Today’s Menu: Baked Jennie – O Whole Turkey Breast w/ Cut Green Beans and New Potatoes, Mini ears of Sweet Corn, and Whole Grain Bread

Another chilly morning to start but it turned into a sunny Spring Day, had a high in the 50′s. Ran a couple of errands for Mom and back home for the day. Took the 4 wheel cart out for a spin down by the neighborhood lake, be fishing before long! For dinner tonight, Baked Jennie – O Whole Turkey Breast w/ Cut Green Beans and New Potatoes, Mini ears of Sweet Corn, and Whole Grain Bread.

 

 

 

 

Yesterday I believe I said the Turkey Breast weighed 1.79 lb. but it weighs 4.79 lb. First time I prepared a Jennie – O Fresh Premium Basted Young Turkey Breast. I seen this at Walmart while there yesterday so I thought I would give it a try. I originally thought about having it for Easter but my Mom wanted Veal Shoulder instead, as I always say “What Mom wants my Mom gets”.

To prepare it, as all Jennie – O Turkey products, was very easy. Preheat your oven to 325°F. Place the turkey breast on rack in shallow pan. Roast at 325°F. approximately 30 minutes per pound, or until meat thermometer inserted into the thickest part of the breast registered 170°F. (Juices should run clear). Let turkey breast stand for 15 minutes before carving and enjoy! it took about 3 hours to get done and it was worth the wait! It came out moist, well-seasoned, and delicious! Really some fine tasting Turkey. I would highly recommend giving this a try. More than enough for three of us and plenty of leftovers for some Turkey Sandwiches.

 

 

 
Mom and Dad are big on the side dishes so for one side I prepared some Del Monte Cut Green Beans and New Potatoes. Very good del Monte Product, combines two of my favorites, Green Beans and New Potatoes. Just heat and serve. I also boiled some Green Giant Mimi Ears of Sweet Corn. Also opened up a small can of Jellied Cranberry and prepared a box of Stove Top Low Sodium Turkey Stuffing. It’s your basic Thanksgiving Day Dinner! Fantastic Meal tonight, everyone enjoyed it. For dessert later a bowl of Breyer’s Low Carb Vanilla Bean Ice Cream.

Cooking Instructions:
PROPER HANDLING RECOMMENDATIONS:

A bit nippy out this morning, frost on the roof tops and about 17 degrees! Then their saying we could get up to 2″ of by in the morning, hopefully it will miss us! It’s been one tough and long winter. Dropped by Kroger to pick up a couple of items for dinner tonight and then stopped by the bank for Mom. Then home to dust, vacuum, and clean the freezer. I don’t mind dusting but running the vacuum from a wheel chair is a pain. Cleared the freezer of a few outdated items, had to make some room for some of the Lake Okeechobee Crappie my Aunt is bringing me when they get home from Florida! Love that Crappie. For dinner tonight I prepared a Baked Bone-In Whole Chicken Breast w/ Mashed Potatoes, Shoepeg White Corn in Butter Sauce, and Baked Crescent Rolls.

For the Chicken I used the PERDUE® OVEN READY Whole Seasoned Roaster Bone-In Breast. As it says “Oven Ready’, already seasoned, and little clean-up needed plus their always delicious. To prepare it just preheat the oven to 400ºF. Cut open outer bag and remove Oven Ready Roaster Bone-In Breast, sealed in a cooking bag. Place in a shallow roasting pan, seasoned side up. Cut one small 1″ slit in cooking bag over the breast to vent during cooking. If cooking from Fresh: Place pan with breast (still in cooking bag) on lower shelf of oven and roast for approximately 80-90 minutes, until internal temperature of the breast reaches 180ºF. Comes out piping hot, well seasoned, and delicious! Plenty leftovers for some Chicken Sandwiches for lunch tomorrow.

For one side I prepared some Bob Evans Mashed Potatoes, microwave a total of 6 minutes and their done and just as good as anyone’s homemade Mashed Potatoes. Then I heated up a box of Green Giant Shoepeg White Corn and Butter Sauce. It comes in a microwavable plastic pouch. Just heat 6 minutes and serve. Fantastic Corn side dish and it’s only 110 calories and 19 net carbs per serving (2 servings per box). I also baked up a can of one of my Mom’s favorites for her, Pillsbury Reduced Fat Crescent Rolls. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Another beautiful day out again, clouding up as the day went on though. Possible snow in the morning but with our recent run of sun and higher temps, it shouldn’t stick or cause problems. Don’t forget to move your clocks up an hour tonight before you go to bed, “Spring Forward”. I don’t like moving the clocks up, I’m an early riser so that means it will still be dark out when I get up. I received my order from Wild Idea Buffalo late yesterday afternoon and wasted no time on using one of the items right away! Tonight I prepared Crock Pot Buffalo Back Ribs w/ Applewood Smoked Bacon Potato Casserole and Steam Crisp Sweet Corn Kernels.

 

 

 

Buffalo Back Ribs 005First time using the Wild Idea Buffalo – Buffalo Back Ribs. These were Monster size Ribs with pleanty of meat! I used the recipe that I use when I make the Pork Back Ribs. Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and put each half in a Hefty Gallon Plastic Bag then covered the Ribs in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray. Got the Ribs out of the fridge and the bags, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low, for about 8 hours.

 

 

 
Long up in the afternoon you can start smelling the aroma of the Ribs, intoxicating! After the 8 hours their ready and now for the hard part of cooking them, getting them out whole without breaking them up! Their that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For all of us JB’s Fat Boy Sauces and Rubs can’t be beat. Ribs are incredible anytime, but the Wild Idea Buffalo Back Ribs take it to another level! Very meaty with that delicious Sweet and Wild Buffalo taste! I’ll have to get some more and grill them later this Spring. As usual I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot no clean-up. Just wipe it down and store it for the next time.

 

 

 
For one side I prepared Idahoan Applewood Smoked Bacon Homestyle Casserole. Second time I tried the Idahoan Applewood Smoked Bacon Homestyle Casserole. Like the other Idahoan dishes their a breeze to prepare and a delicious Potato Dish. And like the others this turned out fantastic! Very well seasoned, and you can taste that Applewood bacon flavor. Then I also heated up a can of Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn. To me it’s one of the best canned Corn there is. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Idahoan Applewood Smoked Bacon Homestyle Casserole
The saying is “everything is better with bacon” and we couldn’t agree more. That’s why we incorporated Applewood Smoked Bacon in with our rich cheesy sauce for this homestyle casserole that is sure to become a family favorite.

Oven Preparation
Preheat oven to 450°F. Combine potatoes and sauce mix in 1 1⁄2-quart baking dish.
Stir in 1 1/2 cups boiling water, 1/2 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
Bake uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling). Remove from oven and let stand a few minutes before serving.
Baking Notes: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min.
Stove Top Preparation
Heat potatoes and sauce mix, 1 1/2 cups hot water, 1/2 cup milk, and 1 1/2 Tbsp. margarine or butter to boil in 2-quart saucepan over high heat, stirring occasionally. Watch carefully to avoid boilover.
Reduce heat, then cover and simmer 15 minutes, stirring occasionally, until potatoes are tender and sauce reaches desired consistency (sauce will thicken slightly when cooling).
Remove from heat and let stand a few minutes before serving.

Another sunny but frigid day out again, minus 3 with the wind chill. Got out this afternoon and finished clearing the driveway again. From that to, I went to the bank, post office, and stopped by Walmart to pick up a few items and a prescription. For dinner prepared the Jennie – O Seasoned Turkey Breast Steak. Tonight I prepared a Seasoned Turkey Breast Steak w/ Steam Crisp Sweet Corn Kernels, Mashed Potatoes, and Baked French Bread.

I came across the Jennie – O Turkey Breast Steak at Walmart a while back, and been using regular ever since! It comes Seasoned and it’s only 130 calories and 3 carbs per serving. You can prepare it several ways, I pan fried mine. To prepare it just preheat a large skillet over medium heat, spray it with nonstick spray. Cook the steaks, turning 2-3 times until meat thermometer inserted into thickest portion of meat reached 165°F, approximately 19-21 minutes. Covered with lid for the last 5 minutes of cooking. Remove from stove top, cover, and let rest for 5-10 minutes before slicing. Then you have a fine and tasty Turkey Breast Steak! As usual it’s another winner from Jennie – O! It was well seasoned, I did add a couple of shakes of Sea Salt while it was cooking.

 

 

 
For one side dish I heated up a can of Green Giant Steam Crisp Super Sweet Yellow and White Kernel Corn, my favorite canned Corn. Then I tried a new Mashed Potato, Betty Crocker Creamy Buttery Mashed Potatoes. Comes in a microwavable container, just add water and heat. It came out very good. I normally buy the Idahoan Mashed Potatoes but Walmart had the Betty Crocker ones on sale so I went with that. Then I baked a loaf of Pillsbury Rustic French Bread. Lightly brushed the top of the loaf with Extra Virgin Olive Oil and sprinkled Sesame Seeds on top before baking. For dessert tonight a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Long day today, not a lot going on. Tidy up the computer, deleting old files and running a check-up and that was about it for the day. It’s been in the low 30′s with rain on and off all day. For dinner tonight I prepared a Baked Bone-In Whole Chicken Breast w/ Cauliflower in a Cheese Sauce and Cut Green Beans w/ Potatoes.

I really like using the Del Monte Cut Green Beans and New Potatoes, contains 2 of my favorite vegetables (Green Beans and Potatoes). For another side I heated up a package of Green Giant Cauliflower & Cheese Sauce. I love this Green Giant Cauliflower & Cheese Sauce! It comes frozen and in a microwavable bag. Just make a small slit in the bag and heat on high for 5 1/2 minutes. The Cauliflower comes out crisp and with the Cheese Sauce added delicious. For dessert/snack later a couple of slices of Sargento Ultra Thin Colby Longhorn Cheese, a few slices of Hormel Turkey Pepperoni, and Ritz Whole Grain Crackers.

Today’s Menu: 8oz. Buffalo Terres Major Filet w/ Sauteed Mushrooms, Roasted Fingerling Potatoes, and Cauliflower with Cheese Sauce

Finally a break in the frigid temps! It’s been below zero for a few days and today the high was in the 20′s, beats minus 30! Helped getting the drive-way snow and ice-free and then ran a couple of errands for Mom. For dinner I prepared an 8oz. Buffalo Terres Major Filet w/ Sauteed Mushrooms, Roasted Fingerling Potatoes, and Cauliflower with Cheese Sauce.

 

 

 
This is always the tenderest cut of Buffalo Steak I can find, and one of the most delicious cuts also! I pan fried it in Canola Oil about 4 minutes per side, which gives you a perfect medium rare! The steak is so tender with just an incredible flavor. As with all the Wild Idea Buffalo cuts it has a slight sweet taste and so tender a knife isn’t really needed! I topped it with some Sauteed Mushrooms. I’ve been using Green Giant Sliced Mushrooms. Really like these, nice taste and keeps so good in a jar. I sautéed them in Extra Virgin olive Oil and a pat of I Can’t Believe It’s not Butter and seasoned with Sea Salt, Ground Roasted Cumin, Parsley Flakes, and Dried Thyme.

 

 

 

For one side dish I sliced up some Fingerling Potatoes. Seasoned them with a pinch of Dill, Parsley Flakes, Sea Salt, and Pepper. I first washed them up, then sliced them, a light rub of Extra Virgin Olive Oil, and then seasoned them. Preheated the oven on 425 degrees and put them on a small cookie sheet pan and baked for about 25 minutes. I also heated up a box of Green Giant Cauliflower & Cheese Sauce, I love this Green Giant Cauliflower & Cheese Sauce! It comes frozen and in a microwavable bag. Just make a small slit in the bag and heat on high for 5 1/2 minutes. The Cauliflower comes out crisp and with the Cheese Sauce added delicious. I left the product description at the end of the post. I also had a slice of Klosterman Wheat Bread and a Diet Caffeine Free Diet Coke to drink. For dessert later a Del Monte No Sugar Peach Chunk Cup.

Today’s Menu: Lemon-Baked Cod w/ Cauliflower with Cheese, Green Beans, and Baked French Bread

Well we’ve really been blessed with a lot of beautiful days out this Autumn and today was no exception! Sunny and in the low 50′s. Went out early to pick up a few things at the store and then home to do some yard work, that I was able to do. I also took apart the old gas grill. We had since about 2002 so it served it’s purpose. It was lot easier taking apart than it was putting it together! For dinner tonight, Lemon-Baked Cod w/ Cauliflower with Cheese, Green Beans, and Baked French Bread.

 

 

 

Picked up some beautiful Cod Fillets at Kroger this morning. So I pulled out a favorite Cod recipe of mine; Lemon-Baked Cod . Cod is such a mild Fish and meant for baking. If you like Cod you’ll love this recipe. You’ll need; 1 lb Cod Fish Fillets, 1/4 cup Blue Bonnet Light Butter, melted, 2 tablespoons Lemon Juice, 1/4 cup all-purpose Flour, 1/2 teaspoon Morton’s Light Salt, 1/8 teaspoon White Pepper, and Paprika. To prepare it mix butter and lemon juice in a bowl. Then in another bowl, mix flour, salt and white pepper. Dip the fish into butter mixture; coat fish with flour mixture and place fish in ungreased square baking dish, 8x8x2 inches. Pour remaining butter mixture over fish; sprinkle with paprika ( You can also sprinkle a bit of Bread Crumbs on it also to give it a bit of a crust topping). Cook uncovered in 350 degree oven until fish flakes easily with fork, 25-30 minutes. Garnish with parsley sprigs and lemon slices if desired. The Cod has such a great flavor to it from the Lemon, Butter, and spices! Had some leftover so I’ll make a sandwich with it for lunch tomorrow.

 

 

 

For a side dish I heated up some Green Giant Cauliflower and Cheese Sauce. I’m not a huge fan of Cauliflower but I love it in this Cheese Sauce from Green Giant. It comes frozen in a box with about 3 servings per container. To prepare it just make a small slit in the plastic bag and microwave it for 4-5 minutes. The Cheese Sauce is fantastic on the Cauliflower and it’s only 50 calories and 5 net carbs per serving! i also heated up a small can of Walmart Brand of Cut Green Beans and Baked a loaf of Pillsbury Simply Rustic French Bread. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Ingredients:
1 lb Cod Fish Fillets
1/4 cup I Can’t Believe It’s Not Butter, melted
2 tablespoons Lemon Juice
1/4 cup all-purpose Flour
1/2 teaspoon Morton’s Light Salt
1/8 teaspoon White Pepper
Paprika

 

Directions:
*If fish fillets are large, cut into serving pieces.
*Mix butter and lemon juice.
*In another bowl, mix flour, salt and white pepper.
*Dip fish into butter mixture; coat fish with flour mixture.
*Place fish in ungreased square baking dish, 8x8x2 inches.
*Pour remaining butter mixture over fish; sprinkle with paprika.

It was one of those nights and days, dealing with the painful Phantom Pains! Oh how I wish they would find a cure or the reasons these exist for amputees. But being an amputee I just have to deal with it but it’s so darn aggravating and painful. For dinner I went to the local Kroger and picked up a Savory Roasted Chicken. I prepared a Roasted Chicken w/ Stuffing, Garlic and Herb Hash Browns, and Corn on the Cob.

 

 

I had planned on Roasting a Chicken myself but with dealing with the Phantom Pains it was the easier, the better! t o prepare the Chicken I just reheated it in the oven on 325 degrees for 30 minutes. It’s hard to beat these for not only taste but convince also.

For side dishes I prepared a box of Stove Top Lower Sodium Chicken Stuffing Mix. Stove Top has several different kinds but the Chicken is my favorite. I never was a Stuffing fan until this past year, and now I love it. I also prepared some of Simply Potatoes Garlic and Herb Hash Browns and boiled a couple of ears of Green Giant Mini Ears of Sweet Corn. If you like Sweet Corn and never tried the Green Giant frozen Ears of Corn give them a try! Every bit as good as fresh and some of the sweeter Corn I’ve ever had. For dessert/snack tonight a 100 Calorie Mini Bag of Jolly Time Pop Corn and a night of the new Survivor Show.

Whew-whee it’s humid out! Really bad out. My parents went to a Church Picnic and it was outdoors at a local Park. They lasted about an hour before they packed up and came back home. Me I opted to stay in where the air conditioner was feeling real good! For dinner I prepared a Buffalo Terres Major Filet w/ Sauteed Mushrooms, Boiled Corn on the Cob and a Baked Potato.

 
I used another of the Wild Idea Buffalo 8oz. Buffalo Terres Major Filets. Beyond any doubts one of the most tender cuts of any steak, Beef or Buffalo, I’ve ever had. I didn’t even attempt to fire the grill up so I pan fried it in Canola Oil. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I fried it 4 minutes on one side and about 3 minutes on the other side, it gets done very quickly because it’s so lean. The Filet came out medium rare, moist and just full of flavor! I topped it with Sauteed Baby Bella Mushrooms.

 
For side dishes I prepared 2 Mini Ears of Green Giant Corn. I keep this in stock in my freezer now. Never goes bad, stores very easy, and prepares in 10 minutes. If you like Sweet Corn on the Cob you’ll have to try this out. I also had a Baked Potato that I topped with Sea Salt, Ground Black Pepper, and I Can’t Believe It’s Not Butter. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice cream topped with Mango Chunks.

Today’s Menu: Bison Smoked Cheddar Burger w/ Green Giant Green Beans w/ Almonds and Mozzarella Cheese Stixs

It was freezer cleaning floaters day around here to day as we cleaned out the refrigerator’s freezer and my Mom’s stand up freezer today. So for dinner it was a Potluck Dinner of the odds and ends we found floating in the freezers. You know how easy it is to let leftovers and half packages of different items gradually get pushed back to the back of your freezer and then wonder how come you don’t have any room in your freezer! My Mom prepared her and my Dads Potluck Dinner and I prepared mine. I had Bison Smoked Cheddar Burger w/ Green Giant Green Beans w/ Almonds with a appetizer of baked Mozzarella Cheese Sticks.

I had a Wild Idea Buffalo 1/4 lb. Bison Burger. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I pan fried it in Extra Virgin Olive Oil about 3 minutes per side. It fried up perfectly! I topped it with a slice of Bordon’s Smoked Cheddar Cheese and served it on a Healthy Life Whole Grain Bun. I love Bison meat over Beef and Wild Idea is even tastier than normal Bison. It’s got that slight taste of Wild game and a little hint of sweet. Wild Idea Buffalo is one of the best I’ve had. Looking forward to trying their other cuts of Buffalo.

For sides I had an appetizer of baked Alexia Mozzarella Sticks and a single serving of Green Giant Green Beans w/ Almonds. I had enough of the Alexia Mozzarella Sticks leftover for everyone to have an appetizer. The Green Giant Green Beans come frozen in a microwavable pouch. Just heat for 3 minutes and it’s ready. Sometimes a freezer Potluck meal is the best! For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.
