Today’s Menu: Cumin Spiced Pork Chops w/ Fresh Green Beans and Sweet Corn on the Cob

 

 

 

Just a cup of Bigelow Decaf Green Tea to start this hot and muggy morning. After Tea I took Mom to Jungle Jim’s. We bought some Green Beans, Tomatoes, Sweet Corn, Potatoes, Pork Chops and a few other things. Really surprised they had a ton of 1/2 Runner Green Beans. Back home I got the cart out of the shed and repaired a couple of places of the skirting around the deck. We had a Ground Hog problem, but no more my neighbor set a trap out and we got him! He was huge one and had been tearing stuff around a few of the houses. We took him to a local park and released him. The Green Beans we purchased earlier were big and full 1/2 Runner Green Beans. So Mom decided to go back to Jungle Jim’s and buy more of the Green Beans. We wanted enough to can 7 quarts. I dropped off at the front door and she and another woman bought what was left of the Green Beans. Just this morning they had 2 bins full of Green Beans. I guess when word leaked out how nice they were for $2.49 a lb. a lot of people came and bought them. Glad we were able to get more to can, we can tomorrow! For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Fresh Green Beans and Sweet Corn on the Cob.

I had picked some Pork Chops a while back at Jungle Jim’s earlier. To to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it, preheat the oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 160°, turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible tasty Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!

I also prepared a Quart Jar of the Canned Green Beans. I cooked them with a piece of Fatback Pork in a kettle. Love these Canned Green Beans, they are so fresh tasting! Plus we have 7 more quarts of Beans coming tomorrow!

For another side I boiled an Ear of Sweet Corn, thanks again to Jungle Jim’s! It came out so good. I seasoned it with Morton’s Light Salt and Blue Bonnet Light Butter. Quite a Meal tonight! For Dessert later a bowl of Breyer’s Carb Smart Chocolate Ice Cream.
