Today’s Menu: Red Beans and Rice w/ Cajun Shrimp and Baked Garlic Loaf Bread

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 70 degrees and sunny out today, it’s beautiful! After my Tea I headed off to Kroger with Mom, she needed for few items and wanted to go in. Then I took her to Meijer, she wanted some books to read and to their Garden Center. Finally, we stopped by Wendy’s and picked up Breakfast for her. Back home I got the cart out and the yard tools and did some yard work out in this beautiful weather. For Dinner tonight Red Beans and Rice w/ Cajun Shrimp and Baked Garlic Loaf Bread.

 

For the Red Beans and Rice I used a box of Zatarain’s Reduced Sodium Red Beans and Rice Mix. For the Shrimp I used the Meijer Frozen Jumbo Shrimp and for the Garlic Loaf I used a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread. This had the makings of a delicious Meal from the start! I got the bag of Shrimp out of the freezer last night and let it thaw overnight.

 

To prepare it I’ll need; the box of the Zatarain’s Red Beans and Rice Mix, 3 cups Water, Extra Light Olive Oil, and the Shrimp. Mixed 3 cups of water, Rice Mix and 2 tbsp. of Light Olive Oil in 2-quart saucepan until it was well blended. Brought to a boil. Then reduced the heat to low and covered. I got the Shrimp out of the fridge and seasoned them with Zatarain’s Creole Seasoning.

 

Simmered for 25 minutes, until the rice was tender. Stirred occasionally to prevent the Rice and Beans from sticking. With 4 minutes of cooking time left I added the Shrimp. When done I removed the skillet from heat. Let stand 5 minutes. And done ready to serve! Like the Sausage and Dirty Rice I had last week, this is one fantastic Meal! The Red Beans and Rice is Seasoned perfect. It made plenty of both the Red Beans and the Rice. And the Shrimp worked perfect with it. Plenty of great leftovers!

 

Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! I loved this dish tonight, plenty leftover for tomorrow’s Dinner! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

 

 

 

 

 

 

 

 

ZATARAIN’S REDUCED SODIUM RED BEANS AND RICE

Today’s Menu: Cajun Rainbow Trout w/ Red Beans and Rice
To start this day off I Poached an Egg, heated up 2 Johnsonville Turkey Breakfast Sausage Links, toasted a Thomas Light English Muffin, and had my morning cup of Bigelow Decaf Green Tea. We had more rain overnight. Then for the day  it was 60 degrees and mostly sunny outside, still windy also. Did a load of laundry and then took my car and had it washed and stopped and got gas. Then stopped by the ATM and then dropped some letters off at the Post Office. Stopped by Walmart on my way back home. Back home I got my cart out and did some yard work. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Red Beans and Rice, I also baked a loaf of La Baguette Roasted Garlic Oval Bread.

 

I had the Rainbow Trout Fillet that I had purchased from Meijer, in the freezer. I laid the package of 1 fillet in the fridge overnight to thaw. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed it skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

 

For my Rice I used a new one for me, Uncle Ben’s Ready Rice Red Beans and Rice. It prepares as all the microwavable Ready Rice. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with any dish. This has plenty of Red Beans along with Rice, I’ll be buying more of this. As I said I also baked a loaf of La Baguette Roasted Garlic Oval Bread. Then for Dessert later a Jello Sugar Dark Cherry Jello.

Today’s Menu: Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 66 degrees, partly cloudy and windy out today. Had my Tea and I headed out to Meijer for a few items and I purchased some more outdoor flowers for Mom. I also picked up a new rake and a new battery for my leaf blower. I also drove by Walmart to check out their selections of flowers. Back home got the cart out and did some yard work. For Dinner tonight its a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.

 

I had picked up a couple of Orange Roughy Fillets at Jungle Jim’s International Market a while back and had them in the freezer. I had already rinsed them and had them cut into bun size pieces. To make it I’ll need; the Orange Roughy Fillet, McCormick Grinder Sea Salt and Peppercorn Medley, Flour, Egg Beater’s (1/2 cup), Hungarian Paprika, and Shake and Bake Panko Bread Crumbs. I’ll serve it on a Healthy Life Wheat Hamburger Bun. I first Seasoned the Fillet with the McCormick Grinders of Sea Salt and Peppercorn Medley. Next I seasoned the Flour with the added Hungarian Paprika. Then rolled the Fillet in the Flour, next to the Egg Beater’s, and finally in the Panko Bread Crumbs.

 

I grabbed a skillet, sprayed it with Pam Non Stick Cooking Spray, added 1/2 tablespoon of Extra Light Olive Oil, and heated the skillet on medium heat. With the skillet heated I added my Fillet. I fried it for 3 minutes per side. It fried up perfect! Golden Brown on the outside and a moist center. I served it on the Healthy Life Bun. Orange Roughy has such a good taste to it, it’s a very mild Fish. Makes the perfect Fish Sandwich!

 

As my Orange Roughy was cooking I turned the oven on to 425 degrees and baked my Fries. I used Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Leftover Shrimp and Smoked Turkey Sausage Gumbo

 

For Breakfast I prepared some Simply Potatoes Shredded Hash Browns, 2 Johnsonville Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. 53 degrees and rain showers most of the day. I was down for a while today with a Sinus Headache. All due to this weather with the temps going up and down. I did do a load of laundry and wiped the Kitchen down with Lysol Wipes. For Dinner tonight I heated up the Leftover Shrimp and Smoked Turkey Sausage Gumbo from the other night. Below is the original post from the other night, left for description and directions. Gumbo is always one of my favorite meals, Shrimp and Smoked Turkey Sausage Gumbo! Plus the leftovers are just as good if not better! To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey Sausages (sliced into bite size slices), a bag of Meijer Brand Jumbo Shrimp and Frank’s Red Hot Sauce. I precooked the Sausage and Shrimp, according to the package instructions, before adding it to the Gumbo.

 

The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. It’s very easy to prepare, takes about 25-30 minutes. To start; I just boil the stock that’s in the packet, add the sliced Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added the Shrimp and simmered another 2-3 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too, I took a small bowl over to my neighbor also. Then for Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Snapple Diet Mango/Tea to drink.

For Breakfast I toasted a Thomas Light English Muffin and topped it with some Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. Partly Sunny and 78 degrees outside today. After Lunch I drove Mom over to a Lawn and Garden Center, she wanted to look for some outdoor flowers. Back home I swept out the shed and around the driveway area. So for Dinner tonight I prepared a personal favorite, Shrimp and Smoked Turkey Sausage Gumbo.

 

Gumbo is always one of my favorite meals, Shrimp and Smoked Turkey Sausage Gumbo! Plus the leftovers are just as good if not better! For Breakfast I had a cup of Bigelow Decaf Green Tea. I had to be at the Meijer Pharmacy at 12:15 this afternoon to get my 1st Covid Vaccine Shot, finally! It took me quite a while to get scheduled. Rain, thunderstorms, high winds and a high of 62 degrees. Been nice all week until I have to go for my Covid Shot! And being in a wheelchair I was soaked by the time I got my wheelchair out and into the store! After the Shot I picked up a few items before leaving. Back home nothing else going on. For Dinner tonight I prepared Red Beans and Rice w/ Smoked Turkey Sausage and Baked Garlic Loaf Bread.

 

Well nothing better than Red Beans and Rice w/ Hardwood Smoked Turkey Sausage for this 2nd Day of 2020! For the Red Beans and Rice I used a box of Zatarain’s Reduced Sodium Red Beans and Rice Mix. For the Sausage I used Butterball Hardwood Smoked Turkey and for the Garlic Loaf I used a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread. I love these types of meals! I’m preparing 3 Bean Turkey Chili tomorrow! To prepare it I’ll need; the box of the Zatarain’s Red Beans and Rice Mix, 3 cups Water, Extra Light Olive Oil, and the Sausage. Mixed 3 cups of water, Rice Mix and 2 tbsp. of Light Olive Oil in 2-quart saucepan until it was well blended. Brought to a boil. Then reduced the heat to low and covered.

 

I got another skillet out as the Rice was cooking, sprayed it with Pam Non Stick Spray and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Sliced the Sausage into bite size slices and added them to the heated skillet until heated through. Removed them from the heat and set aside until needed.

Today’s Menu: Shrimp Jambalaya

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 59 degrees and sunny out today. After Breakfast I headed to Kroger and picked up a Prescription for Mom. Finished up some cleaning indoors. Got the cart out of the shed and rode around the yard and made a list of things I would need to fix up the yard. Then raked some leaves and limbs in the backyard. Then for Dinner tonight I prepared Shrimp Jambalaya.

 

For the Shrimp I used a bag of Kroger Frozen Wild Caught Shrimp. I grabbed a skillet and sprayed it with Pam Non Stick Cooking Spray, added a 1/2 tablespoon of Olive Oil Cooking Oil, and a pat of Blue Bonnet Light Butter. I seasoned the Shrimp with a shake of Sea Salt and Zatarain’s Creole Seasoning. I heated the skillet on medium heat. When the skillet heated up I added the Shrimp. Cooked it a total of about 2 minutes and removed it from the heat. I put the semi cooked Shrimp into bowl and set aside until needed.

 

I used Zatarain’s New Orleans Style Jambalaya Mix (Mild) for my base for the Jambalaya.  I use Zatarain’s Products whenever I can, love the flavor and seasoning of all their products. To prepare it I just followed the easy instructions on the box. Mixed 2 1/2 cups of Water and 2 tablespoons of Extra Virgin Olive Oil, and brought it to a boil. Added the Zatarain’s Jambalaya Mix Returned it to a boil, and then reduced the heat to low. Covered and simmered for about 25 minutes, adding the Shrimp with 2 minutes of cooking time left. Continued cooking till most of the moisture had been absorbed, 2 minutes. Removed it from the heat and let it rest for about 5 minutes before I served it.

 

The Shrimp and Zatarain’s New Orleans Style Jambalaya Mix make a perfect pairing! I added a couple of shakes of Frank’s Red Hot Sauce to the mix also, nothing like a little heat to liven things up! This makes one delicious dish. For Dessert later a bowl Breyer’s Chocolate Carb Smart Ice Cream.

 

 

 

 

 

 

 

 

Zatarain’s New Orleans Style Jambalaya (Mild)

Product description

Preparation instructions
Stove Top Directions: Pick a Protein: 1 lb., cut into bite-sized pieces. Smoked Sausage. Cooked Chicken. Ham. Shrimp (Add cooked shrimp during last 5 minutes of cooking time.) Today’s Menu: Jambalaya with Hardwood Smoked Turkey Sausage and Baked Italian Bread

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. After my Tea I went to Kroger around 7:00 this morning, wanted to be in and out before it got crowded. Took the groceries home and put away and then went back out and picked up Breakfast for Mom and stopped by the Bank for her. Then later gave my neighbor a hand with a little yard work. I got the cart out of the shed and did most of it for her. She has trouble getting around, she’s 91. Then for Dinner tonight I prepared Jambalaya with Hardwood Smoked Turkey Sausage and Baked Italian Bread.

 

I used Zatarain’s New Orleans Style Jambalaya Mix (Reduced Sodium) for my base for the Jambalaya and Butterball Hardwood Smoked Turkey Sausage. I use Zatarain’s Products whenever I can, love the flavor and seasoning of all their products. To prepare it I just followed the easy instructions on the box. Mixed 2 1/2 cups of Water and 2 tablespoons of Extra Virgin Olive Oil, and brought it to a boil. Added the Zatarain’s Jambalaya Mix and my Smoked Sausage, I had sliced the Sausage into small bite size pieces before adding. Returned it to a boil, and then reduced the heat to low. Covered and simmered for about 25 minutes till most of the moisture had been absorbed. Removed it from the heat and let it rest for about 5 minutes before I served it.

 

The Butterball Hardwood Smoked Sausage and Zatarain’s New Orleans Style Jambalaya Mix make a perfect pairing! Love this Sausage, nice seasoning and delicious! I added a couple of shakes of Frank’s Red Hot Sauce to the mix also, nothing like a little heat to liven things up! This makes one delicious dish. I also baked a loaf of Meijer Italian Loaf Bread. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Leftover Shrimp and Smoked Turkey Sausage Gumbo

 

For Breakfast I toasted a Thomas Light English Muffin, heated up a few slices of Boar’s Head Thick Cut Bacon, and had a cup of Bigelow Decaf Green Tea. 44 degrees and partly cloudy out. Not quite as nice as our 68 degrees yesterday! They delivered a new Hoveround Mobility Chair for me today. I still have my last one and it’s an excellent chair but under Medicare law they will not pay for repairs for a chair that’s 5 years old. Instead they buy a new one. It makes no sense to me, but who am I! I do appreciate it though but I would think it would save Medicare money to make repairs than buy a new one. The chair I had before that I got 10 years ago is still running! Oh well! For Dinner tonight I heated up the Leftover Shrimp and Smoked Turkey Sausage Gumbo. I left the original post from a night ago for ingredients and directions. Take Care and Stay Safe!

 

It’s Gumbo time! And Gumbo is always one of my favorite meals, Shrimp and Smoked Turkey Sausage Gumbo! To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey Sausages (sliced into bite size slices), a bag of Meijer Brand Jumbo Shrimp and Frank’s Red Hot Sauce. I precooked the Sausage and Shrimp, according to the package instructions, before adding it to the Gumbo.

 

The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. It’s very easy to prepare, takes about 25-30 minutes. To start; I just boil the stock that’s in the packet, add the sliced Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continue to cook for 10-15 minutes. Then I added the Shrimp and simmered another 2-3 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too, I took a small bowl over to my neighbor also. Then for Dessert/Snack later I had a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Catfish Nuggets w/ Mac and Cheese

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 41degrres, cloudy, with rain moving in this evening. I went to Meeijer for a few items Mom wanted that Kroger was out of from our order yesterday. On the way back home I got her car washed. It needed it bad with all the salt build up on it. Then I stopped at Wendy’s and picked up Breakfast for her. Did laundry when I got home. I always wash the clothes that I had on while at the grocery. Then later scrubbed the kitchen down with the Lysol Wipes. For Dinner tonight Catfish Nuggets w/ Mac and Cheese.

 

Picked up the Catfish Nuggets at Kroger yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

 

To go with the Catfish, Stouffer’s Classic Mac and Cheese Cups. Just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.
