Kitchen closed for Dinner tonight. I had some friends come into town and we went and watched some Football and had some Wings at Buffalo Wings and Rings. Great seeing some of my best friends! Kitchen will reopen tomorrow! Take care all!

Today’s Menu: Fried Chicken Thighs w/ Fried Potatoes and Canned Green Beans

 

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Mostly cloudy and 60 degrees outside today. After Breakfast I went to Meijer for a few items and stopped at McDonald’s and picked up Breakfast for Mom. After Lunch I went to see a neighbor of ours that’s in the hospital. He had to Vein Surgery on his left leg. He seems to be doing good, he’ll be home Wednesday. For Dinner tonight I prepared Fried Chicken Thighs w/ Fried Potatoes and Canned Green Beans.

 

 

 

I had a bought package of the Simple Truth Boneless and Skinless Chicken Thighs from Kroger and had them in the freezer. Laid the package in the fridge overnight to thaw. To prepare them I’ll just need Flour, Morton’s Lite Salt, Ground Pepper, and Extra Light Olive Oil. I think the trio of Fried Chicken Thighs, Fried Potatoes, and Canned Green Beans were meant to be together, one of our favorite meals!

 

 

 

 

 

I got a large Cast Iron Skillet, sprayed it with a light coat of Pam Non Stick Spray, added 1 1/2 tablespoons of Extra Light Olive Oil, and heated it on medium heat. As the skillet was heating I got a pie pan out and put 2 tablespoons of Flour in it. Next I got the Chicken Thighs out of the package and seasoned them with Salt and Pepper and rolled them in the Flour. With the skillet heated I added the Thighs to the skillet and put a lid on the skillet. Fried the Thighs for about 9 minutes and then flipped them over, put the lid back on the skillet to cook another 7 minutes. As the Chicken Thighs were cooking I got out a second Cast Iron Skillet, sprayed it, added the Olive Oil and let it preheat on medium heat. Then I washed and cut the Potatoes for the Fried Potatoes.

 

 

For one side we had Fried Potatoes, which I picked up at Kroger yesterday also. I love these and Mom makes the best! I bought a bag of Medium Size Red Potatoes, which we’ll be using. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on medium high.

 

 

 

 

As the Potatoes were cooking I had also opened up a quart jar of Canned Green Beans and had them on already cooking. I love these, always taste so fresh! Just heat them up in a large sauce pan and serve. One delicious Dinner as always when having the Chicken Thighs! For Dessert tonight I had a 100 Calorie Mini Bag of Snyder’s of Hanover Mini Pretzels with a Diet Dr. Pepper to drink.

Chicken and Rice
Chicken and RiceTopped off with grated cotija cheese offers a unique touch to a very popular dish in many Latin American countries.

Recipe Ingredients:
3 pounds chicken pieces, skin removed
Salt and ground black pepper
2 tablespoons vegetable oil – divided use
1 large onion, chopped
1 large tomato, chopped
2 cloves garlic, chopped
1 1/2 cups uncooked long-grain white rice
2 cups water
2 large carrots, sliced
1/2 cup chopped red bell pepper
1/2 cup pimiento-stuffed green olives, cut in half
1 tablespoon MAGGI Granulated Chicken Flavor Bouillon
1 cup loose pack frozen peas
2 tablespoons grated cotija or Parmesan cheese

Cooking Directions:
1 – Sprinkle chicken with salt and black pepper. Heat 1 tablespoon oil in large skillet over medium-high heat. Add chicken; cook until browned on all sides. Remove from skillet; keep warm.
2 – Heat remaining 1 tablespoon oil in skillet. Add onion, tomato and garlic; cook for 2 minutes or until onion is tender. Add rice; cook for 2 minutes. Add water, carrots, bell pepper, olives and bouillon. Bring to a boil. Place chicken pieces over rice mixture.
3 – Reduce heat to medium-low; cover. Cook for 10 minutes. Stir in peas. Cook, stirring once during cooking time, for an additional 15 to 20 minutes or until rice is tender and liquid is absorbed. Sprinkle with cheese before serving.
Makes 6 servings.

Provençal Lemon and Olive Chicken

Ingredients
2 cups chopped onion
2 pounds skinless chicken thighs
1 medium lemon, thinly sliced and seeded
1/2 cup pitted green olives
1 tablespoon white vinegar or olive brine
2 teaspoons herbes de Provence
1 bay leaf
1/2 teaspoon salt
1/8 teaspoon black pepper
1 cup fat-free reduced-sodium chicken broth
1/2 cup minced fresh parsley

Directions
1 – Place onions in slow cooker. Arrange chicken thighs and lemon slices over onion. Add olives, vinegar, herbes de Provence, bay leaf, salt, and pepper. Pour in broth.

2 – Cover; cook on LOW 5 to 6 hours or on HIGH 3 to 3 1/2 hours or until chicken is tender. Remove and discard bay leaf. Stir in parsley before serving.

Yield: 10 servings.

Mediterranean Orange Chicken
Mediterranean Orange ChickenUsing authentic ingredients such as pine nuts, roasted red peppers and capers this easy-to-prepare chicken recipe pairs a bold palate of international flavors with nutritious orange juice.

Recipe Ingredients:
4 teaspoons pine nuts, toasted and chopped
1 pound skinless chicken breasts, boned and trimmed
2 tablespoons all-purpose flour for dusting chicken
Canola oil spray
1/4 cup shallots or red onions, minced
1/4 cup red peppers roasted, chopped
2 tablespoons capers chopped
2 tablespoons olives chopped
2 tablespoons raisins chopped
3/4 cup Florida orange juice
1 tablespoon fresh lemon juice
1 cup low-sodium chicken stock
1/2 teaspoon salt (plus additional, to taste)
1/4 teaspoon black pepper (plus additional, to taste)
2 tablespoons fresh parsley, chopped

Cooking Directions:
1 – Toast pine nuts in a 350°F (175°C) oven for 3 to 4 minutes until golden. Remove, cool and chop.
2 – With a meat mallet, pound chicken breasts to 1/2-inch thick and season with salt and pepper.
3 – Dust both sides in flour, and pat so flour stays on.
4 – Heat sauté pan and coat with canola oil spray.
5 – Place chicken in hot sauté pan and spray uncooked side of chicken with canola oil in the pan. Sear chicken for one minute on both sides, and remove from pan.
6 – In the same sauté pan, add shallots and sauté briefly.
7 – Add roasted red peppers, capers, olives and raisins and sauté briefly until shallots are translucent.
8 – Deglaze pan with orange juice. Add chicken stock and lemon juice and reduce heat slightly when ingredients come to a boil.
9 – Add chicken back to the pan to cook until completely cooked through, and sauce is slightly thickened.
10 – Stir in salt, pepper and parsley.
11 – Top each serving with 1 teaspoon of chopped toasted pine nuts.
Makes 4 servings.

Today’s Menu: Chicken Burger w/ Baked Fries

 

 

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. Cold morning out, 24 degrees! For the day had a high of 47 degrees and mostly sunny. After I had my Tea I went to Kroger for a couple of items for Mom. Raked some leaves and then used the leaf blower and cleaned off the deck and driveway areas. Not a lot to do today so I settled back and watched some College Football. For Dinner tonight I prepared a Chicken Burger w/ Baked Fries.

 

 

 

 

 

 

I purchased a package of Ground Chicken from Meijer my last visit there. To make the Burger I’ll need; the Ground Chicken (1 lb. package), Ground Cumin, Paprika, Garlic Powder, Dried Oregano, McCormick’s Grinders of Sea Salt and Peppercorn Medley, and Meijer Italian Style Bread Crumbs. For toppings I’m using Kraft Reduced Fat Mayo w/Olive Oil, Heinz 57 Sauce, Hoffman’s Sharp Cheddar Cheese, Butter Leaf Lettuce and served on a Aunt Millie’s Reduced Calorie Whole Grain Bun.

 

 

 

 

 

 

To prepare them, in a large bowl, combine Chicken, Ground Cumin, Paprika, Garlic Powder, Dried Oregano, Sea Salt and Peppercorn Medley, and Italian Style Bread Crumbs. The Seasonings amount are to taste and 2 tablespoons of the Italian Style Bread Crumbs. Make a little depression with your thumb in the center of each burger so they cook evenly. Divide the mixture into 4 patties.

 

 

 

 

 

 

In a Cast Iron Skillet over medium heat, heat oil. Add burger patties and cook, flipping once, until golden and a thermometer inserted into the center registers 165°, 8 to 10 minutes. Top with cheddar and cook until just started melting, 2 minutes. Remove from heat and transfer patties to a plate. Serve on the Buns and top with Mayo, Heinz 57 Sauce, and Lettuce. The Ground Chicken Burger is juicy, moist, and flavorful! I’ll have to start having a lot more often!

 

 

 

 

 

 

To go with the Chicken Burger I prepared Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Heinz 57 Sauce. For Dessert later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Italian Style Chicken Breasts w/ Wild Mushroom Agnolotti

Today’s Menu: Italian Style Chicken Breasts w/ Wild Mushroom Agnolotti

 

 

 

For Breakfast it was Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. Just love this skillet meal! I guess Winter is moving in, low of 28 degrees! Had snow showers overnight and a high of 39 degrees and partly cloudy for the day. Did some laundry and some cleaning around the house. For Dinner tonight its a Italian Style Chicken Breasts w/ Wild Mushroom Agnolotti and Baked Garlic Loaf Bread.

 

 

For the Chicken I used the Perdue Perfect Portions Italian Style Chicken Breasts again. I really like using these Chicken Breasts, they come frozen or fresh and individually wrapped. You can grill them, bake them, or fry them which is what I did this time. I pan fried the Breast in Extra Light Olive Oil about a total of 12 minutes all together, turning them once. Fried up perfectly and well seasoned with the hint of Italian Seasoning.

 

 

 

 

I picked up a package of Buitoni Mushroom Agnolotti at Meijer the other day, been a while since I’ve had this. So I served the Chicken with a side of Buitoni Wild Mushroom Agnolotti. In case you were wondering Agnolotti is a kind of Ravioli. These are filled with fresh Portobello & Crimini Mushrooms, imported Grana Padano & Parmesan Cheeses & fresh Roasted Garlic. To prepare just add the pasta to 4 quarts boiling water; added 1 tbsp of Extra Virgin Olive Oil and stirred frequently to prevent it from sticking; reduced the heat to boil gently 4-6 minutes. Seasoned it with just a bit of Sea Salt and topped it with Buitoni Freshly Shredded Parmesan Cheese and Sauteed Mushrooms. With the added Chicken it made a perfect meal!

 

I topped the Pasta with some Sauteed Mushrooms.

 

 

 

 

 

I also had baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! I loved this dish tonight, plenty leftover for tomorrow’s Dinner! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

Today’s Menu: Guthrie’s Chicken Fingers – Snack Box

 

 

To start the morning off had a cup of Bigelow Decaf Green Tea. Mostly sunny and 57 degrees out today but highs in the 40’s moving in by tomorrow. Went to Meijer with Mom for a few items and picked up Breakfast for Mom at McDonald’s. The flu is running wild in our area. I have 3 friends with it and 2 of my cousins. I don’t have the flu but my sinuses are making life miserable for me. For Dinner tonight its Guthrie’s Chicken Fingers and brought home Dinner.

 

 

 

I had something else planned for Dinner but Mom wanted Guthrie’s Chicken Fingers. So I decided to go to Guthrie’s Chicken Fingers and pick up Dinner for us tonight. The Chicken Fingers are always nice size and have an excellent Breading and Seasoning. It comes with a container of the Guthrie’s Signature Sauce. Very good Dipping Sauce, good recipe! It also comes with Crinkle Cut Fries which are excellent also! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink. I’ll cook tomorrow night, take care all!

To prepare them I’ll just need Flour, Morton’s Lite Salt, Ground Pepper, and Extra Light Olive Oil. I think the trio of Fried Chicken Thighs, Fried Potatoes, and Canned Green Beans were meant to be together, one of our favorite meals!

 

 

 

 

I got a large Cast Iron Skillet, sprayed it with a light coat of Pam Non Stick Spray, added 1 1/2 tablespoons of Extra Light Olive Oil, and heated it on medium heat. As the skillet was heating I got a pie pan out and put 2 tablespoons of Flour in it. Next I got the Chicken Thighs out of the package and seasoned them with Salt and Pepper and rolled them in the Flour. With the skillet heated I added the Thighs to the skillet and put a lid on the skillet. Fried the Thighs for about 9 minutes and then flipped them over, put the lid back on the skillet to cook another 7 minutes. As the Chicken Thighs were cooking I got out a second Cast Iron Skillet, sprayed it, added the Olive Oil and let it preheat on medium heat. Then I washed and cut the Potatoes for the Fried Potatoes.

 

 

For one side we had Fried Potatoes, which I picked up at Kroger yesterday also. I love these and Mom makes the best! I bought a bag of Medium Size Red Potatoes, which we’ll be using. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on medium high.

 

 

 

As the Potatoes were cooking I had also opened up a quart jar of Canned Green Beans and had them on already cooking. I love these, always taste so fresh! Just heat them up in a large sauce pan and serve. One delicious Dinner tonight as always when having the Chicken Thighs! For Dessert tonight I had a Jello Sugar Free Dark Chocolate Pudding Cup.

Today’s Menu: Tomato and Fresh Ricotta Marinated Chicken Breast w/ Farfalle Pasta and Baked Garlic Loaf Bread

 

 

For Breakfast this morning I made a Breakfast Sandwich using Thomas Light English Muffin, Boar’s Head Ham, and a slice of Boar’s Head Vermont Yellow Cheddar. A beautiful day outside today, 70 degrees and mostly sunny. Got the cart out of shed along with rake and leaf blower. Raked the back yard and cleaned out the back and side flower beds of leaves. Later I took a ride on the cart and went to see a buudy of mine that lives a few streets over and spent some time over there. For Dinner tonight I prepared a ne dish, Tomato and Fresh Ricotta Marinated Chicken Breast w/ Farfalle Pasta and Baked Garlic Loaf Bread.

 

I had seen the Prego Tomato and Fresh Ricotta Cooking Sauce advertised in a Cooking Magazine a while back. Then I came across it at Meijer along all with all the other Prego Sauces, they had good selection of all flavors. To make this Dish I’ll be using the Prego Tomato and Fresh Ricotta Cooking Sauce, 2 Chicken Breasts, Extra Light Olive Oil, Salt and Pepper, Farfalle Pasta, Kraft Reduced Fat Grated Parmesan Cheese, and La Baguetterie Roasted Garlic Oval Bread.

 

 

 

To start I turned the oven on at 400 degrees, for the Garlic Loaf Bread. Next grabbed a skillet and sprayed it with Pam Non Stick Cooking Spray and heated the skillet on medium high heat. As the skillet was heating I seasoned the Chicken Breasts with Morton’s Lite Salt and Ground Black Pepper. Then added the Chicken to the heated skillet.

 

 

 

 

After I flipped the Chicken I added the jar of Prego Tomato and Fresh Ricotta Sauce. I simmered the Chicken in the Sauce until it was done, 165° when checked by the Meat Thermometer. Removed the Chicken and Sauce into a bowl and set aside until my Pasta was ready.

 

 

 

 

 

For the Pasta I’m using Meijer Farfalle Pastra. To prepare it I boiled 3/4 pot of water that I Salted. When it started to boil I added the Past. Boiled for for 14 minutes, stirring occasionally. When done I drained the Pasta and put it in a bowl, Seasoned it with Salt, and added a splashy of the Extra Light Olive Oil and stirred.

 

 

 

 

 

To serve I made a bed of the Farfalle and topped it with some Grated Parm Cheese and then topped it with a Chicken Breast and the Prego Tomato and Fresh Ricotta Sauce. We have a Delicious Chicken Dinner! The Chicken was moist and flavorful. Then the Sauce is spot on! Excellent flavor with the Tomato and Ricotta coming through. Will have to have a jar or 2 in the pantry. So easy to prepare and Delicious! Also I baked the loaf of La Baguetterie Roasted Garlic Oval Bread. For Dessert later a bowl of Breyer’s Carb Smart Vanilla ice Cream topped with Smucker’s Sugar Free Hot Fudge Topping.

 

 

 

 

 

 

 

 

TOMATO and FRESH RICOTTA COOKING SAUCE

Go beyond just pasta and sauce with the delectable flavors of sweet tomato, fresh ricotta cheese and herbs and seasonings. Effortless to make, simply brown chicken, stir in the sauce and simmer. Dinner is served in 20 minutes!

Directions
1. BROWN 1lb. boneless chicken breasts (whole or cut) in 1 tbsp. olive oil.

2. STIR in 1 jar sauce. SIMMER until chicken is done.

3. SERVE with pasta. Enjoy!
