Today’s Menu: Rotisserie Chicken w/ Green Beans and Golden Hominy


I’m really pressed for time today. I’ve been behind all day long! Our roads last night and earlier today were a skating rink! We got about 1 inch of snow, which isn’t much, but the temps and wind chill took it to the low teens and everything froze! It was a mess. I heavily salted our driveway so that was in good shape about 10:00 this morning. The roads were back in good shape by noon. Which is when I took off for Meijer. We needed quite a few things so I got there before it was crowded and as I was checking it out it was getting packed. For Dinner tonight I prepared a Rotisserie Chicken w/ Green Beans and Golden Hominy.


First I would like to thank Meijer on what a fantastic job they did of snow removal and salting their parking lot! We had no clue on Dinner tonight so I searched for Dinner tonight also. I came across their Rotisserie Chickens they had just put out, I found Dinner! I think that was the 1st time I had bought a Meijer Deli Rotisserie Chicken. All I did to prepare was reheat it in the oven. It turned out absolutely delicious! Nicely seasoned and perhaps one of the most moist Chickens I’ve had, Mom agreed! So we’ll be getting another one some time. Good job Meijer!


We had Green Beans leftover from last night so I reheated those. Just added them to a sauce pan and heated it on low until heated through. Delicious!


For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy, and it’s been a while since I’ve had any. For those that have never had or heard of Hominy, Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! I also baked a small can of Pillsbury Crescent Rolls. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke zero to drink.




Rotisserie Chicken
Rotisserie chicken is a chicken dish that is cooked on a rotisserie by using direct heat in which the chicken is placed next to the heat source.
The chicken will take between 1 1/2 – 2 hours to cook, depending on how hot your grill is. With chicken it’s always best to go with telling it’s done by the temperature, not by the time. Chickens are cooked when the thickest part of the thigh registers 165 degrees F.

Prepared Yellow Corn, Water, Salt, Sodium Metabisulfite added to help promote Color.Allens Golden Hominy
Stove top: add contents to saucepan and gently simmer until hot.
Microwave: empty contents into a microwave safe dish and cover loosely. Heat on high power for 2 minutes, or until hot. Stir and serve.
