A Perfect Breakfast for Dinner

Today’s Menu: One Egg Sunnyside Up, Turkey Breakfast Patties, Hash Browns, and Toast
I had skimpped on Breakfast the last few mornings, in hurry to get a few things done early. So I was really wanting a good Breakfast so what better time than Dinner Time! I prepared One Egg Sunnyside Up, Turkey Breakfast Patties, Hash Browns, and Toast. This sounds good enough for any meal!
I prepared the Egg and Turkey Patties on a griddle and the Hash Browns in a small skillet. I really like using the griddle when possible. All you have to do is give it a light spray of Pam and your ready to cook. No Oil needed which means less fat and calories. Scrambled Eggs and Sunnyside Up are my favorite ways to prepare Eggs, I went with Sunnyside Up. I used Jennie – O Lean Turkey Breakfast Sausage. Comes in a roll, just slice and form the size of Patties you want. For my Hash Browns I used Simply Potatoes Shredded Hash Browns. Then to top everything off I toasted 2 slices of Healthy Life Whole Grain Bread topped with I Can’t Believe It’s Not Butter. To drink a nice cold glass of 2% Milk. For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn.
Jennie – O Lean Turkey Breakfast Sausage Roll – Mild
Breakfast Sausage Rolls contain less fat than regular pork sausage.
Product Features:
Gluten Free

Cooking Instructions:
SLICE:
Remove casing and slice roll into 1/2 inch thick patties.
TO BAKE:
Preheat oven to 400 °F.
Spray shallow baking pan with nonstick cooking spray.
Place patties in pan.
Bake approximately 20 to 25 minutes.
Always cook to well-done, 165º F. as measured by a meat thermometer.
STOVETOP METHOD:
Spray skillet with nonstick cooking spray.
Preheat skillet over medium-high heat.
Place patties in hot skillet.
Turn occasionally and cook approximately 15 to 17 minutes.
Always cook to well-done, 165º F. as measured by a meat thermometer.

Today’s Menu: Fried Walleye w/ Cheesy Potato Casserole, Green Beans, and Whole Grain Bread
While at Meijer yesterday they had Ocean Perch and walleye both on sale in their Seafood Department. I ended up picking up a couple
of pounds of each. So tonight I went with the Walleye, preparing Fried Walleye w/ Cheesy Potato Casserole, Green Beans, and Whole Grain Bread.
To prepare the Walleye I first rinsed it with water and patting dry with paper towel. Then I seasoned it with Morton’s Lite Salt and Ground Pepper and lightly coated it with Progresso Italian Style Bread Crumbs. I pan fried it in Canola Oil about 3 1/2 minutes per side. As always Walleye frys up to a perfect golden brown and delicious as always also. For side dishes it was leftovers, Green Beans from yesterday’s meal and Ore Ida Cheesy Potato Casserole that I had frozen. I just warmed both up in the microwave and they were ready! I love this Cheesy Potato Casserole! It’s become one of my favorite dishes and the good thing is that it freeze’s up and reheats beautifully. I’ve left the recipe at the bottom of the post. I also had a slice of healthy Life Whole Grain Bread. For dessert/snack tonight some of Newman’s Own Blackbean and Corn Salsa along with Tostito‘s Baked Scoops.
Ore Ida Cheesy Potato Casserole
Ingredients
1 bag Ore-Ida® Country Style Hash Browns
1 can cream of chicken soup
2 cup Sour cream
1/2 teaspoon salt
2 cup cheddar cheese shredded
1/3 cup green onions sliced
1/4 teaspoon black pepper, ground
2 cup corn flakes crushed
1/4 cup butter, melted
Instructions
1. Preheat oven to 350 degrees F. Coat 13×9 baking dish with nonstick cooking spray.
2. In a large bowl, whisk together soup, sour cream, salt and pepper. Stir in cheese, onion and Hash Browns until well mixed. Spoon evenly into baking dish.
3. In a medium bowl, mix together cereal and butter. Sprinkle evenly on top of Hash Brown mixture.
4. Bake uncovered for about 45 minutes, or until hot and bubbly. Allow to rest for 5 minutes before serving. Garnish with additional sliced green onion if desired.
TIP: If desired, substitute condensed cream of chicken soup with condensed cream of turkey soup.

Fried Ham and Sunnyside Up Egg on a Cornbread Waffle w/ Hash Browns

Today’s Menu: Fried Ham and Sunnyside Up Egg on a Cornbread Waffle w/ Hash Browns
For Breakfast, I mean Dinner tonight I went with Fried Ham and Sunnyside Up Egg on a Cornbread Waffle w/ Hash Browns. I had Breakfast for Dinner tonight and it was delicious! I made a Cornbread Waffle using Martha White Self Rising Enriched White Corn Meal Mix. i made the mix just as you would for Cornbread by mixing the following : Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Virgin Olive Oil, 1 3/4 cups Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. I used the Waffle Griddle, just lightly spray the Griddle with Pam Spray. Pre heat it and when ready just add 2 tablespoons of the batter to the center of the Griddle and close the lid. The Waffle is done as the steam starts to stop coming from the Griddle.
For my Waffle toppers and side I had Fried Ham, a Sunny Side Up Egg, and Hash Browns. The Ham was leftover Ham from the Thanksgiving Feast yesterday. I fried the Ham, my Egg, and the Hash Browns on a Flat Top Griddle. It’s always great using the Griddle. All you do is spray it with Pam and you skip on having to use any Oil. Then to assemble this fine dinner I just placed the Waffle on the plate and topped it the Sunny Side Up Egg and Fried Ham. Then had the Hash Browns on the side. Breakfast food is one of the ultimate comfort food’s. This dinner hit the spot as they say. For dessert later a slice of Apple Pie! My Mom made this and she uses Splenda to make it and the taste is incredible!

Today’s Menu: Grouper Sandwich w/ Baked Cheesy Hash Browns and Carrot Slices
I had a fillet of that delicious Gulf Coast Grouper leftover from the other night and I fried it up and had a Grouper Sandwich w/ Baked Cheesy Hash Browns and Carrot Slices for dinner. Simple and easy to make Grouper. I seasoned it with Sea Salt and Ground Black Pepper then rolled it in Progresso Italian Style Bread Crumbs. I pan fried it in Extra Virgin Olive Oil about 3 1/2 minutes on the first side then flipping it over and continued to fry it for 3 minutes. What a fantastic tasting fish! Really no way to describe just how good it is. If you’ve never tried Grouper it’s time!
For sides I prepared Idahoan Farmhouse Fix’ns Cheesy Hash Browns. Another easy but tasty dish. I left the product description at the end of the post. I also had some boiled Carrot slices. For dessert a very special and mouthwatering dessert. My Mom baked an Apple Pie! The good part she used White and Brown Splenda to make it. It’s delicious and it tastes just as good as it would if you used Sugar. Great Job Mom!

FARMHOUSE FIXNS CHEESY HASH BROWNS
Product Description
Idahoan’s Farmhouse Fixns breakfast casseroles are packed with 100% Idaho® potato hash browns and bursting with top-of-the-mornin flavor. Cheesy Hash Browns are a classic farmhouse breakfast side.
Preparation Instruction
Oven Directions
1) COMBINE potatoes and sauce mix in a 1 1/2 quart baking dish.
2) STIR in 1 3/4 cups of boiling water, 1/2 cup of 2% milk and 2 table spoons of margarine or butter.
3) BAKE uncovered for 20 minutes at 450°F.
4) REMOVE from oven and let stand a few minutes before serving.
* If softer casserole is desired, add a little more water or milk.
Stove Top Directions
1) COMBINE potatoes, sauce mix, 1 3/4 cup boiling water, 1/2 cup of 2% milk and 2 tablespoons of margarine or butter in a 2 quart saucepan.
2) STIR well and bring to boil (watch carefully to avoid boil over).
3) REDUCE heat; cover and simmer 15 minutes.

Full House Breakfast!

Woke up starving this morning! Nothing better than a Full House Breakfast to stop that hunger. I prepared some Simply Potatoes Hash Browns. I always like mine golden brown but not crisp or burnt. I then topped them with some fresh grated Smoked Dutch Gouda, I love Gouda on anything! While the Hash Browns were cooking in another skillet I fried 3 slices of Jennie – O Turkey Bacon. I switched
over to Jennie – O Turkey Bacon from Oscar Mayer a while back. Jennie -O fries up a lot crisper and 15 fewer calories for 3 slices. Finally as the hash Browns and Bacon was done I used the Hash Brown skillet to fry an Egg Sunnyside Up. Seasoned with Sea Salt and Ground Black Pepper, I also poured just a bit of Extra Virgin Olive Oil on top of the Yolk. The Olive Oil assures that the Yolk gets done also and provides a great added flavor. While the Egg was finishing I toasted 2 slices of Healthy Life Whole Grain Bread topped with I Can’t Believe It’s Not Butter. Breakfast, Morning Paper, Green Tea, ready for the day!

About 55 degrees and sunny. Started off with a 1 Egg Scrambled Egg, Turkey Sausage, Hash Browns topped with Kraft 2% Shredded Sharp Cheese, and toasted Whole Grain English Muffin. Also a cup of hot brewed Green Tea and Saturday paper. I’ve already got the 4 wheeler out and ready to ride after breakfast. Good Morning!!
Bison Sirloin Steak, Eggs, and Hash Browns – Oh My!

It just felt like the thing to do for dinner tonight, Breakfast! And what a Breakfast, or dinner, it was. I had a Bison Sirloin Steak that I seasoned with McCormick Grinder Steakhouse Seasoning and pan fried in Extra Virgin Olive Oil about 4 minutes per side. I also had a side of J B’s Fat Boy Chipotle Barbeque Sauce to kick it up a bit. I love this sauce it gives you some nice heat but it doesn’t over power or take away from your food’s flavor.
Along with the Steak I had Simply Potatoes Hash Browns that I seasoned with Sea Salt and Ground Black Pepper. I topped them with some freshly grated Smoked Dutch Gouda Cheese, which in my opinion goes well with anything! I also had an Egg that was seasoned with the Sea Salt and Pepper, served Sunny Side Up. To top everything off I had 2 slices of toasted Healthy Life Whole Grain Bread topped with I Can’t Believe It’s Not Butter and a glass of Tropicana Heavy Pulp Orange Juice. For dessert later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream. I had previously made the Quick Bread in a mini loaf pan and had it in the freezer. The Breyer’s Carb Smart Ice Cream is only 90 calories and 13 carbs per serving!
Gorton’s Home Style Baked Shrimp w/ Rice

Today’s Menu: Gorton’s Home Style Baked Shrimp w/ Rice
It was a quick & easy delicious dinner tonight using Gorton’s Home Style Shrimp and Uncle Ben’s Roasted Chicken Flavored Rice With Carrots & Herbs. The Gorton’s Shrimp is very easy to make just bake at 425 degrees for 16 – 20 minutes and you have a great tasting Shrimp dinner. These were the best boxed Shrimp I ever had! Good size, breaded and seasoned just right. They’re 240 calories and only 19 carbs. I left the product description at the bottom of the post. Along with the Shrimp I had Uncle Ben’s Roasted Chicken Flavored Rice With Carrots & Herbs. Another easy fixing it comes in a microwavable cup. Just heat for 60 seconds and serve. For dessert later this evening a Pillsbury Apple Turnover topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.
