Today’s Menu: Panko Fried Chicken sandwich and

Seasoned Potato Wedges.

Panko Chicken Ingredients

4 Thin Cut Chicken Breasts

2 Eggs or Egg Beaters

1 Cup of Whole Wheat Flour

2  Cups of Panko Bread Crumbs

1 Tsp of Frank’s Red Hot Sauce

Garlic Powder, Sea Salt, Pepper to taste

3 Tbs Extra Virgin Olive Oil, for frying.

4 Slices 2% Swiss Cheese

Honey Mustard, brand your choice

4 Whole Grain Buns

*Heat large skillet on Medium heat and add oil.

*Set up a 3 bowl station: Bowl 1 – Whole Wheat Flour,

Bowl 2 – Eggs and add the Franks Hot Sauce to eggs,

Bowl 3 – Panko Bread Crumbs

* Season each breast with Garlic Powder, Salt, and Pepper

to taste

* Roll Chicken in flour, then egg/hot sauce mixture, and then Panko bread crumbs.

*Cook Chicken two breasts at a time until done, juices run clear.

*Serve fried chicken on bun and add Honey Mustard

Swiss Cheese. Tomato and lettuce optional. Serve

with Seasoned Potato Wedges or Whole Wheat Pasta

,or Brown Rice.
