Today’s Menu: Bacon Wrapped Turkey Meatloaf w/ Corn on the Cob and Mashed Potatoes
A really perfect day out today! It’s about 77 degrees and sunny. Beautiful day but it was a very, very, long night. My parents had made some friends for dinner at a Ponderosa Steak House. they didn’t order from the menu instead chose the Buffet, BIG MISTAKE!! After coming home about an 1 hour or so they both became very sick, Mom worse than my Dad. Upset stomach, nausea and everything that goes with food poisoning. My Mom was so bad I called her family doctor on call service. He said the best cure is to let it run its course, which it eventually did. I won’t go in to detail but I was still doing laundry at 1:00 am. But both are fine now with no after effects. I’m not big on Buffets and that’s the main reason! For dinner tonight I prepared a Bacon Wrapped Turkey Meatloaf w/ Corn on the Cob and Mashed Potatoes.
I had prepared Turkey Meatloaf before but not wrapped with Bacon, Low Sodium Turkey Bacon. I had the idea off a cooking show. They said by adding the Bacon it gave your Meatloaf an even better taste. They had used Pork Bacon but I’m using Oscar Mayer Low Sodium Turkey Bacon instead. To make the Meatloaf I’ll need the following; 2 Tablespoons Blue Bonnet Light Stick Butter, 3 Cloves Garlic, Minced, 1 1/4 lbs Jennie O Extra Lean Ground Turkey, 3-4 Slices of uncooked Oscar Mayer Low Sodium Turkey Bacon, 1/2 Cup Progesso Italian Style Breadcrumbs, 1/4 Cup Egg Substitute (Egg Beaters), 1 1/4 Cups Hunt’s Catsup, 4 Tablespoons Worcestershire Sauce, 3 Tablespoons Heinz 57 Sauce, 2 Teaspoons Smoked Cumin, 2 Teaspoons Onion Powder, 2 Teaspoons Ground Thyme, 2 Teaspoons Parsley, 3/4 Teaspoon Sea Salt, and 1/2 Teaspoon Black Pepper. To prepare it start by preheating your oven to 350 degrees. Then melt the butter in a skillet and add the Garlic in melted butter for 5 minutes, stirring occasionally. Place the mixture in a large bowl to cool for 5 minutes. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, 1 table spoon Worcestershire sauce, spices, and garlic mixture. Press meatloaf into an 8×4-inch loaf pan. Wrap 4 slices of Turkey Bacon over the top and down on to the sides of the meatloaf. Take the remaining catsup and add 3 Tablespoons Worcestershire Sauce and 3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf. Bake in a 350 degree oven for 50-55 minutes or until Internal temperature should reach 165 degrees. Remove from oven and let stand 5 minutes before serving. The Turkey Meatloaf was delicious before but with the added Bacon it gave it that much more flavor! I’ll add Turkey Bacon to it from now on!
To go with the Meatloaf I prepared some more of the boiled Mini Corn Ears. I used Green Giant Mini Ears of Sweet Corn. They come frozen and all you do is boil them in water for about 12 minutes. Their 50 calories and 9 calories per mini ear. These are actually better than a lot of the fresh Corn on the cob I’ve had, nice job Green Giant! I also prepared Bob Evan’s Mashed Potatoes. You have to have Mashed Potatoes when you have Meatloaf, I think it’s an unwritten rule! One good comfort food dinner! For dessert later, just sticking with some fruit. A Banana and maybe a few slices of a Honey Crisp Apple.
Turkey Meatloaf
Ingredients
2 Tablespoons Blue Bonnet Light Stick Butter
3 Cloves Garlic, Minced
1 1/4 lbs Jennie O Extra Lean Ground Turkey
3-4 Slices of uncooked Oscar Mayer Low Sodium Turkey Bacon
1/2 Cup Progesso Italian Style Breadcrumbs
1/4 Cup Egg Substitute (Egg Beaters)
1 1/4 Cups Hunt’s Catsup
4 Tablespoons Worcestershire Sauce
3 Tablespoons Heinz 57 Sauce
2 Teaspoons Smoked Cumin
2 Teaspoons Onion Powder
2 Teaspoons Ground Thyme
2 Teaspoons Parsley
3/4 Teaspoon Sea Salt
1/2 Teaspoon Black Pepper
Directions
1. Melt butter in a skillet.
2. Add the Garlic in melted butter for 5 minutes, stirring occasionally.
3. Place mixture in a large bowl to cool for 5 minutes.
4. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, 1 table spoon Worcestershire sauce, spices, and garlic mixture.
5. Press meatloaf into an 8×4-inch loaf pan. Wrap 4 slices of Turkey Bacon over the top and down on to the sides of the meatloaf.
6. Take the remaining catsup and add 3 Tablespoons Worcestershire Sauce and
3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf.
7. Bake in a 350 degree oven for 50-55 minutes.
8. (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

Today’s Menu: Progresso Kitchen Favorites Classic Lasagna w/ Baked Artisan Multi Grain Bread
CHILLY this morning about 35 degrees, 31 tomorrow morning with a freeze warning! Come on Mother Nature with that warm weather. Being Mother’s Day I gave Mom a choice of what to have for Dinner. We thought about going to one of the local Steakhouses but Mom decided she wanted to eat at home and she wanted Lasagna. So for dinner I prepared; Progresso Kitchen Favorites Classic Lasagna w/ Baked Artisan Multi Grain Bread. As always I substitute Extra Lean Ground Turkey for the Beef.

This has become one of our favorite dinners and our favorite Lasagna recipes, Progresso Kitchen Favorites Classic Lasagna! It’s very easy to make as the dinner kit contains the Lasagna Pasta, Tomato Herb sauce, Ricotta Sauce Mix, and Grated Parmesan Cheese. I added 1 lb. Jennie – O Lean Ground Turkey, 1 Cup water, 2/3 Cup 2% Milk, 1 (8 oz.) Shredded Mozzarella Cheese (2 Cups), 1/2 cup Shredded dutch Gouda, and I also added a bit more seasoning (McCormick Grinder Italian Herb). I combined the Mozzarella and Goda Cheese. Gouda is such a great tasting Cheese and is a perfect melting Cheese. Basically you just layer your ingredients in a 8″ square baking dish and cover and bake at 425 degrees for 30 minutes and bake an additional 10 minutes uncovered. Prepared by the instructions it was 390 calories but I cut that and the carb count down by using Honeysuckle White Extra Lean Ground Turkey instead of Beef and Sargento Reduced Fat 2% Mozzarella Cheese. The Lasagna came out delicious every time! Everyone really loves this. The flavor as always is excellent. The Sauce was thick and well seasoned and the same for the pasta, perfect, plus plenty leftovers to freeze for later. I also baked a loaf of the La Brea Bakery Take and Bake Artisan Multi Grain Loaf. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.
Progresso Kitchen Favorites Classic Lasagna
Directions
Ready to bake in about 20 minutes. You Will Need: 1 lb lean ground beef; 1 cup water; 2/3 cup milk; 1 bag (8 oz) shredded mozzarella
cheese (2 cups); nonstick cooking spray and foil. Sauce: Heat oven to 425 degrees F. Brown beef in 10-inch skillet, breaking up beef into small pieces; drain. Stir Tomato Herb Sauce and water into beef; heat to boiling. Reduce heat; simmer 3 to 5 minutes, stirring occasionally. Meanwhile, mix Ricotta Sauce Mix and milk in liquid measuring cup or small bowl, using whisk or fork. Layer: Spray 8-inch square glass baking dish with cooking spray. Layer lasagna: Spread about 2/3 cup beef sauce in dish. Layer with 2 uncooked Pasta sheets (side by side), 2/3 cup beef sauce (cover Pasta with sauce), 1/4 cup ricotta sauce and 1/2 cup mozzarella. Repeat layers twice, starting with Pasta. Add remaining Pasta, beef sauce and mozzarella. Sprinkle with Parmesan Cheese. Kitchen Tip: Substitute 1/4 cup dry red wine for 1/4 cup of the water.

Today’s Menu: Taco Night! Turkey Tacos!
Has Spring actually arrived and staying? 80 degrees and sunny out today, a perfect day! We”ll wait and see if drops back down to chilly in a day or so. On to tonight’s dinner; It was Turkey Taco Night along with a side of Fat Free Refried Beans.
Tonight’s meal was almost all Old El Paso. I used Old El Paso Stand Up Taco Shells, Old El Paso Fat Free Refried Beans, Old El Paso,
Sliced Green Chilies, and Old El Paso Original Taco Seasoning. OLE! The Ground Turkey I used was Honeysuckle White Extra Lean Ground Turkey (99/1). I browned the Turkey in Canola Oil, seasoning it with Sea Salt, Ground Pepper, Ground Roasted Cumin, Dried Cilantro, and the Old El Paso Taco Seasoning. I almost always substitute Ground Turkey or Ground Buffalo for Ground Beef, all around healthier for you (See the end of the post).
My toppings for the Tacos include Sliced Black Olives, Sliced Green Chilies, Shredded Lettuce, Sargento Reduced Fat 4 Cheese Mexican, and Old El Paso Taco Sauce (Medium). As I said Earlier I used Old El Paso Stand Up Taco Shells and I had a small side of Refried Beans topped with Daisy Reduced Fat Sour Cream. Can’t wait to make some Ground Buffalo Tacos here in the next week or so! For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice cream topped with some sliced Mangos.

With Dad in rehab and Mom staying there the biggest part of the day I’ve been taking over all the daily house work, still looking for an
easier way to vacuum while in a wheelchair! I’ve scanned the net but nothing out there. As hey say you gotta do what you have to do! Anyway for dinner I prepared Velveeta/Kraft Cheesy Skillets Dinner Chili Cheese Mac, using Jennie – O Extra Lean Ground Turkey and added 1 can of Joan of Arc Light Red Kidney Beans. This is has become one of my favorite comfort foods. 1 pan so easy clean up, has, cheese, pasta, and for a meat it has ground turkey, and you can add a can of kidney beans to make it that much heartier!
As in all the Chessy Skillet Dinners the kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1 lb. of Ground Turkey, and 1 can of Joan of Arc Light Red Kidney Beans. I used Jennie – O Extra Lean Ground Turkey. Using the Extra Lean Ground Turkey instead of the Ground Beef you can lower the calorie count by anywhere from 60 – 80 calories! As I browned the Turkey I added Sea Salt, Pepper, and Ground Smoked Cumin for seasoning. It’s ready in about 10 minutes. I then add 2 cups of water, the seasoning and pasta. Simmer for 10 – 12 minutes and add the Velveeta Cheese and your ready for dinner. I’ll leave the instructions at the end of the post. It’s 380 calories and 28 carbs but you can lower the calorie count by using the Ground Turkey as stated above. The Ultimate Cheeseburger Dinner is very good but i think this is my new favorite. I really like the Chili Seasoning! Another one pan quick, easy, and delicious Velveeta/Kraft Dinner! I also had a couple of slices of Aunt Millie’s Light Whole Grain Bread. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Ingredients:
* 1 LB. Ground Beef or Ground Turkey (Extra Lean)
* Sea Salt, Pepper, Cilantro, Ground Smoked Cumin to taste; Optional
* 2 Cups Water
* 1 Velveeta Cheesy Skillets Dinner Kit/Chili Cheese Mac
Instructions:
* Brown and season 1 LB. Ground Turkey in large skillet. Drain
* Add 2 cups water, seasoning and pasta. Bring to a boil. Reduce Heat.
* Cover, Simmer and stir often until most of water is gone about 11-13 minutes. Remove from heat.
* Add Cheese from Velveeta Cheese Pouch. Stir in Cheese Sauce and serve

With this weather the way it is around here It’s no wonder so many people have the flu! Yesterday we had to turn the air conditioner on
in the late afternoon because it was in the 80′s and a bit humid. Today a cold wind and 34 degrees, and had to turn the heat on! Amazing! For dinner I prepared my favorite Tortilla, the Old El Paso Stand ‘n Stuff Soft Flour Tortillas. I see them now more often in stores, so there a whole lot easier to find now. Love these things, their only 160 calories and 24 carbs for 2 Soft Shells, more than enough for 1 person by the time you load it up. So for dinner tonight it was Old El Paso Stand ‘n Stuff Soft Flour Tortillas w/ Ground Turkey and all the Fix’ins!
I filled mine with Jennie – O Extra Lean Ground Turkey – 99/1. I pan fried it in Canola Oil and seasoned it with Ground Cumin, Sea Salt, Cilantro Flakes, and a 1/2 packet of Old El Paso Taco Seasoning. Then for the fillers I added Green Giant Steam Crisp Super Sweet Yellow and White Corn, Sliced Black Olives, Bush’s Low Sodium Dark Red Kidney Beans, Lettuce, Kraft Mexican Taco Shredded Cheese, and Taco Bell Creamy Chipotle Sauce. If you’ve never tried the Taco Bell Creamy Chipotle Sauce it’s another you have to try. It’s got a nice creamy thick sauce with just the right amount of Chipotle heat! For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Today’s Menu: Teriyaki Pineapple Turkey Burgers w/ Baked Crinkle Fries
It was a beautiful day out today, sunny and in the mid 50′s. 60 tomorrow but rain and snow flurries possible Monday. So today I had somebody clean all our gutters out, which were full of leaves. Got the car washed and cleaned on the inside also. Long Spring cleaning list if it ever warms up! For dinner a Teriyaki Pineapple Turkey Burger w/ Baked Crinkle Fries.
To make the burger you’ll need; Kikkoman Less Sodium Teriyaki Marinade and Sauce, Dole Pineapple slices and juice, Honeysuckle White Extra Lean Ground Turkey (99/1), fresh Ginger (grated), and Panko Bread Crumbs. the original recipe made 4 burgers I broke the recipe down to make 2, 1 for lunch tomorrow. When frying the burger keep a close eye on it because it start to burn due to the Teriyaki Sauce.
To prepare it just stir together Kikkoman Teriyaki Base & Glaze and reserved pineapple juice in a small bowl. Remove 2 tablespoons sauce for burgers. Mix together turkey, ginger, Kikkoman Panko Bread Crumbs and 1 teaspoon Teriyaki mixture and shape into a pattie. I then pan fried it in Extra Virgin Olive Oil about 4 1/2 minutes per side brushing it with the remaining Teriyaki mixture. Placed the pineapple slice in the pan and cooked until lightly golden brown. Served the burger on a Aunt Millie’s Light Whole Grain Bun with, Light Mayonnaise and Pineapple. This makes one fine and juicy burger! The Teriyaki Sauce is perfect with the Turkey and Pineapple and the Mayo just adds to the flavor. I left the original recipe at the bottom of the post, makes 4 Turkey Burgers.
For a side I baked some Ore Ida Crinkle Cut Fries, served with a side of Hunt’s Ketchup. Then for dessert later a slice of Pillsbury Nut Quick Bread topped with a Pineapple slice (Leftover from dinner).
Teriyaki Pineapple Turkey Burgers
Ingredients (Makes 4 servings)
1/4 cup Kikkoman Teriyaki Baste & Glaze, divided
1 can (8oz.) pineapple slices, drained, reserve 1/4 cup juice
1 pound ground turkey or chicken
1 teaspoon grated fresh ginger
1/4 cup Kikkoman Panko Bread Crumbs
4 whole grain hamburger buns
4 slices Cheddar or Monterey Jack cheese
Instructions
Stir together Kikkoman Teriyaki Base & Glaze and reserved pineapple juice in a small bowl. Remove 2 tablespoons sauce for burgers.
Mix together turkey, ginger, Kikkoman Panko Bread Crumbs and 2 tablespoons Teriyaki mixture. Shape into 4 patties.
Grill patties, brushing with remaining Teriyaki mixture until desired doneness. Place pineapple slices on grill and cook until lightly golden brown.
Serve burger on buns with cheese and pineapple.

Today’s Menu: Velveeta/Kraft Dinners Chili Cheese Mac Velveeta Cheesy Skillets w/ Whole Grain Bread
Come on warm Spring time weather! Beautiful sunny but cool day out today but as usual starting tomorrow and going through part of Monday SNOW! How much, I’ve heard anywhere from 3″ to 8″ inches. Come on Mother Nature show us a little love! Anyway for dinner I prepared Velveeta/Kraft Cheesy Skillets Dinner Chili Cheese Mac, using Jennie – O Extra Lean Ground Turkey and added 1 can of Joan of Arc Light Red Kidney Beans.
As in all the Chessy Skillet Dinners the kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1 lb. of Ground Turkey, and 1 can of Joan of Arc Light Red Kidney Beans. I used Jennie – O Extra Lean Ground Turkey. Using the Extra Lean Ground Turkey instead of the Ground Beef you can lower the calorie count by anywhere from 60 – 80 calories! As I browned the Turkey I added Sea Salt, Pepper, and Ground Smoked Cumin for seasoning. It’s ready in about 10 minutes. I then add 2 cups of water, the seasoning and pasta. Simmer for 10 – 12 minutes and add the Velveeta Cheese and your ready for dinner. I’ll leave the instructions at the end of the post. It’s 380 calories and 28 carbs but you can lower the calorie count by using the Ground Turkey as stated above. The Ultimate Cheeseburger Dinner is very good but i think this is my new favorite. I really like the Chili Seasoning! Another one pan quick, easy, and delicious Velveeta/Kraft Dinner! I also had a couple of slices of Aunt Millie’s Light Whole Grain Bread. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn…. and to all a good night!

Kraft Dinners Chili Cheese Mac Velveeta Cheesy Skillets:
Made with real cheddar cheese
Just add ground beef
Makes about 5 servings
Ready in about 20 minutes
Velveeta Cheesy Skillets Chili Cheese Mac
Ingredients:
* 1 LB. Ground Beef or Ground Turkey (Extra Lean)
* Sea Salt, Pepper, Cilantro, Ground Smoked Cumin to taste; Optional
* 2 Cups Water
* 1 Velveeta Cheesy Skillets Dinner Kit/Chili Cheese Mac
Instructions:
* Brown and season 1 LB. Ground Turkey in large skillet. Drain
* Add 2 cups water, seasoning and pasta. Bring to a boil. Reduce Heat.
* Cover, Simmer and stir often until most of water is gone about 11-13 minutes. Remove from heat.
* Add Cheese from Velveeta Cheese Pouch. Stir in Cheese Sauce and serve

Today’s Menu: Lasagna w/ Baked Garlic Knot Bread
This has become one of my favorite dinners , Progresso Kitchen Favorites Classic Lasagna! It’s very easy to make as the dinner kit contains the Lasagna Pasta, Tomato Herb sauce, Ricotta Sauce Mix, and Grated Parmesan Cheese. I added 1 lb. Jennie – O Lean Ground Turkey, 1 Cup water, 2/3 Cup 2% Milk, 1 (8 oz.) Shredded Mozzarella Cheese (2 Cups), 1 cup Shredded dutch Gouda, and I also added a bit more seasoning (McCormick Grinder Italian Herb). I combined the Mozzarella and Goda Cheese. Gouda is such a great tasting Cheese and is a perfect melting Cheese. Basically you just layer your ingredients in a 8″ square baking dish and cover and bake at 425 degrees for 30 minutes and bake an additional 10 minutes uncovered. Prepared by the instructions it was 390 calories but I cut that and the calorie and carb count down by using Honeysuckle White Extra Lean Ground Turkey instead of Beef and Sargento Reduced Fat 2% Mozzarella Cheese. The Lasagna came out delicious every time! Everyone really loves this. The flavor as always is excellent. The Sauce is thick and well seasoned and the same for the pasta, perfect, plus plenty leftovers to freeze for later. I had a side of Walmart Bakery Garlic Knot Bread. Just heat on 425 degrees for about 6 – 8 minutes and serve.
Progresso Kitchen Favorites Classic Lasagna
Directions
Ready to bake in about 20 minutes. You Will Need: 1 lb lean ground beef; 1 cup water; 2/3 cup milk; 1 bag (8 oz) shredded mozzarella cheese (2 cups); nonstick cooking spray and foil. Sauce: Heat oven to 425 degrees F. Brown beef in 10-inch skillet, breaking up beef into small pieces; drain. Stir Tomato Herb Sauce and water into beef; heat to boiling. Reduce heat; simmer 3 to 5 minutes, stirring occasionally. Meanwhile, mix Ricotta Sauce Mix and milk in liquid measuring cup or small bowl, using whisk or fork. Layer: Spray 8-inch square glass baking dish with cooking spray. Layer lasagna: Spread about 2/3 cup beef sauce in dish. Layer with 2 uncooked Pasta sheets (side by side), 2/3 cup beef sauce (cover Pasta with sauce), 1/4 cup ricotta sauce and 1/2 cup mozzarella. Repeat layers twice, starting with Pasta. Add remaining Pasta, beef sauce and mozzarella. Sprinkle with Parmesan Cheese. Kitchen Tip: Substitute 1/4 cup dry red wine for 1/4 cup of the water.
