Today’s Menu: Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam and I reheated a couple of Potato Pancakes that were leftover from Dinner last night. And as usual I had my morning cup of Bigelow Decaf Green Tea. A bit cooler out today, high of 67 degrees and partly cloudy with a passing shower. In the mail, I received some Meijer Coupons, some really great coupons! 60 cents off for Pam Cooking Spray, free package Sargento Cheese Sticks, 80 cents off a package of Jennie – O Ground Turkey and many more. So after Breakfast it was off to Mejier and I stopped by Kroger for Mom. Back home I cleaned the fridge and the oven, and done for the day. For Dinner tonight it’s a Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup.

 

Mom and Dad were hungry so I made Dinner a bit early. It’s a Comfort Food Dinner tonight for me, Grilled Ham and Swiss Cheese Sandwich w/ Creamy Potato Soup. I’ve had this combo before and they just keep getting better! To make my Grilled Ham Cheese I’ll be using; Kraft Reduced Fat Mayo, French’s Yellow Mustard, Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread to make my Sandwich.

 

 

 

To prepare it I started by buttering the outside half of a slice of bread. Next spread the Mayo on the bottom slice of Bread, next layered the Ham, spread the Mustard, and added the slice of the Swiss. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a large skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Love these Grilled Ham and Cheese Sandwiches.

 

 

 

For the Soup I’m using a favorite of mine, Bear Creek Creamy Potato Soup Mix. To prepare a package of it; In a 2 quart sauce pan bring 8 cups of water to a rolling boil. Whisk in the soup mix. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally. Salt and pepper to taste and serve! Perfect seasoning, thickened up just right, plenty of Diced Potato and a fantastic Potato flavor. The package makes 8 cups and very easy to prepare. I really love all the Bear Creek Products I’ve tried so far. So delicious and easy to prepare. For Dessert/Snack later tonight a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple.

Outside it’s cloudy and a high in the mid 60’s. So after Breakfast I started a load of laundry for Mom and then cleaned the house, ran the vacuum and dusted. Next went outside and got the leaf blower out and cleaned of the deck and driveway. Later in the day I took Dad some Potato Soup that I had made up for Dinner, he loves Soup. Back home I got the cart out for a quick ride around the neighborhood. For Dinner tonight I prepared a Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup.

 

It’s a Comfort Food Dinner tonight for me, Grilled Ham and Swiss Cheese Sandwich w/ Creamy Potato Soup. To make my Grilled Ham Cheese I’ll be using; Kraft Reduced Fat Mayo, French’s Yellow Mustard, Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread to make my Sandwich.

Today’s Menu: Seasoned Gulf Coast Grouper w/ Creamy Cheddar Pasta

 

 

 

For Breakfast I’m having a toasted Healthy Life Whole Grain English Muffin, topped with Smucker’s Sugar-Blackberry Jam, and as every morning, a cup of Bigelow Decaf Green Tea. After Breakfast I headed out to do some grocery shopping. Another windy day and a high in the low 60’s. Went to Meijer and then swung by the Kroger up the road for a couple of items. They are expanding the Meijer here in West Chester. It’s a huge store already but they are putting in a lot of upgrades. Should be even nicer when done. After Breakfast did a few chores around the house. For Dinner tonight its Seasoned Gulf Coast Grouper w/ Creamy Cheddar Pasta.

 

I love this Florida Gulf Coast Grouper my friends keep bringing me back up from Florida! I had a fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish and Love this Grouper!

 

To go with my Fried Grouper I prepared some Bear Creek Creamy Cheddar Pasta Mix. I had tried this a while back and loved it! I’ve also had the Bear Creek Potato Soup Mix, Navy Bean Soup Mix, Minestrone, and Creamy Chicken Pasta, which all were excellent! To prepare it; Grabbed a 2 quart sauce pan, added 4 cups of water. Heated to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil and cooked for 15 minutes, stirring occasionally.

 

 

Removed from the heat and let it sit for 8 minutes. The Sauce thickened up beautifully as it cooled. Another excellent product from Bear Creek. Really enjoy these all these Products! I seasoned the Pasta with just a little sea Salt and Ground Black Pepper. The Pasta and Catfish make a great pairing! For Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.

Today’s Menu: Leftovers – Alfredo Pasta w/ Chicken Breasts

 

 

For Breakfast this morning for me and Mom I heated up some Ekrich Smoky Turkey Breakfast Sausages, fried some Simply Potatoes Shredded Hash Browns, Scrambled some Eggs, and I had my morning cup of Bigelow Decaf Green Tea and Mom some Coffee. A bit cooler out today, 67 degrees and a passing thunderstorm. Did some house cleaning today, vacuum and dusted. Then did some laundry for Mom. I made some Bear Creek Potato Soup and took Dad a couple of bowls over to him at rehab. He’s gaining strength, hopefully he’ll be home before long. For Dinner tonight Leftovers – Alfredo Pasta w/ Chicken Breasts.

 

 

The meal from last night, Alfredo Pasta w/ Chicken Breasts, was too good to let those leftovers go to waste! So tonight it’s Leftovers. Everything heated up great and tasted just as good the 2nd time around. I’m really glad I read about the Bear Creek Products! All of them make some good meals. Well I’m trying the Bear Creek Alfredo Pasta Mix tonight for Dinner. Love all the Bear Creek Products I’ve tried so far so I’m trying the Alfredo Pasta tonight. Comes packaged with the Pasta and Sauce Mix.

 

 

 

To prepare it; I added 4 cups of water to a 2 1/2 quart saucepan and brought to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought it back up to a rolling boil. then reduced the heat to a medium boil. Cooked for 15 minutes, stirring often. Removed it from the heat and let it sit for 8 minutes. The sauce thickened up perfectly. I like my sauces on the thick side and this one turned out great.The Pasta was good size with good taste and as I said the Alfredo Sauce was spot on! Another great dish from Bear Creek to have in the Pantry.

 

 

For the Chicken I used Perdue Perfect Portions Boneless and Skinless Chicken Breasts – Italian Style. I love using these, just keep them in the freezer until needed. To prepare them; Lightly coat a skillet with Pam Cooking Spray. Heat the pan over medium-high heat, add breasts and brown 1 minute per side. Reduce heat to medium-low; cover and cook 10 minutes, to 170ºF internal temperature, turning frequently. Fried and done! These also bake up perfectly also.

 

 

 

 

 

To serve everything I took a bowl and made a bed of the Alfredo Pasta, sliced up 1 of the Chicken Breasts and added them to the top of the Pasta. And topped everything off with some Kraft Reduced Fat Grated Parmesan Cheese. Excellent dish! Past and Chicken is a natural. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Alfredo Pasta w/ Chicken Breasts

 

 
To start this sunny morning off I prepared Scrambled Eggs, 2 Jennie – O Turkey Breakfast Sausage Links, toasted 2 slices of healthy Life Whole Grain Bread, and the morning cup of Bigelow Decaf Green Tea. Not a bad way to start the morning! After Breakfast, Mom had bought some flowers for some pots on the deck so I got them all potted. Then got the leaf blower out and cleaned around the deck and driveway. After Lunch did some light house cleaning then back outside. It’s our warmest day out there today, 85 and mostly sunny. Took a spin on the cart around the neighborhood and got the mail while out. Tried to relax a bit, my back is giving me some problems. Spending too much time lately in cart and wheelchair. For Dinner tonight Alfredo Pasta w/ Chicken Breasts.

Today’s Menu: Catfish Nuggets w/ Creamy Cheddar Rotini Pasta

 

 

 
To start this 18th day of April I toasted a couple Eggo Waffles. Still love these after all these years! I also made my morning cup of Bigelow Decaf Green Tea. What a beautiful day out there today, 77 degrees and sunny! After Breakfast I went to Walmart to pick up a few bottles of gas for the new grill. Also put a new outdoor table and chair in layaway, I’ll get it out after the deck is painted. Back home I had hired a neighborhood repair man to spray and wash the house, deck, and driveway down. Hope he gets time here soon to repaint our wooden deck. Had to change a tire on my 4 wheel mobility chair, picked up a nail. So for Dinner tonight its Catfish Nuggets w/ Creamy Cheddar Rotini Pasta.

 

 

 

I had purchased the Catfish Nuggets from Kroger last week. I rinsed and cleaned the nuggets and froze them. Last night I laid a bag in the fridge to thaw overnight. To prepare them I first seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size as always.I love using all the Zatarain’s Products, perfect for Fish and Seafood!

Today’s Menu: Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup

 

 

 

A light Breakfast this morning. I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. And as usual I had my morning cup of Bigelow Decaf Green Tea. Outside it’s mostly cloudy and a high in the mid 60’s. So after Breakfast I headed over to the hospital to see Dad. He seemed to be doing better today. They have run a series of tests on him and they all keep coming back negative. Really worried about him. Back home, I had the carpets all cleaned yesterday. So today I moved the furniture back in place. For Dinner tonight I prepared a Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup.

 

 

 

It’s a Comfort Food Dinner tonight, Grilled Ham and Swiss Cheese Sandwich w/ Creamy Potato Soup. To make my Grilled Ham Cheese I’ll be using; Kraft Reduced Fat Mayo, French’s Yellow Mustard, Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread.

 

 

 

 

 

 

To prepare it I started by buttering the outside half of a slice of bread. Next spread the Mayo on the bottom slice of Bread, next layered the Ham, spread the Mustard, and added the slice of the Swiss. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Love these Grilled Ham and Cheese Sandwiches.

 

 

 

For the Soup I’m using a new favorite of mine, Bear Creek Creamy Potato Soup Mix. To prepare a package of it; In a 2 quart sauce pan bring 8 cups of water to a rolling boil. Whisk in the soup mix. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally. Salt and pepper to taste and serve! Perfect seasoning, thickened up just right, plenty of Diced Potato and a fantastic Potato flavor. The package makes 8 cups and very easy to prepare. I really love all the Bear Creek Products I’ve tried so far. So delicious and easy to prepare. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Creamy Potato Soup w/ Grilled Cheese Sandwich

 
Foggy morning out there today. So for Breakfast I made a packet of Pioneer Peppered White Gravy. I also toasted a couple of slices of Healthy Life Whole Grain Bread, fried 2 Jennie – O Turkey Breakfast Sausage Links, and my morning cup of Bigelow Decaf Green Tea. Outside it started of foggy and from there a cloudy and dreary day, a high in the 40’s with rain on and off with a little sleet. My thumb I burnt is a mess, burned it pretty good. I have to change the dressing twice a day. Hope it heals up good but I think it will be scared up. Stayed home all day and caught up on some house cleaning. Also did a load of laundry for Mom. Everything done, spent the rest of the day watching the NCAA March Madness Basketball. For Dinner tonight I’m having Creamy Potato Soup w/ Grilled Cheese Sandwich.

 

 

It’s a Comfort Food Dinner tonight, Creamy Potato Soup w/ Grilled Cheese Sandwich! I’m using one of my favorite new foods, Bear Creek Creamy Potato Soup Mix. I really love all the Bear Creek Products I’ve tried so far. So delicious and easy to prepare. I had made a package of this for Lunch the day before, this is how I got my thumb burned. I had a container of it in the fridge so I just reheated it on medium heat in a small sauce pan.

 

 

 


To prepare a package of it; In a 2 quart sauce pan bring 8 cups of water to a rolling boil. Whisk in the soup mix. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally. Salt and pepper to taste and serve! Perfect seasoning, thickened up just right, plenty of Diced Potato and a fantastic Potato flavor. The package makes 8 cups and very easy to prepare. I have several in my pantry now, trying a Minestrone Soup next.

 

 

 

To make my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. A perfect meal for a dreary day! For Dessert later a bowl of Del Monte No Sugar Added Diced Mangos.

Seasoned Haddock w/ Creamy Cheddar Pasta

Today’s Menu: Seasoned Haddock w/ Creamy Cheddar Pasta

 

 

To start this snowy morning off I toasted a couple of slices of Healthy Life Whole Grain Bread, Scrambled a couple of Eggs, fried 2 Jennie – O Turkey Breakfast Sausage Links, and made the daily morning cup of Bigelow Decaf Green Tea. It started snowing late yesterday but the ground was to warm and it didn’t stick, at first. Eventually though it started sticking. We’ve had snow flurries on and off most of the day. It was 16 degrees this morning and we had a high of only 31. What happened to our early Spring! The cold looks as though it’s killed all the early flowers that had come out. The cold is here for a few days they say. Sure be glad for warmer weather! Dad is doing better. They thought he had shingles but it turned out to be a rash from an anti biotic they had given him. Not sure when he’s coming home. So for Dinner tonight I prepared a Seasoned Haddock w/ Creamy Cheddar Pasta.

 

I had purchased 2 Haddock fillets from Kroger a while back. I had rinsed both fillets and cut into smaller pieces. I ended up with 3 bags, I had one the day I purchased them and froze the other 2. So I grabbed one of the plastic bags and laid it in the fridge overnight to thaw. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

 

 

To go with my Seasoned Haddock I prepared a new dish, Bear Creek Creamy Cheddar Pasta Mix. I had tried the Bear Creek Potato Soup Mix and Creamy Chicken Pasta, which both were excellent! To prepare it; Grabbed a 2 quart sauce pan, added 4 cups of water. Heated to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil and cooked for 15 minutes, stirring occasionally.

 

 

 

Removed from the heat and let it sit for 8 minutes. The Sauce thickened up beautifully as it cooled. Another excellent product from Bear Creek. Really enjoy these all these Products! I seasoned the Pasta with just a little sea Salt and Ground Black Pepper. The Pasta and Haddock make a perfect pairing! For Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.
