Today’s Menu: Fried Freshwater Shrimp w/ Mac and Cheese

To start this rainy morning off I made some Simply Potatoes Shredded Hash Browns and heated up some Meijer Diced Ham. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Then topped them off with Diced Ham. I love combinations of Potatoes and Ham. Also had a cup of Bigelow Decaf Green Tea. We ended up with about 1 1/2 inches of snow, our first of the year. Gloomy day out there today. A few snow flurries with a high of 36 degrees. Cleaned the house today and did a few things around the house, not a lot to do today. For Dinner tonight it’s Fried Freshwater Shrimp w/ Mac and Cheese.

We’re having Shrimp tonight, I could eat Shrimp and Seafood every day! While at Meijer the other day I picked up some of the huge Freshwater Colossal Shrimp, first time I’ve seen Meijer have these! I cleaned them and put them in the fridge until needed for Dinner tonight. I love these, they are so meaty. They don’t have that Ocean taste like Ocean Shrimp but they’re awfully good! To prepare these I’m using McCormick Golden Dipt Cracker Meal Seafood Fry Mix.

Poured about 1/2 inch of Extra Light Olive Oil into large skillet. Heated the oil to 350°F on medium heat. I then took a 1/2 cup of the Cracker Meal Mix in a Hefty Zip Lock Plastic Bag. Take the peeled shrimp, 3 at a time and place them in the bag and shake until Shrimp had a nice coating on them. Had all the Shrimp coated I then began to fry them. Frying them about 3 minutes the shrimp, a few pieces at a time, in the hot oil until light golden brown turning after 1 1/2 minutes. Drain on paper towel lined plate . Love using the McCormick Cracker Meal Mix, nice light crust and seasoning.

To go with the Shrimp I prepared some Stouffer’s Classic Mac and Cheese Cups. just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. I also baked a Loaf of Garlic Loaf Bread. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Fried Walleye Fillet w/ Fried Potatoes and Baked Garlic Loaf Bread

For Breakfast morning I prepared a Poached Egg and served it on a Thomas Light English Muffin. Also had a cup of Bigelow Decaf Green. 72 degrees and rain out today. Much needed rain, everything is dry! We’ve been watering our lawn every other day to help out the front lawn and bushes. Couldn’t do much outside with the rain so I cleaned and straightened the Fridge and then the Pantry. For Dinner tonight I prepared Fried Walleye Fillet w/ Fried Potatoes and Baked Garlic Loaf Bread. I had Stouffer’s Mac and Cheese with mine Mom had the Potatoes.

I had a few packages of Walleye Fillets that I had bought from Meijer in the freezer. So I laid a package in the Fridge to thaw overnight. I had already cut the fillets into smaller pieces before freezing them. So to prepare it I first rinsed the fillets in cold water and patted it dry with paper towel. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

Then for a side I made a Cast Iron Skillet of Fried Potatoes. I love these! I bought a bag of Medium Size Red Potatoes, which we’ll be using. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on medium high.

With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

Then I also baked a loaf of La Baguette Roasted Garlic Oval Bread For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Salmon Patties w/ Mac and Cheese

Just a cup of Bigelow Decaf Green Tea for Breakfast. Mostly cloudy and 86 degrees, rain moving in late day. Not a thing going on today but rest. I’ve been dealing with some severe Phantom Pains since about 10:00 this morning, not a good day! So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Canned Salmon

Both canned and fresh fish are a good source of protein and other important nutrients, and one isn’t necessarily healthier than the other. … In fact, a USDA study found slightly higher levels of two omega-3s in canned pink and red salmon than it found in fresh. Canned salmon has other merits, too. Canned salmon is also rich in protein, vitamin D, calcium (from the bones) and healthy omega-3 fats. Omega-3 fats are heart healthy fats. They also promote healthy brain development in babies.

Today’s Menu: Jumbo Butterfly Shrimp w/ Mac and Cheese

Had a light Breakfast to start my day, not much of an appetite in this hot weather. I toasted a Thomas Light English Muffin and topped it with some Smucker’s Sugarless Blackberry Jam. Also a cup of Bigelow Decaf Green Tea. It’s 99 degrees and sunny out, thankfully low humidity. Got the cart out after Breakfast and got some yard work done before the extreme heat kicked in. Later did a load of laundry and cleaned all the counters in the kitchen with disinfectant wipes. Trying to stay ahead of the virus! So for dinner tonight I prepared some Jumbo Butterfly Shrimp w/ Mac and Cheese.

Had no clue on what to have for Dinner tonight. I did know I wanted a lighter Dinner and one easy to prepare. I explored the depths of the stand up freezer and found a bag of Frozen Kroger Jumbo Butterfly Shrimp, so it’s Shrimp tonight. Easy to prepare, I just preheated the oven to 450 degrees. Grabbed a large baking sheet, lined it with foil and sprayed it with Pam Cooking Spray. When the oven was ready I baked the Shrimp for 12 minutes, turning them over after 6 minutes. Let cool for a couple of minutes and serve. These were fantastic, really nice size Shrimp and lightly breaded to give a nice crunch but not too much to make it mushy as some breading. Great product to have in the freezer. Served them with Heinz Seafood Cocktail Sauce and Louisiana Remoulade Sauce for dipping.

Then for a side I microwaved Stouffer’s Classic Mac & Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Nice size, excellent Cheesy Mac. For dessert later a Jello Sugar Free Dark Cherry Jello. Couldn’t get much easier of a Meal to prepare. Take Care and Stay Safe Everyone!

To start this morning off I toasted a Thomas Light English Muffin that I topped with Smaucker’s Sugar Free Blackberry Jam and had a cup of Bigelow Decaf Green Tea. Rain showers and 75 degrees out today. Cleaned the house today, dusted and ran the vacuum. Then took the vacuum brushes out and cleaned them. That was about it for my day. Caught up on some shows I had recorded. For Dinner tonight I prepared a Stouffer’s Lasagna with Meat and Sauce w/ Texas Toast (Light).

I had picked up a box of Stouffer’s Lasagna with Meat and Sauce at Meijer and had it in the freezer. I purchased the Large Size, about 2 1/2 servings. I’m also baking a few slices of the New York Bakery Texas Toast – Lite to go with it.

To prepare it s very easy. It comes frozen and to prepare it; Preheat the oven to 350°F. Leave the film on tray, but do not vent. Place the tray on a baking sheet on the center rack of the oven. Today’s Menu: Salmon Patties w/ Mac and Cheese

Just a cup of Bigelow Decaf Green Tea for Breakfast. Mostly Sunny and 77 degrees outside today! I had to be at Kroger at 9:00 this morning for a pick up order. Meat is becoming tougher and tougher to find now. I hope things get back to normal one day. So after Lunch I got the cart out along with the rake and leaf blower and cleaned around the outside of the house and yard. Took a ride around the neighborhood in the cart. Done for the day my Allergies are kicking in! So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

For Breakfast this morning I made Mom and myself Steak and Eggs with Toast. I fried up a couple of the SayersBrook 4 oz. Fillet Mignons, Scrambled up 4 Eggs, and toasted a few slices of Aunt Millie’s Light Whole Grain Bread. I also had a cup of Bigelow Decaf Green Tea and made Mom a cup of Coffee. Mostly cloudy and 60 degrees outside today. After Breakfast I headed off to Meijer. I needed a few items and Mom needed a couple of things also. Back home I hooked up the water hose and sprayed down the wooden deck, a lot dirt build up through the Winter. Then while I had the hose out I sprayed down our outside trash container. Done for the day my Sinuses are kicking in! So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

Today’s Menu: Maryland Style Crab Cakes w/ Cheddar Bake Potatoes

I just had a cup of Bigelow Decaf Green Tea for Breakfast. 56 degrees and rain showers this morning then cloudy in the afternoon. After Breakfast and in between showers I went to Meijer to grocery shop. Waiting for it to dry out around here, I have some things I have to get done outside. I’m going to Home Depot to pick up something to stop a Mole problem we have in the backyard. He’s tunneled through about 4 yards and has a mess going. I also have some minor repair work to our shed. I’m ready for Spring and warmer weather! For Dinner tonight I prepared Maryland Style Crab Cakes w/ Cheddar Bake Potatoes and Baked Garlic Loaf Bread.

I had a box of SeaPak Maryland Style Crab Cakes in the freezer and I’m having it for my Dinner tonight. I haven’t had these in a while and looking forward to them. They come frozen two to a box, individually vacuumed sealed. A serving size is both of the Crab Cakes.

To prepare these I preheated the oven to 425°f. Removed the frozen crab cakes from vacuum-pack and arranged on a baking sheet, flat side down. I then brushed them with melted Blue Bonnet Light Butter. Baked for 15 minutes on middle oven rack. Turned the Crab Cakes over and press gently to flatten them. Continued to bake for another 10 minutes. Let them cool for 3 minutes and ready to eat! I served these with a side of Louisiana Remoulade Sauce, my favorite for Seafood. Excellent Crab Cakes, lots of Crab Meat and great Seasoning. Another good item to have in your freezer.

Then to go with my Crab Cakes I prepared a Stouffer’s Cheddar Potato Bake. Another easy to prepare and delicious dish. To prepare this one I’m using the microwave. It comes in a microwavable tray. I just slit the film cover on the tray and microwaved it for 6 minutes, Done! I love this side by Stouffer’s! Delicious Potato Dish, really like the bread crumb topping. Then I also baked a loaf of La Baguette Roasted Garlic Oval Bread. Perfect Bread with any Dish! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzel Sticks with a Diet Peach Snapple to drink.

Today’s Menu: Salmon Patties w/ Mac and Cheese

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. After Breakfast I headed off to Meijer. I needed a few items and Mom needed a couple of things also. It seems to be getting tougher to coming up with new things to have for Dinner, especially keeping in mind I have to watch carbs because of my Diabetes 2. There’s a lot of food and recipes out there you just have to stay motivated and find them! Anyway for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzels with a Diet Dr. Pepper to drink.
