Today’s Menu: Cajun Spiced Seared Scallops w/ Brown Rice, Parmesan and Herb Red Potatoes, and Baked Artisan Multi Grain Loaf
They confirmed today my Dad is coming home Saturday from the rehab center! He’s been gone for a while now it’s going to be nice to have him home. So for dinner tonight while at Kroger yesterday I purchased some Bay Scallops, which I haven’t had in years! For Dinner; Cajun Spiced Seared Scallops w/ Brown Rice, Parmesan and Herb Red Potatoes, and Baked Artisan Multi Grain Loaf.
To prepare it I’ll need; 1 pound of Bay Sea Scallops, 2 teaspoons Cajun Seasoning, 2 teaspoons Extra Virgin Olive Oil, 1/2 teaspoon Sea
Salt, Dash freshly Ground Peppercorn, 1 tablespoon Extra Virgin Olive Oil, and 2 teaspoons unsalted Butter. To prepare them is quick and easy first in a food storage bag, toss the scallops gently with the Zatarain’s Cajun Seasoning, 2 teaspoons olive oil, salt, and pepper. Refrigerate for about 1 hour. Heat the 1 tablespoon olive oil and 2 teaspoons of butter in a large skillet over high heat. With tongs, arrange the scallops in the hot fat and cook for about 2 to 3 minutes on each side, or until nicely browned and your done! The Zatarain’s Cajun Seasoning is fantastic on the Scallops, nice heat and seasoning but not overpowering where you can’t enjoy the flavor of the Bay Scallops.
For side dishes I prepared some Uncle Ben’s Natural Whole Grain Brown Rice, not much to prepare it was the microwave single serving of Rice. The quick but still delicious way for Rice. I also prepared some more of the Idahoan Parmesan and Herb Red Potatoes. Second time I’ve had these and love them! I also baked up some more of the La Brea Bakery Take and Bake Artisan Multi Grain Loaf. I’ll have to have the Bay Scallops more often! The Scallops paired with the Parm Red Potatoes and Brown Rice is perfect! For dessert later a Jello Sugar Free Double Chocolate Pudding.
Cajun Spiced Seared Scallops
Ingredients:
1 pound Bay Scallops, about 18 to 20
2 teaspoons Cajun Seasoning
2 teaspoons Extra Virgin Olive Oil
1/2 teaspoon Sea Salt
Dash freshly ground Peppercorn

1 tablespoon Extara Virgin Olive Oil
2 teaspoons unsalted Butter
Preparation:

Add 3/4 cup milk and stir to combine.
Bake uncovered at 450°F for 20 minutes. Sprinkle Parmesan topping on top of potatoes and bake another 5 min.
Let stand 5 minutes, then serve.

My Dad’s in a rehab center that’s on the opposite side of the County where we live and the drive is starting to get to the both of us. We’re
going to try to have moved to a closer rehab center, if we can find one that’s has an opening. It’s incredible how many people are in these centers in the area. Hopefully we can find one soon. For dinner Mom stayed and had dinner with Dad at the center and I had a Grilled 8 oz. Buffalo Top Sirloin w/ Sauteed Mushrooms, Baked Steakhouse Scalloped Red Potatoes, and a side of Italian Pasta Salad.
I used my last Wild Idea Buffalo Top Sirloin Steak, time to order more! I rubbed a little Extra Virgin Olive Oil on it, helps it not to stick to grill grate, and seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I set the timer for 4 minutes and then flipped it over for another 3 1/2 minutes for a beautiful and delicious medium rare. As I’ve said many times, “This is the best tasting Steak, Buffalo or Beef, there is!” It’s all on how their raised, free range and grass-fed. I topped it with Sauteed Baby Bella Mushrooms.
For side dishes I reheated the Baked Steakhouse Scalloped Red Potatoes I had leftover from the other night, another new favorite! Along with a small side of Italian Pasta Salad that I prepared last night. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Spent the afternoon at the rehab center with my Dad. Yesterday was a rough day for him, he just wasn’t feeling up to par. Today was a
much better day for him. He felt good and we were able to get him outside a bit, which always helps! I had some more of the Haddock frozen and I had it thawing in the fridge overnight. So for dinner tonight I prepared; Baked Steakhouse Scalloped Red Potatoes, Green Beans, along with sliced Whole Grain Bread.
I used the Zatarain’s Fish Fri Lemon Pepper Seafood Breading Mix again. I love this breading it’s quickly became my favorite Fish breading. I had the fillet cut into two smaller pieces and rinsed off with water already. I then poured some of the breading mix into a Hefty Zippper Bag and added the Fish shaking it in the bag until it was well covered. I skillet fried it in about a 1/2 inch of Canola Oil until it was golden brown. With this breading the Fish comes out perfect. The crust and the seasoning is meant for Fish!
For side dishes I prepared a new one from Idahoan; Idahoan Steakhouse Scalloped Red Potatoes. I really love using the Idahoan Products, they’re all delicious and so easy to prepare and this new one is no different. Great seasoning and taste and love the added Bacon and Ranch to it. Another great option from Idahoan. I also had a slice of Healthy Life Whole Grain Bread. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice cream topped with fresh Mango slices.

Feeling a lot better today, the coughing has stopped but left me really sore from all the coughing I did over a 24 hour period. Mom is feeling somewhat better but Dad still no change. For dinner my Mom went out and brought her and my Dad back something to eat, neither wanted Fish which is what I’m having. For dinner I prepared; Fried Haddock w/ Baked Cheesy Hash Browns, Sugar Snap Peas, and Baked Sour Dough Bread.
I had went to Kroger early this morning and they had some beautiful Haddock Fillets on sale so I grabbed a Fillet. I wanted to try
something new with it so I also purchased a box of Zatarain’s Fish Fri Lemon Pepper Seafood Breading Mix. To prepare the Haddock I first cut the fillet into smaller pieces and then rinsed them off in cold water, patting dry with a paper towel. I poured some of the breading mix into a Hefty Zippper Bag and added the Fish shaking it in the bag until it was well covered. I skillet fried it in about a 1/2 inch of Canola Oil until it was golden brown. First time I had tried it and loved it! It really gave the Haddock a perfect seasoned crust, I’ll try this other Fish in the future.
For sides I prepared a box of Idahoan Farmhouse Fix’ns Cheesy Hash Browns. Another easy but tasty dish. I left the product description at the end of the post. Also I heated up some Walmart Marketside Sugar Snap Peas and baked a Loaf of Kroger Bakery California Sour Dough Bread. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.
FARMHOUSE FIXNS CHEESY HASH BROWNS
Product Description

Preparation Instruction
Oven Directions

Today’s Menu: Herb Crusted Pork Tenderloin w/ Green Beans, Scalloped Potatoes, and Potato Rolls
Quite a meal tonight, to cap off a beautiful sunny day outside today! I prepared a Herb Crusted Pork Tenderloin w/ Green Beans, Scalloped Potatoes, and Potato Rolls. I used my favorite Pork Roast recipe, the Herb Crusted Pork Tenderloin. I just love the Crust that the Herbs, Garlic, and Olive Oil create on the Roast and the flavor along with keeping it nice juicy on the inside.
To prepare the Herb Crusted Pork Tenderloin I preheated the oven to 450 degrees. Then combined 2 tablespoons olive oil, 4 cloves garlic, minced, 1 teaspoon dried thyme , 1 teaspoon dried basil, 1 teaspoon dried rosemary, along with Sea Salt and Ground Black Pepper for seasoning. Combine all the ingredients except the Salt and Pepper in a bowl and stir until well mixed. You then rub into your Pork Roast which will create the Herb Crust as it bakes. Roast the pork for 30 minutes on 450, then reduce the heat to 425 degrees F and roast for an additional 15 – 20 minutes (time will vary according to the size of the roast). Test for doneness using an instant-read thermometer. When the internal temperature reaches 155 degrees F, remove the roast from the oven. Allow it to sit for about 10 minutes before carving. It will continue to cook while it rests. The Pork comes out perfect! The Herb Crust gives that extra taste to make it one delicious Roast! Love this recipe.
For side dishes tonight we had Green Beans, Idahoan Scalloped Potatoes, and Baked Split Top Potato Rolls. My Mom prepared the Green Beans. She was at Jungle Jim’s Market and they had just put out a large order of Green Beans. She bought a large amount and made a huge pot of them tonight. The first official fresh Green Beans were fantastic! Sometimes early in the year the Green Beans aren’t quite as good as they are later in the year but these were really delicious! The Idahoan Scalloped Potatoes are the easy and quick way for some Scalloped Potatoes. A breeze to make just mix the ingredients and bake at 450 degrees for 25 minutes and you have some delicious Scalloped Potatoes. Plus their only 160 calories and 20 carbs. For dessert later a Healthy Choice Vanilla/Chocolate Swirl Frozen Yogurt.
Herb Crusted Pork Tenderloin
Recipe courtesy Paula Deen, 2007
1 (4-pound) boneless pork loin, with fat left on
1 tablespoon salt
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried thyme or 2 teaspoons minced fresh thyme leaves
1 teaspoon dried basil or 2 teaspoons fresh basil leaves
1 teaspoon dried rosemary or 2 teaspoons minced fresh rosemary
Directions
Preheat oven to 475 degrees F.
Place the pork loin on a rack in a roasting pan. Combine the remaining ingredients in a small bowl. With your fingers, massage the mixture onto the pork loin, covering all of the meat and fat.
Roast the pork for 30 minutes, then reduce the heat to 425 degrees F and roast for an additional 15 – 20 minutes (time will vary according to the size of the roast). BAKE uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
Remove from oven and let stand a few minutes before serving.
BAKING NOTES: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min. To bake potatoes and roast meat at the same time, bake at 375°F for about 45 min; 350°F for about 50 min; or 325°F for about 60 min.

It was a cold but beautiful day out. About 3″ – 4″ of snow on the ground and another 2″ – 4″ due tonight. Our streets were all cleared and dry so it was great to be able to get out for a spin around the neighborhood. I’m blessed with some great neighbors. Not being able to do a lot of things outside around the house, like shoveling snow and such, I never have to worry about it as my neighbors are always there to lend a hand! And really our entire neighborhood is like that, always there to help each other out.
So after spending some time outside today i was ready for a good meal. Tonight I prepared Fried Ocean Perch w/ Loaded Potato Casserole and Cream Style White Corn. I purchased the Ocean perch last week at Meijer Seafood Dept. i love perch whether it’s fresh water or the Seafood variety, which is what I had tonight. To prepare it was very easy. After rinsing it and patting the fillets dry I seasoned them with Sea Salt and Ground Black Pepper. I then pan fried them in Extra Virgin Olive Oil about 3 – 4 minutes per side, until golden brown on all sides. These came out delicious! I made extra so there will be some awesome Fish Sandwiches for lunch tomorrow!
For side dishes to go with the Perch I prepared Idahoan Loaded Potato Homestyle Casserole. I love all the Idahoan Potato Products. A very quick and easy way to prepare some delicious Potato Dishes. I also prepared a single serving can of Del Monte Cream Style Sweet White Corn. For dessert/snack later some Cheese and Turkey Pepperoni Slices on Ritz Whole Grain Crackers. The Cheese is a new one I’m trying, Tilamook Extra Sharp cheddar. I purchased this at a local Super Kroger Cheese Dept. They always have small baskets of different Cheese priced at under $5, that way you can sample them before buying a block of it. I sliced it up earlier and sampled it and it’s one fine Cheddar! My favorites are Extra Sharp Cheese and this one is Extra Sharp. I’ve product info below on Idahoan Products and the Tilamook Cheddar.
