Today’s Menu: Cumin Spice Pork Chops w/ Loaded Baked Potato Casserole and Glazed Apples

 

 

For Breakfast this morning I toasted a Thomas English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. Mostly sunny and 64 degrees on this 1st day of October. Another day of dealing with Phantom Pains. They started around 5:00 this morning and didn’t stop until around 6:00 this evening. I would give anything for a way or cure to stop these! For Dinner tonight I prepared Cumin Spice Pork Chops w/ Loaded Baked Potato Casserole and Glazed Apples.

 

I had picked some Pork Chops a while back at Jungle Jim’s and them in the freeze. Laid 2 of the Chops in the fridge overnight to thaw. To to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it, preheat the oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 160°, turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible tasty Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!

 

For a side dish I prepared a box of Idahoan Loaded Potato Homestyle Casserole. I love all the Idahoan Potato Products. A very quick and easy way to prepare some delicious piping hot Potato Dishes. A very quick and easy way to prepare some delicious piping hot Potato Dishes.

 

I also heated up some Bob Evan’s Glazed Apples, it comes in a microwavable container and is a quick and delicious way to have Glazed Apples. And Apples are perfect for any Pork dish! Quite a dinner tonight! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

1 -Preheat oven* to 450°F. Combine potatoes and sauce mix in 1½-quart baking dish.
2 – Stir in 1½ cups boiling water, ¾ cup milk, and 1 Tbsp. butter or margarine with whisk.
3 – Bake uncovered for 25 minutes or until top is golden brown and potatoes are tender. Remove from oven and let stand a few minutes before serving (sauce will thicken slightly when cooling).
