Been a sunny but very cool day today, high only in the 40′s. It’s that time of year though and it’s my favorite time of the year. Everyone had been wanting Lasagna so Lasagna it was! I usually have a box or two of the Progreso Kitchen Favorites Classic Lasagna, which is our favorite, but I was out so I went to the store and both Kroger and Walmart not only was out of it but no longer carried it! Not good, I love this Lasagna. I even checked on-line and it looks as though Progresso has dropped it. So it was Lasagna from scratch. For dinner, Healthy Harvest Turkey Lasagna w/ Baked French Bread.
I had only made Lasagna like this one other time and it’s been a while. I used the recipe that was on back of the Ronzoni Healthy Harvest Lasagna Box, Healthy Harvest Easy Lasagna. I made using the following; 1lb Jennie – O Extra Lean Ground Turkey Breast, 3 cups (26 oz jar) Ragu Light Tomato and Basil Spaghetti Sauce, 1 small container of Baby Bella Mushrooms (sliced), 1 1/2 cups Water, 1 3/4 cups (15 oz container) Miceli’s Lite Ricotta Cheese, 2 cups (8 oz) Sargento Shredded Mozzarella/Provolone Cheese, divided, 1/2 cup grated Kraft Parmesan Cheese, 2 Eggs, 1/4 cup chopped fresh Parsley, 1/2 tsp Sea Salt, 1/4 tsp ground Black Pepper, and 9 pieces Ronzoni Healthy Harvest Lasagna, uncooked. Cutting calories and carbs by using Ground Turkey Breast and the Miceli’s Lite Ricotta Cheese.

Then to prepare it I just went by the instructions on the box which are: Heat oven to 350°F. In 3-quart saucepan over medium-high heat, brown meat; drain. Add spaghetti sauce, mushrooms, and water; simmer about 10 minutes. Meanwhile, in medium bowl, stir together ricotta cheese, one-half mozzarella cheese, Parmesan cheese, eggs, parsley, salt and pepper. 5. Pour about 1 cup sauce on bottom of 13×9-inch baking dish. Arrange 3 UNCOOKED pasta pieces lengthwise over sauce; cover with 1 cup sauce. Spread one-half cheese filling over sauce. Repeat layers of RONZONI HEALTHY HARVEST LASAGNA, sauce and cheese filling. Top with layer of RONZONI HEALTHY HARVEST LASAGNA and remaining sauce; sprinkle with mozzarella cheese. Cover with foil. Bake 45 minutes. Remove foil; bake additional 10 minutes or until hot and bubbly. Let stand 10 minutes before cutting. The Lasagna came out perfect! The Healthy Harvest Noodles are 5 Star! A keeper recipe. I also baked a loaf of Pillsbury Rustic French Bread. For dessert later a Del Monte No Sugar Added Mango Chunk Cup.
Ronzoni Healthy Harvest Easy Turkey Lasagna
1lb ground beef
3 cups (26 oz jar) spaghetti sauce
1 small container of baby bella mushrooms, sliced
1 1/2 cups water
1 3/4 cups (15 oz container) ricotta or small curd cottage cheese
2 cups (8 oz) shredded mozzarella or Monteray Jack cheese, divided
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1/2 tsp salt
1/4 tsp ground black pepper
9 pieces RONZONI HEALTHY HARVEST LASAGNA, uncooked

Whole Grain Lasagna from Ronzoni Healthy Harvest
Whole Grain Lasagna are ripple-edged strips about 2-1/4-inches wide and 10-inches long. Almost exclusively used to make oven-baked entrées. Today’s Menu: Turkey and Black Bean Tacos
Beautiful Autumn Day out today! Went to Meijer this morning to pick up some Jennie – O Turkey Products; Ground Breakfast Sausage,Extra Lean Ground Turkey Breast, Italian Sweet Sausages, and Breakfast Links. While there I watched the most extreme Couponer I have ever seen, she was amazing! She had a good size binder, notebook type, and on front of the binder a printout of each store aisle and the major products in that aisle. Then pockets in the binder that contained coupons for items in that aisle. I talked to her for a bit and said the biggest savings she had been just over $200! She said it took a lot of time but had a nice pay off! Quite impressive. On to Dinner. Tonight one of my favorites, Turkey and Black Bean Tacos.
I used Jennie – O Extra Lean Ground Turkey Breast, I had this leftover from the other night when I made Stuffed Peppers. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos. Mixed well until everything was coated and then simmered another 5 minutes until heated through.
For my other toppings I used 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Old El Paso Taco Sauce, and all in a Ortega Whole Grain Corn Taco Shells. Love these Tacos! For dessert later a Jello Sugarless Chocolate Pudding topped with Cool Whip Free.

When I went out to get the morning papers it was 38 degrees! Our first morning in the 30′s in quite some time, and you know what it felt good! It may have been 38 outside but I started the day off with healthy and hot Breakfast inside. I had some Simply Potatoes Garlic and Herb Hashbrowns, Jennie – O Lean Ground Turkey Breakfast Sausage (made into patties), 2 slices of Healthy Life Whole Grain Bread (toasted and spread with I Can’t Believe It’s Not Butter), a cup of Bigelow Decaf Green Tea, and the morning papers. Very good day so far!

Ground turkey and beans are joined by pumpkin and spices in this fall twist on chili!
Chunky Pumpkin Chili
2 pounds Lean Ground Turkey Breast
1 large Onion, diced
1 Green Bell Pepper, diced
1 (15 ounce) cans Kidney Beans, drained
1 (15 ounce) can White Northern Beans, drained
1 (46 fluid ounce) can Tomato Juice
1 (28 ounce) can peeled and diced Tomatoes with juice
1/2 cup canned Pumpkin Puree
1 tablespoon Pumpkin Pie Spice
2 tablespoon Chili Powder
1 tablespoon Ground Roasted Cumin
2 teaspoons Ground Cinnamon
Sea Salt and Ground Black Pepper, to taste
1/4 tablespoon Splenda No Calorie Sweetener, Granulated
In a large pot over medium heat, cook ground turkey until brown; drain. Stir in onion and bell pepper and cook 5 minutes. Stir in both cans of beans, tomato juice, diced tomatoes and pumpkin puree. Season with pumpkin pie spice, chili powder, cumin, cinnamon, sea salt, ground black pepper, and Splenda Granulated Sweetener. Simmer 1 hour.
Makes 8 servings.

Today’s Menu: Black Bean and Turkey Tacos Tonight
It’s Monday!Splattered 2 Eggs in the floor this morning, then got some bread out to toast and it had molded, then the capper for the morning I went out to get the paper this morning and they had tossed it in the grass by the edge of the drive-way and I was in my Hoveround. Took the Hoveround it to the edge of the drive and reached for the paper, you guessed it the Hoveround tipped over with me in it! I’m fine, scrapped up knee and a couple of bruises. Come on Tuesday, hurry up and get here! For dinner I prepared Turkey Tacos.
I used the Ground Turkey and Black Bean Mix I had leftover from last nights dinner. I warmed it up along with toppings of a can of Green Giant Steam Crisp Sweet Corn Kernels, Lindsay Sliced Black Olives, Shredded Lettuce, Old El Paso Taco Sauce, and I used Old El Paso Stand – Up Taco Shells. I love tacos, tacos of all kinds. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt and an ice pack for the bruises!

Wow, we finally saw the sun today! They say not for long though as more heavy rain predicted. Went to Meijer this morning and picked up quite a few items. Finding Meijer prices lower and lower, that’s a good thing. They also have the best selections of Jennie – O products, which I love using! In fact I’ll be using some of the Jennie – O Extra Lean Ground Turkey for an appetizer for tonight. For dinner I prepared a Pulled Buffalo Chipotle BBQ Sandwich w/ Mini Taco Tostadas Appetizers.
I used Wild Idea Buffalo Pulled Buffalo Chuck Roast. It comes in a 1 lb. package and it’s already cooked. It’s rubbed with a blend of Mexican seasonings and then slowly braised to fall apart tender. All I did was open and heat! I topped it with JB’S Fat Boy Chipotle BBQ Sauce and served on a Aunt Millie’s Light Whole Grain Sandwich Bun. I love Buffalo and Wild Idea Buffalo has the most delicious Buffalo Meat there is!
For a side or appetizer I prepared Mini Taco Dip Tostadas with a Greek Yogurt/Sour Cream Sauce. Really happy how this came out, delicious! A really good and easily prepared appetizer. Got the idea from the Cooking Channel and I used some reduced fat items to make it a bit more healthy and keeping the taste. I first made Greek Yogurt/Sour Cream Sauce using a 1/4 cup Nonfat Greek Yogurt, 1 Tablespoon Daisy Reduced Fat Sour Cream, and the Zest of 1 lime, plus juice of 1/2 lime. Just combine al the 3 ingredients in a small bowl and refrigerate until ready to use, real easy to make. For the Mini Taco Dip Tostadas I needed 1/2 – Packet Old El Paso Taco Seasoning, 2 Tablespoons Extra Virgin Olive Oil, Tortilla chips, preferably round, 8 ounces Jennie – O 99-percent Fat-Free Ground Turkey, 1/2 cup Low Sodium Canned Black Beans, rinsed and drained, Pinch Sea Salt, Fresh Cracked Black Peppercorn, Frank’s Red Hot Sauce to taste, optional, and 1 cup Sargento Shredded Reduced – Fat Cheddar Cheese.
Heat the oil in a large skillet over medium-high heat. Preheat the oven to 350 degrees F.Place chips in on a broiler-proof baking sheet set aside. Brown the turkey in the skillet, breaking it up with a fork, until the meat is no longer pink, 5 to 7 minutes. Add 1 tablespoon of the taco seasoning, salsa and some salt and black pepper. Continue cooking, stirring occasionally, until most of the liquid has evaporated. Spread turkey mixture across all the chips and top with the cheese. Broil long enough to melt cheese and heat the chips, and then let cool and serve! This is a real keeper recipe! We could have made a meal of just these, everyone enjoyed them! I left the full recipe at the end of the post. For dessert later tonight a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.
Mini Taco Dip Tostadas with Greek Yogurt/Sour Cream Sauce
Mini Taco Tostadas:
1/2 – Packet Old El Paso Taco Seasoning
2 Tablespoons Extra Virgin Olive Oil
Tortilla chips, preferably round
8 ounces Jennie – O 99-percent Fat-Free Ground Turkey
1/2 cup Low Sodium Canned Black BVeans, rinsed and drained
Pinch Sea Salt
Fresh Cracked Black Peppercorn
Frank’s Red Hot Sauce to taste, optional
1 cup Sargento Shredded Reduced – Fat Cheddar Cheese
1/4 cup Nonfat Greek Yogurt
1 Tablespoon Daisy Reduced Fat Sour Cream
Zest of 1 lime, plus juice of 1/2 lime

Today’s Menu: Turkey Tacos
Beautiful day out, a little humidity but not bad. My Mom is doing a lot better and getting around fine. For dinner it was Turkey Tacos. I used Honeysuckle White Ground Turkey (97/3). I seasoned it a bit with Cilantro, Sea Salt, and Smoked Ground Cumin and I used Old El Paso Taco Seasoning.
For the Taco fillers I had Green Giant Summer Crisp White and Yellow Kernal Corn, sliced Black Olives, shredded Lettuce, Arugula, Sargento Mexican 4 Cheese, and Old El Paso Medium Taco Sauce. To assemble my Taco I first layered the bottom with shredded Lettuce, the Lettuce helps soak up any moisture so the bottom of your Taco doesn’t get soggy. After the Lettuce I layered in my ground Turkey, then Black Olives, Corn, Arugula, Taco Sauce topped with the Shredded Cheese! I love a Taco when it all comes together! For dessert/snack later this evening a 100 Calorie Mini Bag of Jolly time Pop Corn.
Now we’re talking lean. This is one of the healthiest ways to get your family eating better. Substitute it in any ground beef recipe, and your family’s diet takes a turn for the better. It contains only 2 grams of fat per serving.

Turkey Burgers with Mango Salsa
1/2 cup Progresso Italian Style Bread Crumbs
1/3 cup Laughing Cow Light Garlic-Herb Spreadable Cheese
2 Green Onions, chopped
2-1/2 teaspoons Lemon Juice
1-1/2 teaspoons grated Lemon peel
1/4 teaspoon dried Thyme
1/2 teaspoon Sea Salt
1/2 teaspoon Ground Pepper
1-1/2 pounds Jennie – O Extra Lean Ground Turkey
6 Aunt Millie’s Light Whole Grain Hamburger Buns
3/4 cup Mango Salsa
In a large bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. Shape into six patties.
Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes on each side or until a thermometer reads 165° and juices run clear.
Grill buns, uncovered, for 1-2 minutes or until toasted. Place burgers on bun bottoms. Top with salsa. Replace bun tops. Yield: 6 servings.

Last night’s Turkey Meatloaf turned into todays Lunch, Turkey Meatloaf Sandwich! I warmed up the Meatloaf, served it up on a Aunt Millie’s Light Whole Grain Bun and topped it with some JB’s Chipotle BBQ Sauce. Heating up a bit with the Chipotle Sauce gave it that much more flavor! Love them leftovers!

A really perfect day out today! It’s about 77 degrees and sunny. Beautiful day but it was a very, very, long night. My parents had made some friends for dinner at a Ponderosa Steak House. they didn’t order from the menu instead chose the Buffet, BIG MISTAKE!! After coming home about an 1 hour or so they both became very sick, Mom worse than my Dad. Upset stomach, nausea and everything that goes with food poisoning. My Mom was so bad I called her family doctor on call service. He said the best cure is to let it run its course, which it eventually did. I won’t go in to detail but I was still doing laundry at 1:00 am. But both are fine now with no after effects. I’m not big on Buffets and that’s the main reason! For dinner tonight I prepared a Bacon Wrapped Turkey Meatloaf w/ Corn on the Cob and Mashed Potatoes.
I had prepared Turkey Meatloaf before but not wrapped with Bacon, Low Sodium Turkey Bacon. I had the idea off a cooking show. They said by adding the Bacon it gave your Meatloaf an even better taste. They had used Pork Bacon but I’m using Oscar Mayer Low Sodium Turkey Bacon instead. To make the Meatloaf I’ll need the following; 2 Tablespoons Blue Bonnet Light Stick Butter, 3 Cloves Garlic, Minced, 1 1/4 lbs Jennie O Extra Lean Ground Turkey, 3-4 Slices of uncooked Oscar Mayer Low Sodium Turkey Bacon, 1/2 Cup Progesso Italian Style Breadcrumbs, 1/4 Cup Egg Substitute (Egg Beaters), 1 1/4 Cups Hunt’s Catsup, 4 Tablespoons Worcestershire Sauce, 3 Tablespoons Heinz 57 Sauce, 2 Teaspoons Smoked Cumin, 2 Teaspoons Onion Powder, 2 Teaspoons Ground Thyme, 2 Teaspoons Parsley, 3/4 Teaspoon Sea Salt, and 1/2 Teaspoon Black Pepper. To prepare it start by preheating your oven to 350 degrees. Then melt the butter in a skillet and add the Garlic in melted butter for 5 minutes, stirring occasionally. Place the mixture in a large bowl to cool for 5 minutes. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, 1 table spoon Worcestershire sauce, spices, and garlic mixture. Press meatloaf into an 8×4-inch loaf pan. Wrap 4 slices of Turkey Bacon over the top and down on to the sides of the meatloaf. Take the remaining catsup and add 3 Tablespoons Worcestershire Sauce and 3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf. Bake in a 350 degree oven for 50-55 minutes or until Internal temperature should reach 165 degrees. Remove from oven and let stand 5 minutes before serving. The Turkey Meatloaf was delicious before but with the added Bacon it gave it that much more flavor! I’ll add Turkey Bacon to it from now on!
To go with the Meatloaf I prepared some more of the boiled Mini Corn Ears. I used Green Giant Mini Ears of Sweet Corn. They come frozen and all you do is boil them in water for about 12 minutes. Their 50 calories and 9 calories per mini ear. These are actually better than a lot of the fresh Corn on the cob I’ve had, nice job Green Giant! I also prepared Bob Evan’s Mashed Potatoes. You have to have Mashed Potatoes when you have Meatloaf, I think it’s an unwritten rule! One good comfort food dinner! For dessert later, just sticking with some fruit. A Banana and maybe a few slices of a Honey Crisp Apple.

3-4 Slices of uncooked Oscar Mayer Low Sodium Turkey Bacon
1/2 Cup Progesso Italian Style Breadcrumbs
1/4 Cup Egg Substitute (Egg Beaters)
1 1/4 Cups Hunt’s Catsup
4 Tablespoons Worcestershire Sauce
3 Tablespoons Heinz 57 Sauce
2 Teaspoons Smoked Cumin
2 Teaspoons Onion Powder
2 Teaspoons Ground Thyme
2 Teaspoons Parsley
3/4 Teaspoon Sea Salt
1/2 Teaspoon Black Pepper
1. Melt butter in a skillet.
2. Add the Garlic in melted butter for 5 minutes, stirring occasionally.
3. Place mixture in a large bowl to cool for 5 minutes.
4. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, 1 table spoon Worcestershire sauce, spices, and garlic mixture.
5. Press meatloaf into an 8×4-inch loaf pan. Wrap 4 slices of Turkey Bacon over the top and down on to the sides of the meatloaf.
6. Take the remaining catsup and add 3 Tablespoons Worcestershire Sauce and
3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf.
7. Bake in a 350 degree oven for 50-55 minutes.
8. (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.
