Creole Seasoned Baked Salmon Pieces w/ Mac and Cheese

Today’s Menu: Creole Seasoned Baked Salmon Pieces w/ Mac and Cheese
For Breakfast I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. We had a high of 38 degrees and cloudy out today. Not a thing to do today which is a good thing, I had the Phantom Pains all night again. They started last night around 11:00 and didn’t ease up until almost noon today! So as usual when these last this long, it’s a day of rest. So for Dinner tonight I prepared Creole Seasoned Baked Salmon Pieces w/ Mac and Cheese.
I had a small package of Salmon Bites or Pieces in the freezer that I had purchased from Meijer. It was a small package of just odd and end pieces of Salmon they had leftover and they packaged them up. I laid the package of Salmon in the fridge overnight to thaw. To make the Salmon I’ll need; the Salmon Pieces, Extra Light Olive Oil, McCormick Grinder Sea Salt, and Zatarain’s Creole Seasoning.
To prepare it; I first preheated the oven to 400 degrees. Next I got a small baking pan and sprayed it with Pam Cooking Spray and added a 1/2 tablespoon of Extra Light Olive Oil. I seasoned the Salmon Fillet with 1/2 tablespoon of the Extra Light Olive Oil, Grinder Sea Salt and Creole Seasoning. I put the Fillet in the pan; skin side down. Baked it for 13 minutes; until done and fork flaky. The Salmon came out perfect! Done just right with excellent seasoning.
To go with my Salmon I prepared a cup of Kraft 50% Whole Grain Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels and a Diet Peach Snapple to drink.
