Today’s Menu: Grilled Boneless Pork Ribeye Chop w/ Roasted Cauliflower and Golden Hominy

 

To start this day I prepared some French Toast and Turkey Sausage Links. I was starving this morning! 88 degrees, humid and partly cloudy out today. Still real sore from the fall. After Breakfast I headed to Kroger for a few items. On the way back I stopped by Wendy’s and picked up Breakfast for Mom. I love the Wendy’s Breakfast Sandwiches but just to many carbs and calories to start the day. Back home I took my car up and it washed and then vacuumed the inside. Back home I took an elderly neighbor’s car and had the oil changed for her. I don’t know why she keeps her car, she’s unable to drive anymore. I guess it would be hard to give up after 60 or more years of driving. For Dinner tonight it’s a Grilled Boneless Pork Ribeye Chop w/ Roasted Cauliflower and Golden Hominy.

 

For the Chops I used the Adaptable Chopped Seasoned Grilled Boneless Pork Ribeye Chop. I had not used these in a while and I picked up a package of 2 while at Meijer. These are perhaps some of the best Chops I have found, Delicious.

 

 

 

 

I fired the grill up to cook my Chops. With the grill heated I added my Chops. I grilled them for 8 minutes per side, until the Chops reached 145°F on a meat thermometer. Removed them from heat, and let them rest for 3 minutes. And serve! So Good!

 

To go with the Chops I roasted a bag of Cauliflower Florets. One of our favorite sides! To prepare it I’ll need a baking pan. I ‘ll be roasting it at 425 degrees until knife tender. To season it I’ll need Cooking Olive Oil, Salt and Ground Pepper. I first washed off the Cauliflower. Next I sliced the bigger florets in half, they bake better when they aren’t so big. I baked them at 425 degrees. I checked them a few times until I could stick a paring knife through them. And they did come out so tender and delicious! I served them with some Hidden Valley Buffalo Ranch Dressing for dipping. I have to start having these way more often!

 

For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy, and its been a while since I’ve had any. For those that have never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice it’s normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! Served with Aunt Millie’s Living Carb Smart Dinner Rolls. For Dessert/ Snack later Breyer’s 90 Calorie Vanilla Bean Ice Cream Cup.

Directions:
1 – Briefly heat one tablespoon of oil in a skillet on medium-high.
2 – Cook chops in a covered skillet for 8-9 minutes per side until product reaches 145°F on a meat thermometer.
3 – Remove from heat, rest for 3 minutes. Enjoy!

Today’s Menu: Grilled Boneless Pork Ribeye Chop w/ Roasted Cauliflower and Golden Hominy

 

To start this day I prepared a Breakfast Sandwich using al fresco Country Style Chicken Sausage Breakfast Patty and served on a toasted Thomas Light English Muffin. These Sausage are so good and only 80 calories for the patty. To go with the Sandwich I had a cup of Bigelow Decaf Green Tea. Cloudy, 82 degrees and humid out there today. Safelight came today and replaced Mom’s passenger side rear window. Great service! Swept and cleaned outside. I also planted Mom’s new flowers for her. For Dinner tonight it’s a Grilled Boneless Pork Ribeye Chop w/ Roasted Cauliflower and Golden Hominy.

Today’s Menu: Grilled Boneless Pork Ribeye Chop w/ Mashed Potatoes, Golden Hominy, and Cooked Apples

 

Started the day off with a cup of Bigelow Decaf Green Tea. 85 degree and mostly sunny out. I had just gone to Meijer but I didn’t know that we were out of Aunt Millie’s Living Carb Smart Hamburger and Hot Dog Buns so it was back to Meijer. While there I picked up a couple of Hanging Flower Baskets. Back home another day of staying outside and doing things around the house. I had bought a Hanging Basket of Strawberry Plants and I already have a couple of Ripe Strawberries and several green ones. This thing really took off after I brought it home. For Dinner tonight I prepared a Grilled Boneless Pork Ribeye Chop w/ Mashed Potatoes, Golden Hominy, and Cooked Apples.

For one side I heated some Bob Evan’s Mashed Potatoes. Just microwave for 6 total minutes and serve, just as good as homemade, if not better. I could make a meal out of just Mashed Potatoes.

 

 

For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy, and its been a while since I’ve had any. For those that have never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish!

 

 

Finally I also heated up some Bob Evan’s Glazed Apples, it comes in a microwavable container and is a quick and delicious way to have Glazed Apples. Apples are perfect for any Pork dish! For Dessert/Snack later a bowl of Skinny Pop – Popcorn and a Diet Dr. Pepper to drink. Take Care and Stay Safe Everyone!

Today’s Menu: Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob

For Breakfast this morning I prepared 2 Wild Idea Ground Breakfast Sausage Patties, some Simply Potatoes Shredded Hash Browns, i Egg Sunny Side Up, and a cup of Bigelow Decaf Green Tea. Delicious way to start a very cold morning! Overnight we got 1 1/2 inches of snow. But we are lucky that the roads were warm enough to where the snow didn’t stick. Then the high winds dried the streets before the temperature dropped, so no ice or snow on any of the roads. We had a high of 21 but the wind chill kept it to around 11 degrees! After Breakfast I had to go pick up a prescription of mine. Back home, I did a load of laundry. Then cleaned the Microwave and Kitchen. For Dinner tonight it’s a Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob.

 

I bought another of the AdapTable Pork Products at my last visit to Meijer. The Chophouse Seasoned Boneless Pork Ribeye, Seasoned with the Chophouse – Garlic, Onion and Bell Pepper. I’m so happy that Meijer started carrying the AdapTable Products!

 

I’ll be preparing them on the stove in a Cast Iron Skillet. To prepare them I heated one tablespoon of oil in a skillet on medium-high. Cooked the Chops in a covered skillet for 8-9 minutes per side until the product reaches 145°F on a meat thermometer. Remove them from heat, and let them rest for 3 minutes. And serve!

 

 

 

I prepared a Quart Jar of the Canned Green Beans. I cooked them with a piece of Salt Pork in a kettle. Love these Canned Green Beans, they are so fresh tasting! I could have Green Beans every day, love them!

 

 

I also boiled a few Ears of Green Giant Mini Sweet Corn. To prepare them I boiled the Ears until done. Then when ready to eat I sliced the Kernels of Corn off and served it like that. I also had a couple Aunt Millie’s Live Carb Smart Dinner Rolls. We love this Dinner and Sides! For Dessert/Snack later a bowl of Skinny Pop – Popcorn with a Coke Zero to drink.

We had a high of 38 degrees and sunny outside today but they say we have another heavy Winter Storm on the way Wednesday Night and Thursday. After my Tea I went to Wendy’s and picked up Breakfast for Mom. Back home I did a load of laundry. Then I took my car up and had it washed and filled it with gas. i stopped by the local Kroger and picked up a couple of bags of Salt for the driveway. For Dinner tonight it’s a Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob.

 

I had a package of 2 AdapTable Chophouse Seasoned Boneless Pork Ribeye, Seasoned with the Chophouse – Garlic, Onion and Bell Pepper in the freezer . I’m so happy that Meijer started carrying the AdapTable Products! Anyway I sat the package in the fridge overnight to thaw.

 

I’ll be preparing them on the stove in a Cast Iron Skillet. To prepare them I heated one tablespoon of oil in a skillet on medium-high. We had a high of 45 degrees. I did a load of laundry after Breakfast and after that nothing! I was caught up on everything so it was relaxing all day. Caught up on some shows I had recorded. For Dinner tonight it’s a Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob.

Today’s Menu: Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 92 degrees and humid outside today. The humidity had the heat index at 101 degrees! I went to Meijer after my Tea for a few items. Back home I took a quick nap, my allergies are still hitting me hard. Later cleaned off the deck and driveway areas. That’s about it for my day. For Dinner tonight it’s a Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob.

 

I bought another of the AdapTable Pork Products at my last visit to Meijer. The Chophouse Seasoned Boneless Pork Ribeye, Seasoned with the Chophouse – Garlic, Onion and Bell Pepper. I’m so happy that Meijer started carrying the AdapTable Products!

 

I’ll be preparing them on the stove in a Cast Ron Skillet. To prepare them I heated one tablespoon of oil in a skillet on medium-high. Cooked the Chops in a covered skillet for 8-9 minutes per side until product reaches 145°F on a meat thermometer. Removed them from heat, and let them rest for 3 minutes. And serve!

 

I prepared a Quart Jar of the Canned Green Beans. I cooked them with a piece of Salt Pork in a kettle. Love these Canned Green Beans, they are so fresh tasting! I could have Green Beans every day, love them!

 

 

 

 

 

I also boiled a couple of Ears of the Sweet Corn I purchased earlier at the Fresh Produce Markets. Tasted so fresh and good! For the Corn, we purchased a dozen Ears of Yellow and White Sweetcorn. For that I boiled an Ear of it until done. Then when ready to eat I sliced the Kernels of Corn off and served it like that. I also had a couple Aunt Millie’s Live Carb Smart Dinner Rolls. For Dessert later a Jello Sugar Free Dark Cherry Jello. Take Care all!

Chophouse Blend Pork Ribeye Chops
Seasoned With: Garlic, Onion and Bell Pepper

Directions:
1 – Briefly heat one tablespoon of oil in a skillet on medium-high.
2 – Cook chops in a covered skillet for 8-9 minutes per side until product reaches 145°F on a meat thermometer.
3 – Remove from heat, rest for 3 minutes. Enjoy!

Keep refrigerated. Keep hot food hot. Refrigerate leftovers immediately or discard.

Today’s Menu: Boneless Pork Ribeye w/ Au Gratin Potato Casserole, Sugar Snap Peas, and Baked Dinner Rolls

 

Just a cup of Tea for Bigelow Decaf Green Tea Breakfast. 92 degrees and very humid out today.  Then I went to Meijer, they had a few things on Sale we needed. Back home it was another busy day. We had a tree trimmed down and we had our home washed down, driveway sprayed wash, and gutter’s cleaned. Next having the deck treated and painted. For Dinner tonight we had a Boneless Pork Ribeye w/ Au Gratin Potato Casserole, Sugar Snap Peas, and Baked Dinner Rolls.

These came out just as Delicious as the other ones we tried! Seasoned just right and the Chops came out moist and juicy! You have to give the AdapTable Products a try!

 

 

For one side dish I prepared some Idahoan Au Gratin Homestyle Casserole. I love using these, Delicious and easy to prepare. I left the Idahoan Product info and instructions at the end of the post.

 

For a second Side I prepared a bag of Mann’s Stringless Sugar Snap Peas. To prepare them I used a medium size skillet. I added a tablespoon of Extra Light Olive Oil and heated it on medium heat. As the skillet was heating I emptied the bag of Snap Peas into the skillet. Stirred a few times and cooked them for 5 minutes. Ready to serve. Very good Snap Peas, nice and full!

 

 

 

 

I also heated up some of Aunt Millie’s Live Carb Smart Dinner Rolls. These are great for those of us with Diabetes 2, or for anyone who loves good rolls. The Rolls are only 35 calories and 1 carb per roll! That’s right 1 net Carb per roll! So a big thank you to Aunt Millie’s for these! For Dessert later a Jello Sugar Free Dark Cherry Jello.

Idahoan Au Gratin Homestyle Casserole

Product Description

There’s no better way to start a savory Au Gratin homestyle casserole than with world-famous Idaho® potatoes, which is why you’ll taste only 100% grown-in-Idaho potatoes in this rich & cheesy side. For family meals or for special occasions, this cheesy, delicious dish is sure to please.

Preparation Instruction

Oven Directions

Best for Golden Browning

PREHEAT oven to 450°F. COMBINE potatoes and sauce mix in 1 1/2 quart baking dish.
STIR in 1 1/2 cups boiling water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
BAKE uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
Remove from oven and let stand a few minutes before serving.
BAKING NOTES: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min. To bake potatoes and roast meat at the same time, bake at 375°F for about 45 min; 350°F for about 50 min; or 325°F for about 60 min.

Today’s Menu: Boneless Pork Ribeye w/ Diced Potatoes, Mini Sweet Ears of Corn, and Baked French Bread

 

 

For Breakfast I toasted Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. Another nice day out there. 86 degrees and sunny, low humidity. After Breakfast I went to Kroger for Mom and stopped by McDonald’s and picked up Breakfast for her. I picked another 10 Roma Tomatoes and 5 Bell Peppers this morning. The plants have really produced this year! Later raked the yard and sprayed for weeds. I have to get that tree in our front yard cut down, all I do is rake leaves year around! Hopefully soon! For Dinner tonight I prepared Boneless Pork Ribeyes w/ Diced Potatoes, Mini Sweet Ears of Corn, and Baked French Bread.

For one side I prepared some Simply Potatoes Seasoned Diced Potatoes. Just love using all the Simply Potatoes Products, always easy to prepare, fresh and delicious Potato Dishes. These come seasoned with Seasoning, I added some Sea Salt.

 

For another side dish I boiled some Green Giant Mini Ears of Sweet Corn. It’s frozen Mini Ears of Sweet Corn and you just boil for 10 minutes and you have some of the Sweetest Corn you can find! I also baked a loaf of Pillsbury French Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.
