Today’s Menu: Alfredo Pasta w/ Chicken Breasts

 

Wow, I must have been tired last night. Forgot to post this!

 

To start this morning off I toasted a Healthy Life Whole Grain English Muffin and topped with some Smucker’s Sugarless Blackberry Jam. Outside this morning it was 17 degrees but the good about today is we are above freezing! 34 degrees and Sunny! After Breakfast I headed out to the Grocery Stores! I was having the dreaded Cabin Fever and I couldn’t wait to get out! I first stopped at Meijer for all my items and then on to Kroger for Mom. They say 50 degrees on Sunday but rain. I’m fine with that, just slow down the snow! So for Dinner tonight Alfredo Pasta w/ Chicken Breasts.

 

 

I’m having the Bear Creek Alfredo Pasta Mix tonight for Dinner. Love all the Bear Creek Products I’ve tried so far. Comes packaged with the Pasta and Sauce Mix. I’ll add the Chicken.

 

 

 

 

 

To prepare it; I added 4 cups of water to a 2 1/2 quart saucepan and brought to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought it back up to a rolling boil. then reduced the heat to a medium boil. Cooked for 15 minutes, stirring often. Removed it from the heat and let it sit for 8 minutes. The sauce thickened up perfectly. I like my sauces on the thick side and this one turned out great.The Pasta was good size with good taste and as I said the Alfredo Sauce was spot on! A great dish from Bear Creek to have in the Pantry.

 

 

 

For the Chicken I used Perdue Perfect Portions Boneless and Skinless Chicken Breasts – Italian Style. I love using these, just keep them in the freezer until needed. To prepare them; Lightly coat a skillet with Pam Cooking Spray. Heat the pan over medium-high heat, add breasts and brown 1 minute per side. Reduce heat to medium-low; cover and cook 10 minutes, to 170ºF internal temperature, turning frequently. Fried and done! These also bake up perfectly also.

 

 

 

 

To serve everything I took a bowl and made a bed of the Alfredo Pasta, sliced up 1 of the Chicken Breasts and added them to the top of the Pasta. And topped everything off with some Kraft Reduced Fat Grated Parmesan Cheese. Excellent dish! Past and Chicken is a natural. I think I may be having leftovers for Dinner tomorrow night! Also had a Diet Dr. Pepper to drink. For Dessert later a bowl of Smart Pop – Pop Corn.

Today’s Menu: Creamy Potato Soup w/ Grilled Cheese Sandwich

 

 

For Breakfast on this cold Sunday Morning I had a toasted Healthy Life Whole Grain English Muffin. I then got out the Egg Beater’s Egg Whites and Scrambled a 1/2 cup of it, 1/2 equals 2 Eggs. Next I fried some al fresco Uncured Chicken Bacon and I also used a slice of Sargento Ultra Thin Swiss Cheese. Put it all together and I had one delicious Breakfast Sandwich! Also had my morning cup of Bigelow Decaf Green Tea. The al fresco Uncured Chicken Bacon I used is some of the best Bacon I’ve come across in a while. It fries up so crisp and has an excellent taste! As I said its cold, 15 degrees and a wind chill of 10 degrees. It was mostly sunny but only got up to 25 degrees. Did a load of laundry after Breakfast. Then after Lunch I cleaned the house, vacuum and dusted. Not much else going on so I kicked back and watched some College Basketball. So for Dinner tonight I’m having Creamy Potato Soup w/ Grilled Cheese Sandwich.

 

Nothing like a easily made Comfort Food Dinner! Creamy Potato Soup w/ Grilled Cheese Sandwich. I’m using one of my favorite Soups, Bear Creek Creamy Potato Soup Mix. I really love using all the Bear Creek Products! So delicious and easy to prepare.

 

 

 

 

 

To prepare a package of it; In a 2 quart sauce pan bring 8 cups of water to a rolling boil. Whisk in the soup mix. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally. Salt and pepper to taste and serve! Perfect seasoning, thickened up just right, plenty of Diced Potato and a fantastic Potato flavor. The package makes 8 cups and very easy to prepare and makes one delicious Potato Soup.

 

 

 

 

To make my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert a Jello Sugarfree Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Leftovers: Creamy Wild Rice, Chicken, and Mushroom Soup w/ Baked Multi Grain Bread

 

 

It’s been one sleepless and painful night and day. I have been suffering through some extremely painful Phantom Pains. It’s so frustrating because there is nothing you can do to stop them. There’s methods and medicine you can do or take that may work about 5% of the time but for the most part the only thing you can do is try to fight through them. I think I might have got about an hours worth of sleep overnight but that was it. I had nothing for Breakfast but a cup of Bigelow Decaf Green Tea. I went to McDonald’s to pick up Breakfast for Mom and Dad and I went back to bed for most of the Day. The Phantom Pains lessened around 2:00 this afternoon, finally. I’m hoping for a better night tonight! Thank goodness for leftovers, I reheated the Creamy Wild Rice, Chicken, and Mushroom Soup w/ Baked Multi Grain Bread. I’ve left the original post from yesterday below. Take care everyone.

 

I had purchased a bag of Bear Creek Creamy Wild Rice Soup Mix at Walmart a while back. So what better day to try it than a Fall day in November. The package contains the Soup Mix which is loaded with Long Grain Wild Rice. I’ll be adding 8 cups of Water, Pulled Chicken, and sliced Mushrooms. You can already tell this has the makings of one Hearty Comfort Food Soup!

 

 

 

For the Pulled Chicken; Yesterday I purchased a Kroger Simple Truth Rotisserie Whole Chicken. I pulled all the meat and put it in a sealable plastic container, which I put in the fridge to store until needed. I also purchased a small container of Mini Bella Mushrooms, from Meijer, that I sliced up.

 

 

 

 

To prepare the Soup; I brought 8 cups of water to a rolling boil. Whisked in Soup Mix. Reduce heat to medium and simmer uncovered 10 minutes, stirring occasionally. Sea Salt and Pepper to taste. When the Soup was ready I then added 1 cup of the Pulled Chicken and 1 cup of the sliced Mushrooms. Stirred until well blended, and served. One excellent Soup! The Soup came out smooth and creamy and the Long Grain Rice, Chicken, and Mushrooms worked perfect. Hearty and Delicious! I also baked a loaf La Brea Multi Grain Bread. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Toasted a Healthy Life Whole Grain English Muffin for Breakfast this morning. I topped with some Smucker’s Sugarless Blackberry Jam and served it with a cup of Bigelow Decaf Green Tea. Sort of foggy out this morning. It was cloudy all day and a high of 64 degrees. So it was a god day to stay in and clean the house, vacuum and dusted. Also gave the wooden floor area a good cleaning. After Lunch I got the leaf blower out and cleaned off the deck and driveway areas. Some of the trees this year in the neighborhood are beautiful! Orange, Yellow, Red, leaves and they look incredible as the sun is setting and hitting them just right. Had everything done by the afternoon and watched some College Football. For Dinner tonight a Comfort Food Dinner, Creamy Wild Rice, Chicken, and Mushroom Soup w/ Baked Multi Grain Bread.

Catfish Nuggets w/ Creamy Cheddar Pasta

Today’s Menu: Catfish Nuggets w/ Creamy Cheddar Pasta

 

 

For Breakfast this morning I prepared some Waffles. I used Bisquick Heat Smart Flour to make them with and used Egg Beater’s to replace the Egg. I’ve got a large Waffle Maker and a smaller on that makes 2 Waffles, I used the smaller one. I also heated up a couple Jimmy Dean Turkey Breakfast Sausage Links. Really enjoy waffles and Pancakes and by using the Bisquick Heart Smart Flour it makes them a bit healthier. I also had my usual cup of Bigelow Decaf Green Tea.

 

 

 

Outside it’s Hot and Humid with a passing shower. After Breakfast I headed to Walmart, needed some printing ink and copy paper. Looked at a couple of new TVs while there also. I might get a larger one for our spare room If I can find a good buy. Stopped and got my car a much needed car wash and had the inside cleaned also. Then stopped and got gas and back home. Just did some of those odd and ends jobs around the house. For Dinner tonight it’s Catfish Nuggets w/ Creamy Cheddar Pasta.

 

 

Picked up the Catfish Nuggets at Meijer yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat fried Catfish.

 

To go with my Fried Catfish Nuggets I prepared some Bear Creek Creamy Cheddar Pasta Mix. I’ve had this a few times now and really like it. Grabbed a 2 quart sauce pan, added 4 cups of water. Heated to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil and cooked for 15 minutes, stirring occasionally.

 

 

 

Removed from the heat and let it sit for 8 minutes. The Sauce thickened up beautifully as it cooled. Another excellent product from Bear Creek. Really enjoy these all these Products! I seasoned the Pasta with just a little sea Salt and Ground Black Pepper. The Pasta and Catfish make a great pairing! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam and I reheated a couple of Potato Pancakes that were leftover from Dinner last night. And as usual I had my morning cup of Bigelow Decaf Green Tea. A bit cooler out today, high of 67 degrees and partly cloudy with a passing shower. In the mail, I received some Meijer Coupons, some really great coupons! 60 cents off for Pam Cooking Spray, free package Sargento Cheese Sticks, 80 cents off a package of Jennie – O Ground Turkey and many more. So after Breakfast it was off to Mejier and I stopped by Kroger for Mom. Back home I cleaned the fridge and the oven, and done for the day. For Dinner tonight it’s a Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup.

 

Mom and Dad were hungry so I made Dinner a bit early. It’s a Comfort Food Dinner tonight for me, Grilled Ham and Swiss Cheese Sandwich w/ Creamy Potato Soup. I’ve had this combo before and they just keep getting better! To make my Grilled Ham Cheese I’ll be using; Kraft Reduced Fat Mayo, French’s Yellow Mustard, Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread to make my Sandwich.

Next spread the Mayo on the bottom slice of Bread, next layered the Ham, spread the Mustard, and added the slice of the Swiss. Today’s Menu: Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. And as usual I had my morning cup of Bigelow Decaf Green Tea. Outside it’s cloudy and a high in the mid 60’s. So after Breakfast I started a load of laundry for Mom and then cleaned the house, ran the vacuum and dusted. Next went outside and got the leaf blower out and cleaned of the deck and driveway. Later in the day I took Dad some Potato Soup that I had made up for Dinner, he loves Soup. Back home I got the cart out for a quick ride around the neighborhood. For Dinner tonight I prepared a Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup.

 

It’s a Comfort Food Dinner tonight for me, Grilled Ham and Swiss Cheese Sandwich w/ Creamy Potato Soup. To make my Grilled Ham Cheese I’ll be using; Kraft Reduced Fat Mayo, French’s Yellow Mustard, Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread to make my Sandwich.

 

 

 

To prepare it I started by buttering the outside half of a slice of bread. Next spread the Mayo on the bottom slice of Bread, next layered the Ham, spread the Mustard, and added the slice of the Swiss. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a large skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Love these Grilled Ham and Cheese Sandwiches.

 

 

 

For the Soup I’m using a favorite of mine, Bear Creek Creamy Potato Soup Mix. To prepare a package of it; In a 2 quart sauce pan bring 8 cups of water to a rolling boil. Whisk in the soup mix. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally. Salt and pepper to taste and serve! Perfect seasoning, thickened up just right, plenty of Diced Potato and a fantastic Potato flavor. The package makes 8 cups and very easy to prepare. I really love all the Bear Creek Products I’ve tried so far. So delicious and easy to prepare. For Dessert/Snack later tonight a bowl of Smart Pop – Pop Corn.

Today’s Menu: Seasoned Gulf Coast Grouper w/ Creamy Cheddar Pasta

 

 

 

For Breakfast I’m having a toasted Healthy Life Whole Grain English Muffin, topped with Smucker’s Sugar-Blackberry Jam, and as every morning, a cup of Bigelow Decaf Green Tea. After Breakfast I headed out to do some grocery shopping. Another windy day and a high in the low 60’s. Went to Meijer and then swung by the Kroger up the road for a couple of items. They are expanding the Meijer here in West Chester. It’s a huge store already but they are putting in a lot of upgrades. Should be even nicer when done. After Breakfast did a few chores around the house. For Dinner tonight its Seasoned Gulf Coast Grouper w/ Creamy Cheddar Pasta.

 

I love this Florida Gulf Coast Grouper my friends keep bringing me back up from Florida! I had a fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish and Love this Grouper!

 

To go with my Fried Grouper I prepared some Bear Creek Creamy Cheddar Pasta Mix. I had tried this a while back and loved it! I’ve also had the Bear Creek Potato Soup Mix, Navy Bean Soup Mix, Minestrone, and Creamy Chicken Pasta, which all were excellent! To prepare it; Grabbed a 2 quart sauce pan, added 4 cups of water. Heated to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil and cooked for 15 minutes, stirring occasionally.

 

 

Removed from the heat and let it sit for 8 minutes. The Sauce thickened up beautifully as it cooled. Another excellent product from Bear Creek. Really enjoy these all these Products! I seasoned the Pasta with just a little sea Salt and Ground Black Pepper. The Pasta and Catfish make a great pairing! For Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.

Today’s Menu: Leftovers – Alfredo Pasta w/ Chicken Breasts

 

 

For Breakfast this morning for me and Mom I heated up some Ekrich Smoky Turkey Breakfast Sausages, fried some Simply Potatoes Shredded Hash Browns, Scrambled some Eggs, and I had my morning cup of Bigelow Decaf Green Tea and Mom some Coffee. A bit cooler out today, 67 degrees and a passing thunderstorm. Did some house cleaning today, vacuum and dusted. Then did some laundry for Mom. I made some Bear Creek Potato Soup and took Dad a couple of bowls over to him at rehab. He’s gaining strength, hopefully he’ll be home before long. For Dinner tonight Leftovers – Alfredo Pasta w/ Chicken Breasts.

 

 

The meal from last night, Alfredo Pasta w/ Chicken Breasts, was too good to let those leftovers go to waste! So tonight it’s Leftovers. Everything heated up great and tasted just as good the 2nd time around. I’m really glad I read about the Bear Creek Products! All of them make some good meals. Well I’m trying the Bear Creek Alfredo Pasta Mix tonight for Dinner. Love all the Bear Creek Products I’ve tried so far so I’m trying the Alfredo Pasta tonight. Comes packaged with the Pasta and Sauce Mix.

 

 

 

To prepare it; I added 4 cups of water to a 2 1/2 quart saucepan and brought to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought it back up to a rolling boil. then reduced the heat to a medium boil. Cooked for 15 minutes, stirring often. Removed it from the heat and let it sit for 8 minutes. The sauce thickened up perfectly. I like my sauces on the thick side and this one turned out great.The Pasta was good size with good taste and as I said the Alfredo Sauce was spot on! Another great dish from Bear Creek to have in the Pantry.

 

 

For the Chicken I used Perdue Perfect Portions Boneless and Skinless Chicken Breasts – Italian Style. I love using these, just keep them in the freezer until needed. To prepare them; Lightly coat a skillet with Pam Cooking Spray. Heat the pan over medium-high heat, add breasts and brown 1 minute per side. Reduce heat to medium-low; cover and cook 10 minutes, to 170ºF internal temperature, turning frequently. Fried and done! These also bake up perfectly also.

 

 

 

 

 

To serve everything I took a bowl and made a bed of the Alfredo Pasta, sliced up 1 of the Chicken Breasts and added them to the top of the Pasta. And topped everything off with some Kraft Reduced Fat Grated Parmesan Cheese. Excellent dish! Past and Chicken is a natural. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.
