Today’s Menu: Tuscan Seasoned Pork Medallions w/ Cut Italian Beans and Loaded Baked Potato Casserole

 

 
It’s May 14th and we had to turn the heat on this morning! High in the low 50’s, windy, and rTuscan Seasoned Pork Medallions w Cut Italian Beans and Loaded B 009ain most of the day. Come on warm weather, we are ready! Toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Cleaned the house today, vacuum and dusting. Then after lunch headed over to see a friend of mine who had surgery a couple of days ago and now is home. He’s sore but feeling a lot better! Then I headed over to spend the afternoon with Dad at the rehab center. He’s getting a little stronger but a ways away from coming home. Back at home took a short nap and back up to make dinner. Tonight I prepared Tuscan Seasoned Pork Medallions w/ Cut Italian Beans and Loaded Baked Potato Casserole.

 

 

Tuscan Seasoned Pork Loin Medallions

While at Costco yesterday I bought another package of Tuscan Seasoned Pork Loin Medallions. They cut it and seasoned it as I shopped. As the first time I purchased some the package had 24 slices. I kept 4 slices out and froze the remaining 20 pieces.

 

 

 

 

 

I started by preheating the oven on 400 degrees. To prepare them I used a Cast Iron Skillet. SprayTuscan Seasoned Pork Medallions w Cut Italian Beans, Whole Potat 002ed it with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil and heated it on medium heat. I then lightly Salted the Pork with Sea Salt and a sprinkle of McCormick Dried Parsley. Added the Pork to the skillet and cooked it for 2 minutes a side, just started to brown. Then from the stove to the oven, love Cast Iron Skillets! I then backed them to a medium rare, 145 degrees in the center of the medallions using a meat thermometer. Pork Tenderloin is one of my favorites and these rank way up the chart! The Pork was so tender and flavorful. Seasoned just right and very moist. We’ll be keeping these in stock!

Then for one side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready!

Oven Directions

Best for Golden Browning

1 – PREHEAT oven to 450°F. COMBINE potatoes and sauce mix in 1 1/2 quart baking dish.
2 – STIR in 1 1/2 cups boiling water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
3 – BAKE uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
4 – Remove from oven and let stand a few minutes before serving.
BAKING NOTES: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min. To bake potatoes and roast meat at the same time, bake at 375°F for about 45 min; 350°F for about 50 min; or 325°F for about 60 min.

Stove Top Directions

1 – HEAT potatoes and sauce mix, 1 1/2 cups hot water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter to boil in 2-quart saucepan over high heat, stirring occasionally. Watch carefully to avoid boil over.
2 – REDUCE HEAT, then COVER and simmer 15 minutes, stirring occasionally, until potatoes are tender and sauce reaches desired consistency (sauce will thicken slightly when cooling).
3 – Remove from heat and let stand a few minutes before serving.

I just had a cup of Bigelow Decaf Green Tea for Breakfast. Went out to grab the papers and it had finally quit raining! Cold though about 31 degrees. Nice day out though, sunny and around 50 degrees. After Breakfast I went to Meijer for Mom, she needed a few items. Back home and got the leaf blower out and cleaned the wooden deck and around the house. Finally got our satellite dish repositioned. Since they removed all the woods out from behind us our reception was going bad, everything good now. For dinner tonight I prepared a Thin Sliced Pork Tenderloin Hoagie w/ Baked Potato.

I purchased the Pork Tenderloin from Meijer the other day, about 1 1/2 lbs.. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe by far!

When the Pork was done I let it cool for 5 minutes and started slicing. I sliced it thin so it would pile up on the bun just right. So to finish making the Hoagie I’ll need;Sargento Ultra Thin Provolone Cheese, French’s Spicy Brown Mustard, and Kroger 100% Whole Wheat Hoagie Roll. I first spread some of the French’s Spicy Brown Mustard on the bottom half of the Hoagie Roll, then layered 2 slices of the Sargento Ultra Thin Provolone Cheese, next I layered in my sliced Pork Roast, then spread some more of the Spicy Mustard on the Pork, and topped it with the top bun of the roll. A delicious Masterpiece! I love Pork Tenderloin anyway it can be prepared. The Provolone works great with Pork and the Spicy Brown Mustard was made for Pork. A winning Hoagie Dish for sure!

 

 

Baked Potato
For a side dish I baked a Russet Potatoes. I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley. Topped it with I Can’t Believe It’s Not Butter. Then for dessert later tonight a Skinny Cow Chocolate Truffle Ice Cream Bar.

Wow, some weather we had in the past day! Yesterday started off windy but by Noon it was a strong wind around 40 mph. By 2:00 the winds were 50-60 mph. and that’s when things started going bad. We kept our power, but a brief flicker, but some finer optic lines came down across I – 75 which blocked the interstate for about 4 hours and we lost our internet service. Ours was down from around 2:00 till well after Midnight. Some of our neighbors lost their internet, cable tv, and phone service. They have the Time Warner Bundle which you have service for all 3 items. I never did like that for that very reason that happened, one goes and you lose everything. I have internet service through them but have DirectTV and phone service through Cincinnati Bell. It was only 28 degrees this morning and went up to around 50 degrees, but sunny out and just a light breeze. Had to do some cleaning outside, a lot of tree limbs, leaves, and debris scattered about. So anyway for dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Mashed Potatoes and Italian Cut Green Beans.

I purchased the Simple Truth Pork Tenderloin from Kroger the other day, a small one at just over 1 lb. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare them just empty the can into a small sauce pan and simmer until heated. Just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

I made some Grits for Breakfast, been a while since I’ve had any. I used Kroger Butter Flavor Instant Grits. I also had a toasted slice of Healthy Life Whole Grain Bread (Lightly Buttered), and a couple of links of Jennie O Turkey Breakfast Sausage Links. Outside the morning is a mess! It started snowing around 5:00 this morning and we only got a couple of inches but the ground was frozen so the snow was freezing on impact. Had all the roads and walkways a mess! The snow did stop around noon and it cleared up a bit. So not a lot going on outside today. For dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Whole New Potatoes and Cut Italian Green Beans.

For one side dish I heated up a can of Del Monte Whole New Potatoes. Just heat and serve, seasoned with McCormick Grinder Sea Salt and Black Peppercorn Medley, Parsley, and I Can’t Believe It’s Not Butter. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

For Breakfast I had an Egg Beater’s Egg White Scrambled Egg, 2 Jennie – O Turkey Breakfast Sausage Links, 2 slices of Toasted Aunt Millie’s Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Love a good Breakfast! After my morning workout it was house cleaning day. Ran the vacuum and dusted. Swept up and cleaned outside on the deck and driveway, getting a lot of leaves this year. After cleaning got the cart out for a while to enjoy another beautiful Fall Day, sunny and 70 degrees! Clouds and rain moving in though overnight and Saturday, much needed rain. For dinner tonight anew recipe, I prepare a Chili Rubbed Pork with Mango Salsa w/ New Potatoes.

 

 

I had come across this recipe from a McCormick Recipe email and had been wanting to try for some time, like dinnerChili Rubbed Pork with Mango Salsa w New Potatoes 001 tonight! To make this I’ll need the following; 1 package McCormick® Chili Seasoning Mix, 1 tablespoon packed Splenda Brown Sugar, 1 large ripe Mango (peeled) – seeded and finely chopped (1 cup), 1/3 cup finely chopped Red Onion, 2 tablespoons Orange Juice, 1 tablespoon chopped Cilantro, 2 Pork Tenderloins (about 1 pound each), and 1 tablespoon Extra Virgin Olive Oil. The ingredients of one delicious Pork Tenderloin! I used Splenda Brown Sugar instead of the regular Brown Sugar and I also used the McCormick® Chili Seasoning Mix instead of the Gluten-Free McCormick® Chili Seasoning Mix (Kroger was out of stock of it). The original recipe and web link is at the end of the post.

 
To prepare the dish I mixed the Seasoning Mix and Sugar in small bowl. For the Mango Salsa, mixed the Mango, Onion, Orange Juice, Cilantro and 1 teaspoon of the Seasoning Mixture in medium bowl. Covered and refrigerated Chili Rubbed Pork with Mango Salsa w New Potatoes 010until ready to serve.

I then brushed the Pork Tenderloins with Oil. Coated evenly with remaining seasoning mixture. Refrigerated for 1 hour, for extra flavor.

To prepare it preheat the oven to 375°. Add Pork to pan; cook 4 minutes, browning on all sides. Bake at 375° for 15 minutes or until a thermometer registers 145° (slightly pink), turning after 7 minutes. Let stand 5 minutes before slicing. I use this cooking method when I prepare my Cumin Spiced Pork Tenderloin and it always comes out perfect. The Tenderloin came moist and delicious! Love the McCormick® Chili Seasoning Mix along with Brown Sugar, nice crust and perfect flavor. A definite “Keeper Recipe”.

 

Seasoned Haddock w Whole New Potatoes and Asparagus Cuts and Tip 002
For a side I heated up a can of Del Monte Whole New Potatoes, just emptied the contents of the can into a sauce pan and heated on medium heat until heated through. I also had a slice of Aunt Millie’s Whole Grain Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 

 

Chili Rubbed Pork with Mango Salsa

IngredientsMcCormick

Serves: 8
1 package McCormick® Chili Seasoning Mix
1 tablespoon packed brown sugar
1 large ripe mango, peeled, seeded and finely chopped (1 cup)
1/3 cup finely chopped red onion
2 tablespoons orange juice
1 tablespoon chopped fresh cilantro
2 pork tenderloins, about 1 pound each
1 tablespoon oil

DirectionsChili Rubbed Pork with Mango Salsa w New Potatoes 008

Mix Seasoning Mix and sugar in small bowl. For the Mango Salsa, mix mango, onion, orange juice, cilantro and 1 teaspoon of the seasoning mixture in medium bowl. Cover. Refrigerate until ready to serve.
Brush pork tenderloins with oil. Coat evenly with remaining seasoning mixture. Refrigerate 30 minutes or longer for extra flavor.
Grill pork over medium heat 20 to 30 minutes or until desired doneness, turning occasionally. Let stand 5 minutes before slicing. Serve pork with Mango Salsa.

 
Cooking tip

To bake pork: Prepare pork as directed. Place on foil-lined shallow baking pan. Bake in preheated 450°F oven 20 to 25 minutes or until desired doneness.

Had a light Breakfast of a Healthy Life Whole Grain English Muffin topped with I Can’t Believe It’s Not Butter. A quick morning workout and off to Walmart and Meijer. I wish one store would carry all items, instead you have to go to two or three different stores to find items. Back home got everything put away and cleaned the house, vacuum and dusting. Just puttered around the house after that. For dinner tonight it’s a Cumin Spiced Boneless Pork Loin Roast w/ Mashed Potatoes and Golden Hominy.

 

 

 

I purchased the Pork Tenderloin Boneless Roast from Kroger and used only half of it and froze the other half. So I grabbed the half out of the freezer and let it thaw overnight in the fridge. To prepare it I’ll need; 1 Pork Tenderloin Cumin Spiced Boneless Pork Loin Roast w Mashed Potatoes and Gold 006Roast, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. I’ve been using the Cumin Spice Rub for a while now, my favorite Rub for Pork. I had come across the recipe a while back on-line, and use it all the time now. It gives the Pork a fantastic crust and great flavor. To prepare it preheat oven to 400°. Combined all the ingredients; rub it all over the Pork. Let stand 20 minutes. To Roast it I used a mall Broiler Pan with a Wire Rack in it. Sprayed the Rack with Pam Cooking Spray and put the Pork on it. Golden Hominy

For one side I reheated the leftover Bob Evan’s Mashed Potatoes from last night’s meal. Just microwaved for 1 1/2 minutes and serve, always as good as homemade, if not better. Then for another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. My favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish!

Our morning started off sunny and humid but as the morning went on the clouds started rolling in and we had rain coming in for the day. Layed back day, not a lot going on. After Breakfast and the morning workout I went outside and did some cleaning and sweeping. Then back inside pulled everything out of the fridge and gave it a good cleaning and straightened up a couple of storage cabnets for my day. For dinner tonight a favorite of mine, Cumin Spiced Boneless Pork Loin Roast w/ Cut Green Beans & Potatoes and Savory Herb Stuffing.

 

 

I’ve been using the Cumin Spice Rub for a while now, my favorite Rub for Pork. I had come across the recipe a while Cumin Spiced Boneless Pork Loin Roast 001back on-line, and use it all the time now. It gives the Pork a fantastic crust and great seasoning. I purchased the Pork Tenderloin Boneless Roast from Kroger yesterday. To prepare it I’ll need; 1 Pork Tenderloin Roast, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combined all the ingredients; rub it all over the Pork. Let stand 20 minutes. To Roast it I used a mall Broiler Pan with a Wire Rack in it. Sprayed the Rack with Pam Cooking Spray and put the Pork on it. I baked it for about 1 hour, until my thermometer registered 145° (slightly pink) Let stand 10 minutes before slicing. Then for another side I prepared a box of Stove Top Savory Herbs Stuffing. So easy to make and love the Stuffing. For dessert later a bowl of Del Monte Sliced Peaches.

Hello from Ohio! Started my day off with a Poached Egg and a slice of Klosterman Wheat Bread, also my morning cup of Bigelow Decaf Green Tea. Need a few items for tonight’s dinner so I ran up to the Kroger up the road. figured I better go early and avoid the crowds, people buying for the upcoming 4th of July weekend. Back home did a little housekeeping and got some of the prep work done for tonight’s dinner. So for dinner tonight it was one of those Comfort Food Meals. I prepared Cumin Spiced Boneless Pork Loin Roast w/ Spiced Carrots & Butternut Squash and Cut Green Beans.

Cumin Spiced Boneless Pork Loin Roast w Spiced Carrots & Buttern 002

For one side dish a new recipe, Spiced Carrots & Butternut Squash. Came across this one in the latest issue of Taste of Home/Simple and Delicious. Minute I seen it I knew I to try it! I had tried Butternut Squash for the first time just last year and fell in love with it. So when I saw this with the added Spices and Carrots, had to try it! It’s an easy recipe to prepare, using my favorite the Crock Pot. To make I’ll need the following; 5 large Carrots cut into 1/2-inch pieces (about 3 cups), 2 cups cubed peeled Butternut Squash (1-inch), 1 tablespoon Balsamic Vinegar, 1 tablespoon Extra Virgin Olive Oil, 1 tablespoon Honey, 1 teaspoon Ground Cinnamon, 1/2 teaspoon Sea Salt, 1/2 teaspoon Ground Roasted Cumin, 1/4 teaspoon Chili Powder, and 1/2 teaspoon Ground Nutmeg. The original recipe doesn’t call for the Nutmeg but I like using Nutmeg as a Spice when using Squash, it just seems to go perfect with Squash.

 

 
Then to prepare it I got the round Crock Pot out, put the plastic bag liner in and sprayed it with Pam Cooking Spray. Cumin Spiced Boneless Pork Loin Roast w Spiced Carrots & Buttern 013Placed carrots and squash in a 3-qt. slow cooker. In a small bowl, mixed the remaining ingredients; drizzled over vegetables and tossed to coat. Cook, covered, on low 4-5 hours or until vegetables are tender. Gently stir before serving. Squash and the Carrots are hard Vegetables so I took it the full 5 hours. When done I opened that Crock Pot lid up and the aroma was incredible! What a dish, both Carrots and Squash came out tender with just a fantastic flavor. I think the addition of the Nutmeg helped with that flavor. So I have another Keeper Recipe. And before I forget a special thank you to the Kroger Produce Department for peeling and dicing my Butternut Squash. Squash is tough to dice if you don’t have a good knife, which I don’t (Yet).

 

 
Then for my other side I heated up a can of Del Monte Cut Green Beans and I had a slice of Klosterman Wheat Bread. For dessert later a Jello Sugar Free Dark Cherry Jello Cup.

Spiced Carrots & Butternut Squash RecipeTaste of Home

Ingredients
5 large carrots, cut into 1/2-inch pieces (about 3 cups)
2 cups cubed peeled butternut squash (1-inch)
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1 tablespoon honey
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon chili powder

Directions
Place carrots and squash in a 3-qt. slow cooker. In a small bowl, mix remaining ingredients; drizzle over vegetables and toss to coat. Cook, covered, on low 4-5 hours or until vegetables are tender. Gently stir before serving.
Yield: 6 servings

Nutritional Facts
2/3 cup equals 85 calories, 3 g fat (trace saturated fat), 0 cholesterol, 245 mg sodium, 16 g carbohydrate, 3 g fiber, 1 g protein. Diabetic Exchanges: 1 vegetable, 1/2 starch, 1/2 fat.

Not a good day out there today. Had the 3 H’s going on- Hazy, Hot, and Humid! It’s about 94 degrees out and very humid. They are warning people with breathing problems to stay in today. Had a light Breakfast and my morning workout. Cleaned and straightened the pantry and then sorted out our spice drawer, had to pitch a couple that had expired. For dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Roasted Potatoes and Sugar Snap Peas.

 

 

 

Most of the time when I’m preparing Pork I use the Cumin Spiced Rub, as I did tonight. I had the Simple Truth Pork Cumin Spiced Pork Tenderloin  Red Potatoes Sugar Snap Peas 008Tenderloin in the freezer, I sat it in the fridge overnight to thaw. To prepare it I’ll need; 1 Simple Truth Pork Tenderloin, For the Rub: 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add Pork to pan; cook 4 minutes, browning on all sides. Bake at 375° for 15 minutes or until a thermometer registers 145° (slightly pink), turning after 7 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe!

 
I make a Potato Dish quite often, tried this new Roasted Potato Dish that uses Turkey Bacon with the Potatoes. To Cumin Spiced Pork Tenderloin  Red Potatoes Sugar Snap Peas 004make the Potato Dish I’ll need; 2 Slices of Jennie – O Turkey Bacon, Sea Salt Ground Black Pepper, 1/2 tablespoon Extra Virgin Olive Oil, and quartered Small red Potatoes. Heat a cast-iron skillet over medium-high heat. Add Turkey Bacon to pan; cook 5 minutes or until crisp. Remove Bacon from pan; crumble. Add Potatoes to drippings in pan; cook 4 minutes or until lightly browned, turning once. Then bake at 375° for 12 minutes or until Potatoes are fork tender. Sprinkle Bacon and Parsley over Potatoes; serve with pork. Excellent Potato Dish. Fantastic side with Pork.

Then I also prepared some Sauteed Sugar Snap Peas. To prepare them I heated 1/2 tablespoon of Extra Olive Oil in a large saute pan over medium-high heat. Added the Sugar Snap Peas, tossing occasionally for 5 to 6 minutes, until the Sugar Snap Peas were crisp tender. Another favorite Side Dish of mine. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

A cool morning, but another beautiful Spring Day out. The outside work is continuing today, still working on the wooden deck. Did a load of laundry and few household chores. After everything was done headed outside and got the 4 wheel cart out for a while, enjoying all this sunshine! I grabbed a Pork Tenderloin from the freezer and let it thaw in the fridge overnight. Dinner tonight is a Sliced Cumin Spiced Pork Tenderloin Sandwich w/ Baked Steak Fries.

 

 
I’m using my favorite rub for Pork, the Cumin Spiced Rub. I purchased a few of the Simple Truth Pork Tenderloin cumin-spiced-pork-roast-2from Kroger and have them in the freezer. To prepare it I’ll need; 1 Pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. Bake at 350° for 25 minutes or until a thermometer registers 145° (slightly pink), turning after 7 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which made one incredible Crust on the Pork with the inside being tender and moist! I let it rest for 10 minutes before slicing, to cool somewhat and let the juices marinate back into the Tenderloin. Leave the oven on so you can bake your sandwich.

 

Grabbed a knife and sharpened it up real good before using. I sliced up the entire Tenderloin, enough for my Sliced Cumin Spiced Pork Tenderloin Sandwich 002dinner tonight and a couple of sandwiches for lunch. I sliced it fairly thin, it’s just incredibly moist. After slicing it up I got a Perfection Deli Mini Sub Wheat Bun, Kraft Reduced Fat Mayo w/ Olive Oil, and a slice of Simple Truth Muenster Cheese. Built my sandwich by first laying the slice of Cheese, then the sliced Pork, and topped it with the Mayo. The oven was still on from roasting the Pork Tenderloin. Laid the sandwich on a small baking sheet, open-faced, and baked until heated through and the Cheese was melting. I love using Muenster Cheese when it’s used a topping on baked sandwiches, melts perfect and retains its full flavor. What a Sandwich! Moist and flavorful, the Cumin Spiced Rub gives the Pork a fantastic crust.

 

 

Then for a side dish I Baked some Ore Ida Steak Fries, perfect Fries for any Sandwich. Got to Love It! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.
