Today’s Menu: Fried Walleye Fillet w/ Mac & Cheese, Sugar Snap Peas, and Whole Grain Bread

 
Fall was in the air around here today.They say we are in for a beautiful stretch of weather coming up for the next 4 – 5 days, 70 and Sunny! I had a beautiful Walleye fillet, thank you Meijer Seafood Dept., for dinner tonight. I washed the fillet off and patted it dry. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then rolled the fillet in a Flour and Bread Crumb mix and skillet fried in Extra Virgin Olive Oil, about 4 minutes per side. I just love the taste of Walleye and it browns perfectly when fried.

For side dishes I had Velveeta 2% Shells & Cheese, Sugar Snap Peas, and Healthy Life Whole Grain Bread. The Velveeta Shells and Cheese is the easy way to have Mac and Cheese. It comes in a microwavable container. Just add water and microwave for 3 1/2 minutes and it’s ready. The Sugar Snap Peas are from Walmart Produce. I’ve been buying the Snap Peas for the past month or so. Their fresh, crisp, and full of flavor! For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.

Today’s Menu: Fried Yellow Lake Perch w/ Potato Pancakes, Mac & Cheese, and Cornbread

 

 

One delicious meal tonight! While at Meijer yesterday they had Yellow Lake Perch on sale and I couldn’t pass them by. I love Fish and all Sea Food. I washed the Perch and patted them dry then seasoned them with Sea Salt and Ground Black Pepper. The filets are small and I cut them in half. I then took a Ziplock Bag and put a 1/2 cup of Progresso Italian Style Breadcrumbs in it and added my filets and shook the bag until the filets were coated. I pan fried the fillets in Extra Virgin Olive Oil, about 2 1/2 minutes per side. As I said earlier the fillets were small and not very thick so they fried up real quick. They came out golden and delicious!

For side dishes I had Potato Pancakes, Mac & Cheese, and Cornbread. I used MANISCHEWITZ Potato Pancake Mix. Very easy to make and one great tasting Potato Pancake! Just mix with Water, Extra Virgin Olive Oil, Egg Beaters, Sea Salt, and Pepper. Fry until golden and your ready! I left the product info and directions at the end of the post. I also microwaved a single serving of Velveeta/Kraft Shells & Cheese (made with 2% milk). I also warmed a piece of Cornbread that I leftover from an earlier meal in the week. For dessert a slice of Pillsbury Nut Quick Bread. Have a great and safe weekend everyone!

 
MANISCHEWITZ Potato Pancake Mix

Ingredients
Potatoes ( Contains Sulfites to Maintain Whiteness), Potato Starch, Salt, Onion, Vegetable Shortening (Partially Hydrogenated Cottonseed Oil).

Directions
Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.

Today’s Menu: Fried Catfish Nuggets w/ Green Beans and Velveeta Shells and Cheese

 

 
Picked up some Catfish Nuggets at Jungle Jim’s yesterday. I used 2 bowls to prep the nuggets filling one with EggBeater’s seasoned with Paprika and in the other Italian Style Bread Crumbs. I seasoned the Catfish with McCormick Grinder Sea Salt and Black Peppercorn and then dipped each one in the Egg Beater’s, making sure each was well coated. Shaking off the excess Egg Beater I then rolled them in the Bread Crumbs. I fried them in Extra Virgin Olive Oil on medium heat about 4 – 5 minutes, turning once. They came up golden brown and delicious! Catfish fries up so good. Baking Fish is a lot healthier but Catfish is a Fish that tastes better fried.

For sides I warmed up the remaining Green Beans. I just can’t get enough of Green Beans, I could eat them with every meal! I also prepared an individual serving of Velveeta 2% Shells and Cheese. Easy to prepare, microwave 3 1/2 minutes, and just as good as fixing it from a box. For dessert later a Blue Bunny Frozen Chocolate/Vanilla Swirl Bar.

Today’s Menu: Fried Ocean Perch w/ Green Beans, Mac &Cheese, and Whole Grain Bread

 

 

I had a couple of small fillets of Ocean Perch in the freezer so I decided to have that as Dinner. I rinsed the fillets with water and patted them dry. Seasoned them with Sea Salt and Ground Black Pepper and I then rolled them in Italian Style Bread Crumbs. I fried them in a cast iron skillet in Extra Virgin Olive Oil about 4 minutes per side. The perch came out a beautiful golden brown! You have to love fish, low in calories and carbs and always a filling and tasty dinner.

 

For sides I heated a single serving of Del Monte Cut Green Beans, microwaved a single serve of Velveeta 2% Cheese and Shells, and Healthy Life Whole Grain Bread. I ate light all day so for a dessert/snack later my Mom’s been wanting some Nachos so that’s what I’ll be preparing. I use Tostito’s Whole Grain Scoops for the chips, 1 can Campbells Firehouse Chili w/ Beans, 1 small can of Sliced Black Olives, sliced Jalapenos, and Kraft 2% Pizza Cheese. Just layer in a baking dish and bake at 400 degrees until the chips are warmed and cheese is melted.

Today’s Menu: Velveeta Cheesy Turkey Mac w/ Rustic French Bread

Love these one pot meals! I used Kraft/Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac. The dinner kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1 lb. of Ground Turkey. I used Jennie – O Extra Lean Ground Turkey. Using the Extra Lean Ground Turkey instead of the Ground Beef you can lower the calorie count by anywhere from 60 – 80 calories! As I browned the Turkey I added Sea Salt, Pepper, and Ground Smoked Cumin for seasoning. It’s ready in about 10 minutes. I then add 2 cups of water, the seasoning and pasta. Simmer for 11 – 13 minutes and add the Velveeta Cheese and your ready for dinner.  I’ll leave the instructions at the end of the post. It’s 350 calories and 27 carbs but you can lower the calorie count by using the Ground Turkey as stated above. I had a slice of Meijer Bakery Harvest Grain Bread topped with I Can’t Believe It’s Not Butter. This makes one hearty and tasty meal! They have different varieties of the Velvveta Skillets, I’ve tried 3 different ones and they are all delicious! For dessert/snack a 100 Calorie Mini Bag of Jolly Time pop Corn

Velveeta Cheesy Skillets Ultimate Cheeseburger Mac

Ingredients:
* 1 LB. Ground Beef or Ground Turkey (Extra Lean)
* Sea Salt, Pepper, Cilantro, Ground Smoked Cumin to taste; Optional
* 2 Cups Water
* 1 Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac

Instructions:
* Brown and season 1 LB. Ground Turkey in large skillet. Drain
* Add 2 cups water, seasoning and pasta. Bring to a boil. Reduce Heat.
* Cover, Simmer and stir often until most of water is gone about 11-13 minutes. Remove from heat.
* Add Cheese from Velveeta Cheese Pouch. Stir in Cheese Sauce and serve

Today’s Menu: Fried Crappie w/ Velveeta Rotini & Cheese, Roasted Red Potatoes, and Whole Grain Bread

I fixed another mess of the Crappie tonight! I never get tired of eating Crappie. I seasoned them with Sea Salt and Ground Black Pepper. I then rolled each fillet in a Whole Wheat Flour and Italian Bread Crumb Mix. I lightly fried them in Extra Virgin Olive Oil about 3 minutes per side. As usual they fry up to a golden brown and absolutly delicious!

For sides I made some Roasted Red Potatoes, recipe is at the end of the post, Kraft Veveeta Whole Grain Rotini & Cheese, and Healthy Life Whole Grain Bread. if your looking for a good and simple Potato recipe give this one a try! These would make an excellent Potato dish for breakfast also. For dessert later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.

Roasted Red Potatoes

Ingredients:

Small Gourmet Red Potatoes
Oscar Mayer Turkey Bacon
Extra Virgin Olive Oil
McCormick Grinder Sea Salt and Black Peppercorn

Directions:

*HEAT oven to 400ºF. Cook Turkey Bacon in large skillet on medium heat until crisp. Remove bacon from skillet, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels.

*ADD potatoes to reserved drippings; cook 5 min., stirring occasionally. Remove from heat. Crumble bacon. Add to potatoes; mix lightly. Spoon into 13×9-inch baking dish.

*BAKE 20-30 min. or until potatoes are tender and done. Top with cheese and parsley.

Love that Jennie – O! I had a Jennie – O Lean Sweet Italian Turkey Sausage. In my opinion one the best tasting Turkey Italian Sausage and it’s only 160 calories and 0 carbs. Served it on a Healthy Life Whole Grain Bun and topped with French’s Spicy Brown Mustard. For a side I had Kraft Velveeta Whole Grain Rotini & Cheese. Dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Baked Tilapia w/ Whole Grain Rotni & Cheese and Whole Grain Bread

Kroger had some monster size Tilapia fillets on sale last week. I purchased 4 fillets freezing 3 of them. I seasoned the Tilapia with Parsley, McCormick Grinder Sea Salt and Black Peppercorn then rolled it in a Italian Bread Crumb and Whole Wheat Flour mix. I baked it at 400 degrees for 12 minutes. What a huge and great tasting fillet! I cut the fillet in half and I’ll have it tomorrow for lunch. I’ll be using one of the other ones to make Fish Tacos with. Tilapia tastes great no matter how you fix it or use it.

For sides I had Healthy Life Whole Grain Bread and Kraft/Velveeta Wholw Grain Rotini & Cheese. Love this kind of Kraft Mac! For dessert/snack later a bag of Jolly Time 100 Calorie Mini Bag of Pop Corn.

Today’s Menu: Leftover’s Velveeta Cheesy Skillet Turkey Mac w/ Whole Grain Bread

Some meals are just as good as the second time around! I had Kraft/Velveeta Cheesy Skillets Ultimate Cheeseburger Mac leftovers. I had used Lean Ground Turkey instead of Ground Hamburger, to cut the calories and carbs. Leftovers what a great invention. Just warm and serve! I had Healthy Life Whole Grain Bread to go along with the Mac. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Dole’s Sliced Mango.

Velveeta Cheesy Skillets Ultimate Cheeseburger Mac

Ingredients:
* 1 LB. Ground Beef or Ground Turkey (Extra Lean)
* Sea Salt, Pepper, Cilantro, Ground Smoked Cumin to taste; Optional
* 2 Cups Water
* 1 Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac
Instructions:
* Brown and season 1 LB. Ground Turkey in large skillet. Drain
* Add 2 cups water, seasoning and pasta. Bring to a boil. Reduce Heat.
* Cover, Simmer and stir often until most of water is gone about 11-13 minutes. Remove from heat.
* Add Cheese from Velveeta Cheese Pouch. Stir in Cheese Sauce and serve
