Oh as they say the “The Dog Days of Summer” are here! Rolled out to get the paper about 6:30 this morning and it was 73 degrees and humid! Along with the heat this time of year comes the Cicadas. I had read this year for this part of Ohio we are going to be invaded! They were at full force and really loud this morning. For my dinner I prepared a Turkey Sausage (On Bun) w/ Italian Pasta Salad.
I used my favorite Smoked Turkey Sausage Butterball Hardwood Smoked Turkey Sausage. The Butterball Hardwood Smoked Turkey Sausage has an incredible taste! I’ll put this up against any of the rest. I’ve grilled it many times but this time I prepared it in a skillet. I just cooked it on medium heat about 12 minutes, turning it quite often. I served it on a Healthy Life Whole Grain Hot Dog Bun and topped with some French’s Spicy Brown Mustard, a perfect topping for any Sausage or Frank.
For a side dish I kept it light by making an Italian Pasta Salad. A Light and tasty dish that included Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, fresh Shredded Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, and McCormick Grinder Italian Seasoning. Boiled the Pasta according to the box and add all the ingredients and refrigerated. Too Good! For dessert later tonight a bowl of Breyer’s Carb Smart Ice Cream topped with a bit of Smucker’s Sugar Free Hot Fudge Topping.

You would be hard pressed to find a more perfect Mid-August day out than what today was! About 50 degrees this morning and 78 and sunny with a light breeze through out the day! Was outside most of the day and didn’t really plan on anything for dinner but one thing kept sounding good, Izzy’s Lean Corned Beef Sandwich! So with the Kitchen closed tonight it was Izzy’s Lean Corned Beef Sandwich w/ Ruffle’s Light Chips.
Subway is good but their not a close second to Izzy’s. I would put Izzy’s Corned Beef up against any other. Plus with their “Lean’ version of the Corned Beef it makes it healthier also. The sandwich contains 170 calories and 16 carbs per serving (1/2 Sandwich) and 340 calories and 32 carbs for a Full Sandwich. I had the Full, as usual, along with a serving of Ruffle’s Light Potato Chips and their 80 calories and 17 carbs per serving. Then to go along with it all I had an ice-cold Diet Dr. Pepper, 0 calories and 0 carbs. For dessert later a Jello Sugar Free Double Chocolate Pudding. It’s been a good day!

Today’s Menu: Italian Pasta & 3 Bean Salad w/ Whole Grain Chicken Breast Strips
My parents were out on a Church function so I spent the day catching up on all the housework, cleaning and the laundry! Then went to store real quick to pick a couple of items up and done for the day. Feels a lot more like August Weather today, HUMID! For dinner a new one, Italian Pasta & 3 Bean Salad w/ Whole Grain Chicken Breast Strips.
First time making the Italian Pasta & 3 Bean Salad. Came across several recipes for this so I took a few ideas from them and added my own touches to it and it came one delicious recipe! I used Ronzoni Garden Delight Trio Italiano Pasta, Mezzetta Pesto Sauce, Peppadews, 1 Can Read 3 Bean Pasta, 3 thinly sliced Mini Sweet Peppers, 7 Marinated Ciligine Balls (cut in half), fresh Shredded Cave Aged Gruyere, and 1 California Sour Dough Boule. To prepare I just cooked Pasta according to package directions (boiled 11 minutes); drained and rinsed under cold running water. Then in a bowl, combined Pesto with Pasta and folded until it was well coated. Then combined Pasta with Bean Salad, discarding liquid. Stirred in Peppadews, sliced Sweet Mini Peppers and Ciligine; and refrigerated. To serve, sprinkled Cheese (Gruyere), over top. If you like Pasta Salads you’ll love this version! This is the second time I’ve had the Peppadews and I am in love with these things, you have to try them! I served the Pasta in a hollowed out California Sour Dough Boule. Some other ingredients that you could add to this would be perhaps some toasted Walnuts, Pine Nuts or Sardines.
I also baked a couple of Perdue Whole Grain Chicken Breast Strips which I sliced up and added to my Pasta Salad. Another must try are these Perdue Whole Grain Chicken Breast Strips. I think possibly the best premade Chicken Strip I’ve ever had! They come breaded and just bake them for 12 minutes, flipping them over after 6 minutes. Great for salads, sandwiches, or just by their selves. Good item to have in the fridge or frozen. For dessert later a Healthy Choice Chocolate Swirl frozen Yogurt.
Breaded with: White whole wheat flour, wheat flour, water, salt. Contains 2% or less of natural flavors, dextrose, dried yeast, natural paprika extract, potassium chloride, yeast extract, maltodextrin, dried garlic, natural paprika and annatto extracts, yellow corn flour.

Spent one long day at the hospital today. I went for my yearly scans for my upcoming Melanoma Cancer check-up. This normally takes about 1 1/2 hours, max, and I’m home. Until today! They over scheduled and I went in at 7:30 and was there till 11:45! No excuses except they were over scheduled. The staff was none too happy over it either. They were working their tails off plus having to deal with a lot of complaining patients, I wasn’t one of those though. So the last thing I wanted to do later was to prepare a dinner so tonight it was a return to Izzy’s! I had an Izzy’s Lean Corned Beef Sandwich.
The sandwich was Izzy’s famous corned beef, 96% lean cut, on whole wheat bread, it comes with a small container of Pasta Salad. I also had some Ruffle’s Light Chips at 80 calories and 17 carbs per serving along with a Diet Peach Snapple. There’s 360 calories and 32 carbs for a full sandwich. I had half of it and saved the other half for lunch tomorrow, half sandwich 170 calories and 16 carbs. Not only do they look delicious, they are delicious! Izzy’s by far has the best and most tender Corned Beef there is! For dessert later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.

Today’s Menu: Whole Grain Penne Rigate and Smoked Turkey Sausage w/ Baked Mozza Parm Bread
I had made a small bowl of Italian Pasta Salad for lunch earlier today and the Pasta tasted so good I made another Pasta dish for dinner, Whole Grain Penne Rigate and Smoked Turkey Sausage w/ Baked Mozza Parm Bread.
To prepare it I used Ronzoni Healthy Harvest Whole Grain Penne Rigate, Eckrich Turkey Smoked Sausage, Bella Vita Low Carb Pasta Sauce (Meat Flavored), fresh Grated Mozzarella Cheese, Sea Salt, and McCormick Grinder Italian Seasoning. Turn the heat to low, and pour 1/2 cup water into the skillet with the Eckrich sausage. To prepare the Sausage just add 2/3 cup of water to a skillet and heat to a boil. Add the Sausage and cover the skillet with a lid and reduce the heat to a simmer. Simmer for 10 minutes until it’s heated through out. While that was cooking I took my Sauce and put that into a medium sauce pan, put the lid on, and heated on low. After the Sausage was done I sliced it into bite size pieces and added to the Pasta Sauce. I then boiled my Pasta by the box instructions. Boiled for 10 minutes and drained the water and added my Sausage and Pasta Sauce to the Pasta. Seasoned everything with Sea Salt and McCormick Grinder Italian Seasoning, mixed well and served topping it with freshly shredded Mozzarella Cheese. Makes a delicious and filling dinner! I love that Smoked Turkey Sausage! To prepare the Mozza Parm Bread just take 2 slices of bread, I used Aunt Millie’s Light Whole Grain Bread, butter both slices, add a light coating of Kraft Shredded Parmesan Cheese and sprinkle with freshly shredded Mozzarella Cheese. Bake at 400 degrees until Cheese has melted and served. For Dessert/Snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.
Eckrich Smoked Turkey Sausage
Fully cooked. Since 1894. Inspected for wholesomeness by US Department of Agriculture. 1/2 the fat than USDA data for pork & beef smoked sausage. (Fat grams reduced from 15 g to 7 g.) Naturally hardwood smoked.
Poultry Ingredients (Turkey, Mechanically Separated Turkey), Water, Corn Syrup, Contains 2% or Less of Dextrose, Flavorings, Modified Food Starch, Autolyzed Yeast, Monosodium Glutamate, Potassium and Sodium Lactate, Salt, Sodium Diacetate, Sodium Nitrite, Sodium Phosphate, Vitamin C (Ascorbic Acid).
Skillet: Bring 2/3 cup water to boil in skillet. Add sausage, cover and reduce heat. Simmer 8 to 10 minutes. Microwave: Place sausage in microwave-safe dish, add 1/2 cup water and cover. Heat on High (100% power) 2 pieces 5 to 6 minutes and 1 piece 3-3/4 to 4-1/4 minutes, or until hot. You may need to adjust the time for your microwave. After opening, use within 7 days. Keep refrigerated.

I had a box of Ronzoni Garden Delight Tri Color Rotini Pasta in the pantry so I decided to make an Italian Pasta Salad for lunch. I used about 1/4 of the box of the Pasta, enough for a couple of servings. Light and tasty dish that includes Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, Kraft Shredded Parmesan, Kraft Zesty Italian Fat Free Dressing, and McCormick Grinder Italian Seasoning. Boil the Pasta according to the box and add all the ingredients and refrigerate. Too Good!

I had a Jennie – O Baked Turkey Tenderloin that I had marinated for three hours in JB’s Fat Boy Sticky Stuff BBQ and added a couple of Adobe Peppers along with a 1/2 teaspoon of Adobe Sauce. After seasoning it with Sea Salt, Ground Black Pepper, and Smoked Cumin I then baked it for 30 minutes covered and thirty minutes uncovered at 350 degrees. The Turkey turned out moist and delicious. The JB’s Fat Boy Sticky Stuff BBQ. Sauce makes a perfect marinade for not only Turkey but also Chicken. The Adobe Peppers and Sauce raised the heat level a bit but not over powering.
For sides I had Margaret Holmes Sweet Potato Casserole. First time I tried it and it’s another Margaret Holmes Product that I’ll keep in stock! It comes in a can so just empty it into a Sauce Pan and heat until warmed. I also had made a Pasta Salad earlier using Ronzoni Garden Delight Rotini. This is the colored Rotini, Enriched Tomato, Carrots, and Spinach Pasta Blend. After cooking the Pasta I added McCormick Grinder Italian Seasoning and Sea Salt for the seasoning. I then added Kraft Free Italian Dressing, 8 pieces of Hormel Turkey Pepperoni (Chopped), 5 Canned Anchovies (Chopped), 6 minced capers, and Kraft Shredded Parm Cheese. Keep in the fridge until ready to use. Also I had Healthy Life Whole Grain Bread. With the heat of the Chicken and the sweetness of the Sweet Potatoes it made a perfect combination! For dessert later a Yoplait Chocolate and Banana Smoothie!
