Today’s Menu: Crock Pot 3 Bean Buffalo Chili w/ Cornbread Ears

It’s been a rainy and cloudy morning, with a 100% chance of 3 Bean Buffalo Chili for the day! Started off with some Jennie – O Turkey Bacon, a Scrambled Egg, and Thomas Light English Muffins. Then an extended workout this morning, and it’s off to a good day! Did a light load of laundry and that was about it. Got my Chili in the Crock Pot and ready for some NFL Football. Tonight I prepared some Crock Pot 3 Bean Buffalo Chili w/ Cornbread Ears.

 
I’ve been out of Chili for a while now, I usually have a couple of containers froze in the freezer. And I’ve been wanting some for a while now. It’s loaded with nothing but good things. I use Wild Idea Buffalo Ground Round (99% Lean) which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours.

Then the serious eats begin, comfort food with Chili! With the sweetness of the Buffalo combined with all those spices and beans, it’s just hard to beat! You can serve it many ways; in a bowl or mug and top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread) or have a side of Cornbread with it. I made the Cornbread Ears. It’s normal baked Cornbread but in a cast iron baking mold in the shape of Ears of Corn. I used Martha White Corn Meal Mix. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Ingredients:

2 lb. Ground Wild Idea Ground Buffalo,99% Lean
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (15 oz.) Chili Beans
1 Can (15 oz.) Kidney Beans, rinsed
1 Can (15 oz.) Great Northern Beans, rinsed
1/2 Cup of Water
1 Packet McCormick Chili Mix
1 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
3 Cloves Minced Garlic
1 Tbs Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
1 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
Shredded Cheese, I used Grated Dutch Gouda (Topping)
Oyster Crackers

 

Directions:
*Brown Buffalo in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and the oyster crackers, A Tablespoon of fat-free sour cream, or serve with some home made cornbread.

Today’s Menu: Leftovers-Shrimp and Andouille Sausage Gumbo

Started my day off with an Egg Beater’s Egg White Omelet with my 3 Bean Buffalo Chili and Sargento Reduced Fat Shredded Sharp Cheddar Cheese, oh and a few shakes of Frank’s Red Hot Sauce. Love the flavor Frank’s adds to dishes. Got some laundry done and went to Kroger for Mom. For dinner tonight it was leftovers, I reheated the Shrimp and Andouile Sausage Pasta Gumbo.

No way I was going to let the Gumbo leftovers go to waste! The Roux, Pasta, Shrimp, Andouille Sausage, and Spices combine to make some delicious leftovers. Just add the leftovers to a small sauce pan and reheated on medium low till heated through. It was every bit as good as it was the first time it was served. Love them leftovers! I’ve left the recipe and the original post for it below. For dessert later a slice of Pillsbury Nut Bread that I had baked earlier today.

 

 
I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base. It uses Pasta instead of Rice. Very easy to prepare, takes about 25-30 minutes. I just boiled the stock that was in the packet,sliced Johnsonville Andouille Sausage and a few shakes of Frank’s Red Hot Sauce for 10-15 minutes. Then I added Extra Large Shrimp and simmered another 5-10 minutes. Said and done the Gumbo is ready to serve and It turned out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish.

1 tablespoon oil
1 pound andouille or other cooked sausage, cut into 1/2-inch slices
2 3/4 cups water

DIRECTIONS:
1. HEAT oil in large skillet (12-inch) on medium-high heat. Add sausage; cook and stir 5 minutes or until lightly browned.
2. STIR in water and Pasta Dinner Mix. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 15 minutes or until pasta is tender, stirring occasionally.
3. REMOVE from heat. Let stand 5 minutes. Sauce will thicken upon standing. Stir before serving.

VARIATIONS
Chicken Gumbo: Prepare as directed, using 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes, in place of the sausage. Cook and stir 5 minutes or until chicken is no longer pink.

Shrimp Gumbo: Prepare as directed in Step 1, using 1 pound medium shrimp, peeled and deveined, in place of the sausage. Cook and stir 3 minutes or just until shrimp turn pink. Remove shrimp from skillet. Continue as directed, stirring shrimp back into skillet after pasta is tender.

Today’s Menu: Cincinnati Style 4 Way – Spaghetti, 3 Bean Buffalo Chili, and Cheese

Not quite as cold this morning, about 39 degrees. Beautiful day out today, sunny and about 58 degrees. Made a light Breakfast, worked out, and ran Mom to Kroger and the Bank. Came back home and finished up some patch work around our new sod that I laid along the driveway. It seems, so far to have solved our drainage problems.For dinner tonight it’s Cincinnati Style 4 Way – Spaghetti, 3 Bean Buffalo Chili, and Cheese.

 

 

 
Last time I made this I used Hormel Turkey Chili w/ Beans as my Chili, which is a good Chili. But it’s not my 3 Bean Buffalo Chili! Made in a Crock Pot with Wild Idea I had 1 container of it left in the freezer so I set it in the fridge to thaw overnight. I’ll be using my regular Pasta, the Ronzoni Healthy Harvest Whole Grain Spaghetti. The Spaghetti is 180 calories and 35 net carbs, which isn’t too bad for Pasta. But it’s becoming tough to find Ronzoni Products around here in the stores. Kroger sells little or none of their items, Walmart it’s hit or miss, Meijer is about the only one to depend on to find it. Anyway for my Cheese I’m using Sargento Reduced Fat Shredded Sharp Cheddar. To serve I used a bowl and made a bed of Spaghetti, topped it with the 3 Bean Buffalo Chili, and topped everything with Sargento Cheese. I also added a few shakes of Frank’s Red Hot Sauce to the Chili as it was being heated. Some mighty fine Chili spaghetti! Some people like adding fine diced Onions also, which would make it a 5 Way. Then for a side, one of the most important parts, Oyster Crackers! Chili Spaghetti is always served with a bowl of Oyster Crackers, why who knows. I used Skyline Chili Oyster Crackers with a side of Frank’s Red Hot Sauce. To properly eat an Oyster Cracker you have to put 2 or 3 drops of Hot Sauce on it! At the end of the post I’ve left the 3 Bean Buffalo Chili Recipe, which I need to be making a new batch of soon. For dessert later a bowl of Del Monte No sugar Added Peach Chunks.

I started fasting last night at 10:00 till my doctor’s appointment at 10:00 this morning, nothing but water. Had a check-up and they took blood work to check my sugar, cholesterol, and such. I’ll get the results in 4 days or so. Another chilly day out there, sunny but breezy and only a high of 32 degrees. Warmer starting tomorrow but a lot rain coming with it. For dinner tonight another comfort food classic, 3 Bean Buffalo Chili w/ Shredded Sharp Cheddar and Oyster Crackers!

 

 

 

 

 

 

 

I had some of the delicious 3 Bean Buffalo Chili leftover so I heated that up for my Chili topping. The Chili contains; Wild Idea Buffalo’s Ground Buffalo which is the best tasting Ground Buffalo that I’ve found, the 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 White Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours. Then you have yourself some good, comfort food Chili!

 

 

 
For the Pasta I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. The best tasting Whole Wheat Pasta I’ve found, and tried a few of them. It’s 180 calories and 35 net carbs per serving. After boiling I served it up and topped it with the perfect topping, 3 Bean Buffalo Chili and Sargento Reduced Fat Shredded Sharp Cheddar Cheese! This was too good! Served with a side of Skyline Chili Oyster Crackers. This is what’s called a 4 Way around this area; Spaghetti, Chili, Beans,and Cheese. You can add Chopped Onions to make it a 5 Way. Anyway you choose to make it it’s Delicious! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.
