Quick and Easy Turkey Chili
Everyone needs a Quick and Easy Turkey Chili recipe. Whip up this hearty weeknight dinner in under 30 minutes with lean ground turkey, onions and garlic.
Total Time – 30 Minutes
Serving Size – 6 Servings

Ingredients
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey

1 – tablespoon chili powder

1 – tablespoon dried onion

2 – teaspoons minced garlic

2 – (15½-ounce) cans chili beans in spicy sauce, undrained

1 – (14½-ounce) can salsa-style or chili-style tomatoes, undrained

Directions
1) Crumble turkey in large pan; add chili powder, onion and garlic.

2) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

3) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

4) Add chili beans and tomatoes; bring to boil. Reduce heat and simmer uncovered 10 minutes, stirring occasionally. Serve with desired toppings.

Today’s Menu: Panko Crispy Turkey Tenderloins w/ Baked Fries

 

For Breakfast I Scrambled a couple of Eggs, heated up 2 Johnsonville Turkey Sausage Links, toasted a slice of Aunt Millie’s Light Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. Nice way to start the day! 66 degrees and mostly sunny out, still windy. After Breakfast I went to Kroger for a few things for Mom and stopped by McDonald’s and picked up Breakfast for her. Did a little yard work and then later a friend of mine stopped by for a while to catch up a bit. For Dinner tonight I prepared Panko Crispy Turkey Tenderloins w/ Baked Fries.

 

I purchased another package of the JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins at Meijer. There’s only 120 calories, 1 gram of fat and 0 carbs per serving! I’m preparing them the same way as last time we had them. I had looked around at different recipes and I combined a couple of ideas from a few of them to prepare the Tenderloins. I’m making Panko Crispy Turkey Tenderloins. To make these I’ll be needing 1/3 of a cup Low Fat Buttermilk, 3/4 teaspoon (or more) of Frank’s Hot Sauce, 1/4 teaspoon of Garlic Powder, 1/4 teaspoon Onion Powder, Sea Salt, 1 package of JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins (sliced into smaller strips), Extra Light Olive Oil for frying, 1 cup All-Purpose Flour, 2 teaspoons Hungarian Paprika, Grinder Black Peppercorn, 2 cups Progresso Panko Breadcrumbs, 1 1/2 tablespoons Chile Powder, and 2 Large Eggs or Egg Beater’s which is what I used.

 

Then to prepare them; You’ll be needing 3 bowls. Whisk the Buttermilk, Hot Sauce, Garlic Powder, Onion Powder, and Sea salt in a small bowl. Place the sliced Turkey in a resealable plastic bag and pour in the Buttermilk Marinade. I refrigerated them for 3 hours.

 

When ready I got a large cast-iron skillet and added3 tablespoons of the Olive Oil to it and heated it on medium heat. As the skillet was heating I put the Flour in a bowl and seasoned it with the Paprika and Sea Salt and Pepper. I then put the Panko in another bowl and season it with the Chile powder and Salt and Pepper. And finally I poured the Egg Beater’s in the last bowl.

 

I removed the Turkey from the Marinade, allowing the excess to drip off. I dredged the Turkey first in the Flour, then in the Egg Beater’s and finally coat them with the Panko. With the cast iron skillet heated I fried the turkey in batches, always being careful not to overcrowd the skillet, until golden brown and an instant read thermometer inserted into the center read 160 degrees. I fried them 3 minutes per side.

 

These came out so delicious! They came out Golden Brown, Tender and so Flavorful. The Spices worked perfect and the Panko Breadcrumbs gave it a fantastic crunch. I served these with some Blue Cheese Dressing for dipping. We have found a new Keeper Recipe! I also baked some Ore Ida Crinkle Cut Fries. Then for Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

Turkey Sausage and Sassy Scrambled Eggs
Spice up your breakfast or brunch with this carb-conscious Mexican recipe. Fluffy scrambled eggs mixed with fresh green onion and bell peppers pairs perfectly with savory lean turkey sausage.
Total Time 30 Minutes
Serving Size 5 Servings

INGREDIENTS
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links
2 tablespoons butter
2½ cups egg substitute or 10 eggs
½ cup diced red bell pepper
½ cup diced green onions
¾ teaspoon hot pepper sauce
½ cup shredded Cheddar cheese

DIRECTIONS
1) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

2) Place links on hot skillet. Turn occasionally and cook approximately 12 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer in the middle and ends of links.

3) Meanwhile, in large skillet over medium-high heat melt butter. In medium bowl, beat together eggs, bell pepper, green onions and hot pepper sauce. Pour into skillet. Cook 3 minutes or until eggs are set; stirring occasionally.

4) Sprinkle with cheese and stir to combine. Serve with sausages.

Fast-Paced Turkey Frittata
Egg-based recipes are the cornerstone of any good brunch, and this Fast-Paced Turkey Frittata takes the cake. Chock full of veggies and Hickory Smoked deli turkey, this gluten free recipe has 70 calories per serving!

Ingredients
1 ¼ – cup eggs substitute or 5 eggs
¼ – cup plain low-fat yogurt
2 – tablespoons water
¼ – teaspoon dried dill weed
4 – slices JENNIE-O® DELI FAVORITES® Hickory Smoked Turkey Breast, cut into 0.5-inch pieces
½ – cup shredded zucchini
¼ – cup shredded carrot
1 – tablespoon butter

Directions
1) In medium bowl, whisk eggs, yogurt, water and dill weed; set aside. In medium skillet over medium heat, cook turkey, zucchini and carrot in butter 2 to 3 minutes or until vegetables are tender.

2) Spread mixture evenly over bottom of skillet. Pour egg mixture into skillet. Reduce heat to medium. As eggs begin to set, run a spatula around the edge of the skillet, lifting egg mixture to allow uncooked portion to run underneath.

3) Cook 10 to 12 minutes or until eggs are set. Cut into 4 wedges.

Bistro Turkey-Onion Soup

INGREDIENTS

2 tablespoons butter
4 cups thinly sliced onion
1 tablespoons all-purpose flour
2 cans (10¾-ounce) condensed low-sodium beef broth

4 slices Swiss cheese

DIRECTIONS

2) Add broth and water; heat to boiling. Reduce heat to low. Add turkey ham. Cook, covered, 10 minutes, stirring occasionally.

3) Heat oven to 425°F.

4) Ladle soup into 4 oven-safe bowls.

5) Set on rimmed baking sheet. Place bread in each bowl. Top with cheese slice.

6) Bake 4 to 5 minutes or until cheese is melted and browned.

Bean and Turkey Quesadillas
A quick, delicious Mexican favorite that’s a big hit with the kids. Made with refried beans, a sprinkle of chili powder and JENNIE-O® Oven Roasted Turkey Breast straight from the deli counter. Muy Bueno!

Total Time 30 Minutes
Serving Size 4 Servings

INGREDIENTS

2 tablespoons vegetable oil
4 flour tortillas
1 cup refried beans
1 teaspoon chili powder
¾ pound JENNIE-O® DELI FAVORITES® Oven Roasted, Reduced Sodium Turkey Breast, from the service deli
1 large tomato, chopped
4 scallions, sliced
½ cup shredded Cheddar cheese
salsa and sour cream, if desired

DIRECTIONS

1) Heat griddle or skillet to 375°F.

2) Lightly brush vegetable oil on 1 side of each tortilla. Turn 2 tortillas over, oil side down, and evenly divide half of the refried beans and chili powder. Place 1 tortilla with beans, oil side down on hot griddle and top with turkey, tomato, scallions and cheese.

3) Place second single tortilla, oil side up, onto turkey mixture. Cook until bottom is lightly browned; turn quesadilla over. Cook second side until quesadilla is browned and turkey mixture is thoroughly heated.

4) Repeat with remaining 2 tortillas and ingredients. Cut each quesadilla into fourths and serve with salsa and sour cream, if desired.

Today’s Menu: Turkey and Black Bean Tacos

 

To start the day off I prepared a Breakfast Sandwich. I baked a small roll of Pillsbury Grands. As those were baking I prepared some Johnsonville Turkey Breakfast Sausage Patties. Split the biscuits in half, added 1 of the Sausage Patties, and topped with a small slice of Hoffman Super Sharp Cheese. Also had a cup of Bigelow Decaf Green Tea. 64 degrees and partly cloudy out today, windy out again also. Did a couple of loads of laundry and cleaned the house today. That was about it for the day. I can’t believe February is almost over. It seems this month flew by. So for Dinner tonight I prepared Turkey and Black Bean Tacos.

 

Been a while since I’ve had Tacos! When making Turkey Tacos I always use Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Virgin Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make some fine Tacos!

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce (my favorite), Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). I haven’t used the Stand Up Shells in a while, been using the Mini Street Soft Tacos. The Shells with a crunch just sounded good! Add the Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Meal Nights. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Sharp Cheddar and Bacon Turkey Burger w/ Baked Fries

Today’s Menu: Sharp Cheddar and Bacon Turkey Burger w/ Baked Fries

 

To start my day off I had a cup of Bigelow Decaf Green Tea. 20 degrees out this morning, but no new snow overnight! First time in a while. I had to have Mom out to Ross, Ohio for her 2nd Covid Virus Vaccine shot. Her appointment was at 10:00 but we got there at 9:15 so she could get in line early. Good thing we did as the line later stretched through the store! I waited outside and there was just a steady stream of people going in. All were elderly so there was a lot of canes, walkers and wheelchairs. So glad that the elderly are getting theirs finally. So for Dinner tonight its a Sharp Cheddar and Chicken Bacon Turkey Burger w/ Baked Fries.

 

So I started by getting a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need 2 slices but fried 5 slices. Always remember when frying Bacon use the Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

I had bought a package of the Jennie – O Lean 93% Lean Turkey Burger Patties at Meijer and had them in the freezer. I grabbed a couple of them last night and let it thaw in the fridge overnight. To prepare the Burger I grabbed a skillet sprayed it the Pam and added 2 teaspoons of Extra Light Olive Oil, heated it on medium heat. When ready I added the Turkey Burger and cooked it for 14 minutes flipping it several times. With a minute of cooking time left I added a slice of Kraft Deli Deluxe Sharp Cheddar Cheese. And done!

 

Added the Bacon, Lettuce, some Hellman’s Spicy Chipotle Mayonnaise and served it on a Healthy Life Wheat Bun. Just love these Burgers, juicy and delicious, and with the Sharp Cheddar and Bacon it makes it that much better! I love this Mayo, you have to try it! I tried the Hellman’s Spicy Chipotle Mayonnaise on the last Turkey Burger and loved it! It’s nice and Creamy with excellent flavor and a nice little kick to it!

 

 

 

I also baked some Ore Ida Crinkle Cut Fries. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Taco Seasoned Ground Turkey Tostadas
You are less than 30 minutes from tasty turkey tostadas! Save some prep-time with JENNIE-O® Taco Seasoned Ground Turkey and customize with your family’s favorite toppings.

Total Time 30 Minutes
Serving Size Makes 5 Servings

Ingredients
1 – (16-ounce) package JENNIE-O® Lean Taco Seasoned Ground Turkey
1 – (4.8-ounce) package tostadas
1 – (15-ounce) can refried beans
1 – head of lettuce, chopped
2 – Roma tomatoes, diced
½ – red onion, diced
1 – (8-ounce) Monterrey jack cheese, grated
1 – bunch cilantro, chopped, if desired
2 – limes, diced, if desired
1 – avocado, diced, if desired

Directions
1) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Add ground turkey to hot skillet. Stir to crumble, approximately 14-16 minutes. Always cook to well-done, 165°F as measured by a meat thermometer.

2) Heat tostadas and refried beans according to package directions.

3) Spread tostadas with refried beans. Top with ground turkey. Add lettuce, tomatoes, onion, and cheese. Top with cilantro, limes and avocado, if desired.

Italian Ground Turkey Stuffed Peppers
Time for a flavorful update to your go-to stuffed pepper recipe with Italian seasoned ground turkey, pepper jack cheese, Roma tomatoes and zucchini.

Total Time 1 Hour
Serving Size Makes 6 Servings

Ingredients
6 – bell peppers, any color
1 – (16-ounce) package JENNIE-O® Lean Italian Seasoned Ground Turkey
2 – tablespoons olive oil
1 – onion, finely diced
2 – cloves garlic, chopped
1 – medium zucchini, finely diced
4 – Roma tomatoes, seeded and finely diced
red pepper flakes, if desired
salt and freshly ground black pepper, if desired
1 – cup cooked long-grain and wild rice
1 ½ – cups grated pepper jack cheese, divided

Directions
1) Preheat oven to 350°F.
2) Cut tops off peppers. Remove and discard stems. Finely chop tops; set aside. Scoop out seeds and membrane. Place peppers cut side up in baking dish just large enough to hold them upright.
3) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Add ground turkey to hot skillet. Stir to crumble, approximately 14-16 minutes. Always cook to well-done, 165°F as measured by a meat thermometer. Remove ground turkey from skillet and set aside.
4) Wipe out skillet and add olive oil. Add onions, chopped peppers and cook 3 to 4 minutes, until soften. Add garlic, zucchini and cook another minute. Add tomatoes and season with red pepper flakes and salt and black pepper, if desired. Cook until heated through. Stir in ground turkey, rice and 1 cup cheese.
5) Fill peppers with rice mixture and top with remaining ½ cup cheese. Pour a small amount of water into the bottom of the baking dish. Cover with foil and bake 30 minutes. Uncover and bake 15 to 20 minutes or until the peppers are soft and the cheese is melted.
