Chicken Verde Sandwiches

 

“Chicken breast cooks in a slow cooker with prepared pizza sauce and green salsa to make a tasty sandwich filling.”

 
INGREDIENTS:
2 pounds frozen boneless chicken breastAll Recipes
10 ounces prepared pizza sauce
1 cup salsa verde (such as Herdez®)
1/2 cup sour cream
6 kaiser rolls
6 ounces shredded Cheddar cheese
6 ounces sour cream
12 dashes hot sauce, or to taste

 
DIRECTIONS:
1. Combine the frozen boneless chicken breast, prepared pizza sauce, and salsa verde in a slow cooker. Cover the cooker, and cook on Low 8 to 10 hours.
2. Use 2 forks to pull the chicken meat apart until completely shredded. Stir 1/2 cup sour cream into the chicken mixture. Place the chicken mixture onto the rolls. Top each sandwich with 1 ounce shredded Cheddar cheese, 1 ounce sour cream, and 2 dashes hot sauce to serve

Today’s Menu: Honey-Garlic Slow Cooker Chicken Thigh Slider w/ Sugar Snap Peas and Carrots
Another cloudy and cool Spring Day here. It was in the 40’s this morning with a cool breeze blowing. I went out to Egg Beater's Egg Whites OMELET 003get the Morning Papers and my neighbor was out getting his and he said he has the Spring Flu that’s going around the area, a lot of people are down with it. I started my day off with one delicious Breakfast. I prepared a Egg Beater’s Whites Cheese Omelette, used Sargento Reduced Fat Shredded Sharp Cheddar for the filling. Then I also prepared some Eckrich Smoked Turkey breakfast Links, and these were really good and easy to prepare, with 2 slices of Klosterman Wheat Bread and a cup of Bigelow Decaf Green Tea! Really enjoyed this! Helped Mom with some more of her Spring Cleaning most of the afternoon. For dinner tonight, Leftovers! I prepared Honey-Garlic Slow Cooker Chicken Thigh Slider w/ Sugar Snap Peas and Carrots.

Tonight it all leftovers! No way was I going to let any of last night’s dinner go to waste. The Honey-Garlic Slow Cooker Chicken Thighs are just the right size for a Slider. So I warmed up everything in the microwave. For the Slider Bun I used a Kroger Whole Wheat Mini Slider Bun. As good as last night’s meal was, tonight’s was just as good. Everything reheated great. I’ve left last night’s original post that has the prep for everything when made fresh. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 

Came across this in an email from http://allrecipes.com/ and couldn’t wait to try it! So tonight it’s Honey-Garlic Slow Cooker Chicken Thighs. It’s really an easy recipe to make. I’ll need the following; 4 skiHoney-Garlic Slow Cooker Chicken Thighs 002nless, boneless Chicken Thighs, 1/2 cup Soy Sauce (reduced sodium), 1/2 cup Hunt’s Ketchup, 1/3 cup Honey, 3 cloves Garlic (minced), and 1 teaspoon Dried Basil.

To prepare it as I said was very easy! To start Lay Chicken Thighs into the bottom of a 4-quart slow cooker. Whisk Soy Sauce, Ketchup, Honey, Garlic, and Basil together in a bowl; pour over the Chicken. Put the lid on the slow cooker and cook on Low for 6 hours. After 6 hours you have some incredible tasting Chicken Thighs! The combination of all 5 ingredients works perfectly with the Chicken. I especially like that hint of Honey flavor.That “Keeper Recipe” collection just keeps growing with this addition to it! Look no further for that next Chicken Recipe.

Then I also had some Sugar Snap Peas and Carrots. I buy this from the Kroger Produce Department. The Sugar Snap Peas and Carrots come in sealed plastic tray and all you have to do is prepare it the way you want. I pan fried mine in a tablespoon of Extra Virgin Olive Oil. In a medium size skillet just fry on medium heat until vegetables are fork tender.

1/3 cup honey
3 cloves garlic, minced

2. – Whisk soy sauce, ketchup, honey, garlic, and basil together in a bowl; pour over the chicken.
3. – Cook on Low for 6 hours.

A sunny but coll morning, 40 degrees, to start. But clouds kept rolling in as the day went on. Had a light Breakfast Honey-Garlic Slow Cooker Chicken Thighs 006and my morning workout, then off to Meijer. Mom wanted some Beef Cube Steak and Meijer has the best around. Very lean and tender unlike other places where it’s sometimes tough and stringy. Picked up a few other items while there, I wanted some Jennie – O Sweet Italian Turkey Sausages and the Jennie – O Turkey Breakfast Sausage Links but as usual they were out of stock on them. Puzzling why it’s so tough to find Jennie – O Turkey Products around here! Meijer and Walmart are the only ones to carry multiple items and they aren’t very consistent with keeping it in stock. Anyway back home did some housecleaning inside and out. For dinner tonight a new recipe, Honey-Garlic Slow Cooker Chicken Thighs. Tonight’s it’s Honey-Garlic Slow Cooker Chicken Thighs w/ Mashed Potatoes, Sugar Snap Peas and Carrots.

INGREDIENTS:
3 boneless chicken breast halves,
cooked and cubed
1 cup hickory flavored barbeque sauce
1 tablespoon honey
1 teaspoon molasses
1/3 cup brown sugar
1/2 bunch fresh cilantro, chopped
1 (12 inch) pre-baked pizza crust
1 cup smoked Gouda cheese, shredded
1 cup thinly sliced red onion
DIRECTIONS:
1. Preheat oven to 425 degrees F (220 degrees C). In a saucepan over medium high heat, combine chicken, barbeque sauce, honey, molasses, brown sugar and cilantro. Bring to a boil.
2. Spread chicken mixture evenly over pizza crust, and top with cheese and onions. Bake for 15 to 20 minutes, or until cheese is melted.

Elk Chili

“A simple but tasty chili recipe using ground elk meat as the base. Best served with Mexican style cornbread.”

INGREDIENTS:
1 1/2 pounds ground elk meat
2 large yellow onions, diced
2 (10 ounce) cans tomato sauce
1 (14.5 ounce) can Italian-style stewed
tomatoes
1 (15 ounce) can kidney beans, drained
1 (4 ounce) can diced green chiles
(optional)
1 1/2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon black pepper
1/2 cup brown sugar

 
DIRECTIONS:
1. In a large deep skillet over medium heat, cook the ground elk with the onion until evenly browned. Drain off excess grease.
2. Pour the tomato sauce, stewed tomatoes, kidney beans and green chilies into the skillet with the meat, and stir to blend. Season with chili powder, cumin, salt, pepper, oregano and brown sugar. Cover, and simmer over low heat for at least one hour.

Gingerbread man

A gingerbread man is a biscuit or cookie made of gingerbread, usually in the shape of a stylized human, although other shapes, especially seasonal themes (Christmas, Halloween, Easter, etc.) and characters, are quite common as well.

 

 

 

Gingerbread dates back to the 15th century, and figural biscuit-making was practiced in the 16th century. The first documented instance of figure-shaped gingerbread biscuits was at the court of Elizabeth I of England. She had the gingerbread figures made and presented in the likeness of some of her important guests.

Most gingerbread men share the same roughly humanoid shape, with stubby feet and no fingers. Many gingerbread men have a face, though whether the features are indentations within the face itself or other candies stuck on with icing or chocolate varies from recipe to recipe. Other decorations are common; hair, shirt cuffs, and shoes are sometimes applied, but by far the most popular decoration is shirt buttons, which are traditionally represented by gum drops, icing, or raisins.

According to the 2009 Guinness Book of Records, the world’s largest gingerbread man was made on December 2, 2006 by the Smithville Area Chamber of Commerce in Smithville, Texas, at their annual Festival of Lights celebration. The gingerbread man weighed in at 1,308 lbs, 8 oz (593.5 kg), and stood at over 20 feet (more than 6 m). On December 6, 2008, also in conjunction with the annual Festival of Lights celebration, a monument was dedicated in honor of the feat made from the very cookie sheet that was used to break the record.

“These Gingerbread Men Cookies are as cute as can be. If desired, decorate with raisins, currants or cinnamon red hot candies for eyes and buttons. Or, pipe untinted or colored icing onto cookies.”
INGREDIENTS:
3 cups flour
2 teaspoons McCormick® Ginger,
Ground
1 teaspoon McCormick® Cinnamon,
Ground
1 teaspoon baking soda
1/4 teaspoon McCormick® Nutmeg,
Ground
1/4 teaspoon salt
3/4 cup butter, softened
3/4 cup firmly packed brown sugar
1/2 cup molasses
1 egg
1 teaspoon McCormick® Pure Vanilla
Extract

 
DIRECTIONS:
1. Mix flour, ginger, cinnamon, baking soda, nutmeg and salt in large bowl. Set aside. Beat butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add molasses, egg and vanilla;mix well. Gradually beat in flour mixture on low speed until well mixed. Press dough into a thick flat disk. Wrap in plastic wrap. Refrigerate 4 hours or overnight.
2. Preheat oven to 350 degrees F. Roll out dough to 1/4-inch thickness on lightly floured work surface. Cut into gingerbread men shapes with 5-inch cookie cutter. Place 1 inch apart on ungreased baking sheets.
3. Bake 8 to 10 minutes or until edges of cookies are set and just begin to brown. Cool on baking sheets 1 to 2 minutes. Remove to wire racks; cool completely. Decorate cooled cookies as desired. Store cookies in airtight container up to5 days.
