Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Baked Cheese Toast
Our run of beautiful days goes on but I hear rain is on it’s way. Locked myself out of the house today, so thats always fun! Finally was able to get a neighbor go through a side door that I can’t get to and unlock the back door. Hopefully one day I’ll be able to build a deck and ramps so I can get in and out of all the doors, life in a wheelchair! For dinner always a classic comfort food, Spaghetti and Turkey Meatballs w/ Cheese Toast
It had been a while since I had Spaghetti and Turkey Meatballs and it sounded good. I used Ronzoni Healthy Harvest Whole Wheat
Spaghetti along with Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are the best I’ve found, fantastic taste and their 190 calories and 6 carbs for 3 Meatballs. Topped everything with Kraft 2% Shredded Mozzarella Cheese and Bella Vita Low Carb Pasta Sauce (Meat Flavored). I added a few sliced Baby Bella Mushrooms to the Sauce. Along with the great taste the Sauce is only 70 Calories and 6 Carbs! At the end of the post I left the product description for the Ronzoni Spaghetti, Honeysuckle White Turkey Meatballs, and the Bella Vita Pasta Sauce.
I also had healthy Life Whole Grain Bread that I buttered with I Can’t Believe It’s Not Butter and then sprinkled with Kraft 2% Shredded Mozzarella Cheese . Then I baked it at 350 degrees for 7 minutes. Makes a quick and easy way for a side of Bread for Pasta Dishes. For dessert later a Jello Sugar Free Double Chocolate Pudding.
Ronzoni Healthy Harvest Nutrition
Here’s something to absorb: One serving of RONZONI HEALTHY HARVEST pasta has over 20% of your daily recommended fiber intake – but did you know that fiber is good for you in more ways than just digestion?
People with diets high in fiber have a lower risk for weight gain, obesity, development of insulin resistance and diabetes. Fiber also prevents constipation, hemorrhoids and diverticulosis, but it also helps reduce the risk of certain chronic diseases like colon and breast cancer. Fiber may help lower LDL (bad) cholesterol and total cholesterol, therefore reducing the risk of heart disease. It can also help lower blood sugar to better manage diabetes.
Dietary fiber is the edible part of plants, primarily carbohydrates that are resistant to digestion and absorption in the small intestine. Fiber may be digested by fermentation in the large intestine. By eating high fiber foods you feel fuller, eat less, with fewer absorbed calories.
Fiber comes in two basic forms – soluble and insoluble. Soluble fiber is found in fruits, vegetables, seeds, brown rice, oats and barley. It prevents or reduces the absorption of certain substances into the bloodstream. Insoluble fiber is found mainly in whole grains and on the outside of seeds, fruits, legumes, and other foods. It is like a sponge that swells within the intestine to promote more efficient elimination and alleviate some digestive disorders.
Fiber is found only in plant foods and passes through the digestive tract without being completely broken down. Being indigestible, fiber provides no nutrients to the body, which is why for many years it was removed from processed foods like white bread. But, nutritionists have since discovered that fiber performs valuable functions precisely because it is not digested, and it is essential to good health.

Today’s Menu: Velveeta/Kraft Dinners Chili Cheese Mac Velveeta Cheesy Skillets w/ Whole Grain Bread
Come on warm Spring time weather! Beautiful sunny but cool day out today but as usual starting tomorrow and going through part of Monday SNOW! How much, I’ve heard anywhere from 3″ to 8″ inches. Come on Mother Nature show us a little love! Anyway for dinner I prepared Velveeta/Kraft Cheesy Skillets Dinner Chili Cheese Mac, using Jennie – O Extra Lean Ground Turkey and added 1 can of Joan of Arc Light Red Kidney Beans.
As in all the Chessy Skillet Dinners the kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1 lb. of Ground Turkey, and 1 can of Joan of Arc Light Red Kidney Beans. I used Jennie – O Extra Lean Ground Turkey. Using the Extra Lean Ground Turkey instead of the Ground Beef you can lower the calorie count by anywhere from 60 – 80 calories! As I browned the Turkey I added Sea Salt, Pepper, and Ground Smoked Cumin for seasoning. It’s ready in about 10 minutes. I then add 2 cups of water, the seasoning and pasta. Simmer for 10 – 12 minutes and add the Velveeta Cheese and your ready for dinner. I’ll leave the instructions at the end of the post. It’s 380 calories and 28 carbs but you can lower the calorie count by using the Ground Turkey as stated above. The Ultimate Cheeseburger Dinner is very good but i think this is my new favorite. I really like the Chili Seasoning! Another one pan quick, easy, and delicious Velveeta/Kraft Dinner! I also had a couple of slices of Aunt Millie’s Light Whole Grain Bread. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn…. and to all a good night!

Today’s Menu: Buitoni All Natural Whole Wheat Four Cheese Ravioli w/ Bella Vita Pasta Sauce, Chicken Breast, and Baby Bella Mushrooms.
Went Italian for dinner tonight. I used Buitoni All Natural Whole Wheat Four Cheese Ravioli. It had been a while since I had the Buitoni
Ravioli and it was on sale and I had a $1 off coupon to make it an even bigger bargain. The pasta is very easy to fix, just boil 7 – 9 minutes and drain and it’s done! Along with the pasta I added a Chicken breast that I had also boiled and seasoned with McCormick Grinder Italian Seasoning. I sliced the breast up into several pieces and tossed it with the pasta and sauteed Baby Bella Mushrooms. I then topped everything with Bella Vita Low Carb Pasta Sauce (Roasted Garlic Flavor). The sauce is only 70 calories and 6 carbs! Plus it’s loaded with flavor. The Buitoni Pasta is a tender and delicious pasta but be sure to follow the cooking instructions so you don’t over cook it. For dessert later a bowl of Blue Bunny All Natural Frozen Yogurt Chocolate Vanilla Swirl. Another product you have to try if you already haven’t!

Today’s Menu: Leftovers – Whole Grain Penne Pasta and Turkey Sausage w/ Low Carb Pasta Sauce and Rustic French Bread
It was so good I’m having it twice! I warmed up last night’s leftovers of Ronzoni Healthy Harvest Whole Grain Penne Rigate Pasta, a healthy pasta choice at 180 calories and 41 carbs along with the sauce. I used Bella Vita Low Carb Pasta Sauce and that being only 70 calories and 6 carbs! I love this sauce it has great flavor and good on any pasta. So you get the full flavor of pasta sauce but not the calories or carbs. Then for the Turkey Sausage I tried a new one, Johnsonville Turkey Sausage. The sausage is 110 calories and 0 carbs.
I had precooked and sliced the Turkey Sausage earlier. I boiled the pasta and while it was boiling I heated the pasta sauce and added the sliced Turkey Sausage. After boiling and draining the pasta I added the pasta back to pot and added the sauce and sausage to it and mixed until the pasta was well coated. Seasoned the Pasta with McCormick Grinder Italian Seasoning and some fresh chopped Italian Parsley. Served the pasta with Pillsbury Rustic French Bread. For dessert/snack later a Mini Bag of Jolly Time 100 Calorie Pop Corn
