Today’s Menu: Bison Sirloin & Sautéed Mushrooms w/ Applewood Smoked Bacon Homestyle Casserole, Shellie Beans, and Whole Grain great range bison sirloin 001Bread

Cold and windy day out today and a high of 38 degrees! Ran some errands for my Mom as most of her time is spent at the rehab center with my Dad. While out I purchased a Prime Rib Roast for Christmas day Dinner. It seems prime Rib just keeps going up and up in price. I also picked up a couple of Bison Sirloin Steaks for dinner to night.
I’ve been trying to have my Mom a good hot meal for her at night. She’s 85 but still goes like she’s 40 but the daily stay at the rehab center is really tiring her out. So the least I can do is make sure she eats good! So for dinner I prepared a Bison Sirloin & sautéed Mushrooms w/ Applewood Smoked Bacon Homestyle Casserole, Shellie Beans, and Whole Grain Bread. For the Bison Sirloins I seasoned them with McCormick Grinder Steakhouse Seasoning and a couple of shakes of Sea Salt. I pan fried them in Canola Oil about 4 minutes per side, medium rare. I kept my Mom’s Steak on an extra minute, she likes hers about medium well. I’ve finally got my Mom eating Bison! She had a couple of Bison Burgers here lately, another convert to Bison! I topped the Steaks with Sauteed Baby Bella Mushrooms.
For sides I prepared Idahoan Applewood Smoked Bacon Homestyle Casserole, Libby’s Shellie Beans and Healthy Life Whole Grain Bread. First time I tried the Idahoan Applewood Smoked Bacon Homestyle Casserole. Like the other Idahoan dishes their a breeze to prepare and a delicious Potato Dish. And like he others this turned out fantastic! Very well seasoned, and you can actually taste that Applewood bacon flavor. For dessert a Skinny Cow Cookies and Cream Truffle Ice Cream Bar, 110 calories and 20 carbs.

The saying is “everything is better with bacon” and we couldn’t agree more. That’s why we incorporated Applewood Smoked Bacon in with our rich cheesy sauce for this homestyle casserole that is sure to become a family favorite.

Oven Preparation
Preheat oven to 450°F. Combine potatoes and sauce mix in 1 1⁄2-quart baking dish.
Stir in 1 1/2 cups boiling water, 1/2 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
Bake uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling). Remove from oven and let stand a few minutes before serving.
Baking Notes: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min.
Stove Top Preparation
Heat potatoes and sauce mix, 1 1/2 cups hot water, 1/2 cup milk, and 1 1/2 Tbsp. margarine or butter to boil in 2-quart saucepan over high heat, stirring occasionally. Watch carefully to avoid boilover.
Reduce heat, then cover and simmer 15 minutes, stirring occasionally, until potatoes are tender and sauce reaches desired consistency (sauce will thicken slightly when cooling).
Remove from heat and let stand a few minutes before serving.
