Today’s Menu: Cumin Spiced Pork Chop w/ Roasted Butternut Squash, Cut Italian Beans, and Italian Round Bread

 

 

For Breakfast I prepared a Poached Egg served on top of a toasted Healthy Life Whole Grain English Muffin. I also had my morning cup of Bigelow Decaf Green Tea. Not to warm out there today, a high of 35 degrees. Our flowers and trees that have had already came out are still surviving. Everything has blossomed so earl this year. Dad is doing okay, he’s ready to come home. He’s been the hospital and rehab now for about 1 1/2 months. Cleaned the house today and did some laundry for Mom. Had to replace the lint hose on back of the dryer. Everything done, took it easy the rest of the day. For Dinner tonight it’s Cumin Spiced Pork Chop w/ Roasted Butternut Squash, Cut Italian Beans, and Italian Round Bread.

 

 

I picked up a package of Center Cut Pork Chops from the Meijer Meat Department yesterday. I really love the Meijer selection and quality of all their meats, and all their products and produce. So to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.

 

I prepared some Roasted Butternut Squash. This has quickly become a family favorite. I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Crumbled Bacon Bits, 1/2 tablespoon Extra Light Olive Oil, McCormick Grinder Sea Salt and McCormick Grinder Peppercorn Medley.

 

 

 

To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash!

 

 

 

 

For one side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans of any kind every day and never get tired of having them. For Dessert later a bowl of Dole Sliced Peaches.

For Breakfast this I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam and as usual had my morning cup of Bigelow Decaf Green Tea. Outside we had rain on and off for most of the day, about 49 degrees for a high. After Lunch I went to the rehab center to see Dad and while there I went to therapy with him. He’s doing really good with it, might get to home soon! Back home and not a lot going on the rest of the day. For Dinner tonight I prepared Catfish Nuggets w/ Cut Italian Beans and Oven Fries.

 

 

I had purchased the Catfish Nuggets from Kroger and had them in the freezer so I let them thaw in the fridge Catfish Nuggets Rice 003overnight. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Virgin Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. I love using all these Zatarain’s Products!

For one side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them.

For another side I prepared some Alexia Oven Fries with Olive Oil, Rosemary and Garlic. I think this is the second time I tried these. I picked a couple of bags of these up at Jungle Jim’s International Market on my last visit there. They are already seasoned with Olive Oil, Rosemary and Garlic. I also seasoned them with some Morton’s Lite Salt. They baked up perfectly and tasted great, as all the Alexia Potato. Great to have a bag of these handy in the freezer!

Today’s Menu: Crispy Chicken Strips w/ Mashed Potatoes and Cut Green Beans

 

 

 
Started my morning off by preparing some Simply Potatoes Shredded Hash Browns, 1 Egg Sunny Side Up, 2 Jimmy crispy-chicken-strips-w-scalloped-potato-casserole-and-cut-itali-003Dean Turkey Breakfast Sausage links, toasted a couple of slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. One great Breakfast! From a high of 65 degrees 2 days ago to a high of 25 degrees with snow flurries! And yesterday evening we got about 1/2 inch of snow. Back to 60 degrees Sunday and Monday. After Lunch I went over to see Dad at rehab. They moved him to a private room finally. Which will be a lot quieter and a lot more privacy. Stopped by the bank and filled up with gas before coming home. For Dinner tonight I prepared Crispy Chicken Strips w/ Mashed Potatoes and Cut Green Beans.

 

Perdue Crispy Chicken Strips

I used the PERDUE® Crispy Chicken Strips, the families favorite Chicken. To prepare it I preheated the oven to 425°F . Sprayed a small baking sheet with cooking spray. Placed frozen strips in single layer on baking sheet. Baked for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn the Strips halfway through heating time. They come out golden brown and delicious! Really enjoy these and so easy to prepare!

 

 

 

Idahoan Scalloped Potato Casserole

For one side I prepared a box of Idahoan Scalloped Potato Casserole. Another easy to prepare and delicious Potato dish from Idahoan. A breeze to make just mix the ingredients and bake at 450 degrees for 25 minutes and you have some delicious Scalloped Potatoes. Plus their only 140 calories and 19 net carbs.

For another side I heated a can of Allens Cut Italian Green Beans, our family’s favorite Bean Side. To prepare them just empty the can into a small sauce pan and simmer until heated. Today’s Menu: 5 oz. Petite Buffalo Top Sirloin Steak w/ Baked Cheesy Hash Browns and Cut Italian Green Beans

 
For Breakfast I toasted a Healthy Life Whole Grain English Muffin (lightly buttered), heated up 3 slices of Boar’s petite-buffalo-top-sirloin-steak-cheesey-hash-brown-casserole-013Head Sweet Sliced Ham, and made my morning cup of Bigelow Decaf Green Tea. Delicious and light Breakfast sandwich! Cold day here today, had a low this morning around 11 degrees and a high of only 20. We ended up with about 2″ or more of snow, so not bad at all. So not a lot going on outside today. I didn’t have a lot to do today so I shredded some bills and statements for Mom, and she had a ton of them! Good thing I had nothing else to do because this took a while. So for my Dinner tonight it’s my favorite Steak, the Wild Idea Buffalo – 5 oz. Petite Top Sirloin Steak. Tonight I prepared a 5 oz. Petite Buffalo Top Sirloin Steak w/ Baked Cheesy Hash Browns and Cut Italian Green Beans.

 
I’ll be using Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.). To prepare the Steak; I rubbed the Steak with a Wild Idea Buffalo – 5 oz. Petite Top Sirloin Steak 008teaspoon of Extra Light Virgin Olive Oil. Then seasoned it with McCormick’s Grinder Sea Salt and Peppercorn Medley. As the Steak rested I preheated a Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, cooked it 4 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So juicy and the best flavor of any Steak, Beef or Buffalo I’ve ever had. As always when cooking Buffalo, keep an eye on it will get done quickly. They cook faster than marbled meat and when overcooked will be tough and dry. Buffalo is best cooked medium-rare or rare. The Steak came out a beautiful medium rare, and juicy and tender! I also Sauteed some Baby Portobello Mushrooms to top the Steak.

For one side I prepared some Idahoan Cheesy Hash Brown Potatoes. I love all the Idahoan products and this one no different. As the others its baked in a casserole dish. Just follow the box instructions and it comes out perfect! Excellent Hash Brown Dish! Well seasoned and Cheesy. Goes great with my Buffalo Sirloin. A Winter mix of Weather out there today. Snow, to flurries, to rain, and back to snow. Hello Winter! So not a whole lot going on outside today. Shoveled what I could on the driveway, couldn’t go down the small slope in my Hoveround. My neighbor came over with his shovel and then we salted the driveway. Back inside for the day. Well we have the cable up and running, went with Cincinnati Bell FiOptics. For Dinner tonight I prepared a 5 oz. Petite Buffalo Top Sirloin Steak w/ Baked Cheesy Hash Browns and Cut Italian Green Beans.

 

 
I had this same meal a while back and enjoyed so much I’m having it again, 5 oz. Petite Buffalo Top Sirloin Steak w/ Buffalo 10 oz. Today’s Menu: Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Cut Italian Green Beans

 

 
For Breakfast on this Sunday Morning I toasted a Healthy Life English Muffin and topped it with a Poached Egg. Crock Pot Pork Back Ribs w Potatoes Au Gratin and Cut Italian Gr 006Also had my morning cup of Bigelow Decaf Green Tea. Went out to get the morning papers and it wasn’t quite as cold, mid 20’s, It reached the low 40’s today but rain showers moved in also. I’m feeling better to day than I have the last few days. Mom and Dad went to Church so it gave me a chance to give the house a good cleaning. Had everything done by lunch so I could settle in and watch some NFL Football the rest of the afternoon! For Dinner tonight Mom’s Favorite, Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Cut Italian Green Beans.

Mom’s favorite meal is my Crock Pot Pork Back Ribs and she’s been wanting some Ribs. So “what Mom wants Mom gets”. So Ribs it is for dinner tonight. She I picked up a package at Kroger yesterday, they always have top quality Pork. And these were some Pork Back Ribs, 4 1/2 lbs. worth! Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and put each half in a Hefty Gallon Plastic Bag then seasoned them with JB’s Fat Boy All Purpose Rub and then covered the Ribs in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge.

 
Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Crock Pot Pork Back Ribs 002Pam Non-Stick Spray. Got the Ribs out of the fridge, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low, for about 8 hours. Long up in the afternoon you can start smelling the aroma of the Ribs, Rib intoxicating! After 8 hours their ready and now for the hard part of cooking them, getting them out whole without breaking them up! Their that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs were incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot little to no clean-up. Just wipe it down and store it for the next time. I would like to thank who ever invented the Crock Pot Liners! I always use them when using the Crock Pot.

Then I heated up a large can of Allens Cut Italian Green Beans. For dessert/snack later I had a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Preparation Instructions

Best for Golden Browning

PREHEAT oven to 450°F. COMBINE potatoes and sauce mix in 1 1/2 quart baking dish.
STIR in 1 1/2 cups boiling water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
BAKE uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
Remove from oven and let stand a few minutes before serving.
BAKING NOTES: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min. To bake potatoes and roast meat at the same time, bake at 375°F for about 45 min; 350°F for about 50 min; or 325°F for about 60 min.

Today’s Menu: Crispy Chicken Strips w/ Mashed Potatoes and Cut Italian Green Beans

 

 
For Breakfast this morning I made a favorite of mine, Skillet Potatoes and Ham. I used 1 package of Simply Potatoes crispy-chicken-strips-mashed-potatoesd-cut-italian-green-be-002Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped everything with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar and a fried Sunny Side Up Egg. Very good way to start this chilly Saturday morning. We broke a record high yesterday, 76 degrees, and overnight rain and cold front moves in. Some places actually seen snow flurries! Cold and windy today, even had a chill factor today. Oh this Ohio Weather! So today was a good day to get some laundry and house cleaning done followed by an afternoon of College Football! For Dinner tonight its Crispy Chicken Strips w/ Mashed Potatoes and Cut Italian Green Beans.

 

Perdue Crispy Chicken Strips
I used the PERDUE® Crispy Chicken Strips, my favorite frozen Chicken to prepare. So to prepare it, I preheated the oven to 425°F . Sprayed a small baking sheet with cooking spray. Placed frozen strips in single layer on baking sheet. Baked for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn the Strips halfway through heating time. They come out golden brown and delicious! Really enjoy these, had a side of Hidden Valley Ranch Buffalo Dressing to dip the Chicken.

 

 

Mashed Potatoes
For one side dish I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it’s ready. Then for another side I reheated the leftover Allens Cut Italian Green Beans from last night’s Dinner. Love these Beans almost as much as I do the regular Cut Green Beans, the Italian Beans are a bigger Bean. To drink I had a 7.5 once can of Coke Zero. For Dessert later a bowl of Dole Sliced Peaches.

 

 

 

 
PERDUE® Crispy Chicken Strips

Fully Cooked strips are marinated and breaded. Product is in a net weight (26 oz.) bags. Frozen.

PRODUCT HANDLING
COOKING & PREP
Conventional/Toaster Oven (Preferred Methods) Preheat Oven to 425°F. Spray baking sheet with cooking spray. Place frozen strips in single layer on baking sheet. Bake on middle oven rack for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn patties halfway through heating time. Microwave Oven Place 4-6 frozen strips in single layer on a microwave safe plate lined with paper towel. Heat, uncovered, on high for 2 to 3 minutes, turning halfway through heating time. Let stand for 1 to 2 minutes before serving.

Today’s Menu: 5 oz. Petite Buffalo Top Sirloin Steak w/ Baked Cheesy Hash Browns and Cut Italian Green Beans

 

 
For Breakfast I toasted a Healthy Life Whole Grain English Muffin (lightly buttered) and my morning cup of Bigelowpetite-buffalo-top-sirloin-steak-cheesey-hash-brown-casserole-013 Decaf Green Tea. I had to be at my Dermatologist at 8:30 for my 6 month checkup and everything looked great. And my Scans for any Cancer came back and I’m still Cancer Free! 12 years Cancer Free! I stopped my Meijer while out and picked up a couple of items. Another beautiful Spring like Fall Day out there again today, sunny and 74 degrees! But falling temperatures through the night and only a high in the 40’s with a chance of snow flurries later in the day. Just love this Ohio weather! Anyway got the cart out again and rode around the neighborhood. Stopped by a few of the older neighbors, checking on them and seeing if they needed anything. I wanted to get out and enjoy this warm weather, not many of these left this year. So for Dinner tonight it’s my favorite Steak, the Wild Idea Buffalo – 5 oz. Petite Top Sirloin Steak. Tonight I prepared a 5 oz. Petite Buffalo Top Sirloin Steak w/ Baked Cheesy Hash Browns and Cut Italian Green Beans.

 

 

Buffalo 10 oz. New York Strip Steak w Baked Steak Fries and Skil 005
I’ll be using Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.). To prepare the Steak; I rubbed the Steak with a 1/2 teaspoon of Extra Virgin Olive Oil. Then seasoned it with McCormick’s Grinder Sea Salt and Peppercorn Medley. As the Steak rested I preheated a Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, cooked it 4 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So juicy and the best flavor of any Steak, Beef or Buffalo I’ve ever had. As always when cooking Buffalo, keep an eye on it will get done quickly. They cook faster than marbled meat and when overcooked will be tough and dry. Buffalo is best cooked medium-rare or rare. I also Sauteed some Baby Portobello Mushrooms to top the Steak.

For one side I prepared something new I came across while at Walmart, Idahoan Cheesy Hash Brown Potatoes. I love all the Idahoan products and this one no different. As the others its baked in a casserole dish. Just follow the box instructions and it comes out perfect! Excellent Hash Brown Dish! Well seasoned and Cheesy. Goes great with Buffalo Sirloin. I left the description and cooking instructions at the end of the post.

Then for another side i heated up a can of Allens Cut Italian Green Beans. I had a Diet Dr. Pepper to drink. Then for dessert I had a Jello Sugar Free Dark Chocolate Pudding.

Oven Directions

I just had a cup of Bigelow Decaf Green Tea for Breakfast. I then started a load of laundry and then it was off to the markets. Today is grocery day. Meijer and then Kroger. Meijer has several good buys going on starting today. After Meijer it was on to Kroger for a few items for Mom. Nice Fall day out there. Mostly Sunny and 71 degrees. Back home we have 3 smoke alerts and I changed the batteries in all 3. Everything done so I got the cart out and took a spin around the neighborhood, really nice out! Anyway for Dinner tonight I prepared a Bison Chopped Sirloin Steak w/ Hash Browns and Cut Italian Green Beans.

 
I had this for the first time a few weeks ago and couldn’t wait any longer to have it again, Bison Chopped Sirloin sayersbrookSteak! I had ordered from SayersBrook Bison Ranch along with a few other items. They are nice size patties at 8 oz. each. They come in packs of 2, I prepared both 1 for dinner and cut the other one in half and had a couple of Lunches out of it.

 
I preheated the oven on 400 degrees. To prepare them I’ll need McCormick Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, andchopped-bison-sirloin-ital-bns-mash-pot-004 McCormick Thyme Leaves (all seasoning to taste). I got the Cast Iron Skillet out to prepare these. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Virgin Olive Oil. Heated it on medium heat. When the pan was heated I added the Chopped Steaks. I cooked each side 4 minutes.Then finished it in the oven, at 400 degrees for 5 minutes. It cooked up beautifully, perfect medium rare! Had a nice little char on the outside and moist and juicy inside. These have an excellent taste to them, another very good item from SayersBrook Ranch! I topped the Chopped Steak with some Sauteed Mushrooms and had a side of A-1 Sauce Thick/Hardy for dipping.

 

Simply Potatoes Hash Browns
As the Chopped Steak was cooking I heated up another skillet for my Hash Browns. Sprayed the skillet with Pam Cooking Spray and added a tablespoon of Olive Oil, I use Berolli Extra Light Olive Oil. With the skillet heated I fried up the Simply Potatoes Hash Browns. Seasoned them with Sea Salt and Ground Black Pepper. I love all the Simply Potatoes products! I topped these with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese.

Then I also heated up a can of Allens Cut Italian Green Beans and had a slice of Healthy Life Whole Grain Bread lightly buttered with I Can’t Believe It’s Not Butter. Then for dessert later I had a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Light.

For Breakfast this morning I prepared an Scrambled Egg Whites, Turkey Sausage Links, and a toasted English Muffin. I used Egg Beater’s Egg Whites, Jennie – O Turkey Breakfast Sausage Links, and a Healthy Life Whole Grain English Muffin and topped that with Smucker’s Sugar Free Blackberry Jam. A very good Breakfast to start the day!

After Breakfast I took a drive over to where I used to work, it had been a long time since I visited. Real good to see everyone. A lot of the people I worked with are still there. Most of the them have over 30 years there! Outside around 83 degrees, passing shower, and the humidity has cranked back up again. Not a lot going on today, caught up on everything. For Dinner tonight I prepared a new item, Bison Chopped Sirloin Steak. Tonight its Bison Chopped Sirloin Steak w/ Mashed Potatoes, Cut Italian Beans, and Baked French Bread.
