With Dad in rehab and Mom staying there the biggest part of the day I’ve been taking over all the daily house work, still looking for an
easier way to vacuum while in a wheelchair! I’ve scanned the net but nothing out there. As hey say you gotta do what you have to do! Anyway for dinner I prepared Velveeta/Kraft Cheesy Skillets Dinner Chili Cheese Mac, using Jennie – O Extra Lean Ground Turkey and added 1 can of Joan of Arc Light Red Kidney Beans. This is has become one of my favorite comfort foods. 1 pan so easy clean up, has, cheese, pasta, and for a meat it has ground turkey, and you can add a can of kidney beans to make it that much heartier!
As in all the Chessy Skillet Dinners the kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1 lb. of Ground Turkey, and 1 can of Joan of Arc Light Red Kidney Beans. I used Jennie – O Extra Lean Ground Turkey. Using the Extra Lean Ground Turkey instead of the Ground Beef you can lower the calorie count by anywhere from 60 – 80 calories! As I browned the Turkey I added Sea Salt, Pepper, and Ground Smoked Cumin for seasoning. It’s ready in about 10 minutes. I then add 2 cups of water, the seasoning and pasta. Simmer for 10 – 12 minutes and add the Velveeta Cheese and your ready for dinner. I’ll leave the instructions at the end of the post. It’s 380 calories and 28 carbs but you can lower the calorie count by using the Ground Turkey as stated above. The Ultimate Cheeseburger Dinner is very good but i think this is my new favorite. I really like the Chili Seasoning! Another one pan quick, easy, and delicious Velveeta/Kraft Dinner! I also had a couple of slices of Aunt Millie’s Light Whole Grain Bread. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Ingredients:
* 1 LB. Ground Beef or Ground Turkey (Extra Lean)
* Sea Salt, Pepper, Cilantro, Ground Smoked Cumin to taste; Optional
* 2 Cups Water
* 1 Velveeta Cheesy Skillets Dinner Kit/Chili Cheese Mac
Instructions:
* Brown and season 1 LB. Ground Turkey in large skillet. Drain
* Add 2 cups water, seasoning and pasta. Bring to a boil. Reduce Heat.
* Cover, Simmer and stir often until most of water is gone about 11-13 minutes. Remove from heat.
* Add Cheese from Velveeta Cheese Pouch. Stir in Cheese Sauce and serve

Come on warm Spring time weather! Beautiful sunny but cool day out today but as usual starting tomorrow and going through part of Monday SNOW! How much, I’ve heard anywhere from 3″ to 8″ inches. Come on Mother Nature show us a little love! Anyway for dinner I prepared Velveeta/Kraft Cheesy Skillets Dinner Chili Cheese Mac, using Jennie – O Extra Lean Ground Turkey and added 1 can of Joan of Arc Light Red Kidney Beans.

Went to Jungle Jim’s Market this morning, which is always an experience in grocery shopping! You could spend hours in the Deli and Produce departments alone. Stocked up on Produce and some Seafood items. For dinner I prepared a new one from the Velveeta/Kraft Cheesy Skillets Dinners, Chili Cheese Mac.
I’ve tried the Ultimate Cheeseburger numerous times so I thought I would give the Chili Cheese Mac a try. The dinner kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. Today’s Menu: Smoked Cheddar Buffalo Burger w/ Side Salad and Velveeta Shells and Cheese
Not much at all going on around here today. The weather started out bad with freezing rain but it warmed up to about 40 degrees but cloudy. For dinner tonight I prepared another of those delicious Wild Idea Buffalo 1/4 lb. Burgers. So for dinner tonight I prepared a Smoked Cheddar Buffalo Burger w/ Side Salad and Velveeta Shells and Cheese.
I seasoned it with Sea Salt and Ground Black Pepper and pan frying it in a tablespoon of Canola Oil. I fried it about 3 – 3 1/2 minutes per side. Served it on a Aunt Millie’s Light Bun and topped with a slice of Borden Smoked Cheddar. As always these Burgers just drip of delicious! I’ll be ordering more of these real soon from Wild Idea Buffalo.
For sides I prepared a single serving of Del Monte Cut Green Beans and I also microwaved a single serving of Velveeta/Kraft Shells & Cheese (made with 2% milk). And along with that a made a small Side Salad consisting of Ice Berg Lettuce, sliced Baby Bella Mushrooms, a sliced Radish, and Kraft Light Creamy French Dressing. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Dole Chef Ready Diced Mango and Pineapple.

Want an easy, filling, comfort dinner tonight, I have one for you and it’s one those pot meals! Easy to make and easy to clean up. It’s the Kraft/Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac, But mine is Turkey Mac. Using Ground turkey its a little healthier and less calories and carbs. So for dinner tonight I prepared Kraft/Velveeta Cheesy Skillets Dinner Kit/Ultimate Turkey and Cheese Mac with Harvest Grain Bread.
I used Kraft/Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac. The dinner kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1 lb. of Ground Turkey. I used Jennie – O Extra Lean Ground Turkey. Using the Extra Lean Ground Turkey instead of the Ground Beef you can lower the calorie count by anywhere from 60 – 80 calories! Today’s Menu: Fried Catfish Nuggets w/ Hash Browns and Velveeta Shells and Cheese
It was Catfish Nuggets for dinner tonight. I used 2 pie pans to prepare the nuggets filling one with EggBeater’s seasoned with Paprika and in the other Italian Style Bread Crumbs. I seasoned the Catfish with McCormick Grinder Sea Salt and Black Peppercorn and then dipped each one in the Egg Beater’s, making sure each was well coated. Shaking off the excess Egg Beater I then rolled them in the Progresso Italian Style Bread Crumbs. I fried them in Canola Oil on medium heat about 4 – 5 minutes, turning once. They came up golden brown and delicious! Catfish fries up so good. Baking Fish is a lot healthier but Catfish is a Fish that tastes better fried. i als made a Remoulade Sauce. Made with Reduced Fat Mayo, Chili Sauce, and Horseradish Sauce along with some spices. I left the full recipe at the end of the post.
For sides I had Simply Potatoes Hash Browns and I also prepared an individual serving of Velveeta 2% Shells and Cheese. Easy to prepare, microwave 3 1/2 minutes, and just as good as fixing it from a box. For dessert later a Skinny Cow Frozen Ice cream Truffle Bar.
Remoulade Sauce
Ingredients
1 Cup Light Mayonnaise
2 tbsp Chili Sauce
1 tsp Garlic Salt
tsp Curry Powder, or to taste
1 Tbsp Hot Prepared Horseradish
1 tsp Dry Mustard
*Add all ingredients to jar or container
*Mix until well blended
*Refrigerate overnight or at least 4 hours before serving.

It was a very sad day today as my Aunt was taken to the local Hospice Center 2 days ago and I went today to visit her. Her health is rapidly failing and it’s just so sad to see her like that. She was like a second Mother to me. If she can’t recover I just pray she goes peacefully.
My parents were going to spend the day with my Aunt so I was cooking for 1 tonight. So tonight I prepared Fried Haddock w/ Rotini & Cheese, Steamed Asparagus, and Whole Grain Bread. I had the Haddock frozen from a while back. I had purchased several fillets at Kroger while they were on sale. I love Haddock you can prepare it so many different ways and it comes out delicious any way you choose to prepare it. I seasoned my fillets with McCormick Grinder Sea Salt and Black Peppercorn. I rolled the fillets in Progresso Italian Style Bread Crumbs and pan fried it in Canola Oil about 3 minutes per side. It came out golden brown, moist and delicious!
For side dishes I had Velveeta Whole grain Rotini & Cheese, Steamed Asparagus, and Healthy Life Whole Grain Bread. The Rotini &
Cheese is higher in calories and carbs than I normally like but it’s been a while since I’ve had any and the Haddock, Asparagus, and Whole Grain Bread are all lower in calories and carbs so I can work the Rotini in without it raising either too bad. I left the product description at the end of the post. As I said I also has Steamed Asparagus. I’ve been buying this from Kroger for a while now. It’s the best packaged Asparagus that I’ve had. It comes in it’s own steamable bag so you just puncture the bag in 3 places and microwave it for 2 minutes. I also had 2 slices of Healthy Life Whole Grain Bread. For dessert later a 100 Calorie Mini Bag of Jolly Time pop Corn.
Kraft Whole Grain Velveeta Rotini & Cheese

Today’s Menu: Fried Yellow Lake Perch w/ Mac & Cheese, Green Beans and Cornbread
I’m using the last of my Yellow Lake Perch I had frozen. It’s time to make another trip to Meijer to stock up on the Yellow Lake Perch. I love Fish and all Sea Food. I washed the Perch and patted them dry then seasoned them with Sea Salt and Ground Black Pepper. The filets are small and I cut them in half. I then took a Ziplock Bag and put a 1/2 cup of Progresso Italian Style Breadcrumbs in it and added my filets and shook the bag until the filets were coated. I pan fried the fillets in Extra Virgin Olive Oil, about 2 1/2 minutes per side. As I said earlier the fillets were small and not very thick so they fried up real quick. They came out golden and delicious!
For side dishes I had Mac & Cheese, Green Beans and Cornbread.I microwaved a single serving of Velveeta/Kraft Shells & Cheese (made with 2% milk). I also heated a single serving of Del Monte Cut Green Beans and made a small cast iron skillet of Cornbread! Cornbread is the perfect bread with fish. I used Martha White Corn Meal Mix. It’s easy to fix, the instructions are on the bag. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. For dessert later a bowl of Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt.
