. In another small bowl, combine Splenda (white), flour, baking powder, salt, and cinnamon and stir well with a spoon. Add liquid egg substitute, milk, almond extract, and oil, and stir until batter is smooth. Pour batter over fruit and nut mixture evenly. Bake for 30 minutes, or until lightly brown on top. Remove from oven and allow to cool 5 minutes, then carefully invert using protective gloves onto a serving plate and remove pan. Allow cake to cool. Cut into 10 slices and top each with 1 tablespoon fat-free nondairy whipped topping if desired.
