The last couple of days I’ve been a little nervous as I found a small knot, or lump, on my right arm in the armpit. And with my history of Melanoma it’s always a bit unnerving when something like this pops up. So my Oncologist got me right in this afternoon to check everything out. The news was good! The knot I was feeling is a result of the Cancer Clinical Trial I took a few years back. The knot was near where and injection site was when I received treatment for the trial. As they say better safe than sorry.

 

 

For dinner I prepared a Sharp Cheddar Buffalo Burger w/ Baked Fries. I used the Wild Idea Buffalo 1/4 Lb. Buffalo Burger, my favorite which Wil;d Idea Buffalo was featured on the Food Network last night! The Burgers come frozen in a package 4 and pre-made. So just thaw and fry it! I seasoned it with Sea Salt and Ground Black Pepper. I pan fried it in Canola Oil about 3 1/2 minutes per side. i served it on a Healthy Life Whole Grain Hamburger Bun and topped the Burger with a slice of Sargento Ultra Thin Sharp Cheddar.

 

 

To go with my Buffalo Burger I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. I had a side of Hidden Valley Smoked Bacon Ranch Spread/Dip for my Fries. I really like these new dips that Hidden Vally has out. Then for dessert later a Del Monte Diced Mano in Light Syrup.

Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries

To prepare the Orange Roughy Fillets rinse fillets and pat dry fillets and season with Sea Salt and Pepper. Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip floured fillets into Egg Beater’s, allowing excess to drip off. Mix bread crumbs and paprika in a separate bowl. Place fillets, one at a time, in Panko Bread Crumbs and Paprika mix, and lightly toss fillets until both sides are covered. Meanwhile, heat Olive Oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned. Served the Roughy on a Aunt Millie’s Deli Style Whole Grain Bun

 

 

To go with my Fish Sandwich I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Love Potatoes and love these fries! For dessert later a slice of the Cheesecake I made yesterday topped a Blackberry Sauce I also made yesterday.

 

 

 
Orange Roughy with PankoPanko Orange Roughy Sandwich 003

 

Ingredients:

(4) 4oz. Orange Roughy Fillets
1c. Panko Italian Style Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 1/2 Tbs. Extra Virgin Olive Oil

Directions:

It’s been another one of those beautiful Summer days out again! This morning it was around 47 degrees and then we had a high of about 80 degrees with a slight cool breeze. Spent as much time as I could outside in the sun, just too nice out. For dinner tonight I prepared a Turkey Bacon and Sharp Cheddar Cheese Turkey Burger w/ Baked Fries.

 

 

I used Jennie – O Extra Lean Ground Turkey Breast for my Burger, 120 calories and 0 carbs. I seasoned it with Sea Salt and Ground Black Pepper and pan fried it in Canola Oil, fried about 4 1/2 minutes per side. Came out moist and juicy! Served it on a Healthy Life Whole Grain Hamburger Bun and topped it with a slice of Jennie – O Turkey Bacon (30 calories and 0 carbs) and a slice of Sargento Ultra Thin Sharp Cheddar Cheese. To go with the burger I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, had a side of Hunt’s Ketchup to dip the fries. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Happy Labor Day everyone, hope you had a fun one! It’s been real muggy out today, and a rain shower late afternoon which made it worse. Not much going on, went to the store early and that was about it. For dinner tonight I prepared a Baked Ham and Swiss Hoagie w/ Baked Fries.

 

 

I used Aunt Millie’s Deli Style Whole Grain Mini Sub Buns and then for the Ham I used Kroger Brand Private Selection Oven Roasted Rosemary Ham. This has become my favorite packaged Hams incredible taste and it’s 70 calories and 1 carb per serving. The slices are very thin so I used a double serving of it on the Hoagie. I topped it with a new spread/dressing, Hidden Valley Smoked Bacon Ranch Sandwich Spread. Word of caution, this stuff is so good you’ll get a spoon and just eat from the jar! I think it’s new, I had a coupon I got from Sunday’s Paper and that’s how I found out about it. When at Walmart earlier I seen they had it in stock. They had about 4 different varieties of it and I went with the Smoked Bacon Ranch Dressing. I also topped it with 2 slices of Sargento Ultra Thin Swiss Cheese.

 

 

I preheated the oven to 350 degrees and while that was heating up I combined tbsp. of Blue Bonnet Light Butter (Melted) , 1/2 tsp. dried onion, 1 tsp. Worchestershire sauce, 1 1/2 tsp. Poppy Seed dressing, and 1/2 tsp. yellow mustard. Mixed it to it was well combined. Poured the mixture over the sandwich. Covered it with foil and baked at 350 degrees for 15 minutes then remove foil and bake an additional 10 minutes to allow the rolls to crisp. Remove from oven to cool and served. Great recipe for Baked Ham and Swiss Sandwiches! The Poppy Seed Dressing Mixture that tops the Hoagie pulls everything together, all kinds of flavor! I also baked some of the Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, love these fries! For dessert later a bowl of fresh sliced Peaches.

Late afternoon a friend of mine meet me over at a place here in West Chester, Union Square. They had the The Union Centre Food Truck Rally going on all day there. It was a fund-raiser for the Boys and Girls Clubs here in Butler County. Seemed to be a good turnout as the vendors we talked to said it had been steady all day. There was about 11 Food Trucks and a few vendors that were cooking from a tent. Didn’t stay long though, just too humid out. A passing shower made it worse. For dinner tonight a simple but one of my all-time dinner classics, Buffalo Cheese Burger w/ Baked Fries!

 

 

I used my favorite Buffalo Burger, Wild Idea Buffalo 1/4 Buffalo Burger. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Canola Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. I topped it with a slice of Sargento Ultra Thin Sharp Cheddar Cheese and served it on a Healthy Life Whole Grain Bun.

 

 

For a side with my Cheese Burger I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Tried these for the first time earlier and really like them. Served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

As I went to bed last night my throat felt funny and then this morning I had Laryngitis. For some reason I get this about once a year. Hopefully it will clear up in a day or so. For dinner Tilapia. I prepared a Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries.

 

 

I had purchased a bag of about 12 small Tilapia Fillets from Walmart, just the right size for sandwiches. Good thing to have in freezer, their easily thawed, easy to prepare , and delicious! I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Lemon Pepper Breading Mix. Pan fried them in Canola Oil about 3 minutes per side. Served it on a Aunt Millie’s Deli Style Whole Grain Mini Sub Bun and topped with Ice Burg Lettuce. If you read my blog often, you know how I love Fish!

 
For a side for my Fish Sandwich I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Tried these for the first time earlier and really like them. Served these with a side Daisy Reduced Fat Sour Cream. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Today’s Menu: Chili and Cheese Footlong Wieners w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries

I had went to Kroger early this morning to pick up a couple of items when I ran into a huge display of Footlongs and Footlong Buns! I couldn’t resist it I had to buy a package of each! Having these always reminds me of when I was growing up we would always go to A and W’s Root Beer Stand every Summer Weekend. They were only open during the Summer but packed day and night. Nothing was better than an A and W Footlong w/ Chili, Cheese, and Mustard with a frozen mug of A&W Root Beer, it got no better than that on those hot Summer Days! So for dinner tonight I prepared Chili and Cheese Footlong Wieners w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries.

They had a couple of brands of Footlongs and I went with the Queen City Sausage Footlong Wieners. Queen City is hard to beat foe quality and their Footlongs were 160 calories where the other brand was at 240 calories, saved 80 calories! To prepare them I boiled them using a long roaster skillet. I put enough water in it to cover the Footlongs about 2″ over them. Brought the water to a boil added the Wieners and boiled about 5 minutes. They came out just right!

To serve them I placed them on a Heiner’s Footlong Bun, first time I ever used them. I wanted to use a thick Turkey Chili with Beans but it was just too many calories so I went with Skyline Chili, just 40 calories. Skyline is a popular Coney and Spaghetti Restaurant here locally and sell a lot of their products in stores. To plate it I topped the Footlong with French’s Yellow Mustard, Diced Onions (I passed on the Onions Mom and Dad love them), Chili, and Sargento Reduced fat Shredded Sharp Cheddar. This all makes one heck – of a Chili Cheese Footlong! I also baked up a new type of Ore Ida Fries. Found them at Meijer the other day, Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. These are some killer Fries! The Cracked Black Pepper and Sea Salt are perfect. They have these in Potato Wedges also, I’m sure their just as good! For dessert later a Jello Sugar Free Double Chocolate Pudding.

I spent some of the day with little and lovely ladies, Jaiden and Aria. Their my cousin’s two little gals and I love spending time with them. I took them out for lunch and they wanted to go to Sonic’s, so Sonic’s it was! The oldest one is going to be in third grade and the other a first grader this year. Hopefully next week I’m going to have them over for a picnic before school starts back up, starting early this year. For dinner I prepared a Sauteed Mushroom Buffalo Burger w/ Baked Crinkle Fries.

 

 

We ll the grill died again so I had to pan fry the Burger. I used Great Range Ground Bison to make my Burger.I made my pattie and seasoned it with Sea Salt and Ground Black Pepper. I pan fried it in Canola Oil and fried it about 4 minutes per side, a good medium rare with a char on the outside and a little pink in the center. Made a delicious juicy burger! Not much going on today. I even took a rare afternoon siesta which I hardly ever do. I did go to a local farmers Vegetable stand nearby here and picked up a Watermelon and Cantaloupe up for my Mom and Dad. I can eat either but never been a huge fan of either. For dinner I prepared a Sauteed Mushroom Buffalo Burger w/ Baked Crinkle Fries.

 

 

I used Great Range Ground Bison to make my Burger. My favorite is Wild Idea Buffalo but I have a lot of the Great Range Bison in the freezer that I have to use. It’s always a good product but it doesn’t have the taste to it as Wild Idea Buffalo does. Anyway I made my pattie and seasoned it with Sea Salt and Ground Black Pepper. I pan fried it in Canola Oil and fried it about 4 minutes per side, a good medium rare with a char on the outside and a little pink in the center. Makes a delicious juicy burger! I served it on a Healthy Life Whole Grain Bun and topped with Sauteed Baby Bella Mushrooms.

Today went a lot better than yesterday, thank goodness! In fact it was right down uneventful and sometimes that’s a good thing. Went to the store early before it got humid out and the rains came back in. I went to Walmart and while there compared a few items from my receipt from when I went to Meijer. Walmart is still cheaper on a lot of items but there’s not a huge difference like there is at Kroger where everything is more expensive. On to dinner, I prepared a Baked Italian Chicken Breast Mini Sub Sandwich w/ Baked Fries.

 

 

I used the Perdue Italian Chicken Breasts again, which I love using. Their individually wrapped and you can keep them in the fridge or freeze them and just grab one when your ready to use it. I baked a couple of them, one for dinner and one for lunch tomorrow. i preheated the oven to 350 degrees and baked the breasts for about 23 minutes, till the chicken was at 170 degrees internal. As I said I love using these, easy to fix and always turns out perfect as this one did!

 

 

I served it on a Aunt Millie’s Deli Style Mini Sub. I normally use the Whole Grain version of this but this morning they had none in stock. Still taste great but a bit more calories and carbs. I topped the breast with Ragu Psata Sauce, 1 slice of Oscar Mayer Low Sodium Turkey Bacon (leftover from breakfast), sliced Black Olives, and a slice of Sargento Reduced Fat Provolone Cheese. To go with my Mini Sub I baked some Ore Ida Crinkle Fries. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Del Monte Sugarless Diced Peaches.

From Frozen: Preheat oven to 350 degrees F. Place frozen breasts on foil-lined baking sheet and cook 22 – 26 minutes, or until internal temperature reaches 170 degrees F. Some food products may contain bacteria that could cause illness if the product is mishandled or cooked improperly. For your protection, follow these safe handling instructions.
