Grilled Ham and Cheese Sandwich w/ Chunky Baked Potato & Cheddar and Bacon Bits Soup

Today’s Menu: Grilled Ham and Cheese Sandwich w/ Chunky Baked Potato & Cheddar and Bacon Bits Soup
Another one of those day’s where I planned on a bigger meal but was running late helping my Mom out, still has a bad case of the flu. Thankfully I have a full freezer and pantry where I can make last minute dinners.
I went with a Grilled Ham and Cheese Sandwich w/ Chunky Baked Potato & Bacon Bits Soup. Always a hearty, quick and easy dinner! I used Oscar Mayer Carver Board Ham, Sargento Ultra Thin Colby – Jack Cheese, Litehouse Lite Thousand Island Dressing, and Healthy Life Whole Grain Bread to make my sandwich with. Thousand Island Dressing is a great way to liven up any sandwich, especially when you can find a great tasting Lite or Reduced Fat one. The Litehouse Lite is only 70 calories and 4 carbs per serving. To make the sandwich I butter both pieces of the bread with I Can’t Belive It’s Not Butter and then on the unbuttered sides I spread the Thousand Island Dressing, then layer the Ham, and then the Cheese. I heated a small frying pan spraying it with Pam Spray and melting about a 1/2 pat of I Can’t.. butter in the pan. When the butter stops bubbling I add my sandwich. I grill it on both sides until they are golden brown and the cheese is just starting to melt. A Grilled Cheese is good anytime of the day but one with added Ham and the Thousand Island Dressing makes it special!

Along with the sandwich I had a bowl of Campbell’s Chunky Baked Potato with Cheddar and Bacon Bits Soup, 200 calories and 24 carbs per serving. One of Campbell’s Better Soups. Very good tasty, thick and hearty Soup. I topped with a some Kraft 2% Shredded Sharp Cheddar Cheese. A warm and hearty last minute meal! For dessert later a Jello Sugarless Dark Cherry Jello.

A beautiful morning is slowly turning to a humid afternoon outside. Prepared a light lunch, Ham & Turkey on Whole Wheat Sandwich. I
used a 1/2 serving of Oscar Mayer Carverboard Sliced Turkey along with a 1/2 serving of Kroger Brand Private Selection Sliced Ham. Topped with Lettuce, a slice of Private Selection Buffalo Monterey/Jack Cheese, and French’s Yellow Mustard. Served it all on Healthy Life Whole Grain Bread. Big sandwich, few calories and carbs. About 220 calories and 18 carbs.
Lunch Time with a Panini Sandwich!

An easy made and healthy lunch. Heated up my Panini Grill and made a Ham & Turkey and Swiss Panini. I used a half serving Oscar Mayer
Carver Board Sliced Turkey Breast, a full serving of thin sliced Ham, a slice of Sargento Ultra Thin Swiss Cheese, and a Flatout Whole Wheat Flatbread. I also added French’s Mustard to top it. All for under 250 calories and made in about 15 minutes!

It was comfort food at for dinner tonight! Grilled Ham & Salame and Cheese and a bowl of Tomato Soup! For my sandwich I used Oscar
Mayer Carver Board Ham and for the Cheese something new, Buffalo Monterey Jack! I ran across it at Kroger and it’s a Kroger Brand; Private Selection. It sounded good and tasted even better! It’s got a hint of the Buffalo Heat and coupled with the Monterey/Jack it’s fantastic. Topped it with some Kraft Reduced Fat Mayo w/ Olive Oil. I served it on Healthy Life Whole Grain Bread. I buttered the outside of each slice of bread with I Can’t Believe It’s Not Butter and grilled the sandwich browning both sides. I Love all the different types of Grilled Cheese and the different ways and toppings are endless. The ham, salame, and Buffalo Mont./Jack is a great trio!
For the soup I used Amy’s Organic Light in Sodium – Cream of Tomato Soup which has been my Tomato Soup of choice lately. Not only great tasting but it’s only 110 calories and 19 carbs! I left the Soup info and description at the end of the post. For dessert later a Jello Sugar free Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Grilled Turkey and Swiss Cheese Sandwich w/ Tomato Soup
A very simple but hearty dinner tonight. I had Grilled Turkey and Swiss Cheese Sandwich w/ Tomato Soup. I used Aunt Millie’s Whole
grain Bread topped with Oscar Mayer Carver Board Sliced Turkey, Sargento Ultra Thin Swiss Cheese, Amy’s Organic Low Fat Cream of Tomato Soup. To grill the bread I used I Can’t Believe It’s Not Butter. Assembled the sandwich with a slice of Swiss, then Turkey, Kraft Reduced Fat w/ Olive Oil, and another slice of Swiss. Buttered the outside of the bread on bottom and top and grilled it in a small skillet till the cheese was starting to melt and bread was browned, flipped the sandwich one time.
The soup was Amy’s Organic Low Fat Cream of Tomato. Love this soup! Great creamy flavor and only110 calories and 19 carbs. For dessert Breyer’s Carb Smart Vanilla Ice Cream topped with Sliced Peaches. The Peaches are from South Carolina that we had frozen. These have got to be juciest and most delicious Peaches i have ever had! We only have 1 bag left in the freezer so I’m going to enjoy these before their gone.

New England Clam Chowder w/ Oyster Crackers and a Hot Hammy Cheese

Today’s Menu: New England Clam Chowder w/ Oyster Crackers and a Hot Hammy Cheese

A simple but flat out lip smacking good dinner tonight! New England Clam Chowder w/ Oyster Crackers and a Hot Hammy Cheese, Sounds good but tasted even better! My Clam Chowder wasn’t home made but was every bit as good. I used Campbell’s Chunky New England Clam Chowder with Hearty Potatoes. If you have a craving for Clam Chowder but don’t have the time or just want a simple way to prepare it give Campbells a try. Great taste, plenty of Clams and Potatoes, and in a nice thick stock. It has 210 calories and 23 carbs per serving. I topped with just a sprinkle of fresh grated Dutch Smoked Gouda and some Skyline brand Oyster Crackers, I could make a meal out of the Cheese and Crackers!
I also prepared a Hot Hammy and Cheese Sandwich. I used Oscar Mayer Carver Board Ham, Sargento Ultra Light Swiss Cheese, and Healthy Life Whole Grain English Muffin. In a small skillet I heated the slices of Ham and while that was heating I split the Muffin in half and toasted it in the toaster. To assemble just put the Ham on one of the Muffin halves and top the Ham with the Sargento Swiss and add the other half of the Muffin, the Swiss will start melting immediately. A simple but quite hearty dinner! For dessert later a fresh baked Pillsbury Apple Turnover, a nice way to end the day.

It Was Early Morning Yesterday I Was Up Before The Dawn! Rocking to some classic Super Tramp this morning while making breakfast.
I’m not sure if it was my attempts at singing or the smell of crisp Turkey Bacon frying that woke everyone up this morning!
I started my day off with a delicious, healthy, and low carb breakfast. I made Pancakes using New Hope Mills Pancake Mix, only 200 calories and 6 carbs per serving. A serving is a 1/2 cup of pancake mix which you can make into 3 – 4 pancakes. I topped it with I Can’t Believe It’s Not Butter and Joseph’s Sugar Free Maple Flavored Syrup. The Syrup is 35 calories and 9 carbs per serving, a serving is 1/4 cup. I had a side of 3 strips of Oscar Mayer Low Sodium Turkey Bacon which is 35 calories per slice. A great and healthy way to start the day!

Today’s Menu: Whole Wheat Ham, Turkey, and Cheese Panini Wraps w/ Crinkle Fries
Light, simple, and delicious, that was dinner! I had Whole Wheat Ham, Turkey, and Cheese Panini Wraps. I used Hungry Girl Flatout Flatbread made with 100% Whole Wheat w/ Flax. If you haven’t tried these your missing out. Always fresh and only 90 calories and 15 carbs. Using the Flatbread I topped it with Oscar Mayer Carver Board Turkey, Kroger brand Hickory Sliced Ham, and Sargento’s Reduced Fat Colby/Jack Cheese. I started using Sargento’s recently. It’s great tasting Cheese and only 50 calories and 1 carb per slice! After assembling I folded the Wrap making it into a Sandwich and put it in the Panini Press for 4 minutes. It came out toasted and the Cheese just melting, love that Press. For a side I had Ore Ida Crinkle Fries, 1/2 Serving. The picture I’m showing is a full serving of Fries, the meal was for 2. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free Topping, about 80 calories total.

Today’s Menu: Smoked Turkey, Prosciutto, Smoked Gouda Cheese on Whole Grain Bread w/ Baked Steak Fries

Light, filling and easy to make. Was outside most of the day and wanted something light. I used Oscar Mayer Smoked Turkey Breast and Boar’s Head Prosciutto. Topped with a slice of Smoked Gouda Cheese,Kraft Reduced Fat Mayo w/ Olive Oil and French’s Spicy Brown Mustard, and Lettuce. Served on Healthy Life Whole Grain Bread. As a side I had Ore – Ida Baked Steak Fries. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Del Monte Sugarless Slicec Peaches.
