Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Baked French Bread

A sunny Spring day out today, but we still have a cool light breeze blowing. Took the Cart out for a spin but wasn’t out too long due to the wind. The past day or so Mom and me have been gathering old bills and documents that needed shredded. This morning around the area was Shred Day. They have this every Spring where you can drop off anything you need shredded. I believe there was 4 drop areas this year from 9-1. I went over to one that was about 2 miles away around 9:00 this morning. I had no clue what I was in store for! There was literally hundreds, and I mean hundreds, of cars already in line! So from 9:02 this morning till about 10:10 I was in line to drop off 6 bags of bills and papers that needed shredded. The line actually moved quicker than what I thought it would, but what a traffic nightmare it was over there. Next time I’ll go early. We have a shredder, but its old and very slow. Maybe it’s time to invest in a new one. Anyway for dinner a classic comfort food, Spaghetti and Turkey Meatballs with French Bread.

 

 

 
You just can’t go wrong with a Spaghetti and Turkey Meatballs Dinner! I used Ronzoni Healthy Harvest Whole Wheat Spaghetti and Turkey Meatballs along with Honeysuckle White Turkey Meatballs. I always use Ronzoni Healthy Harvest Pastas. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta. The Honeysuckle White Turkey Meatballs are the best I’ve found, fantastic taste and their 190 calories and 6 carbs for 3 Meatballs. Topped everything with some fresh grated Parmesan Cheese and Ragu Chunky Mushroom Pasta Sauce. I normally use Bella Vita Low carb Pasta Sauce but was out of it so I went with the Ragu, which was excellent! I also baked a loaf of Pillsbury Rustic French Bread. Before baking it I brushed the top with extra Virgin Olive Oil and sprinkled Sesame Seeds across the top. It was a real Italian treat tonight! For dessert later a Jello Sugar free Double Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: 3 Bean Buffalo Chili Spaghetti w/ Shredded Sharp Cheddar and Oyster Crackers

I started fasting last night at 10:00 till my doctor’s appointment at 10:00 this morning, nothing but water. Had a check-up and they took blood work to check my sugar, cholesterol, and such. I’ll get the results in 4 days or so. Another chilly day out there, sunny but breezy and only a high of 32 degrees. Warmer starting tomorrow but a lot rain coming with it. For dinner tonight another comfort food classic, 3 Bean Buffalo Chili w/ Shredded Sharp Cheddar and Oyster Crackers!

 

 

 

 

 

 

 

I had some of the delicious 3 Bean Buffalo Chili leftover so I heated that up for my Chili topping. The Chili contains; Wild Idea Buffalo’s Ground Buffalo which is the best tasting Ground Buffalo that I’ve found, the 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 White Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours. Then you have yourself some good, comfort food Chili!

 

 

 
For the Pasta I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. The best tasting Whole Wheat Pasta I’ve found, and tried a few of them. It’s 180 calories and 35 net carbs per serving. After boiling I served it up and topped it with the perfect topping, 3 Bean Buffalo Chili and Sargento Reduced Fat Shredded Sharp Cheddar Cheese! This was too good! Served with a side of Skyline Chili Oyster Crackers. This is what’s called a 4 Way around this area; Spaghetti, Chili, Beans,and Cheese. You can add Chopped Onions to make it a 5 Way. Anyway you choose to make it it’s Delicious! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Crock Pot 3 Bean Buffalo Chili

 

Ingredients:

2 lb. Ground Wild Idea Ground Buffalo
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (15 oz.) Chili Beans
1 Can (15 oz.) Kidney Beans, rinsed
1 Can (15 oz.) Great Northern Beans, rinsed
1/2 Cup of Water
1 Packet McCormick Chili Mix
1 White Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
3 Cloves Minced Garlic
1 Tbs Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
1 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
Shredded Cheese, I used Grated Dutch Gouda (Topping)
Oyster Crackers

Directions:
*Brown Buffalo in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and the oyster crackers, A Tablespoon of fat-free sour cream, or serve with some home made cornbread.

74 degrees and sunny yesterday and 30 degrees with blowing snow and a possible 1″-2″ of snow by later tonight! This weather is really getting old. Not feeling much better today, Sinus Infection. Keeping it short so I can lay back down and rest. Wanted something easy to prepare so for dinner its Skyline Chili and Spaghetti – 3 Way w/ Oyster Crackers.

I used my favorite, the Skyline 3 Way – Chili, Spaghetti. They sell it packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with Skyline Chili. I added a few dashes of Frank’s Red Hot Sauce and Cheese to make it a 3 Way and used Sargento Reduced Fat Shredded Sharp Cheese. The Chili Spaghetti is 270 calories and 20 net carbs. I also had a side of Skyline Oyster Crackers. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Welcome back to the still frozen tundra of West Chester, Ohio! I’ll be glad when this deep freeze passes, they say one more day of below zero and by Thursday a balmy 25 degrees, you have to start somewhere! I got my Mom’s car repaired and now I think the weather has taken a toll on mine, it will be in the shop some time this week. For dinner a cold winter’s day classic, Skyline Chili and Spaghetti – 3 Way w/ Chili and Cheese Coney! What better way to heat it up a bit.

Opened a small can of Skyline Chili and heated it up, for topping for the Hot Dog. Served on a Aunt Millie’s Reduced Calorie Hot Dog Bun and topped with Skyline Chili, French’s Yellow Mustard and Sargento Reduced Fat Shredded Sharp Cheddar. For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Merry Christmas Eve everyone! It’s been an almost bitter cold day around here most of the day. This morning the wind chill had it around 9 degrees, far cry from our mid 50’s just a or so ago. Ran some errands for Mom, who is almost at full strength again. Then spent most of the afternoon baking some Pumpkin Walnut and Banana Walnut Bread. Baked 12 mini loaves and delivered them to several neighbors. Love Christmas time! For dinner tonight it was a Skyline Chili inspired dinner. I prepared a Skyline 3 Way – Chili, Spaghetti, Cheese w/ Hot Dog with Cheese and Mustard.

Today’s Menu: Spaghetti and Meatballs

 

 

 

Another cloudy day but it’s in the low 50’s, not bad for December! Went to Walmart and picked up a few items that were on sale for Christmas Gifts and picked up a couple of items for tonight’s dinner. Tonight one of my favorites, Spaghetti and Meatballs.

Spaghetti LaRosa Sauce

 

 

I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. Then for my Meatballs I used Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are the best I’ve found, fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs.

 
I normally use Bella Vita Low Carb Pasta Sauce but here lately I’ve been using LaRosa’s Original Pasta Sauce. I added my Meatballs and Sauce to a Sauce Pan and then added a small jar of Green Giant Sliced Mushrooms and simmered on low until all was heated. I topped the Spaghetti and Meatballs with some fresh grated Murray’s Parmigiano-Reggiano Cheese. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Happy Halloween Everyone! Well they cancelled Trick or Treat Night around most of the area for tonight. Cancelled due to a heavy thunderstorm with high winds that’s supposed to move through a large chunk of this part of the Country. Most have rescheduled Trick or Treat for tomorrow night. Tonight I prepared Hamburger Helper Spaghetti w/ Baked French Bread.

 

 
I had tried the Hamburger Helper Lasagna a while back, which was very good, so I thought I would give the Hamburger Helper Spaghetti a try. As usual I replaced the Ground Beef with Jennie – O Extra Lean Ground Turkey Breast. What a huge difference in calories and grams of fat for 1 lb. of Ground Turkey and Ground Beef! All the nutrition sites vary somewhat but according to http://www.fatsecret.com/calories-nutrition/ web site 1 Lb of Ground Beef (95% Lean / 5% Fat) contains 621 Calories and 22.68g Total Fat! While Jennie – O Extra Lean Ground Turkey Breast contains Calories 120 Dietary Fiber 0 g Calories From Fat 15 Sugars 0 g Total Fat 1.5 g – See more at: http://www.jennieo.com/products/3-Extra-Lean-Ground-Turkey-Breast#sthash.wCRJyEmM.dpuf. A huge difference!!

To prepare it, the short version, start by browning the Ground Turkey and seasoning it with Sea Salt, Ground Pepper, Ground Roasted Cumin, and Parsley Flakes. Stir in hot water, uncooked spaghetti and sauce mix. Heat to boiling, stirring occasionally. 3. Reduce heat; cover and simmer about 15 minutes, stirring occasionally, until spaghetti is tender. Remove from heat and uncover. (Sauce will thicken as it stands.) It was very easy to prepare and I really enjoyed it! I liked this better than the Hamburger Lasagna. The Spaghetti was tender and the Sauce was excellent. I added just a bit of Kraft Grated Parmesan and topped with a bit of Sargento Reduced Fat Mozzarella. I also baked a loaf of Pillsbury Simply Rustic French Bread. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Directions
You will need: 1 lb lean ground beef (You can use 1 lb ground turkey instead of ground beef.), 3-1/2 cups hot water. 1. Brown ground beef in 10-inch skillet; drain. 2. Stir in hot water, uncooked spaghetti and sauce mix. Heat to boiling, stirring occasionally. 3. Reduce heat; cover and simmer about 15 minutes, stirring occasionally, until spaghetti is tender. Remove from heat and uncover. (Sauce will thicken as it stands.) High altitude: (3500 – 6500 ft): Increase hot water to 3-3/4 cups.

Microwave: 1. Crumble 1 lb lean ground beef into 2-1/2-quart microwavable casserole or bowl. Microwave uncovered on High 3 to 5 minutes, breaking up beef after 3 minutes, until brown; drain. 2. Stir in 3-3/4 cups boiling water, uncooked spaghetti and sauce mix. 3. Microwave uncovered on High 12 to 16 minutes, stirring every 6 minutes, until spaghetti is tender. (Sauce will thicken as it stands.) Dish will be hot. High altitude microwave (3500 – 6500 ft): Increase boiling water to 4 cups and last microwave time to 14-18 min.

Today’s Menu: Spaghetti and Meatballs

Wow some heavy rains the past 24 hours! They say the heaviest rains have passed but still more on the way. A little cooler days coming in for next week. For dinner tonight I prepared some Spaghetti and Meatballs. Whole Wheat Spaghetti, Turkey Meatballs, and Low Carb Pasta Sauce.

 

 

I used Ronzoni Healthy Harvest Whole Wheat Spaghetti and Turkey Meatballs along with Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are the best I’ve found, fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. Topped everything with some fresh grated Parmesan Cheese, fresh grated Dutch Gouda and Bella Vita Low Carb Pasta Sauce (Meat Flavored). I was out of fresh Mushrooms so I added a jar of Pennsylvania Dutch Sliced Mushrooms to the Sauce as it simmered. For dessert later a Del Monte No Sugar Added Peach Chunks Cup.

Today’s Menu: Baked Spaghetti w/ Baked Garlic Knot Rolls

 

 

 
Woke up early this morning and had to turn the heat on, down to 35 degrees! Turned out to be a sunny but cool Spring day. Our grass cutter came around today and cut the grass for the first time this year. Back into the mid 60s Sunday. For dinner tonight a new comfort food; Baked Spaghetti w/ Baked Garlic Knot Bread. First time I tried this and everyone loved it! Plus I lowered the calories and carbs by using reduced and low fat ingredients.

 

Like most recipes it’s amazing the calories you can cut just by using reduced, low fat, and fat free ingredients. Instead of Ground Beef I Baked Spaghetti 005used Honeysuckle White Extra Lean Ground Turkey which is a 101 calorie difference, and that’s just one item! I also used Ronzoni Healthy Harvest Whole Grain Spaghetti, Philly Cream Cheese 1/3 Less Fat, Daisy Reduced Sour Cream, and Daisy 2% Cottage Cheese. I also added a few shakes of Frank’s Hot Sauce that I added to the Turkey as it was cooking. All simple replacements that can add up on reducing calories and carbs. The original, from Taste of home, recipe serves 12, I cut in half to serve 6.

 
To prepare it in a large skillet, cook the Ground Turkey and Onions over medium heat until meat is no longer pink; drain. Add the tomato sauce, Frank’s Red Hot Sauce, mushrooms, garlic powder and oregano. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally. Meanwhile, cook the spaghetti according to package directions; drain. In a small bowl, combine the cream cheese, cottage cheese, sour cream and chives; beat well. Place half of spaghetti in a greased 2-qt. baking dish. Spoon cream cheese mixture evenly over top. Layer with remaining spaghetti and all of the Turkey mixture. Toss bread crumbs and butter; sprinkle over the top. Cover and bake at 350° for 20 minutes. Uncover; bake 5-10 minutes longer until heated through. The bread crumbs provide a nice crunchy topping and the taste is delicious! Another keeper recipe! I left the website link original recipe from Taste of Home at the end of the post. I served with Walmart Bakery Garlic Knot Rolls that I baked. For dessert later a Weight Watchers Vanilla and Chocolate Swirl Ice Cream Cone.

Ingredients
2 pounds ground beef
2 medium onions, chopped
2 cans (one 15 ounces, one 8 ounces) tomato sauce
1 can (8 ounces) sliced mushrooms, drained
1 teaspoon garlic powder
1 teaspoon dried oregano
2 packages (7 ounces each) uncooked spaghetti
1 package (8 ounces) cream cheese, softened
2 cups (16 ounces) 4% cottage cheese
1/2 cup sour cream
2 tablespoons minced chives
1/4 cup dry bread crumbs
1-1/2 teaspoons butter, melted

 

 
Directions
*In a large skillet, cook beef and onions over medium heat until meat
is no longer pink; drain. Add the tomato sauce, mushrooms, garlic
powder and oregano. Bring to a boil. Reduce heat; simmer, uncovered,
for 15 minutes, stirring occasionally.
*Meanwhile, cook the spaghetti according to package directions; drain.
In a small bowl, combine the cream cheese, cottage cheese, sour
cream and chives; beat well. Place half of spaghetti in a greased
4-qt. baking dish. Spoon cream cheese mixture evenly over top. Layer with remaining spaghetti and all of the beef mixture.
*Toss bread crumbs and butter; sprinkle over the top. Cover and bake at 350° for 20 minutes. Uncover; bake 5-10 minutes longer until heated through.

 

Yield: 12 servings.
Nutrition Facts: 1 serving (1 cup) equals 378 calories, 20 g fat (10 g saturated fat), 87 mg cholesterol, 586 mg sodium, 23 g carbohydrate, 2 g fiber, 25 g protein.
