Today’s Menu: Baked Chicken Breast Strips w/ Baked Fries

 

To start this day off I prepared a Jimmy Dean Simple Scrambles Cup – Crumbled Turkey Sausage, Egg Whites, and Shredded Cheddar Cheese. Love these, so easy to prepare and only 150 calories and 3 carbs per serving (1 cup). Well the heavy rain has finally stopped but we went fro the the 60’s to 23 degrees this morning. We had a high of 38 degrees and partly cloudy. After Breakfast I went to Meijer for myself and then by Kroger for Mom for a few items. Not much else going on today. My Sinus Headache had finally eased up also. For Dinner tonight its Baked Chicken Breast Strips w/ Baked Fries.

 

 

 

 

I love the Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal that still delicious! To prepare them; Preheat the oven to 350° F. Arrange frozen chicken breast strips in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes, to an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the Chicken Strip . And Chicken is served! It’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of Hidden Valley Ranch Buffalo Dressing.

 

 

 

 

 

To go with my Chicken I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Fries

 

 

For Breakfast this morning I toasted a Thomas Light 100% Multi Grain English Muffin, heated up a al fresco Chicken Sausage Patty, added a 1/2 slice of Kraft Deli Style Sharp Cheddar Cheese, and a cup of Bigelow Decaf Green Tea. Cloudy and 66 degrees out today. I got all my work around the house done early because today is Opening Day of Baseball, and around here in the Cincinnati area its a Holiday. It should be a local Holiday because everyone is going to the game or watching the game through out the area! For Dinner Tonight a Panko Crusted Cod Fish Sandwich w/ Baked Fries. Play Ball, Go Reds!

 

 

 

 

 

I purchased a Pacific Cod Loin at Kroger yesterday. I had washed it off in cold water and I cut in in half. Put it in a plastic storage bag and into the fridge until ready to prepare.

 

 

 

 

 

 

I seasoned the fillets with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish which makes for one excellent Fish Sandwich.

 

 

 

For my Fries I’m using my favorite, Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling Sandwich. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

 

 

 

 

 

 

Panko Crusted Cod Fish Sandwich

Ingredients:

(4) 4oz. Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. Onion Powder

1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Light Olive Oil

Directions:

Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Fries

 

 

No Breakfast this morning . I had to be at my Family Doctor for my 4 month checks of Sugar, Cholesterol, and such. I’ll get the results next week, hopefully all good! Afterward I needed a few things from the West Chester Meijer and then I took Mom to Kroger to let her shop. Back home did a few chores around the house. For Dinner tonight I prepared Panko-Crusted Fish Sandwich and Baked Fries.

 

 

 

 

 

 

I had a Cod Fillet in the freezer that I had purchased from Kroger. I laid it in the fridge overnight to thaw. I had washed them off in cold water and sliced them into Sandwich size Fillets before I froze them.

 

 

 

 

 

 

To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Today’s Menu; Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

 

 

For Breakfast this morning I prepared some Simply Potatoes Hash Browns along with 2 Johnsonville Turkey Breakfast Sausage Links, a fried Sunnyside Up Egg, and a toasted slice of Aunt Millie’s Light Whole Grain Bread. Also had my morning cup of Bigelow Decaf Green Tea. Bad morning outside today. It first snowed around 2 inches or more and then turned to freezing rain for a while before turning to all rain. Made for some slippery roads around this area. Plus a lot more rain on the way they say, and more flooding. Changed the brush on the sweeper and then cleaned the house, dusted and ran the vacuum. For Dinner tonight one of my favorite Sandwiches. I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 

 

 

 

I had a 1/2 loaf of the Gold Miner Sour Dough Bread in the freezer so I sat out to thaw overnight. I love using this when making grilled sandwiches. To prepare the Sandwiches I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Goldminer California Sourdough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries.

 

 

 

 

 

While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! I love Grilled Sandwiches!

 

 

 

 

 

I had already preheated the oven, so as the Sandwich was finishing cooking I baked the Fries, I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert/Snack later a few slices of a Honeycrisp Apple.

Today’s Menu: Sweet Italian Turkey Sausage w/ Baked Shoestring Fries

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off! Partly cloudy and 35 degrees out this morning. Had a high around 57 degrees with rain moving in later in the day. After Lunch I took Mom over to the bank, then by the post office, and then got her car washed and cleaned the inside of it out for her. For Dinner tonight its a Sweet Italian Turkey Sausage w/ Baked Shoestring Fries.

 

 

 

 

I used my favorite, the healthy and delicious Jennie O Lean Sweet Italian Turkey Sausages. I bought a package of them at Meijer the other day. I prepared 2 of them and froze the rest. I pan fried them, using Pam w/ Olive Oil Cooking Spray and no oil needed. Heated the pan on medium and cooked a total of about 17 minutes, turning the Sausages occasionally. They fry up plump and brown, as always Jennie – O Products always have that fresh taste to them. The Sausages have 160 calories and 0 carbs per Sausage. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Bun and topped with French’s Spicy Brown Mustard. Love these, thank you Jennie – O!

 

 

 

 


Then for a side I baked some more of the Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right, excellent type of Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later some Cheese and Crackers.

Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Fries

 

 

I just had a cup of Bigelow Decaf Green Tea. I wanted to get an early start to go to Menard’s and stop by Kroger for Mom but the roads in some areas were real slick. We had some fog in some areas and the fog was freezing on the roads. So after that cleared up I headed out. I went to Menard’s to pick up some new blinds and then on to Kroger to grab a couple of items for Mom. Then stopped at McDonald’s and picked up Breakfast for Mom. After Lunch cleaned the house, dusted and ran the vacuum. For Dinner tonight I prepared Panko-Crusted Fish Sandwich and Baked Fries

 

 

 

 

 


When I went to Kroger earlier and I picked up a couple of North Atlantic Cod Fillets that were on sale. Washed them off in cold water and sliced them into Sandwich size Fillets. I kept one out for my Sandwich and froze the other.

 

 

 

 

To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish which makes for one excellent Fish Sandwich.

 

 

 

 

For my Fries I’m using my favorite, Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert later a bowl of Breyer’s Carb Smart Vanilla Bean Ice Cream.

 

 

 

 

 

 

 

Panko Crusted Cod Fish Sandwich

Ingredients:

(4) 4oz. Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. Onion Powder
1/2 tsp. Garlic Powder
1/2 tsp. Paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Light Olive Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Today’s Menu: Baked Chicken Breast Strips w/ Baked Fries

 

For Breakfast in the morning I prepared a Chili and Cheese Egg White Omelet. I used Egg Beater’s Egg Whites for the Omelet. The 3 Bean Buffalo Chili that was leftover from the night’s Dinner. To top it I added Ortega Smokey Chipotle Taco Sauce and Sargento Off the Block Sharp Cheddar Cheese. I also had a cup of Bigelow Decaf Green Tea. And this is a great way to start a cold and snowy Saturday Morning. Snowing and 31 degrees out. They say we’ll end up with between 5-6 inches, we’ll wait and see. A friend of mine works at Kroger and said that people cleaned the store out! This are panics at the thought of SNOW! Anyway not a lot going on outside. Salted the driveway and cleared off some on the cars. Our neighbor cleared the driveway for us, he has a Snow Blower. Watched a lot of TV and played a couple of games of Yahtzee with Mom. For Dinner tonight its Baked Chicken Breast Strips w/ Baked Fries.

 

 

 

 

I love the Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal that still delicious! To prepare them; Preheat the oven to 350° F. Arrange frozen chicken breast strips in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes, to an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the Chicken Strip . And Chicken is served! It’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of Hidden Valley Ranch Buffalo Dressing.

 

 

 

 

 

To go with my Chicken I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu; Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

 

 

 

For Breakfast this morning I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread and topped them with some Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Outside it is one bone-chilling morning out there! We have snow flurries and its 21 degrees but with the wind chill it’s around 12 degrees. That’s a long way from our 64 degrees 2 days earlier. So not a lot going on outside today. Gave Mom a hand with laundry and cleaned the house today. For Dinner tonight its a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 

 

 

 

 

We hadn’t had the Gold Miner Sour Dough Bread in a while so I purchased a loaf at the local Kroger.To prepare the Sandwiches I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Goldminer California Sourdough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries.

 

 

 

 

 

While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! I love Grilled Sandwiches!

 

 

 

 

I had already preheated the oven, so as the Sandwich was finishing cooking I baked the Fries, I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
