Cheddar Bacon Chicken Breasts w/ Kicked Up Chili Beans and Seasoned Diced Potatoes

Today’s Menu: Cheddar Bacon Chicken Breasts w/ Kicked Up Chili Beans and Seasoned Diced Potatoes
Typical March weather here today. Woke up with the ground covered with new snow, then the sun came out and melted the snow, then it started to snow so hard you couldn’t see anything out, and now more sunshine, and so on and so for March weather! For dinner tonight, Cheddar Bacon Chicken Breasts w/ Kicked Up Chili Beans and Seasoned Diced Potatoes.
I think the original recipe for Chicken called for Chicken Tenders but I used Then Cut Chicken Breasts instead and they came delicious!
To make these I needed 1 Egg, OR 1/4 Cup Egg Beater’s, 1/2 Cup Progresso Italian Bread Crumbs, Sea Salt and Ground Pepper for Seasoning, 1/2 cup finely shredded Cheddar cheese (2 oz), 1 Package or jar (3 oz) Cooked Real Bacon Bits or Pieces, and 1 package uncooked Thin Cut Chicken Breasts. To prepare them I pre-heated the oven to 400°F. Sprayed large foil covered cookie sheet with cooking spray. Then in shallow bowl added my 1/4 cup Egg Beater’s. In large resealable food-storage plastic bag, placed bread crumbs, cheese and bacon. Dipped the chicken into Egg Beater’s then placed them in the bread crumb bag; seal and shaken to coat. Placed chicken on cookie sheet and baked for 20 to 25 minutes, turning once, until chicken is no longer pink in center and bread crumbs are golden brown. I served them with a side of Litehouse Bleu Cheese Dressing/Dip. The Chicken came out moist, tender, and very flavorful! And Bleu Cheese with Chicken anytime!
For sides to go with the Chicken Kicked Up Chili Beans and Seasoned Diced Potatoes. For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, Splenda Brown Sugar, and a few dashes of Frank’s Red Hot Sauce. I left the recipe at the end of the post. The Potatoes were Simply potatoes Steakhouse Seasoned Diced Potatoes that were leftover from the other night, just reheated and served. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.
Cheddar Bacon Chicken Breasts
Ingredients:
1 Egg, OR 1/4 Cup Egg Beater’s
1/2 Cup Progresso Italiain Bread Crumbs
1/2 cup finely shredded Cheddar cheese (2 oz)
1 Package or jar (3 oz) Cooked Real Bacon Bits or Pieces
1 package uncooked Thin Cut Chicken Breasts (not breaded)
Chive and Onion Sour Cream potato topper, if desired
Directions:
1 Pre-Heat oven to 400°F. Spray large cookie sheet with cooking spray.
2 -In shallow bowl, beat egg. In large resealable food-storage plastic bag, place bread crumbs, cheese and bacon. Dip chicken into egg. Place in bread crumb bag; seal and shake to coat. Place chicken on cookie sheet.
3 -Bake 20 to 25 minutes, turning once, until chicken is no longer pink in center and bread crumbs are golden brown. Serve with topper.
Kicked Up Chili Beans
Ingredients:
1 Can Spicy Chili Beans, Brand your choice. I use Joan of Arc
3 Pieces Crumbled Turkey Bacon. You can use Turkey or Turkey Bacon Crumbles
4 Shakes Frank’s Red Hot Sauce, or to taste
1/2 Cup Jack Daniel’s Honey Smokehouse BBQ Sauce
1/2 Tablespoon Splenda Brown Sugar or to taste
1 Teaspoon Ground Mustard
Directions:
Empty can of Beans into a medium sauce pan
Add Turkey Crumbles, Brown Sugar, Ground Mustard, Frank’s Red Hot Sauce, Honey BBQ Sauce, stir and mix.
Heat until desired temperature, and serve

It’s been a long night and day. Battling those Phantom Pains again! It started around 3:00 am and hasn’t let up through out the day today. The pain is almost unbearable sometimes. The sad part is there is no cure mainly because no one knows what causes them. Most amputees go through these, some worse than others.
Anyway I wanted a good hot meal but really didn’t want to have to put a lot of effort in it. So I fired up the grill and grilled some Sweet Italian Turkey Sausages. I used the Honeysuckle White Brand Sweet Italian Turkey Sausages. i love these, plump and juicy and grill up fantastic! They are 140 calories and 1 carb. I served it on a Healthy Life Whole Grain Hot Dog Bun and topped it with French’s Spicy Brown Mustard. For a side I prepared some Kicked Up Chili Beans, another favorite of mine. I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, Splenda Brown Sugar, and a few dashes of Frank’s Red Hot Sauce. I left the full recipe at the end of the post. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.
Kicked Up Chili Beans

Today’s Menu: Grilled Sirloin Steak w/ Mashed Potatoes & Brown Gravy, Kicked Up Chili Beans, and Harvest Grain Bread
I found some Sirloin Steaks hiding out in back of the freezer this morning and I knew I had found my dinner! I normally have Bison Sirloin but I’ll go with the Beef this time. I seasoned it with Sea Salt and ground Black Pepper. I grilled it on medium high for about 4 minutes per side, medium rare. Grill marks, pink in the center, and juicy one tasty steak!
I had 2 sides Mashed Potatoes & Gravy and Kicked Up Chili Beans. The Potatoes were Idahoan Homestyle Mashed Potatoes that I topped with some of the Heinz Beef Gravy. For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, Splenda Brown Sugar, and a few dashes of Frank’s Red Hot Sauce. I left the recipe at the end of the post. I also had a slice of Meijer Bakery Harvest Grain Bread. For dessert later a Skinny Cow Fudge Pop.

Grilled Bison Burger w/ Kicked Up Spicy Chili Beans and Smashed Potatoes

Today’s Menu: Grilled Bison Burger w/ Kicked Up Spicy Chili Beans and Smashed Potatoes
Windy and chilly outside but I had the grill fired up! Grilled Bison Burgers just sounded right for dinner tonight. Since I had the grill fired up I threw on a Bison Sirloin Steak that I’ll have for breakfast in the morning, Steak and Eggs! I seasoned the Burgers with McCormick Grinder Sea Salt and Black Peppercorn. With the grill blazing I grilled the Burgers about 3 minutes per side to a perfect medium rare. I grilled the Steak a bit longer at 4 minutes per side, medium rare also. The Burgers were just right pink in the center, juicy, and delicious! I topped the Burger with a slice of Sargento’s reduced Fat Cheddar/Jack Cheese.
For sides I had a few Golden Gourmet Potatoes left over so I made a side of Smashed Potatoes. I cut each Potato in half. Then after putting them in a bowl I added a tablespoon of Extra Virgin Olive Oil and then McCormick Grinder Dill, Sea Salt, Black Peppercorn, and Parsley and mixed until all were coated. I then boiled them for 30 minutes. Then put them in a serving bowl and with a fork smashed them up. Added I Can’t Believe It’s Not Butter and 2 slices of crumbled Turkey Bacon and continued to smash and mix. For the Beans I used Joan of Arc Spicy Chili Beans
and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, Splenda Brown Sugar, and a few dashes of Frank’s Red Hot Sauce. I left the recipe at the end of the post. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Crock Pot Baby Back Ribs w/ Kicked Up Chili Beans, Au Gratin Potatoes, and…

Today’s Menu: Crock Pot BBQ Baby Back Ribs w/ Kicked Up Chili Beans, Au Gratin Potatoes, and Whole Grain Bread
It’s a cold and windy winter’s day around here today but it’s warm and cozy inside with the aroma of ribs in the air! I had purchased some Pork Loin Back Ribs at Kroger earlier this week and decided to have them today. I seasoned the Ribs with JB’s Fat Boy Premium Rub and then brushed a half a bottle of JB’s Fat Boy Haugwaush Bar B Cue Sauce. I cooked the ribs for 8 hours on low in the crock pot. After 5 hours I applied the other half of Haugwaush to the Ribs. The ribs came out perfect! Tender fall off the bone delicious. No knife needed as the bones could be removed by just pulling on them. This is my favorite way to fix ribs.
For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, Splenda Brown Sugar, and a few dashes of Frank’s Red Hot Sauce. I left the recipe at the end of the post. I used Idaohan Potatoes Au Gratin which are very easy to fix and are just as good as homemade but with less calories and carbs. You can prepare them on the stove or by baking which is what I did. I also left the product description for the Potatoes below. We also had Healthy Life Whole Grain Bread. For dessert
later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

*BAKE uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
*Remove from oven and let stand a few minutes before serving.
BAKING NOTES: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min. To bake potatoes and roast meat at the same time, bake at 375°F for about 45 min; 350°F for about 50 min; or 325°F for about 60 min.

Had some more of the Crock Pot BBQ Baby Back Ribs! I went to Kroger early this morning and purchased 2 lbs. of Pork Baby Back Ribs and had the Meat Department cut the racks into Riblets for me, they looked beautiful! While I had the crock pot warming up on high I

Today’s Menu: Not So Sloppy Turkey Joes w/ Kicked Up Chili Beans
Love those Turkey Joes! I tried a new Sloppy Joe Sauce. I used Hormel Not So Sloppy Joe Sauce. Very good Sauce! Thick and Hearty with great flavor. Easier to use than Sloppy Joe Mix also. No adding water and extra simmering time. I’ll be stocking up on this my next visit to the grocery store. I used Jennie – O Extra Lean Ground Turkey which is only 120 calories and 0 carbs! I fried the Turkey
in Extra Virgin Olive Oil and seasoned it with Ground Smoked Cumin, Ground Thyme, Parsley, Sea Salt, and Ground Pepper. When the Turkey was done I drained the skillet of fat and oil and added the jar of Sauce, stirring until mixed and warmed. Easy to fix and delicious. At the end of the post I left the Hormel description and nutrition of the Sauce. I served the Turkey Joe on a Healthy Life Whole Grain Bun and topped it with Maytag Crumbled Bleu Cheese.
As a side I had some Kicked Up Spicy Chili Beans. I used Joan of Arc Spicy Chili Beans and added Frank’s Hot Sauce, Crumbled Turkey Bacon, Jack Daniel’s Smoked Honey BBQ Sauce, and a teaspoon of Splenda Brown Sugar. For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

With the big feast day coming up tomorrow I wanted something easy to fix and not to heavy. I went with Ball Park Smoked White Turkey Franks, love these dogs! Great tasting and only 45 calories and 5 carbs per Frank. Served them on Healthy Life Whole Grain Buns and topped with French’s Mustard. For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, Splenda Brown Sugar, and a few dashes of Frank’s Red Hot Sauce. Hot, Healthy, and some great leftovers! I used Jennie – O Extra Lean Ground Turkey. While browning the Turkey I seasoned it with McCormick Ground Smoked Cunin, Ground Thyme, McCormick Grinder Sea Salt and Black Peppercorn. Served on a Healthy Life Whole Grain Sandwich Bun topped with Murray’s Mayfield Crumbled Blue Cheese. The full recipe follows at the end of the post. As a side I had Kicked Up Spicy Chili Beans, this recipe also follows at the end of the post, and a 1/2 serving of some Bob Evans Glazed Apples that I had left over. For my Beans I used Joan of Arc Spicy Chili Beans. The good part there’s plenty left for some great leftovers! For dessert/snack later a bag of Jolly Time Mini Bag of Pop Corn.
Sloppy Turkey Joes
Ingredients
Ground Smoked Cunin, Sea Salt, Pepper to taste
1 pkg. McCormick Sloppy Joe Seasoning Mix
1 lb. Lean Ground Turkey
1 can (6 oz.) Tomato Paste *
1¼ cups Water
Crumbled Bleu Cheese for topping
Healthy Life Whole Grain Sandwich Buns
Directions:
Brown Turkey in large skillet on medium-high heat, seasoning to taste. Drain fat.
STIR in Seasoning Mix, tomato paste and water.
BRING to boil. Reduce heat and simmer 10 minutes, stirring occasionally.
Serve on buns top Turkey with Crumbled Bleu Cheese.
* Substitution: Use 1 can (15 oz.) tomato sauce in place of tomato paste and water.

Turkey Joes w/ Blue Cheese and Kicked Up Spicy Chili Beans

Today’s Menu: Turkey Joes w/ Blue Cheese and Kicked Up Spicy Chili Beans

I used Jennie – O Extra Lean Ground Turkey. While browning I seasoned the Turkey with McCormick Ground SAmoked Cunin, McCormick Grinder Sea Salt and Black Peppercorn. Served on an Healthy Life Whole Grain Sandwich Bun topped with Crumbled Blue Cheese. The full recipe follows at the end of the post. As a side I had Kicked Up Spicy Chili Beans, this recipe also follows at the end of the post. For my Beans I used Joan of Arc Spicy Chili Beans. The good part there’s plenty left for some great leftovers! For dessert/snack later a bag of Jolly Time Mini Bag of Pop Corn.
Sloppy Turkey Joes
Ingredients
Ground Smoked Cunin, Sea Salt, Pepper to taste
1 pkg. McCormick Sloppy Joe Seasoning Mix
1 lb. Lean Ground Turkey
1 can (6 oz.) Tomato Paste *
1¼ cups Water
Crumbled Bleu Cheese for topping
Healthy Life Whole Grain Sandwich Buns
Directions:
Brown Turkey in large skillet on medium-high heat, seasoning to taste. Drain fat.
STIR in Seasoning Mix, tomato paste and water.
BRING to boil. Reduce heat and simmer 10 minutes, stirring occasionally.
Serve on buns top Turkey with Crumbled Bleu Cheese.
* Substitution: Use 1 can (15 oz.) tomato sauce in place of tomato paste and water.
Kicked Up Chili Spicy Beans
Ingredients:
1 Can Spicy Chili Beans, Brand your choice. I use Joan of Arc
3 Pieces Crumbled Turkey Bacon. You can use Turkey or Pork Bacon Crumbles
4 Shakes Frank’s Red Hot Sauce
1/2 Cup Jack Daniel’s Honey Smokehouse BBQ Sauce
1/2 Tablespoon Splenda Brown Sugar
Directions:
Empty can of Beans into a medium sauce pan
Add Turkey Crumbles, Brown Sugar, Frank’s Red Hot Sauce, Honey BBQ Sauce, stir and mix.
Heat until desired temperture, and serve
