For Breakfast I warmed up a piece of the leftover Cubed Pork Steak and served it on a Healthy Life Whole Grain English Muffin and topped it with some Sweet and Hot Stone Ground Mustard. Along with my morning cup of fresh brewed Bigelow Decaf Green Tea. It was bit warmer out today, high of 81 degrees, but still sunny and low humidity. Went and had my car washed and the inside cleaned and come back home and had the cart out most of the day. For dinner tonight it’s Fried Okeechobee Crappie w/ Hash Browns and Mini Ears of Sweet Corn.

 

 
I love Walleye and all other Fish but my favorite eating Fish has to be Crappie, Okeechobee Crappie! But my stock of the Crappie is running low, maybe only a bag or two left. Very sad when this year’s supply is gone. So I laid 3 of bags of the Crappie out in the fridge overnight to thaw. To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side.As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie. especially the Lake Okeechobee Crappie.

To go with the Crappie I prepared some Hash Browns, Potatoes are perfect with Fish, so Hash Browns it is! I always use Simply potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Then I boiled some Green Giant Mini Ears of Sweet Corn. A great replacement, and sometimes better, for fresh Corn on the Cob. As good as last night’s dinner was, this one was even better! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Seasoned Turkey Breast Steak w/ Steam Crisp Sweet Corn Kernels, Mashed Potatoes, and Baked French Bread

 

 

 
Another sunny but frigid day out again, minus 3 with the wind chill. Got out this afternoon and finished clearing the driveway again. From that to, I went to the bank, post office, and stopped by Walmart to pick up a few items and a prescription. For dinner prepared the Jennie – O Seasoned Turkey Breast Steak. Tonight I prepared a Seasoned Turkey Breast Steak w/ Steam Crisp Sweet Corn Kernels, Mashed Potatoes, and Baked French Bread.

I came across the Jennie – O Turkey Breast Steak at Walmart a while back, and been using regular ever since! It comes Seasoned and it’s only 130 calories and 3 carbs per serving. You can prepare it several ways, I pan fried mine. To prepare it just preheat a large skillet over medium heat, spray it with nonstick spray. Cook the steaks, turning 2-3 times until meat thermometer inserted into thickest portion of meat reached 165°F, approximately 19-21 minutes. Covered with lid for the last 5 minutes of cooking. Remove from stove top, cover, and let rest for 5-10 minutes before slicing. Then you have a fine and tasty Turkey Breast Steak! As usual it’s another winner from Jennie – O! It was well seasoned, I did add a couple of shakes of Sea Salt while it was cooking.

 

 

 
For one side dish I heated up a can of Green Giant Steam Crisp Super Sweet Yellow and White Kernel Corn, my favorite canned Corn. Then I tried a new Mashed Potato, Betty Crocker Creamy Buttery Mashed Potatoes. Comes in a microwavable container, just add water and heat. It came out very good. I normally buy the Idahoan Mashed Potatoes but Walmart had the Betty Crocker ones on sale so I went with that. Then I baked a loaf of Pillsbury Rustic French Bread. Lightly brushed the top of the loaf with Extra Virgin Olive Oil and sprinkled Sesame Seeds on top before baking. For dessert tonight a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Cooking Instructions:

Long day today, not a lot going on. Tidy up the computer, deleting old files and running a check-up and that was about it for the day. It’s been in the low 30’s with rain on and off all day. For dinner tonight I prepared a Baked Bone-In Whole Chicken Breast w/ Cauliflower in a Cheese Sauce and Cut Green Beans w/ Potatoes.

I used the PERDUE® OVEN READY Whole Seasoned Roaster Bone-In Breast ! As it says “Oven Ready’, already seasoned, and little clean-up needed plus their always delicious. To prepare it just preheat the oven to 400ºF. Cut open outer bag and remove Oven Ready Roaster Bone-In Breast, sealed in a cooking bag. Place in a shallow roasting pan, seasoned side up. Cut one small 1″ slit in cooking bag over the breast to vent during cooking. If cooking from Fresh: Place pan with breast (still in cooking bag) on lower shelf of oven and roast for approximately 80-90 minutes, until internal temperature of the breast reaches 180ºF. Comes out piping hot, well seasoned, and delicious! Plenty leftovers for Chicken Sandwiches for lunch.

 

 

 
For one side dish I heated up a can of Del Monte Cut Green Beans and Potatoes. I really like using the Del Monte Cut Green Beans and New Potatoes, contains 2 of my favorite vegetables (Green Beans and Potatoes). For another side I heated up a package of Green Giant Cauliflower & Cheese Sauce. I love this Green Giant Cauliflower & Cheese Sauce! It comes frozen and in a microwavable bag. Just make a small slit in the bag and heat on high for 5 1/2 minutes. The Cauliflower comes out crisp and with the Cheese Sauce added delicious. For dessert/snack later a couple of slices of Sargento Ultra Thin Colby Longhorn Cheese, a few slices of Hormel Turkey Pepperoni, and Ritz Whole Grain Crackers.

Today’s Menu: Lemon-Baked Cod w/ Cauliflower with Cheese, Green Beans, and Baked French Bread

Well we’ve really been blessed with a lot of beautiful days out this Autumn and today was no exception! Sunny and in the low 50’s. Went out early to pick up a few things at the store and then home to do some yard work, that I was able to do. I also took apart the old gas grill. We had since about 2002 so it served it’s purpose. It was lot easier taking apart than it was putting it together! For dinner tonight, Lemon-Baked Cod w/ Cauliflower with Cheese, Green Beans, and Baked French Bread.

 

 

 

Picked up some beautiful Cod Fillets at Kroger this morning. So I pulled out a favorite Cod recipe of mine; Lemon-Baked Cod . Cod is such a mild Fish and meant for baking. If you like Cod you’ll love this recipe. You’ll need; 1 lb Cod Fish Fillets, 1/4 cup Blue Bonnet Light Butter, melted, 2 tablespoons Lemon Juice, 1/4 cup all-purpose Flour, 1/2 teaspoon Morton’s Light Salt, 1/8 teaspoon White Pepper, and Paprika. To prepare it mix butter and lemon juice in a bowl. Then in another bowl, mix flour, salt and white pepper. Dip the fish into butter mixture; coat fish with flour mixture and place fish in ungreased square baking dish, 8x8x2 inches. Pour remaining butter mixture over fish; sprinkle with paprika ( You can also sprinkle a bit of Bread Crumbs on it also to give it a bit of a crust topping). Cook uncovered in 350 degree oven until fish flakes easily with fork, 25-30 minutes. Garnish with parsley sprigs and lemon slices if desired. The Cod has such a great flavor to it from the Lemon, Butter, and spices! Had some leftover so I’ll make a sandwich with it for lunch tomorrow.

 

 

 

For a side dish I heated up some Green Giant Cauliflower and Cheese Sauce. I’m not a huge fan of Cauliflower but I love it in this Cheese Sauce from Green Giant. It comes frozen in a box with about 3 servings per container. To prepare it just make a small slit in the plastic bag and microwave it for 4-5 minutes. The Cheese Sauce is fantastic on the Cauliflower and it’s only 50 calories and 5 net carbs per serving! i also heated up a small can of Walmart Brand of Cut Green Beans and Baked a loaf of Pillsbury Simply Rustic French Bread. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Ingredients:
1 lb Cod Fish Fillets

Today’s Menu: Baked Atlantic Salmon w/ Glazed Carrots, Green Beans, and Whole Grain Bread

Another sunny and beautiful Winter’s day out again today. From what they say it’s one of our last for a while. Rain and snow starting tomorrow afternoon for at least 5 – 6 days, BLAH! While at Kroger yesterday they had all their Salmon on sale and ended up with a beautiful North Atlantic Salmon fillet that I had them slice into 3 pieces. For dinner I prepared Baked Atlantic Salmon w/ Glazed Carrots, Green Beans, and Whole Grain Bread.

To prepare the Salmon I preheated the oven on 400 degrees. I first brushed a bit of Extra Virgin Olive Oil on the fillet and then seasoned it with Dill and McCormick Grinder Sea Salt and Black Peppercorn. I then baked it for 12 minutes, fork tender. The Salmon was delicious and full of flavor. Salmon is so filling because it’s so meaty. At the end of the post I left some info about Salmon.

For side dishes I had Green Giant Honey Glazed Carrots, Green Beans, and Aunt Millie’s Light Whole Grain Bread. Green Giant Carrots are prepared by microwaving for 7 minutes. The Honey Glaze on the Carrots is fantastic, and it’s only 90 calories per serving and there is 2 servings per package. Along with the Carrots I had a single serving can of Del Monte Cut Green Beans and Aunt Millie’s Light Whole Grain Bread. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Today’s Menu: Top Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Green Beans, and Whole Grain Bread

 
A chilly morning around here today, 26 degrees with a wind chill of 19 degrees. I believe winter is very close. I’m just cooking for 2 tonight, my Mom and myself. My Dad is in the hospital. He fell the other day and he’s having severe pain in the rib and back areas. Scans and x-rays show no breaks but there is something causing the pain.

I spent some of the day at the hospital but Mom was up there all day so I wanted to make sure I prepared her a good and hearty meal. So I prepare a couple of Top Sirloin Steaks & Sauteed Mushrooms w/ Baked Potato, Green Beans, and Whole Grain Bread. I used a couple of the Costco Top Sirloin Steaks. Which reminds me I have to go to Costco next week, they have their Holiday Prime Rib in stores now and I want to put one away for Christmas. I Really like Costco Meats, for price and freshness. These Steaks have such good flavor the only seasoning needed is a little Sea Salt and Ground Black Pepper. I pan fried them in Canola Oil. I had to fry them a little longer than normal because of the thickness of them. I had to fry the larger of the 2 about 10 minutes total, 5 minutes per side. This one’s for Mom, she likes her Steak Well Done. The other Steak was on for about 9 minutes, 4 1/2 minutes per side. They came out perfect! One tender Well done and the other a moist and juicy Medium Rare. I just love the flavor of these Costco Steaks!

 

For sides I had a couple of Baked Potatoes, Cut Green Beans, and Healthy Life Whole Grain Bread. I always just microwave my Baked Potatoes anymore, Easier, quicker, and just as good as baking them. Just scrub your Potatoes with water removing any dirt and with a sharp knife puncture the potato about 3 times on each side. This helps the potato to cook completely inside. For the Green Beans I used my favorite , besides home canned Green Beans, Del Monte Cut Green Beans and we had Healthy Life Whole Grain Bread. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Today’s Menu: Bison Sirloin and Sauteed Mushrooms w/ Cauliflower & Cheese Sauce, Baked Potato, and Whole Grain Bread

 

 

 

Excellent dinner tonight! Bison Sirloin and Sauteed Mushrooms w/ Cauliflower & Cheese Sauce, Baked Potato, and Whole Grain Bread. I used Great Range Bison Sirloin. I seasoned it with McCormick Grinder Steakhouse Seasoning and pan fried it in a tablespoon of Extra Virgin Olive Oil about 4 minutes per side to a medium rare. As far as I’m concerned you can’t beat the taste and tenderness of Bison. Just wish you could find it more in this area.

For my side dishes I prepared Green Giant Cauliflower & Cheese Sauce, a Baked Potato, and Healthy Life Whole Grain Bread. I’m not a huge Cauliflower fan but I love this Green Giant Cauliflower & Cheese Sauce! It comes frozen and in a microwavable bag. Just make a small slit in the bag and heat on high for 5 1/2 minutes. The Cauliflower comes out crisp and with the Cheese Sauce added delicious. I left the product description at the end of the post. I also had a Baked Potato topped with Salt and Pepper along with I Can’t Believe It’s Not Butter. Also 2 slices of Healthy Life Whole Grain Bread. For dessert later I’m fixing some Breyer’s Carb Smart Vanilla Ice cream topped with Smucker’s Sugarless Hot Fudge Topping.

Directions
Keep frozen. For food safety and quality, follow the directions and cook thoroughly to at least 160 degrees F. Keep frozen until ready to use. Today’s Menu:  Bison Sirloin Steak and Sauteed Mushrooms w/ Green Beans, Polenta, and Rustic French Bread

Nothing better than a Bison Sirloin Steak! I seasoned the Steak with McCormick Grinder Steakhouse Seasoning. Then fried in Extra Virgin Olive Oil about 4 minutes per side. Came out just as I like it Medium Rare. I topped the Steak with Sauteed Mushrooms that were seasoned with Sea Salt, Ground Pepper, Ground Smoked Cumin, and Parsley. I also had sides of Green Beans and something new Quinoa Organic Fat Free Polenta. I like this Polenta! It’s easily fixed and really good tasting. I finished it up with a slice of Pillsbury Simply Rustic French Bread. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Del Monte Sugarless Sliced Peaches.

Today’s Menu: Turkey Meatloaf w/ Sliced New Potatoes, Honey Glazed Sliced Carrots, and Harvest Grain Bread.


It’s a COMFORT FOOD Heaven for dinner tonight! I made a Turkey Meatloaf that was perhaps the ultimate in Turkey Meatloaf! I know I’ve done something good when my Mom takes a bite and says ” Mark I think that’s some of the best Meatloaf I’ve ever had”. I listed the recipe at the end of the post. For the Turkey I used Honeysuckle White 93/7 Ground Turkey. For sides we had boiled Sliced New Potatoes that were seasoned with Sea Salt, Ground Pepper, Ground Thyme, Cumin, and Parsley. Also had Green Giant Honey Glazed Carrots and Kroger Bakery Harvest Grain Bread. Try the Turkey Meatloaf its delicious! Another good thing there was a lot of Meatloaf left over and that means, Meatloaf Sandwiches!

Turkey Meatloaf

* Instead of the 1 cup of Chopped Onions I used 1/4 Cup of Chopped Chives and 1 Teaspoon of Onion Powder *
*  I also used 2 Mini Loaf Foil Pans instead of the 1 8×4 pan *

Ingredients

2 Tablespoons Butter  or I Can’t Believe It’s Not Butter
1 Cup Onions, Chopped
3 Cloves Garlic, Minced
1 1/4 lbs Ground Turkey
1/2 Cup Italian Breadcrumbs
1/4 Cup Egg Substitute  (Egg Beaters)
1 Cup Catsup
2 Teaspoons Worcestershire Sauce
1 Teaspoon Cumin
1 Teaspoon Ground Thyme
3/4 Teaspoon Sea Salt
1/2 Teaspoon Black Pepper

Directions

1. Melt butter in a skillet.
2. Cook onion and garlic in melted butter for 5 minutes, stirring occasionally.
3. Place mixture in a large bowl to cool for 5 minutes.
4. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, Worcestershire sauce, salt, and pepper with onion mixture.
5. Press meatloaf into an 8×4-inch loaf pan.
6. Spread remaining catsup on top.
7. Bake in a 350 degree oven for 50-55 minutes.
8. (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

Today’s Menu:Turkey Burger, Crumbled Bleu Cheese, and Sauteed Mushrooms w/ Glazed Carrots

Tried Jennie – O Turkey Burgers for dinner tonight. They fried up real easy. Good taste and juicy! Plus only 180 calories and 0 carbs per patty. I also purchased Jennie – O Turkey Sausage Links I’ll let you know how those are later. Along with the Turkey Burger I topped it with Crumbled Bleu Cheese, Sauteed Mushrooms and served it on an Aunt Millie’s Thinwich Whole Grain Bun. As a side I had some Glazed Carrots leftover from the other night and warmed those up. Dessert later Walmart Bakery Sugar Free Angel Food Cake w/ Del Monte Sugarless Peach Slices.
